Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with the restaurant owners at Park Place as well as Scratch Catering and learned about what their fall menu will be boasting, so get your taste buds ready, you are in for a treat. We also included a few new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table. My mom got her love of cooking from her mother. Both my mother and grandmother could truly make a masterpiece out of a few simple ingredients. It was a rarity to see anything measured or a recipe followed without putting their own twist on it. Adding a little bit of this and that for extra flavor was the norm, so cooking was/is a true art for them. I learned to truly appreciate the various flavors in food from my mother. She enjoys a good meal that someone prepared for her more than anyone I have met, and anyone sitting next to her while she eats can attest to that enjoyment because of her propensity to utter,”mmmmmm…….mmmmm” multiple times throughout the duration of her meal as she audibly appreciates what she has been served. There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Their acclaimed Happy Hour menu invites you to indulge in exotic cocktails in a trendy atmosphere with an open air vibe. They also offer a laid back patio and a bento box style lunch menu that is quite popular. Verdigris is a show stopper, and is the premiere “see and be seen” location in Johnson County. An elevated and rich cocktail lounge, part of the Monarch Bar and Mercury Room family, Verdigris has been touted as being “the hip, younger brother.” Here the bartenders are the star of the show. The cocktails are the best you’ve ever had, with the most Instagrammable happy hour on social. “Wine is bottled poetry.” This is a quote from Robert Louis Stevenson, and it is certainly apropos for gatherings at the Wine Bunker! Travis Wallace and his wife, Kathy Richman Wallace, opened this locale in 2020, following a lifelong love of wine. The two began their journey together when they married in 2014 in Napa Valley, California. Following their wedding, they took their guests wine tasting, then on Sunday, watched the KC Royals and Giants in game five of the World Series.

When Travis made the leap from the corporate world, he dove headfirst into his passion. “We have done private tastings for the past few years out of our house and the original ‘Bunker’ in our basement,” he notes. “We discussed with our guests about possibly opening a wine place later in life, and like with many people, later in life came quicker with COVID.” He expresses that their kids are in college and high school, and he leads by example for them by following his dreams. He is a Wine and Spirits Education Trust (WSET) Level 3, which means he spent many hours in the original Bunker studying and tasting wine. There are four levels to WSET, the final being the Diploma level with six stages. Having this under his belt gives him a common vocabulary and structured approach to evaluate wine, understand the influence of the vineyard, winemaking techniques, regional regulations, storage, aging styles and the ability to communicate well. “Doug Frost is a Master Sommelier and Master of Wine, one of only three or four people with this designation, and now has a vineyard in Washington State, but splits time with Kansas City. I had a 10-minute conversation with him that led me to pursue the WSET, without becoming pretentious!” he smiles. Travis believes the most important thing about a wine bar is the atmosphere. He strives to provide a relaxed vibe, much like a coffee shop. They offer wines not found other places, exposing guests to new regions, styles, countries and varieties. They rotate flights, and have fun names such as for all light skin contact wines, Who’s Your Daddy, all Cabernet Franc wines, the parent grape CONTINUED >

of both Merlot and Cabernet Sauvignon, and more. They offer wines from South Africa, Austria, Czech Republic, Hungary, Japan, Italy, Spain, Portugal, France, US, Slovenia, Argentina, Chili and Israel. Guests can have their own wine lockers when they join The Club at Wine Bunker. The locker is a place they can store the wines Travis chooses for each member’s personal wine journey. They plan to offer education workshops soon. The Bunker is located within the Prairiefire Entertainment District. “The fact that the businesses here made it through COVID speaks to the fact that the management put forth special events to help draw people, which is key when you are starting a business,” he shares. “We are all supportive of each other. Tyler and Monica Morrison just celebrated the one year anniversary of their business Wildcat Hospitality LLC, which includes their very first restaurant and premium catering company Scratch Gourmet Express & Catering located in Prairie Village. A creative and fresh idea born amidst the uncertainty of the pandemic, a time when many area businesses were closing their doors. “We wanted to create an elevated, premium, dining experience that would allow us to provide the most delicious, seasonal foods prepared on-site and at their freshest,” Tyler shares. The couple, both K-State Alums, met at a K-State Watch Party in Texas where they were both

