LIFESTYLE LETTER
Dig Into Our Food Issue In 6th grade at Burwell Elementary, our class staged a production of the musical Oliver! To this day, the songs are still branded in my brain thanks to a wonderfully driven choir director, Dorothy Birkeland. One iconic tune featured a chorus we can all relate to: “Food, Glorious Food … That’s what we live for!” While we certainly aren’t orphans missing out on the basics, Lake Minnetonka is blessed with an abundance of spectacular food choices. And what delectable choices they are! We couldn’t possibly feature every single culinary gem around the lake, but we’ve put together a handy list inside to point you in the right direction. We also decided to highlight a few “Publisher’s Picks”. Hey, it’s my magazine, so why not share a few personal favorites? Beyond our main feature, highlighting a few of my favorites — Molly’s, Gianni’s, and Redstone — this packed issue is overflowing with incredible stories: • Changing Tastes: Jen shares a thoughtful look at how our dining preferences evolve when kids enter the equation. And how, delightfully, things often come full circle. • Lake Minnetonka Lore: Our local historian regales us with tales of yesteryear, back when dining on the water was a stellar experience for the nouveau riche, the hopeful wannabes, and the truly famous. • Entertaining Essentials: Our friends at Five Swans show off customized, exclusive charcuterie boards that are sure to elevate your next autumn soirée. There is so much more to discover inside. Pull up a chair, dig in, and enjoy our annual Food Issue! See you around the Lake!

PUBLISHER’S
PICKS “WE’RE ALL ABOUT BRINGING PEOPLE TOGETHER, WHETHER AS FAMILY, FRIENDS, OR COLLEAGUES, THROUGH GREAT FOOD AND GENUINE HOSPITALITY.”
There’s something about a great meal that brings us all together, doesn’t it? Food has a way of anchoring our best memories, whether it’s sharing a cozy table with family or escaping for a muchneeded date night with my wife. As we put together this issue’s culinary feature, I wanted to step out from behind the publisher’s desk and personally share a few places around the area that hold a truly special place in my heart (and my stomach!).
WE’RE SITTING DOWN AT THREE OF OUR FAVORITE LOCAL RESTAURANTS TO SHARE WHAT MAKES THEM SPECIAL, AND THE DISHES THAT KEEP US COMING BACK 18
LOCA L LIM E LIGH T | FO OD + BE VE RAGE
Our editor will take you through the full, deep-dive stories, kitchens, and incredible people behind these local staples in the pages ahead. But before you turn the page, here are three of my personal, go-to retreats around the lake—and the menu items we simply can’t live without.
REDSTONE AMERICAN GRILL
No matter how many times we pull into Redstone, it never disappoints. It’s the undisputed, non-negotiable staple for my wife and me on date night. We have a routine that is practically written into law: we always kick off the evening by sharing their signature Fondue—a rich, bubbly blend of pepper mix, melted smoked gouda cheese, sourdough croutons, grapes, and crisp veggies—paired with our hands-down favorite protein, the tender marinated Steak Bites. Between that velvety cheese and their to-die-for Buffalo Jumbo Shrimp (tossed in just the right amount of spicy glaze with cool blue cheese), it sets the tone for a fantastic night every single time. There is more on the menu, but those starters have our hearts.
MOLLY’S
Now that I live on the west side of Lake Minnetonka, Molly’s in St. Boni is an absolute gem right in our backyard. Molly Krinhop took over the long-established St. Boni Bistro a little over a year ago and seamlessly worked her own magic on the space. With its cozy café feel and warm
fireplace, it feels like an effortless, genuinely fun date night option. What keeps us constantly coming back, though, is her Burger of the Month feature. I don’t say this lightly: these are honestly some of the absolute best gourmet burgers I’ve ever had in my life. Beyond the burgers, her scratch kitchen brings a fresh, farm-totable quality to everything on the menu. She also features wonderful wine pairings to complement every dish. Molly’s has a unique charm that truly sets her apart in the lake area.
GIANNI’S STEAKHOUSE
Whenever a major milestone rolls around—whether it’s an anniversary or a birthday celebration—and I turn to my wife to ask where she wants to go, Gianni’s in Wayzata is instantly her top choice. It’s the quintessential prime steakhouse experience right on Lake Street. From their legendary, perfectly aged USDA Prime Steaks to decadently layered Seafood Towers loaded with King crab, lobster tail, oysters, and chilled jumbo shrimp, every single detail is executed with precision. Wrapped in a warm, timeless atmosphere, Gianni’s always makes every special occasion feel distinctively grand and memorable. Turn the page to join our editor for the full-feature tour highlighting each of these incredible Lake Minnetonka dining destinations in full. Dave Robertson, Publisher CONTINUED >

