Giving Thanks
November 2022 PUBLISHER
Michael Gerard | michael.gerard@citylifestyle.com EDITOR IAL COOR DINATOR
Barbara Kimler
In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is on spending time with those that you love and encouraging giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us that have helped us along in our journey, can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. Our November issue is dedicated to gathering, gratefulness and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. We are especially thankful for our advertising partners who help bring this magazine to your doorsteps each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you. This holiday season as we prepare to gather with our loved ones, and in the true spirit of thanksgiving, let’s set time aside to consider what truly makes life meaningful and stop to reflect on those blessings. Blessings to you and your family,

Survival Guide For a Stress-Free Holiday Season

LOCA LLY SOU R CE D | L IF E + CULTURE
ARTICLE BY KIMBERLY BLAKER
Do you dread the hustle and bustle of another holiday season? Between shopping, wrapping, baking, holiday cards, parties, etc., surviving the season can be a challenge! This year, why not eliminate stress by following these tips? •
EARLY PLANNING: First, close your eyes and reflect on how hectic this season can be. How many activities can you eliminate to make the season more enjoyable and stress-free?
Next, make a list of everything you need to do during the holidays and how much money you’ll spend. Now eliminate the least important items and review the list again. If you haven’t eliminated enough, go through your list again. Once you’ve decided which parties you’ll attend, plan how you’ll say ‘no’ to the others, so you’re not caught off guard. CONTINUED >

•
SHARE IN THE PREPARATION: Enlist your family to help prepare for the holidays and don’t expect perfection. After all, you probably don’t notice or mind the imperfections in others’ holiday gatherings. Also, remember the holiday season is not the time to be head cook! Plan potluck gatherings and be sure to ask guests what they’ll bring to avoid duplicate dishes.
•
HOLIDAY TIME-AND-ENERGY SAVERS: Save time gift-wrapping by setting up a station in a spare room. Stock a large box with wrapping paper and accessories, so everything is stored in one place. Do your holiday shopping early in the day on weekdays while your energy is high and crowds are small. Shop online when possible. Give gift cards. People appreciate practical gifts.
•
HOLIDAYS WITH CHILDREN: Allow kids to spend the entire gift-opening day at home, and plan family get-togethers either on Christmas Eve or on the weekends before or

after the holiday. Also, avoid taking children shopping during the holidays. It will be less stressful and will likely cut your shopping time in half. •
CARE FOR YOURSELF: Enjoy holiday treats in moderation. Have plenty of convenient, healthy snacks on hand. Prepare low-fat meals that won’t bog you down.
•
THINGS TO DO FOR NEXT YEAR: Start your shopping early. Can’t stress this enough! Also, get a label printer early in the year and enter all of the addresses on your holiday card list. When the holidays roll around, you can print the labels and eliminate the most time-consuming aspect of sending out holiday greetings.
Finally, remember the holiday season should be a joyful time for everyone, including yourself. Maximize ways to ease your stress to keep the ‘happy’ in your holidays!

An evening highlight was a spectacular live concert in the Ruins of The Great Stone Church (Circa 1812) featuring Broadway award-winning artists Vonzell Solomon and Terron Brooks. The duo started the set with a moving rendition of the song Shallow followed by an exquisite solo by Solomon of I Will Always Love You. The set included a benefit gala tradition, When the Swallows Come Back to Capistrano and unbeknownst to guests, gospel singers joined the duo for the concert finale of lively songs that had attendees on their feet and dancing in the aisles.

As guests arrived on the red carpet, they were greeted outside by professional violinist Amy Serrano. Inside the Mission’s beautiful Central Courtyard, Saxophonist Randy Gist entertained guests near the Bell Wall as guests enjoyed the reception and made their way to the concert. Mission San Juan Capistrano Executive Director Mechelle Lawrence Adams said, “It’s very clear to me, that today, Mission San Juan Capistrano is an architectural embodiment of the notion that Love Endures. We live to leave an impact…to leave something behind…our children and a better humanity, traditions, faith, courage, conviction. We all hope to leave a bit of our love of life behind in something that endures. We are filled with gratitude and hope for the support and love left behind in the collective script here this evening.” During the evening’s program, Mechelle Lawrence Adams gave a moving presentation about the theme Love Endures and all that Mission San Juan has represented in the community throughout its history and today. Mission Preservation Board President George O’Connell then presented the gala honorees Bill and Joan Cvengros. Bill has served on the Mission Preservation Foundation Board for over 20 years working to ensure the financial stability and transparency of the historic landmark. Bill and Joan have called San Juan Capistrano home for nearly 30 years
and are community advocates for numerous other causes. Mission San Juan’s historic bells were rung by members of the Juaneño Band of Mission Indians, Acjachemen Nation Nathan Banda and Michael Gastelum as guests made their way into the Central Courtyard for dinner. The Most Reverend Bishop Kevin W. Vann said the dinner blessing followed by a superb four-course, plated dinner hosted by Inn at the Mission San Juan Capistrano, Autograph Collection. Support from Inn at the Mission just next door to Mission San Juan Capistrano has been extensive over the past two years. At this year’s gala, the Inn’s new executive chef Adrian Hernandez was joined by Chef Aaron Obregon to create a culinary experience like no other. The Founding Course included roast beet Gazpacho followed by the Reverence Course of Heart of Palm Garden Salad with summer figs and edamame cilantro ricotta. The entrée Abundance Course was a generous serving of Tomahawk Bone in Beef Rib with herb-crusted Mexican prawns and caviar, manchego polenta and yellow corn rajas. For the Gratitude Course, the “Love Duet Dessert” included red berries and chocolate buttercream opera with hibiscus strawberries and buttercream.

