Warren Tomporowski, the Name Behind the Loretto Restaurant
Warren’s Bringing Big City Food to a Small Town ARTICLE BY GRAHAM JOHNSON | PHOTOGRAPHY BY EMILY JOHN
Sitting on the railroad crossing of Lake Independence Regional Trail in Loretto, Warren’s Restaurant sits at another less tangible intersection: bringing big city food to small town Loretto. I sat down with Owner John Warren Radford and Operations Manager Benjamin Eidem to get a better understanding of just how that process works. Warren’s Restaurant, despite opening its doors in August of 2019, has a long history. John has worked in the restaurant world since 1989. At 23, he bought half-ownership of the restaurant Mill Creek Inn in Buffalo, Minnesota despite having no previous

industry experience. When talking about the decision, John says his parents brought him there for dinner to scope the place out. “I don’t think my parents thought I was going anywhere,” says John. But after one meal, he pulled the trigger. “I just thought, I had nothing to lose,” he says blithely. And from that point, John was all-in, learning the restaurant business in a whirlwind two weeks before the previous half-owner left. “I was very green when I got into the business,” says John, continuing, “The first five years were hard, and I never want to have to do them over again.” But despite that lack of experience,

and those difficult early years, John took to the life. A decade later, he had bought out the other half-owner of Mill Creek Inn and began running the restaurant by himself. So in May of 2019 when “stopping by the Choo Choo to have a beer” on his way home, John saw that a building across the street had recently closed. “I found out this place had chains on the doors and was closed down on a Monday,” says John. That week he rushed to contact the building’s owner. “By Thursday I had a meeting with him, and by Saturday I gave him an offer that he accepted.” And thus, Warren’s was born. According to John, the previous owner had left in a hurry. “When I bought it, I got everything. I got the equipment, and there was still food in the coolers and beer and liquor in the liquor cabinet, and I even got all the silverware.” And a summer’s worth of work later, Warren’s Restaurant opened its doors. But when it came time to create a menu, it quickly became apparent that Warren’s was going to be different from Mill Creek Inn. “We had to up our game here,” says Ben. And to do so, not only has the restaurant taken to smoking all their own meats, but “worked to bring new items to their Comfort Food menu,” Ben adds. About the move from Buffalo to Loretto, John shares, “We revamped our menu to adapt to the community here and what they like to eat,” continuing, “Loretto being closer to the cities, people like their lighter meals.” That shift led to the addition of several bowls and salads. There’s a hint of pride in his voice as Ben walks me through their menu. “We aren’t a deli, but we could be. We do all of our meats in-house. We smoke our brisket, we smoke our meatloaf, we smoke our pulled pork, we do our own pastrami, corned beef, and prime rib. You name it, we pretty much make it in-house. So when you get a piece of brisket here, it’s a flavor you’re not going to find anywhere else.” Having worked across restaurants from bouncer to bartender to line cook, Ben brings a similar industry experience, especially to the smoking process. “We are going to go ahead and capture the vast majority of those flavor notes and combine them into something that’s really unique and truly delicious.” A recent addition to the menu that has since become a signature item is Warren’s Bloody Mary. Started in 2014 from a fish
“We aren’t a deli, but we could be. We do all of our meats in-house... So when you get a piece of brisket here, it’s a flavor you’re not going to find anywhere else.” house on Maple Lake, John initially envisioned the cocktail as simply an oddity adorned with shrimp, chicken wings, and “weird stuff”. But the reaction was so good, “the next week we decided to sell it,” he explains. Now Warren’s marinates their vodka for ten days in a variety of vegetables before constructing each Bloody Mary. After some initial skepticism, they quickly became a staple of the menu. And to his surprise, John’s Bloody Mary has garnered an interstate following. “[Travelers] come right from the airport to get my Bloody Mary before they go anywhere else,” laughs John. To add to the restaurant’s history, the name Warren’s comes from John’s maternal grandfather, a Minnesota farmer named Warren Tomporowski. John describes his grandfather as “kind of rough-looking.” And while little is known about the humble farmer from Foley, Minnesota, save that he weathered the Great Depression and is rumored to have aided in bootlegging, John says the name fit. And if nothing else, it makes his mother happy. In taking inspiration from John’s grandfather, the restaurant took similar inspiration from Warren’s era. Not long after opening, Warren’s finished its whiskey room complete with bowler light fixtures, flapper-esque curtains, and top shelf whiskey to boot. “He [Warren] was the inspiration for the speakeasy feel; for the whiskey lounge,” says John. So with another Minnesota winter having come and gone, Warren’s is looking forward to bringing guests back to their patio, serving out specialty cocktails and house-smoked meats, and according to John, “Just giving people a nice experience and a nice meal at a decent price.”