REDSTONE AMERICAN GRILL
Redstone is a name most Minnesotans know. For generations, it’s been the familiar, welcoming place you go to celebrate those special moments: the anniversaries, the holidays, the birthdays, the celebrations. “We’re all about bringing people together, whether as family, friends, or colleagues, through great food and genuine hospitality,” says Kim Williams, Manager and Event Coordinator at Redstone. You’ll feel this warmth immediately as you walk through their doors, and it’s carried throughout the dining experience by first being greeted with an inviting fireplace, low lighting, and a smiling and welcoming host. Redstone is perfect for those cozy evenings. “This ambiance matches our style of food, too.” “Think comfort food,” says Joe Fresta, Executive Director at Redstone. “Rotisserie chicken, fresh seafood, steaks, and handcrafted cocktails. Everything we make is prepared and made in our scratch kitchen, using only the best and highest quality ingredients.” Kim adds, “We make our rotisserie chicken and turkey over an open flame. That fire not only adds to the warmth and ambiance but also brings a delicious smoked-wood flavor to the dishes. We also offer high-quality steak options and seafood, which most may not initially think of as comfort food, but our Parmesan Crusted Walleye is a favorite and especially popular with out-of-town guests, who like to try this classic Minnesota dish.” To pair with your meal, select from their extensive cocktail menu or their beautifully curated wine list. Redstone also offers a great selection of local beers on tap, so you’re sure to find something you’ll enjoy. But the next time you come in, you may also notice a few changes on the menu. “We’re redesigning and getting back to our roots,” says Joe. “You’ll see a few old favorites and staples back on the menu. We have so many guests who have been coming back for years, and we want to ensure they can order the dishes they’ve come to know and love. It’s all about how we make our guests feel when they leave and also while in our presence.” As the holidays approach, “this is where Redstone really shines,” says Kim. Both the Maple Grove and Eden Prairie locations offer private and semi-private spaces for holiday celebrations. Perfectly decorated with an expert team to assist with the planning details. Guests will also notice some new updates at both restaurants, building on what they already love while creating new ways to make every visit even more special.

“WE’RE REDESIGNING AND GETTING BACK TO OUR ROOTS.”
“We’re also looking forward to being even more involved in community events this coming year,” says Kim. “We encourage people to reach out if they’re planning an event. We love being involved and supporting our community.” After all these years, that’s what Redstone continues to do best. Bring people together. Around good food, genuine hospitality, and the moments worth celebrating. redstonegrill.com

