University Student Author’s Cookbook For Dorm Living

The first year of college is notoriously tricky, especially when it comes to healthy eating. For Lee’s Summit native Dylan Watson, nutrition was essential as both a member of the University of Missouri’s Golden Girls dance squad and due to her gluten intolerance. When her roommates started to notice her hauling her pots, pans, and groceries to the dorm kitchen every Sunday to prep meals for the week, they asked for the recipes. Then she started sharing her routine on Instagram, which drew even more attention. Realizing there was a real need for guidance on staying healthy in college, Watson compiled her recipes and advice into “Dylan’s Wellness Bible: The Guide to College Eating”. The book includes more than 50 simple, tasty recipes that are protein-packed, gluten-free, and low in calories. There are also dorm-friendly meal prep hacks, printable grocery lists, weekly planners, and self-care tips. Watson says, “The response was so positive, not just from students but from people of all ages—my grandma, aunts, and

brothers all use it now. The recipes are fun, simple, and based on whole foods, making them adaptable for any lifestyle.” Since middle school, Watson has dealt with gluten intolerance. She tested negative for celiac disease, but the pain and discomfort she felt after eating gluten were enough to avoid it. In her senior year of high school, Watson started paying attention to her overall nutrition and fitness. Along with her dancing, she began lifting weights with a personal trainer and working with a nutritionist. She says, “I’ve learned that how I fuel my body affects not just my physical health but also my mind and overall well-being.” Now a sophomore at MU majoring in textile and apparel management, Watson’s schedule is packed with classes, dance practices, and activities with her sorority and church. She’s also a social media manager for a local retail shop and for her own accounts. Add to that her fitness goals of 10,000 steps a day and a weight training routine, plus taking time out for her overall well-being by journaling every morning, meditating and centering herself, and nourishing her spirit.

Sundays serve as her designated day for personal organization and preparation for the upcoming week. She begins by attending church services, followed by grocery shopping and meal preparation. She also handles household tasks, such as laundry, and plans her weekly schedule. Watson’s meal prep takes about two hours. Instead of making the same one or two meals to eat every day, she cooks up various ingredients, mixing and matching them into multiple dishes. For example, she cuts up veggies and roasts some, such as Brussels sprouts and green beans. For proteins, she makes mini turkey burgers, chicken meatballs, and shrimp. She also makes a tray of veggie egg white bites (recipe in the book). Once finished, Watson portions the results into small plastic bags and then groups them into meals in larger zippered bags. Then everything goes into her mini refrigerator (or if she’s home for the weekend, into a cooler for the drive to Columbia) and she’s ready for the week. Her grocery haul also includes yogurt, frozen fruit, protein bars, and a salad box of spring mix or spinach and arugula. She keeps some raw veggies and apples on hand for snacks. She also has protein snacks that are easy to grab and go, like her favorite protein powder to throw in a shaker bottle or a protein bar.

A bright new flavor has landed in Lee’s Summit, and it comes wrapped in bold colors, scratch-made cooking, and a tequila program that would make any agave lover grin. Ancho & Agave, the vibrant Mexican-inspired restaurant concept launched in 2019, is officially opening its first Kansas City–area location, and Managing Partner Vernon Blazek says guests can expect an experience that’s both elevated and completely approachable. The concept was created by the owner of Biaggi’s, the fine Italian chain with 16 locations across the country. After nearly three decades in that space, he introduced Ancho & Agave as a fresh, modern, high-energy brand centered around what he calls “tacos, tequila, and togetherness.” The first location opened in Bloomington, Illinois, where the company’s corporate office is based, and the Lee’s Summit restaurant marks the seventh unit for the growing brand. “We’re definitely an upscale Mexican restaurant,” Blazek says, emphasizing the atmosphere as much as the menu. “The building is beautiful, very aesthetic, and very bright. We have over 600 lightbulbs in the space, plus a gorgeous lounge area. It’s a place where you feel the energy the moment you walk in.” CONTINUED >