TAILORED THE
STEP INTO STYLE AT EXCELSIOR’S J. HILBURN SHOWROOM
EXPERIENCE
From Left to Right: Jennifer Shinners, Jodi Mayers, Travis Hawley, Christine Quandt

What if every piece of clothing you owned fit perfectly and accented your style, all without stepping foot in a department store ever again? It may seem fantastical, but J.Hilburn stylists Travis Hawley, Jodi Mayers, Christine Quandt, and Jennifer Shinners created a unique, painless shopping experience guaranteed to make you look good. Ridiculously good. J.Hilburn provides men with custom-made clothing, overhauling closets with a tailored wardrobe that fits your body, personality, and lifestyle. “Ultimately, our goal is to help men feel great and confident in the way they look,” Jennifer tells me. Travis, Jodi, Christine, and Jennifer used to meet clients in their home or workplace with bags and products in tow, but the four came together to transform the shopping experience further with their J.Hilburn showroom in Excelsior.
There are a Variety of Swatches to Choose From
A TAILORED EXPERIENCE On Water Street, nestled above the shoe store Travis owns, Luya Shoes, the four transformed a former cycling studio into a one-of-akind showroom. Their curated fabric swatches and fashionable stylings adorn a relaxed space. “Guys traditionally shy away from malls and don’t like shopping,” Travis explains, “but our showroom is intimate. They can feel free to peruse the fabrics and ask questions they don’t want to ask in public. They feel more at home.” The showroom feels like a cozy living room, replete with comfy chairs and beverage offerings. Clients select every detail, from the fabric and colors to the cuff and stitching, creating a look they love. While the client is encouraged to experience the showroom, should that not be convenient, the stylist will always be happy to meet them at their home or workplace. Jodi notes, “Guys are very visual. They see how we’re putting outfits together and often point to the mannequin and say, ‘I’ll take that whole look.’”
THE RIGHT FIT Creating the showroom was an obvious step for these stylists. Like their clients, the four all arrived at J.Hilburn from different paths. Before J.Hilburn, Jodi owned a women’s boutique in Edina. “Many of my female clients always asked what I could do to help their husbands,” Jodi laughs. “This was an opportunity to add another tool to my toolbelt.” Christine, a registered nurse by trade, used to join her husband Jim at his J.Hilburn appointments with Jodi, and she was impressed with the process and service. For Christine, this ignited an interest in fashion, and J.Hilburn was a natural progression. After Jennifer’s second child was in school, she was looking to start working again and contributing to the household income. She needed something flexible while caring for her family, and J.Hilburn was the perfect opportunity to build this new career. That was over 13 years ago. It was the perfect fit, thanks to her love for fashion and wanting a new career. The youngest of three boys, Travis shares, “I was always at my mom’s hip. Out of the three sons, I’m the cook, I’m the one that dresses best, and I’ve always loved men’s fashion, but didn’t know how to make it work for myself.” He connected with Jodi, then took the next step in becoming a J.Hilburn stylist. “He’s our walking billboard,” Jodi laughs.