MOLLY’S
Tucked into little St. Bonifacius is a restaurant where dinner is about more than what’s on the plate. At Molly’s, food comes with a story, wine comes with a little curiosity, and every season brings something new to the table. Chef and owner Molly Krinhop has built the restaurant around food, wine, community, and the belief that going out to eat should still feel special. Spending a lifetime in food and wine, Molly’s experience touches nearly everything inside the restaurant’s walls. As a farmto-table restaurant, the menu changes with Minnesota’s seasons and with what the farmers, growers, fishers, and producers Molly trusts are bringing in the door. “If our neighbors grow extra tomatoes, we’ll create a dish that can use them,” says Molly. “Wild Alaska fish comes from people we know. Produce follows the farms and the weather.” Meat, cheese, honey, eggs, and other ingredients are thoughtfully sourced whenever possible. “My slogan is: Eat better. Drink better. Be better. Knowing the integrity of every dish and everything I serve is so important because great food doesn’t begin in the kitchen. It begins with knowing where it came from.” Molly took over the space almost three years ago and wears every hat. Chef. Owner. Manager. “The restaurant is really a piece of my heart. It’s like a second heartbeat.”
22
LOCA L LIM E LIGH T | FO OD + BE VE RAGE
And you can taste the care in every dish. There’s no deep fryer, and everything is made fresh from scratch and cooked to order, right down to the house-made vinaigrettes and sauces. That made-to-order approach also makes Molly’s a welcoming spot for guests with allergies or dietary restrictions, with the kitchen happy to accommodate a variety of needs. That philosophy comes through in the dishes themselves, including one of Molly’s signature specialties, Wild Caught Alaskan Black Cod. A friend in Homer, Alaska provides the fish, which is miso-glazed and served over a jasmine rice cake with snap peas, carrots, and ginger vinaigrette. “The dish is beautiful. The fish is flaky and just melts in your mouth.” Molly’s Walleye makes an equally memorable experience, with a generous portion of fish lightly coated in Parmesan panko and served with a lemon beurré blanc and a salad nest of arugula, capers, and pickled onions. Their French-inspired tartines have also quickly become a Molly’s favorite. Served open-faced with seasonal, thoughtfully sourced ingredients, the varieties change with the kitchen’s inspiration and the best of what’s available. Molly’s Burger of the Month is also a must-try. It’s never just a burger. Each month, Chef Molly creates something new around the season — thoughtfully sourced, scratch-made sauces, beautiful cheeses, and whatever ingredients are inspiring the kitchen at the moment.
You’ll notice the Asian and American influences throughout the menu. “I love cooking with an Asian twist. It’s something I’ve fallen in love with as a chef, and it’s my favorite thing to eat as well.” Molly’s wine list is built with the same intention and integrity as the food menu. “It’s built through years of tasting, learning, traveling, selling wine, meeting winemakers, and understanding what makes a bottle worth putting on the table,” says Molly. And you can experience the best of both her wine and food menu at Molly’s Wine Dinner Experiences. “Our wine dinners have become some of the most exciting nights here. These aren’t simply prix-fixe dinners with wine poured alongside them. I create each menu specifically around the wines, often working directly with wineries, winemakers, and industry friends to build an entire experience. And it’s an experience. You talk to the winemaker, there’s music, they’re intimate, personal, sometimes a little adventurous, and perhaps one of the best date nights west of Minneapolis.” You can also join Molly’s Members Only wine club and stock your cellar with Molly’s select choices. “If you come to eat and you’re like, ‘Oh my god, I love this wine,’ you can buy a case from us.” But for Molly, wine is just one way to create connection. That same spirit extends beyond the dining room with Molly’s new monthly community nomination program where she invites the community to nominate a local person, family, or organization experiencing unexpected hardship, loss, or tragedy. “Giving back has always been deeply personal here, and so each month, we’ll choose a recipient and find a way for Molly’s, and hopefully the community around us, to show up.” Of course, Molly’s doesn’t forget her four-legged community members either. Molly says bring the puppy. “Our dog-friendly patios have become gathering places for friends, neighbors, cyclists, date nights, and quite a few four-legged regulars who have figured out exactly where the treats are kept.” Molly’s is creating something truly special in St. Bonifacius. So, eat with the seasons. Drink something interesting. Bring people you love.

