LIFESTYLE LETTER

Come Hungry, Katy I think we can all agree: food is a love language. It’s how we celebrate, how we gather, how we comfort each other and, occasionally, how we turn “let’s just grab a quick bite” into dinner, drinks and a few hours around the table. And if there is one thing Katy does exceptionally well, it’s eat. For our annual Food & Drink Issue, we decided to come hungry. This month, we’re celebrating the chefs, restaurants and incredible flavors that make our corner of Texas such a fun place to explore with a fork in hand. We’re taking you inside Katy Asian Town, where you could practically eat your way across Asia without leaving the neighborhood. We’re highlighting talented chefs, creative fusion restaurants that prove sometimes the best flavors don’t follow the rules, and a few Worth the Drive culinary destinations that are absolutely deserving of the extra miles—and possibly stretchy pants. You can also sip and stroll with us through one of Katy’s favorite food festivals, then bring a little of the inspiration home with recipes worth adding to your own kitchen rotation. Because food really does have a way of bringing us together. It tells stories, introduces us to different cultures and gives us an excuse to linger around the table just a little longer. So consider this issue your invitation to try the new restaurant, order something you’ve never had before, share a few plates, pour a good glass of wine and raise a glass to all the delicious things happening around us. After all, life is too short for boring food—or bad wine. Cheers & bon appétit, Katy! S H AW N A H I N M A N , P U B L I S H E R @ K AT Y C I T Y L I F E S T Y L E

Chef Anthonie Dekker, Anthonie's Market Grill

Chef Anthonie Dekker Executive Chef and owner, Anthonie’s Market Grill Growing up in Holland, and mesmerized by American westerns, becoming a chef in the heart of Texas might have seemed like a dream from the wild west. But once stateside, Chef Dekker honed in on the gastronomy of our eclectic region including serving as the Executive Chef to the Houston Texans, and then settling into an impressive stint as a private chef on one of Texas’ largest cattle ranches, serving the likes of American legends like George H. W. Bush and George Strait.

Yet, Chef Dekker had his sights on something of his own. Today, the serene, white-fenced fields of Simonton are home to Anthonie’s Market Grill. Drawing a crowd from miles, one sunset sip of a Cowboy Coffee on the back patio, to a bite of their refreshing Crab Ranchero Dip, followed by one of their mesquite fired steaks, finished with a heaping bowl of vanilla bean banana pudding is promised not to disappoint. Chef Stephen Chiang, Kirkwood; photo by Quit Nguyen

Chef Stephen Chiang Executive Chef, Kirkwood If there are two words to describe Kirkwood’s Chef Chiang, it might be eclectic and intentional. From a multicultural background that spans Taiwanese and German-Mexican roots, to his classical training in French cuisine and experience in Michelin-starred kitchens of NYC, Chef Chiang now brings a flavor and style all his own back to Texas. Fine dining no longer requires a drive downtown. Just east of Katy, Chef Chiang and his team pride Kirkwood as being a welcoming neighborhood restaurant atmosphere, with an elevated and polished dining experience. “We’re chasing connection,” he says. “When guests feel seen, heard and celebrated, that’s when you’ve done something meaningful”

12

C HE F ’S SE LE CT ION | L I F E + CU LT U RE

At the heart of Kirkwood is their attention to detail, and an intentional menu with unforgettable showstoppers like their hamachi crudo, miso tuna wonton tartare, Double-Bone Duroc pork chop, truffle parmesan ravioli and steak frites. Guests can also be delighted with Golden osetra caviar service and a Chateaubriand, a prime, center-cut McClaren Farms beef tenderloin carved table side for two to three guests to share. With an open kitchen concept clad in copper complementing the main dining area, plus a curated private dining room and a sunroom centered around a curved, double-sided fireplace - they have somehow made a five star dining establishment feel like home. A concept that was every bit as intentional as the stellar menu, boasting character, charm and legacy tied into the restaurant group’s owner and namesake Mac Haik. Known for his automotive empire around town, you’ll find nods to his background from Porsche style seating around the wrap around bar, to the magnolia flower symbol of Kirkwood paying tribute to his home state of Mississippi. Returning to Houston in 2020, Chef Chiang made his mark revamping menus and championing a farm-totable ethos. And at Kirkwood, his passions are coming to life on every plate. “Execution and consistency are everything to me,” he states. Personal touches that bring a level of care to otherwise bustling surroundings. A place where walking in the front door feels like an exhale into something comforting, somewhere delectable and someplace special. Full menus and reservations at KirkwoodRestaurant.com

