AS WE MOVE CLOSER TO SUMMER, THIS SALAD IS A GREAT WAY TO ENJOY GRILLED CHICKEN IN A COOL, FRESH AND LIGHT DISH. It’s colorful and full of flavor. Grilled chicken, beetroot and goat cheese are the star ingredients.

SALT + PEPPER

GRILLED CHICKEN SALAD SERVES 1

INGREDIENTS + 1 small beetroot + 100 grams chicken + Salt and pepper, to taste + 1 medium orange, peeled and segmented + 1/4 small red onion, finely sliced + 1 large handful kale or greens ORANGE

+ 25 grams goat cheese, crumbled + 30 grams cranberries + 10 grams pumpkin seeds + 10 grams sunflower seeds SEEDED MUSTARD DRESSING:

+ 1 teaspoon seeded mustard + 1 teaspoon honey + 2 teaspoons lemon juice + 1 tablespoon olive oil

DIRECTIONS 1. Preheat oven to 350 F. 2. Wrap the beetroot in foil with 1 tablespoon water (this helps the KALE

3. Place in a small roasting pan and bake for 30-40 minutes or until tender. Test the beetroot with a skewer. It is cooked if a skewer pierces the flesh easily. Set aside to cool.

4. Once cooled, peel the beetroot, cut into wedges and set aside.

5. Meanwhile, heat a chargrill pan over medium heat. Lightly spray the chicken with cooking spray, and season with salt and