GIANNI’S STEAKHOUSE
There’s something timeless about a great steakhouse. The warm glow of the dining room, a cocktail at the bar, a perfectly cooked steak arriving at the table, and a glass of wine chosen from a list worth lingering over. At Gianni’s, that experience comes with a beautiful Lake Minnetonka backdrop, whether you’re settling into the cozy dining room or enjoying a meal on the patio overlooking the water. In 2027, Gianni’s will celebrate 30 years, having built its reputation on award-winning steaks, fresh seafood, an impressive wine list, and something that can’t be put on a menu: warm, genuine hospitality. “It’s important that we make every guest feel welcomed and important,” says Terri Huml, owner of Gianni’s Steakhouse. And that philosophy shows up in the details, from handwritten birthday cards and celebratory table signs to the longtime staff who have helped make Gianni’s a destination for generations of diners. “We have a large percentage of first-time diners, and we want them to know we appreciate them for choosing us.” And while the hospitality may be what brings guests back, the food gives them plenty of reasons to stay. “By far, our steaks are incredible and should not be missed,” says Terri. “The steaks are seasoned and grilled to perfection. We’ve added a wide variety of lighter fare, housemade breads, onion rings, and ground-steak burgers. Also save room for our house-made desserts that are the perfect end to any meal. Often, a guest will go out of their way to tell me that it was the best meal they’ve ever had.” The menu is complemented by an award-winning wine list featuring more than 450 labels with a wide selection of reds and whites by the glass. And their cocktail menu is filled with steakhouse classics like their Gianni’s Old Fashioned or a Gin Martini with a crystallized crust of ice. Of course, the food and drinks are only part of what makes a night at Gianni’s memorable. Thoughtful details, from the beautiful lighting and mirrored walls that bring the lake views into much of the dining room to the comfortable bar, create a space that feels both polished and inviting. And because the team refreshes the interior every few years, if you haven’t been in a while, it’s worth another visit. But creating a memorable experience goes beyond great food and atmosphere. It means listening to guests and continually looking for ways to make their time at Gianni’s even better. Terri and her staff regularly travel to other markets for inspiration, looking at what other restaurants are doing well and bringing those ideas back to Gianni’s.
24
LOCA L LIM E LIGH T | FO OD + BE VE RAGE
“Recently, my daughter and I spent a few days in Charleston, visiting several restaurants. We loved the way the staff welcomed every guest, and as a first-time visitor, we felt very special,” Terri says. That same attention to hospitality extends into the kitchen. Gianni’s has made changes to accommodate guests with food allergies, including eliminating peanuts and peanut oil and implementing a reservation system that alerts the team to specific dietary requests. “The majority of our menu is gluten-free,” says Terri. And then there are the traditions that aren’t going anywhere. “Our housemade garlic crostinis are a tradition that will never go away,” she says. Hundreds are made each day to ensure they’re always fresh. It’s that balance of honoring tradition while continuing to evolve that Gianni’s is bringing into its 30th year. And there’s plenty for guests to look forward to. “We will be paying homage to some of the most iconic steakhouses around the country and offering our take on the items that have made them famous,” says Terri. “For instance, we have a special relationship with Gibson’s Steakhouse in Chicago. For one month,
“BY FAR, OUR STEAKS ARE INCREDIBLE AND SHOULD NOT BE MISSED. THEY ARE SEASONED AND GRILLED TO PERFECTION.” we’ll feature a dessert they’re known for, along with the story of their success and why we think it’s a special restaurant. So if you can’t get to Chicago, you can come to Gianni’s and experience one item that has made them well-known.” The anniversary celebrations will also include more wine dinners and tastings throughout the year, along with opportunities to gather in Gianni’s private dining space, One Door West. After 30 years, it seems the recipe for a great steakhouse hasn’t changed all that much: exceptional food, genuine hospitality, and a reason to stay awhile. giannis-steakhouse.com

Steamer City of Saint Louis
Compared to most metro communities, Lake Minnetonka boasts an unusually varied and high-end dining scene. On the surface, lakeside fine dining appears to be a modern trend. In reality, the lake has demanded the highest culinary standard for the better part of 150 years. A prime example could once be found sailing aboard the steamboat City of Saint Louis. The City, as she was commonly known, was the second largest boat to grace the waters of Minnetonka. Built in 1881 for Minnesota Senator William Washburn, she measured 160 feet in length
and 48 feet wide. For comparison, the largest boat on the lake today is Al & Alma’s Bella Vista, which comes in at 83 feet—just over half the length of the City of Saint Louis. Unlike others of her time, the City was built using Virginia white oak for her hull and mahogany throughout her cabin. Washburn spared little expense, hoping his newest ship would attract tourists for cruises across both Lower and Upper Lake. The total cost of constructing such a steamer was roughly $30,000 $50,000. That’s about $950,000 - $1,500,000 today.