That energy carries directly into the food. Every single dish is made from scratch, a detail the team takes great pride in. Even the chips and salsa served at the table are prepared fresh daily. The expansive menu offers a wide range of classic and contemporary Mexican-inspired dishes—enchiladas, burritos, quesadillas, dips, and of course, a long list of tacos. One of the most buzzworthy menu items is the taco board: a shareable spread of 14 tacos, either mixed and matched or made with one preferred style. “It’s something people really love to share, especially if they’re sitting at the bar watching a game or just enjoying a night out,” Blazek says. If there’s one dish destined to become the Lee’s Summit favorite, Blazek doesn’t hesitate. “The Birria is probably our most popular item,” he shares. “You can get it as a taco or a quesadilla, and it’s just consistently a hit.” To pair with the food, Ancho & Agave offers a deep and carefully curated tequila lineup—at least 40 tequilas plus mezcals—along with eight house-batched margaritas that are already top sellers. Despite the elevated vibe and attention to detail, the restaurant is built to welcome guests of all kinds. “We’re very, very family

friendly,” Blazek says. From after-school tacos to date nights and group outings, the space is designed to flex with the moment. A large square bar seats 30 and offers full service, while the covered patio is fully equipped for all seasons, with heaters for winter and fans for summer. Customization is another hallmark of the brand. Because everything is made fresh and to order, modifying a dish is never a problem. “We can make almost anything vegan, vegetarian, or gluten-free,” Blazek explains. A detailed chart in the kitchen helps staff adjust each dish appropriately. “If there’s anything on the menu you don’t want, we can take it out. Really, the only things we can’t change are a few of the sauces.” Ancho & Agave also leans into convenience. The restaurant partners with Easy Cater for delivery, offering a large catering menu for office lunches, events, and family gatherings. They also provide taco packs and to-go options for busy weeknights. With its from-scratch kitchen, lively design, and commitment to making every guest feel at home, Ancho & Agave is primed to become Lee’s Summit’s newest go-to for bold flavor and good times.

1. “WHY DO I FEEL AWFUL EVEN THOUGH MY LABS ARE ‘NORMAL’?”

Dr. Gillett: I like to say, “There is no such thing as ‘we’ve done everything.’” We can always dig deeper. Often, the labs ordered are the wrong type of assay, or important markers like ferritin or SHBG—which binds testosterone and estrogen—are completely missed. Beyond lab work, there are other factors: mitochondrial health, sleep quality, mental health, and even how sensitive your dopamine and serotonin receptors are. “Normal” labs do not always equal normal physiology for you.

2. “HOW DO I FIX MY ENERGY, BRAIN FOG, OR SLEEP WITHOUT 20 MEDICATIONS?”

Dr. Gillett: Start with a good, comprehensive lab panel to assess nutrients and hormones. Then build the foundation with sleep. My favorite tool is the 10/3/2/1/0 rule: • 10 hours before bed: No caffeine • 3 hours: Avoid large meals and alcohol • 2 hours: No vigorous exercise • 1 hour: No bright blue or white light • 0: No snoozing and no inconsistent sleep/wake times Aim for 7+ hours of high-quality sleep. When sleep improves, energy almost always follows.

3. “IS MY GUT ACTUALLY CAUSING ALL THESE OTHER PROBLEMS?”

Dr. Gillett: Gut health influences most major health issues, but it’s rarely the only problem. Diet is my second pillar of health for a reason. Exercise, sleep, and stress reduction all improve gut function too. Even simple tools like self-hypnotherapy apps can reduce gut-related symptoms.

4. “WHAT CAN I DO RIGHT NOW, TODAY, TO START FEELING BETTER?”

Dr. Gillett: Focus on the pillars of health: diet, exercise, sleep, stress, sunlight, social connection, and spiritual health. Treat them like habits and find ways to make them enjoyable or easy to start. Supplements and medications are supportive tools, not substitutes. Think of them like turbo chargers: they enhance a system that’s already functioning.

There are many things that can help a room feel relaxing, but let’s keep it simple and focus on my top three. I would say that one must incorporate good lighting, great textures, and a decluttered space to truly get the cozy vibes. Let’s tackle each.

GOOD LIGHTING It’s imperative that there are multiple sources of light in a space. Rooms need a soft warm light, so I always like to use a light bulb between 2,700k and 3,000k. Also, all lights should have the same temperature light bulb to avoid clashing. It’s not enough to just have recessed or pendant lighting. I add a table or floor lamp to a space to truly have ambient light. Candles are a must for me. They can be scented candles (an extra way to add relaxation) or I like to use remote control tapered candles, so I don’t have to worry about cleaning up wax later.