Zach Churchill: Heartbreak, Hope, and Grati tude LOCAL RISING STAR RECORDING ARTIST OVERCOMES ADVERSITY AND LIVES A LIFE OF GRATITUDE
PHOTOGRAPHY BY ARINA B PHOTOGRAPHY

G IV IN G B AC K | ENTERTA I NME NT
Local singer-songwriter, Zach Churchill is a rising star you will want to keep on your radar. A frequent performer at Inn at the Mission SJC, Trevor's at the Tracks, and The Ranch in Laguna Beach, he is quickly growing a substantial following throughout the West Coast music scene. With an expressively vulnerable voice, he breathes life, love, and gratitude into absorbing narratives. Sophisticated arrangements, inventive modulations, and superlative musicality are hallmarks of the Orange County native’s debut collection, Heartbreak & Hope. 11 songs serve as musical milestones commemorating a ten-year journey through his twenties -- a decade that he barely survived. And Zach Churchill pulls no punches: His lead single “Bartender” chronicles a harrowing heroin overdose. “The person I’m singing to saved my life,” Zach explains. “He was closing up at 2:00 a.m. at the venue when I overdosed. Everyone was gone, but he checked the bathroom because the light was on. The door was locked, so he got the key and found me. If he had just gone home, I’d be dead.” In the hospital, after a medically
induced coma, Zach was forced to face his family and himself. “You hit your bottom when you stop digging,” he says. “The song is all about my saying ‘I’m done.’” On a recent journey, Zach traveled The Camino de Santiago, an ancient European pilgrim route leading to the tomb of St. James in northwest Spain, a sacred path with a profound history. “I was surrounded by people who were on the pilgrimage for spiritual reasons, this great family,” he recalls. “With the right attitude, every day of my life can be an adventure like The Camino.” The concluding words in his title track, “Heartbreak & Hope” impart this benediction: “Thank you for listening/I love you, goodnight.” Inspired by the hope he references, Zach is now a father--facing his demons with clear-eyed courage. Across this span of songs, his testimony is offered with transcendent sincerity. “The failed relationships, the loss of people, the search for identity,” he concludes. “It’s all real and it’s my story.” ZachChurchillMusic.com NOVEMB ER 2 0 2 2 | C I TYL I FE STYL E . Your Autumn Dinner Party Is Served Catering experts Chef Kyle and Hannah Williams, owners of Savor & Swirl culinary company, create an outdoor dinner party with chef-driven perennial dishes served in beautiful seasonal settings.
For this alfresco Autumn Dinner Party, Chef Kyle draws on favorite fall recipes updated for a modern palate and paired with wine selections to complement the bountiful feast. Hannah creates an iconic autumn ambiance using artisanal table settings and mixed flannels for each guest to blanket any chill on a brisk evening. Whether for Friendsgiving, Thanksgiving or a new November tradition, it’s time to get outdoors again surrounded in sweater-weather coziness while sharing bites and clinks with family and friends.