Upon her launch in June 1881, she instantly became the largest boat on the lake, boasting a capacity of 800 passengers. The City was the first “palace steamer” on Minnetonka and featured three decks, all outfitted with electric lighting. Her second deck was equipped with moving walls that could be opened during fair weather or closed against harsher conditions. Large panes of glass offered tourists the best possible views while enjoying the comfort of being indoors. It was on this deck that the restaurant was located. Reporters from the Tourist & Sportsman visiting in 1881 wrote that she was “exquisitely finished in hard woods, with the necessary drapery, curtains, tables, etc., where meals are served. The table is always supplied with all the delicacies of the season, and at reasonable rates. The restaurant is under the charge of one of the best caterers of the Northwest, who is assisted by competent cooks and waiters.” While no authors detailed the full menu aboard the City, we can make reasonable assumptions about what was served. Passengers might have enjoyed fresh Minnetonka walleye with potatoes and vegetables. Fresh cranberries, raspberries, and strawberries grew abundantly in the surrounding area and likely made their way onto the tables. In a pre-refrigeration era, locally grown foods were a staple, and menus were somewhat dependent on the season. Preserves and desserts stretched beyond seasonal limits, with wild berry pies and fruit puddings being all the rage. A reporter from the Excelsior Weekly noted, “A fine restaurant is one of the attractions of this steamer, and dinners are served to order or at a fixed price.” While they enjoyed their meal and company, hired bands played the era’s most popular music. Waltzes, polkas, and parlor songs likely skipped along the waves surrounding the mammoth boat as she steamed across the lake. Passengers expected more than a dinner cruise, and the crew of the City was happy to oblige. She delivered tourists from railroad stations in Excelsior and Wayzata to the grand hotels of the Upper Lake and Northern Bays. Some, such as Spring Park’s Hotel Del Otero and Minnetonka Beach’s Hotel Lafayette, were renowned for their elegance. Lafayette was so widely known that it even welcomed Presidents Ulysses S. Grant and Chester Arthur. During his visit, Grant wrote to his wife that the lake was “a beautiful sheet of water almost as large as Como, in Switzerland, filled with islands.”
The City of Saint Louis enjoyed a 17-year career before being dismantled in 1898. Lost with her was the most opulent steamer to have sailed Minnetonka—though one could argue that today’s dinner cruisers offer comforts no 19th-century steamer could match. No matter how you look at it, Lake Minnetonka has impressed people from all walks of life and all corners of the country. Our community’s standard of excellence runs high in many regards, and the culinary tradition is no exception. So next time you’re enjoying a pan-fried walleye at a lakeside restaurant, take a moment to appreciate that timeless centerpiece of the finest Minnetonka dining. Fall Coffee Gets a Flavor Upgrade From rosemary and brown butter to miso maple and basil peach, Base Camp Coffee is shaking up the seasonal fall coffee menu.
Fall is officially here, which means pumpkin spice season has also arrived in all its cozy, caffeinated glory. But whether you’re a diehard PSL fan or ready to venture beyond pumpkin in search of a new fall favorite, we know the perfect place for both: Base Camp Coffee & Provisions. Located inside Unmapped Brewing Co. in Minnetonka, Base Camp is bringing the same craft and creativity to its coffee as Unmapped does to its beer. “We recently started making our own syrups in-house, which we’re very excited about,” says Isaiah Henderson, manager at Base Camp. “It’s allowed us to get really creative with our fall seasonal drinks.” This year, Base Camp is going savory. “We have a rosemary drink. It’s a shaken cold brew with rosemary, brown sugar, and brown butter. To make it, we shake it up and serve without ice. It’s a fun, cocktail-inspired drink.” Another new fall cocktail-inspired coffee drink is their Basil Peach Espresso Tonic. While espresso tonic has just recently gained traction in the States, it’s popular throughout Europe. “It’s like an Americano, but instead of pouring your espresso shot over water, you pour it over iced tonic. It’s meant to be more of a refreshing coffee drink,” explains Isaiah. “With the peach and the basil in there, it gives it a bright, complex profile.”
A Peach Cobbler Tea Latte will also join the fall lineup. Similar to a London Fog — a latte that uses Earl Grey tea instead of espresso, with a bit of vanilla and steamed milk — the Peach Cobbler Tea Latte swaps out Earl Grey for peach tea. “It’s a cozy, fun fall weather drink,” says Isaiah. “We always like to have a theme for the seasonal menu, giving it some cohesion. This year we’re leaning into that savory side, though of course we’ll also have some dessert-themed drinks; that way, there’s something for everyone.” This includes one of their barista’s creations: the Miso Maple Latte. Made with miso paste and maple syrup, the latte has an umami-rich profile, like a more savory salted maple latte.
Fall Coffee Flight