Chef Lori Pope, Harvest Kitchen & Bakery

Chef Fadi Dimassi, Fadi’s Mediterranean Grill

Executive Chef & owner, Fadi’s Mediterranean Grill Chef Dimassi puts his passion simply, “fresh ingredients, traditional Lebanese flavors, and food made to bring families together around the table.” “Growing up in Saida, Lebanon my greatest inspiration was my mother and the meals she prepared for our family. Growing up by the Mediterranean Sea, fresh ingredients and vibrant flavors were simply part of everyday life, and that gave me a deep appreciation for food from an early age.” “My favorite dish to make is freekeh with chicken. It’s a traditional Lebanese dish that feels very personal to me because it represents the kind of food I grew up with - simple, wholesome, and full of flavor.” Full menu at FadisCuisine.com CONTINUED > OCTOB ER 2 0 2 6 | C I TYL I FE STYL E . Chef Casey Castro

Chef Gabriel Reyes

Executive Chef & owner, Astor’s Table

Executive Chef & owner, Socarrat

Bringing together the soulful flavors of his African heritage with the techniques and influences gathered throughout his culinary journey, Chef Castro reflects on the style and inspiration behind his cooking. “Food was how our family celebrated, connected, and showed love. Growing up in Africa and later traveling the world, I discovered that every culture has a story to tell through its cuisine. Becoming a chef has allowed me to honor those traditions while creating unforgettable dining experiences that bring people together around the table.” “One dish that truly represents my style is my Grandma Lovinggood’s Braised Oxtail. I believe great food should tell a story, and this dish reflects family, tradition, and the passion I put into every plate that leaves my kitchen.” Astor’s Table also boasts unique offerings including sips from Chef Casey’s Social Hour Menu, exotic meats including camel, ostrich, buffalo and Japanese A5 Wagyu, and their Brunch Social Favorites like oxtail breakfast tacos, empanadas and their pancake flight.

Donning the motto “where Spanish passion meets Texan hospitality” - Socarrat is turning up the heat in Villagio Town Center. Bridging the excellence from his award-winning restaurants in the Canary Islands, to tabletops right here in our own backyard, Chef Reyes brings the bold flavors of paellas, tapas and Mediterranean cuisine into a posh setting. He explains, “my inspiration has changed and evolved over time, but what has spanned the length of my career is the wish to create pleasure and happiness through food.” “I believe the confit suckling pig dish, which is cooked at low temperature with a reduction of its own juices, is the dish in which we employ a simple technique, much patience, and respect for the product. We do this in order to serve up a gastronomic jewel full of flavor and different textures without having to add any other ingredient in its elaboration!” Simple pleasures that pack a jolt of authentic, worldly and unique experiences. Yet, Fusion Grill steps up to the challenge, and doesn’t hold back when it comes to delivering unexpected results and memorable experiences in their Katy eatery. They even change their menu every six months so flavors never go stale. Led by mastermind, master mixer and owner Tony Montiel, the sense of handcrafted pride that goes into creating each dish is apparent. One glance at the menu might pop out some traditional staples, but digging deeper, these elements are anything but. Take their burgers. Meat, cheese, bun and done, right? Well, not for Tony. Mediocre is not in his vocabulary. Possibly named after himself, the Mr. Fusion Burger starts simple enough with an 8oz Angus patty, but then come the toppings. Fried sweet plantains. Crispy potato stix and crispy bacon. Finished with their house cilantro sauce. An American favorite, with a fusion twist. And that kind of pairing profile is what you’ll see throughout their extensive menu. Tacos topped with jerk chicken and grilled pineapple. Seasoned fries sprinkled with pulled brisket and chipotle sauce.

