SINCE THE DAWN OF FRUIT, WINE HAS BEEN A BY-PRODUCT OF NATURE. Unlike beer and spirits, wine is a natural process which occurs each year with the harvest. First, imagine any fruit; when the tree, bush or vine is ready to reproduce, indigenous animals will consume the very best and ripest to spread the seeds far and wide while the excess fruit falls to the ground. When left alone for a period of one to two weeks, the natural sugars and yeast will ferment and produce an alcoholic remain. The interesting observation and question: why do so many critters, from butterflies to opossum, have an interest in consuming these fermented fruits? It sure doesn’t seem to be a wise investment for animals to get inebriated, especially if they're wary of nearby predators... The Winery Mercer House has tapped into this natural process and mimicked what our earliest ancestors discovered thousands of years ago.

As one of only 10 organic wineries in the U.S., The Winery Mercer House has scaled this natural and chemical-free process to a consumer level and offers some of the most interesting and unique wines in all of America. Not only are the vineyards clean, but the Estate wines also contain no added sulfites, which is one of the leading contributors of bitter flavor. Four of the five vineyards are "field-blends," which collectively contain a total of 50 varieties of the Southern native grapes muscadine. Consider each variety as a distinct flavor. It’s such an old and forgotten technique that no other known commercial winery is currently attempting to manage this lost style, and the results are equally forgotten and unfamiliar.