And, of course, their housemade Pumpkin Spice will round out the menu. “You gotta have it. It’s fall and a classic. But ours will be a Maple Pumpkin Latte, and so we’re excited about that one.” A number of these new fall drinks will be available in their coffee flights, which Base Camp is well known for. Their flights come with four 5-6 ounce coffees, but this year they’re doing a little something different.
Peach Basil Espresso Tonic
“When someone would like a flight, instead of a set flight as we’ve done in the past, we give them a little sheet with all the available options for the flight, and then they can choose four out of the 10 coffee options that they’d like. This way our guests can really customize their own.” Beyond their specialty craft coffee, Base Camp offers a place for community to come together. “When you order, we don’t just push a button,” says Isaiah. “We’re a place where you’re seen, where our baristas ask about your day, and where they craft a drink with intention and care. And that, I think, is part of what brings people back.” And this fall, there’s plenty of reason to come back for another sip. basecampmtka.com

CHECK PLEASE
There was a long stretch of time when my favorite activity was to go out to eat. A restaurant, especially a new one, with a hard-to-get table was my top choice for weekend plans. This was before every place offered takeout, and we could have anything and everything at home.
38
Before food delivery and online ordering and curbside pickup. This was also long before my favorite weekend plans became canceled weekend plans. In our early 20’s, my husband was eligible to win quarterly sales contests at work. The prize was a $100 dinner. I’m proud to say he won quite frequently. We took full advantage of this prize, and at the time, it was difficult to spend $100

on dinner for two. I know, how quaint. We went big. We went downtown Minneapolis, downtown St. Paul; we got dressed up. We got recommendations from our fanciest friends. We got appetizers. Entrees. Desserts. Afterdinner drinks. The works. Shoutout to so many yesteryear favorites. D’Amico and Sons. Linguini and Bob. La Belle Vie. Oceanaire. Figlio’s. Café Lurcat. Lucia’s. Ahhhh. Is it possible to miss a restaurant? It is. Once, at the stunning Art Deco restaurant Goodfellows, we accepted everything our well-meaning server recommended. It began with an amuse-bouche made of duck. We were dedicated to spending the $100. That night, it was far too much of too much. We now refer to that evening as “the night of too many different meats”. Then came the parenting years (decades). To say it was miserable to eat in a restaurant with my cherished children does not do it justice. Actually, the first baby was somewhat manageable.
nded
She was easy to take places. She would eat a cereal bar or crackers while we dined at Chino Latino, and nobody seemed to mind. Then the second one arrived, and juggling two kids and a litany of new food allergies was less fun. The Original Pancake House in The Foursome in Wayzata would actually cook frozen allergen-free waffles for us that I brought from home. Above-andbeyond service, and so incredibly kind of them. Then the third child arrived. That was the final nail in the dining coffin. He refused to sit down for any meal, especially not in a public place. He is seventeen now. I’m not saying he’s just as bad, but it remains challenging for him to sit and eat at a leisurely pace. Why sit and linger for hours over a beautiful meal when you can shovel in fast casual food and get back to running around? Now somehow, my husband and I, we are back. We are BACK BABY! The winds of change are upon us in this house, with the last kid graduating next spring. The restaurant industry has morphed so
much over time as well. Some of the best places are no longer forty-five minutes away. They don’t require a reservation months in advance, a dinner jacket, or a love of foie gras. So many fabulous places “in our own backyard” now. Places with stunning interior decors, or patios with sweeping views. Creative menus. Fun atmospheres. Food I didn’t have to make, which is my favorite genre of food. We started out enjoying restaurants because it was a rare treat and I was a new cook. Making meals was a bit of a mystery to me. I couldn’t make a really great meal thirty years ago. I’ve improved. But now we go for the pleasure of new ideas, a relaxed pace, and zero cleanup. I’m looking forward to eating in restaurants again. Not dashing off to an event, not on a deadline, not eating in the car on the way. I’m excited to leave dinner making to the experts more often. Check please. But no rush. We are taking our time to turn new places into old favorites.