living and working in the restaurant industry at the time. “It’s such a small world, we both went to K-State but never actually met until we were both living in Texas” Monica shares with a laugh. The past three years have been a bit of a whirlwind for the duo as they got married, welcomed two children, remodeled a house and relocated to the Kansas City area. The pandemic brought a time of reflection for the Morrisons, “we wanted to build our own business, created with flexibility and creativity. Find a balance that would allow us to do what we are passionate about, but also to reflect our core value- which is family” Tyler shares.

After living and working in places like Dallas and Atlanta, the self-proclaimed foodies felt that the KC metro area was missing a key concept on the culinary front, so they set to work bringing their idea to life. “Quite simply, we were looking to create an elevated, everyday style of food service” Tyler says. This included building a mobile kitchen on wheels, complete with double ovens, warming drawers, fryers and grill. The catering van allows them to freshly prepare all food on-site. Tyler shares “we actually tricked out our van and turned it into a pop up mobile kitchen complete with power and a generator, food is not sitting around in hot boxes,” it doesn’t get any fresher than that. The mobile kitchen is used to cater large events like weddings, as well as smaller events like intimate dinner parties and lively cocktail parties. “It allows us to provide a private in-home chef experience” Monica shares. From a catering aspect, they service most of the KC metro area with their mobile, catering kitchen. Tyler shares “we have done many events, from weddings in Weston to events in the Bucyrus/Spring Hill area.” They have a physical location in Prairie Village, where they serve lunch and dinner with a menu that changes every quarter based on what is seasonally freshest in the area.They also provide a private dining room or wine cellar where more intimate events can be held. Executive Chef Joshua Walters, thoughtfully and tastefully provides “food with an elevated comfort,” meaning traditional favorites with a refined, flavorful twist. They offer a full cafe and dine in experience and if you stop in for lunch, don’t miss the Chicken Salad Croissant, it’s a definite crowd pleaser. Scratch also presents an

exclusive, five-course, monthly wine and dinner pairing, which is a private, ticketed event featuring winemakers from places like France, Italy and California. In fact, due to its popularity they are looking to begin offering two wine dinners a month, beginning next year. Additionally, they host a Happy Hour M-F from 3-6pm that features cocktails and shareable plates and there has been much anticipation and buzz around their new Fall Menu debuting in October. Using fresh or dried herbs in cooking and as a seasoning not only boasts a flavorful punch, but can have added health benefits. It only takes a few minutes to create

these simple herb infused concoctions, and if you make it in bulk, they can easily be stored used again and again to give your food a little something extra.

Garlic Herb Butter This butter is versatile and goes with just about anything. You can use this on top of bread, popcorn, veggies, as a sandwich spread and more.

INGREDIENTS: • 1/2 cup unsalted butter, softened to room temperature • 4 tablespoons fresh parsley, chopped • 1 tablespoon herb of your choice (dill, basil or oregano are my go-to herbs.) • 1 clove garlic, chopped • 1 tablespoon fresh lemon juice • 1/2 teaspoon salt • cracked pepper to taste

PROCESS Add all ingredients in a food processor (or mix by hand in a bowl). Transfer butter mixture on parchment paper or plastic wrap. Cover butter tightly and roll into a log. Place in refrigerator until firm. Enjoy!

Herbed Popcorn Add a little kick to your traditional popcorn by incorporating herbs in with the butter. You won’t be disappointed with this buttery and savory combination.

