This has been a very difficult time for many of us and I know it’s sometimes easy to lose sight of what we are truly thankful for. Whether you are essential and perhaps working harder than ever, or furloughed or laid off and taking this time to streamline your life and figure out what it is that you truly want, rest assured there is always something to be thankful for. Not necessarily the finer things, but most often the little things. A smile, a laugh, a sunset, the purr of a cat as it settles in on your lap by the fire, watching a squirrel stuff its cheeks as it gathers its fall harvest, a beautiful and majestic tree showing its true colors. These are the things for which I give thanks. The little things. As my dad used to say, “Take a look around. You won’t have to look very far to find someone worse off.” Truer words were never spoken. So if these covid times have you feeling low; take a look around, breathe in the fresh air, enjoy the true colors fall is showing us, give thanks and enjoy the little things, because someday you will look back and realize they were the great big things.

Add coconut sugar, organic butter, cinnamon and organic

WE ALL KNOW HOW CHALLENGING THINGS HAVE BEEN SINCE MARCH AND THE OUTBREAK OF COVID-19. It has affected all of us in different ways and we all have used whatever resources we have to get through it. For the Kiwanis Club of Kirkland, staying on track with their mission of “Serving the Children of the World” has given club members a focus and a purpose. Even though physical fundraising activities have come to a halt, the club has managed to come up with ideas that keep money coming in so it can continue its work in the community - helping local children in need and their families most affected by current conditions. On a happy note, the Kirkland Kiwanis Christmas Tree Lot will be open for business this year and following all covid protocol. As a community, a country, and a world, we have all given up so much that makes us feel “normal”. What better way to get back into good spirits than to have a beautiful, fragrant, live Christmas tree, decorated with your favorite memories and beautiful lights? Kirkland Kiwanis is excited to be part of your holiday season by helping bring joy and beauty into your home. The club will also be selling fresh wreaths and garland, the ever-popular Gourmet Nuts, Delicious Delights and of course, See’s Candies. All of these options make great gifts and fun stocking stuffers.

i n g re d ient s + 2 large sweet potatoes, cut horizontally in 1/3-inch slices + Salt & pepper + 1/2 cup garlic & herb Boursin, or herbed goat cheese + 1 ripe pear, cut into 1/4 inch slices + 2 Tbsp thyme leaves, more sprigs for garnish + 2 Tbsp walnuts halves or pieces
d i rec t ion s 1. Heat oven to 425 F. Adjust an oven rack to the center of your oven. 2. Spray a sheet pan with cooking spray. Top with sweet potato slices in a single layer. Spray sweet potatoes with cooking spray and sprinkle with pinch of salt. 3. Cook sweet potatoes in preheated oven for 20 mins, flip, then cook on the other side for 15-20 minutes until slightly browned. Pull from oven and cool for 10-15 minutes. 4. Meanwhile, toast walnuts in a dry sauté pan over medium heat for 7-10 minutes, just until you start to smell them. (Careful not to burn!) 5. When the sweet potato crostini are at room temperature, spread them with herbed cheese, top with a pear slice, thyme leaves, then walnuts. Sprinkle completed crostini with salt and freshly cracked black pepper. Enjoy at room temp.