Flame-Grilled hot dogs drizzled with cream cheese, fried onions and sriracha. Grilled octopus sautéed with tomatoes, red onion and chimichurri sauce. Tastes range across the board, and so does their creativity. Turning the culinary journey into a blank canvas, with possibilities as limitless as the ingredients themselves. And sweet tooths don’t fret - their dessert menu is just as impressive. The Amber Hour BOURBON, THREE WAYS Bourbon carries a certain mystique: dim lighting, hushed tones, a vocabulary all its own. Cut through it and here's what you'll actually find: a spirit that does more with three ingredients than most bottles manage with ten. Shaken with lemon and honey, it goes bright. Stirred with bitters over one good cube, it turns deep and unhurried. Add vermouth and a proper cherry, and you've got the drink that's been quietly holding up hotel bars for a century. One good bottle, a few minutes, a comfortable chair. Everything else is just details.

ONE BOTTLE, THREE DRINKS The Thyme-Honey Smash The easiest pour if you're new to bourbon INGREDIENTS: • 2 oz bourbon • ¾ oz freshly squeezed lemon juice • ½ oz honey syrup (equal parts honey and warm water) • 3–4 fresh thyme sprigs, plus one to garnish • Large ice sphere or cube To make: Press the thyme gently in the bottom of a shaker (enough to wake up the oils, not enough to shred it). Add bourbon, lemon, honey syrup, and ice. Shake hard, strain over a large ice sphere, and finish with a thyme sprig and a strip of lemon peel. Honey syrup keeps for two weeks in the fridge and improves nearly every whiskey drink it touches.

The Old Fashioned Four ingredients. That's the drink. INGREDIENTS: • 2 oz bourbon • ¼ oz demerara or simple syrup • 2–3 dashes aromatic bitters • Large ice cube • Orange peel, to garnish To make: Stir bourbon, syrup, and bitters with ice for a full 30 seconds (longer than feels reasonable — the dilution is part of the recipe). Strain over one large cube. Pinch the orange peel skin-side down over the drink so the oils mist across the surface, run it around the rim, and drop it in. Demerara syrup, two parts raw sugar to one part water, brings a toffee depth that plain sugar can't reach. Classic: orange peel only. Dressed up: add a brandied cherry alongside the peel for a little sweetness and color.

The Manhattan The drink that built a century of hotel bars. INGREDIENTS: • 2 oz bourbon • 1 oz sweet vermouth • 2 dashes aromatic bitters • Cocktail cherry, to garnish To make: Stir everything with plenty of ice until the mixing glass frosts over, then strain into a chilled coupe. Garnish with a real cocktail cherry (dark, rich, worth every penny of the jar). Park the coupe in the freezer while you stir. A warm glass undoes thirty seconds of careful work in about a minute.

BOURBON GOES INTO THE BARREL CLEAR AS WATER. EVERY BIT OF THAT AMBER COMES FROM THE WOOD. CONTINUED > OCTOB ER 2 0 2 6 | C I TYL I FE STYL E . C O M / KAT Y T X

Speak Bourbon Like You Mean It THE WHISKEY AISLE READS LIKE A SECRET HANDSHAKE. HERE'S THE QUICK TRANSLATION. • Wheated: softer, sweeter, leans toward baked goods. • High-Rye: more pepper, more spice, more backbone. • Single Barrel: one barrel, one personality, quirks included. • Bottled-in-Bond: one distillery, four years minimum, 100 proof. • Finished: aged a second time in port, sherry, or rum casks.