INGREDIENTS • 3 tablespoons coconut oil (or olive oil if you prefer) • 3/4 cup popcorn kernels • 5 tablespoons butter, melted • 2 teaspoons garlic salt • 2 teaspoons parsley (dried) • 1 teaspoon thyme

PROCESS Add oil to the bottom of a pot and melt over medium heat. Add popcorn kernels and place lid on top of the pot and heat over medium heat until kernels are popped, shaking pan occasionally. Melt butter in a separate dish and add seasonings. Pour on top, and enjoy!

Herb Salt Herb salts are becoming so popular and can add flavor to a variety of dishes. There are endless flavor combinations, and these salts are so handy to have as a staple in the kitchen. Plus, these make great gifts for family and friends. All you need is a blender or food processor and minimal ingredients.

INGREDIENTS: • 1 cup salt of your choice (I prefer Himalayan pink salt, but any salt will do • 1/4- 1/2 cup parsley (add more if using fresh herbs) • 2 Tablespoons dried basil (or 1/4 cup if using fresh) • 1 tablespoon oregano • 1 tablespoon lemon zest • 1 garlic clove minced • Optional: Any additional herbs you prefer

PROCESS: Add fresh parsley, garlic, lemon zest and a little bit of salt to the blender or food processor. Mix for 10 seconds. Add additional ingredients and blend again. Line the baking sheet with parchment paper and pour salt mixture on sheet and evening spread. Set in a cool oven overnight to dry. Pour salt into a container of choice and enjoy!

Chimichurri Chimichurri is a condiment that can be used on endless things, and can be enjoyed as a sauce or dip. Serve over fish, chicken, vegetables or with crackers.

INGREDIENTS: • 1/2 cup olive oil (or flax oil for added omega 3 nutrition) • 2 tablespoons red wine vinegar (or lemon juice as an alternative) • 1/2 cup-1 cup fresh parsley, chopped finely • 1/4 cup fresh basil or fresh cilantro • 3-4 cloves garlic, minced • 1 small red chilies or 1 tablespoon red pepper flakes • 1/2 teaspoon dried oregano or italian seasonings • 1 teaspoon salt • pepper to taste

PROCESS Chop fresh herbs finely and add to a bowl. Add remaining ingredients and mix. Chill for 1-2 hours. Enjoy!

When makeup is your passion, you understand that it is a true art form. Creativity is the premise Caro Benitez bases her work on at Caro Benitez Makeup Studio. “I am inspired to create art, and makeup is my passion,” she says. “I am driven to celebrate the natural beauty in everyone to bring out confidence and happiness. My passion led me to international fashion weeks in places like Paris, New York and Miami as well as the honor of working in film and the Grammys. I have been lucky enough to train with some of the best makeup artists in the industry.” Caro did not find fulfillment in her law career so decided to live her life doing what she loved as a young girl, which was art and fashion. She grew up in Paraguay and opened her first makeup studio and operated if for 15 years. She met her husband in 2016, and shortly after they relocated to his home state of Kansas. She now owns and operates Caro Benitez Makeup Studio in Overland Park which opened in 2020, and shortly after expanded to include a spa. Spa services include hyper-customized facials tailored to skincare needs, back facials, lash lifts and tint, brow lamination and waxing.

Caro collaborates with Allie Jasminski, a talented esthetician and makeup artist. “Clients call her ‘Angel Hands’ because of her amazing facial massages,” explains Caro. “My favorite products are often multi-use, for example, using one product for blush, lips and eyeshadow,” she smiles. “Makeup should be fun, so if it feels stressful try and use a multi-use product to simplify your routine. My best skincare tip is to seek help from your esthetician or dermatologist early and often. There are so many skincare products and services that are a waste of money and buying blind will likely leave you disappointed.” For Fall, she notes she is seeing the “Fresh from a Facial” makeup look for daytime occasions. Since skincare and makeup unite, it is all about healthy skin with the perfect balance of natural makeup. For special events and evening glam, the classic black smoky eye is being modernized with softer brows and golden hues. “We offer self-makeup classes so you can learn these special techniques for Fall,” she asserts. It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
