UNDOUBTEDLY, YOU HAVE STROLLED BY THIS LITTLE, FUZZY, BROWN FRUIT AT THE FARMERS' MARKET AND IN THE PRODUCE AISLE AND PERHAPS YOU PICKED UP A FEW TO BRING HOME. Once peeled and sliced this sweet yet tart fruit displays the most vivid green pulp with tiny black seeds. Traditionally, Europeans referred to it as a Chinese Gooseberry, attributed to its origin in north-central and eastern China. However, it wasn't until 1962 that farmers in New Zealand rebranded it the Kiwifruit and once it was imported into the United States around 1966, Americans dropped the fruit and went with Kiwi. This little, fuzzy fruit is quite the powerhouse and packs 20 vital nutrients including 5 times more Vitamin C than an orange. Perhaps it has reached superfruit status because it is also rich in vitamin A, K, E and B, potassium, copper, folate, and fiber. Here are some recipes that celebrate the fruit, in other ways than sliced and diced, to enjoy the benefits of kiwi.
KIWI AGUA FRESCA INGREDIENTS
+ 8 ripe kiwis, peeled and diced + 7 cups cold, purified water + 2 Tbsp agave METHOD Add all ingredients to blender then blend on high speed until kiwis are emulsified, about 30 seconds. Add additional agave to taste if necessary and additional water to thin to your preference. 30