WHERE THE WOOD SPEAKS HOW LOCAL WOODWORKER CARL ECKER FOUND A HOME AT FIVE SWANS AND TURNED A WAYZATA STAPLE INTO THE CENTERPIECE OF EVERY GATHERING There is a moment in Carl Ecker’s woodworking process that he enjoys more than any other. The board comes to him roughly cut, unremarkable. Then it goes through the planer. That’s when the wood reveals itself. The grain surfaces. The character shows up. What was once just a piece of walnut becomes something no one else will ever own.

“When you put it through the planer, you get to see the wood and the board as you’re making it. That’s the best part.”
“When you put it through the planer, you get to see the wood and the board as you’re making it,” Carl says. “That’s the best part.” It’s a philosophy that has carried him from a Covid-era hobby to a fiveyear partnership with Five Swans, the upscale Wayzata boutique known for its kitchen and gift collection. And it’s exactly what Kim Zitzloff, the store’s owner, saw the first time he walked through her door. “Carl came in and showed his boards, and we needed his boards,” Kim says. “He’s local. We love local. And the finished work is impeccable.” She didn’t hesitate. “We’ll take them all.” Carl’s story starts with his dad. “We were always building stuff out of wood,” he says. But it wasn’t until 2020, working from home with time on his hands, that the hobby became something more. He started carving spoons. Then cutting boards. Then his family pushed him to find a home for these one-of-a-kind pieces. “Food was the entry point,” Carl says. “I love cooking, and I knew I wanted a bigger cutting board on my counter. It makes cooking more enjoyable.” That instinct, to make the kitchen feel a little more special, still drives every piece he builds. Carl works mostly in walnut, with some cherry and maple, and every charcuterie board starts the same way: hunting for live-edge slabs with real character. CONTINUED >

“Maybe the branch comes out of the trunk, and it creates a really pretty figure in the wood. I set those aside for Five Swans.”

“Maybe the branch comes out of the trunk, and it creates a really pretty figure in the wood,” he says. “I set those aside for Five Swans.” His cutting boards take more patience, strips glued, sanded from 80 grit to 400, then finished with a custom juice groove. A single charcuterie board takes two to three hours. His largest board yet stretches four feet. But the boards were never meant to be flashy. “I keep them very simple and want to show the wood,” Carl says. “I’m not trying to change what the tree looks like. I’m trying to let the wood speak for the design.” He guarantees every piece for life. If a board ever warps, he’ll flatten it and send it back. “I’m not going to let anything that isn’t perfect go out there.” For Kim, that care is exactly why the partnership works. “There’s no two alike,” she says. “They’re so unique, there’s no two boards that look or feel exactly the same.” Customers shop for the boards as much as anyone shops for the store’s other kitchen pieces. Increasingly, they’ve become household gifts, though most people buy them to keep.
“They’re an art piece. When people are gathering and putting the boards on their dinner table, it’s also a conversation piece.”
“They’re an art piece,” Kim says. “You can display it in your kitchen.” With the holidays approaching, she sees them as more than serving pieces. “When people are gathering and putting the boards on their dinner table, it’s also a conversation piece.” Carl feels the same pull toward the table. “I want people to feel like the board is part of the experience,” he says. “For me, when I make a nice meal, it’s not just about eating. It’s about the cooking, sitting around the table, and admiring the presentation.” Five Swans is celebrating 60 years in business this year, and they’re marking this occasion by gifting away a piece from their store each month. Carl’s boards will be among these pieces in October. But ask him what he loves most about the partnership, and it isn’t the sales. “It’s the highlight of my week when I get to go in there and drop things off,” Carl says. “They have trust in me that I’m going to bring them quality stuff. I still think we’re a hidden gem, even after 60 years.” crazytreewooddesign.com fiveswans.com