Insider Tips for Hosting:
• Build a menu around the season. “In November, people crave turkey, sage stuffing and cranberry sauce,” Chef Kyle says. “Autumn dinners mean bigger-course meals with varied proteins, like turkey, duck and sirloin, hearty starches, and good fall produce, especially root vegetables such as butternut squash and pumpkin.” • Always greet guests with a beverage and appetizers. “Offer champagne for wine-lovers or a sparkling drink or signature cocktail. It’s all about serving guests to the highest caliber,” Kyle says. • Draw inspiration from the season’s changing colors, cooler temps and lower humidity to move back outdoors. “Think flannel blankets, wooden tables, fire pits, open grills, string lights and candles to create a really cool environment you haven’t been able to do all summer.” • “You can’t go wrong with fresh flowers,” Hannah says, “but keep bouquets low to not interfere with conversation flowing. For fall, I like richer, jewel-toned florals to mix and match and keep whimsical. I vary glass vases with burnished brass for warm fall vibes.” • An easy but thoughtful detail is to put a simple menu at each place setting, so guests know what to expect. “Add a pen, so guests can jot tasting notes, especially for wine pairings or multiple courses,” Hannah says. “Guests can share comments, then take the menu home as a sweet reminder of the event.” • Follow the French principle of mise en place or everything in place before your event. “This is actually our company’s name,” Kyle says. “It’s that important to us. Make sure the wines are all open, cocktails are pre-made, place settings are out, candles are lit and music is playing. When guests arrive, it gives that wow-factor and shows you intentionally made them feel special.” • To build confidence as a host, start small and practice. “Keep the menu and guest list small,” Kyle says. “Choose recipes you already have confidence in. If you make a great Beef Stroganoff, then go with that. People will love it!” • As fun as it is to dine outside, always have an indoors back-up plan. “We’ve had to bring it indoors before,” Hannah says. “It’s still fun.” CONTINUED > NOVEMB ER 2 0 2 2 | C I TYL I FE STYL E . FRESH ROASTED BRUSSELS SPROUTS & HARDWOOD SMOKED BACON Yield: 6 servings
The Recipes
• • • • •
4 cups Brussels sprouts, raw, halved 1-2 tablespoons olive oil ¼ cup yellow onion, sliced 1 tablespoon garlic, sliced thin 1-2 cups bacon, smoked, thick cut, large dice • Salt, pepper to taste • 2 tablespoons real butter, unsalted • Optional garnish - 1 tablespoon parsley, chopped
CRANBERRY ORANGE ZEST SAUCE Yields 4 cups
METHOD OF PREPARATION: 1. Preheat oven to 400 °F for convection setting, (425 °F conventional). 2. In mixing bowl, add oil and cut raw Brussels sprouts. Season with salt and pepper. 3. Place seasoned sprouts on baking sheet and bake in oven until done, about 20-40 minutes (soft yet still with good texture and crispy edges with some dark brown color). Remove from oven. 4. Place large sauté pan on medium heat and render bacon. Add a splash of olive oil to get it going, if needed. Cook until bacon is crispy and golden brown, 5-10 minutes. 5. Add onions to pan and cook until soft, 5-8 minutes. 6. Turn heat to high and add garlic and butter and cook for 1 minute. 7. Add roasted Brussels sprouts to pan and toss all together. Season to taste with salt and pepper. 8. For optional garnishes, add fresh chopped parsley. 9. Serve and enjoy!
CHEF NOTES: • If Brussels sprouts are large, cut in quarters. • Rendering bacon means extracting the bacon fat which adds a lot of flavor to the dish.
• • • • • • • • • •
3 cups cranberries, fresh or frozen 1 cup cranberry juice, sweetened 1 piece orange peel 1 each orange for zesting ½ cup orange juice, freshly juiced 3 each cinnamon stick ¼ teaspoon clove, ground ¼ teaspoon allspice, ground ½ cup sugar Pinch salt
METHOD OF PREPARATION: 1. In medium saucepot on high heat, add everything except orange peel and orange zest. Bring ingredients to boil, then reduce to a simmer with lid. 2. While simmering, stir occasionally with rubber spatula ensuring bottom does not burn. Simmer for 30 minutes or until sauce thickens. 3. Remove lid and add orange peel and season to taste. Can add more sugar or spice if needed. 4. Once sauce is thickened and most liquid has evaporated, remove orange peel and cinnamon sticks and remove pot from heat. 5. With hand-held blender, puree sauce, keeping some texture. 6. Freshly grate in orange zest, stir and season to taste. 7. Transfer sauce to jar and place in refrigerator to cool overnight. 8. Enjoy!
CHEF NOTES:
Bon appetit! Chef Kyle Williams, Savor & Swirl
• Enjoy with all types of poultry and game birds. • Do not use ground cinnamon. • Can puree with blender if you do not have hand-held blender. • Consistency should be thick sauce and not a jelly. CONTINUED > NOVEMB ER 2 0 2 2 | C I TYL I FE STYL E . C OM/L AG UN A N I G UE L

Wine Pairing
According to Savor & Swirl, wine pairing doesn’t need to be overly complicated for a casual outdoor dinner party. Have a lighter and fuller body style of white and red available with some sparkling thrown in. “Lighter to medium-bodied wines from Rhône Valley, Italy or California would be a good place to start,” they state. “Viognier is one of our favorite wines that goes great with fall-inspired cuisines. Pinot Noir wine goes great with just about any food. Lean towards California or Willamette Valley for a new-world style and go with France for a more earthy, old-world style. A big bold Napa Cab would fall in perfectly for the grilled ribeye steak! Cheers!”
ABOUT SAVOR & SWIRL Chef Kyle Williams has over 22 years of experience in the elite culinary industry, including 2 Michelin-starred restaurants in Italy, resorts in Hawaii, and alongside prestigious NYC celebrity chefs Todd English, David Burke, and Daniel Boulud.