J.Hilburn Provides Swatches for a Truly Customized Experience
The Team at J.Hilburn will take You Through a Personalized Process to Find What Suits You Best
Every Client is Measured and Fitted
CUSTOM-MADE CARE “First and foremost, we want them to be comfortable,” says Jennifer. Building that relationship and trust is essential to help address insecurities and focus on features clients want to accentuate. Jodi adds, “Our clients get to a comfort level where we’ll get texts saying things like, ‘I fatted out all of my clothes and need to be re-measured.’” You know you’ve become their go-to resource for clothes when they can communicate with you in that relaxed manner. Whether a client's weight changed, he was promoted, or perhaps is back on the dating scene, the four stylists help create that outer package to match life changes and help them feel confident in how they’re showing up in the world.
CUSTOM IS A PROCES You won’t walk away with a custom garment immediately. First you’ll be measured and build a profile. With no minimum order required, you can try just one custom item out of their 11 categories to see if you like it. They don’t want you to keep any piece you don’t love so they’ll dial in the fit and style until you’re absolutely delighted.
22
FASH ION F OR WA R D | STYLE + BE AUTY
“At J.Hilburn, we say custom is a process,” explains Christine. “You’ll learn about things you didn’t know you liked and we learn with you as your style grows.”
THE PRICE IS RIGHT As a direct to consumer business, J.Hilburn eliminates price markups, enabling you to enjoy custom-made clothing, oftentimes for less than what you find off the rack. Jennifer adds, “We work with the finest mills and factories out there so we can offer this amazing quality product at an affordable price.” Partnering with sustainable mills and factories is imperative for J.Hilburn. Not only to reduce their environmental footprint, but because it produces natural fabrics that are made to last. When your custom shirt lasts for over a decade, you’re saving more in the long run. Now that’s amazing price per wear! On Thursday, June 23rd from 4:00 to 7:00 P.M., please join Travis, Jodi, Christine, and Jennifer at the J.Hilburn Showroom in Excelsior for their Open House to check out the space and see what custom-made clothes can do for you.

The Maker’s Studio Offers a Variety of Serving Trays and Cutting Boards
Excelsior’s The Maker’s Studio is more than a showroom. Owned by father and son duo Bruce and Ryan Huggett, The Maker’s Studio houses the makings of local artisans, showcasing an array of curated goods and a variety of techniques, each item with a story to tell. From custom wood coffee tables and hand-blown glassware to carefully crafted serving trays and one-of-a-kind artwork, every piece is thoughtfully made to connect you to its source. “Every object has a story, a craftsperson, a history. We’re here to share those stories with you,” says Ryan. A craftsman himself, Ryan is no novice when it comes to creating. With a separate studio space in Osceola, Wisconsin, Ryan has mastered the skill of woodworking, building beautiful, unique pieces for the showroom and to fulfill custom orders. As of lately, kitchenware has been in high demand.
With lockdowns and quarantines in the past, people are eager to host dinner parties and get-togethers once again, and the need for serving trays, cutting boards, and charcuterie boards has increased. “At The Maker’s Studio, we feature a number of serving trays with inlays, juice grooves, a variety of handle types, and personalized features,” Ryan shares. With the options the showroom provides, creating an elegant and appetizing spread for your next event will be easy. And in an attempt to further connect you to what The Maker’s Studio offers as well as teach you some of what he does best, Ryan shares how to make your own custom wood serving tray. If you’re feeling adventurous, this DIY project is certainly worthwhile. And if you’re not, step inside The Maker’s Studio and see what piece (or pieces) you might feel connected to.

RYAN HUGGETT'S DIY SERVING TRAY Ryan Recommends Using Odie’s Wax to Polish and Finish Your Serving Tray
01 // For this project, I will be using live edge walnut, but any hardwood will do. You will want to find a slab that is surfaced on both faces - this means that the top and bottom of the board has been jointed/planed. For this serving tray (or charcuterie board) I found an 8’ length of black walnut with a width of 6” to 10” that will work nicely. You can find surfaced slabs from a variety of local dealers including Rockler and my personal favorite, Logs to Lumber in Hastings. 02 // You can use a variety of tools to cut your slab to length. I am using a circular saw with a guide and have decided on a length of 32”. I chose 32” because it seems a comfortable length to hold. 03 // If your slab has been surfaced, you can start with 120 grit sandpaper, or 80 grit if it is rough. Work your way from 120 to 150/180 to 220. Make sure to sand every surface. Between grits of sandpaper, lightly wet your board. This will dry quickly and you will have a rough surface again - you’ve just raised the grain. A light touch of sandpaper will knock the grain back down. I do this twice to make sure that the grain will not raise again after the customer has brought it home.

04 // FINISHING
04 // Cutting boards and serving trays are pretty straightforward. I use as much mineral oil as the wood will take. The rule of thumb is to oil the raw board once a day for a week, and once a week for a month. After that, you can apply oil whenever it appears or feels dry. You can also submerge your board in mineral oil to quicken the process. To add a sheen and to extend the life of the mineral oil, I like to add a coat of wax to the whole board. You want to do the bottom and sides to encourage equal moisture transfer and to help keep your board from warping.

The Finished Product
05 // I’ve added rubber feet and a set of simple handles to this serving tray to bring it up a notch. There are a myriad of other options to personalize your serving board.