A FALL-INSPIRED MAPLE PUMPKIN GRANOLA WITH PUMPKIN YOGURT
maple pumpkin parfait ARTICLE BY ALYSSA LAVY, MS, RD, CDN, CPT
maple pumpkin granola
(Yields approximately 4.5 cups or 18 – ¼ C servings)
ingredients: • • • •
• • • • • • • •
2 ½ C rolled oats 1 C pumpkin seeds, hulled ½ C unsalted walnuts, chopped 2 Tbsp canned pumpkin puree (Note: the only ingredient should be pumpkin – this is different than pumpkin pie filling) 1 Tbsp water 2 Tbsp avocado oil or vegetable oil ½ C pure maple syrup, divided into 2- ¼ C servings 2 tsp pure vanilla extract 1 tsp ground cinnamon 1 tsp pumpkin pie spice ¼ tsp salt Nonstick cooking oil spray
pumpkin yogurt
(Yields approximately 1 C yogurt)
ingredients: • • • • •

C ULIN A RY C R E AT ION S | F OOD + BE VE RAGE
¾ C plain Greek yogurt of choice ¼ C canned pumpkin puree ¼ tsp cinnamon ¼ tsp pure vanilla extract 1 ½ tsp honey
granola directions:
1. Preheat oven to 250 degrees Fahrenheit. 2. Combine canned pumpkin, water, oil, vanilla extract and ¼ C maple syrup) and mix until well combined. 3. Add rolled oats and salt to wet ingredients and mix until oats are evenly coated. 4. Line a large baking sheet (9 x 13 inches works well) with parchment paper and spray with nonstick cooking oil spray. Transfer oats to baking sheet and spread in a thin, even layer. 5. Bake in oven for 1 hour, mixing at 30 minutes and 45 minutes. 6. Remove oats from oven briefly. Add pumpkin seeds, chopped walnuts, cinnamon, pumpkin pie spice and remaining ¼ C pure maple syrup. Mix with a spatula and return to oven to bake for another 30 minutes, mixing halfway through. Remove from oven and allow to cool for 5 minutes before using a spatula to transfer to container. Do not wait too long to transfer granola as it can stick to the parchment paper as it cools.
yogurt
directions: 1. Combine all yogurt ingredients in a medium sized bowl. Top with a handful of the maple pumpkin granola, serve immediately and enjoy! Note: This granola can be stored in an airtight container and stored in a cool, dry place for up to 1 week. While this granola is made with gluten free ingredients, I recommend using certified gluten free ingredients if needed.
Yogurt can be made with a suitable dairy-free alternative if you need this recipe to be dairyfree and the honey can be swapped for pure maple syrup to make the dairy-free yogurt recipe suitable for a vegan diet. The granola and the yogurt can each be enjoyed on their own, but they complement each other so nicely! This Maple Pumpkin Granola Parfait is a perfect way to celebrate autumn’s most famous flavors in a nutritious way! Pumpkin, maple syrup and warm spices, such as cinnamon and pumpkin pie spice, give cozy vibes that are traditionally found in baked goods this time of year. However, while pumpkin bread, muffins, cookies and other fall flavored baked goods are certainly delicious and should be enjoyed, this Maple Pumpkin Granola Parfait provides the satisfaction of those fall flavors in a lighter way, while providing ample protein and fiber. It is the perfect, slightly sweet and balanced way to start the day – or to enjoy anytime! Alyssa Lavy, MS, RD, CDN, CPT is a registered dietitian, personal trainer and mom of 2. “
Susan: After a lifetime of disciplined saving, spending can feel
uncomfortable, even when you can genuinely afford it. As a wine collector, I understand this better than most. We save that special bottle for the perfect occasion, and somehow, the occasion never quite feels perfect enough. Money works the same way. A good financial plan changes that. It defines exactly what you can comfortably spend while still protecting your future and the legacy you want to leave, so the answer isn’t a guess, it’s a number you can trust. Because the goal was never just to accumulate. It was to eventually enjoy what you built, to open the bottle, and to share it with the people you love.
