LIFESTYLE LETTER
Happy Birthday Jordan River City Lifestyle! I started our first Lifestyle Letter by saying that “having a baby is both the hardest and best thing that you’ll ever do.” Well, this month is our baby’s first birthday, so let’s see if I was right. We set out to create an experience that was “more than just a magazine” but rather “a celebration of everything that makes our corner of the world such a great place to live.” Looking back, oh what a ride it's been! We’ve highlighted amazing artists, business owners, and entrepreneurs. We’ve explored local attractions, events, and celebrations, and cheered on charitable organizations and local causes. After all of this I’m more convinced than ever that we live in our own little slice of heaven. What could be a better theme for our birthday issue than a celebratory feast? So this month we’re diving into Jordan Valley’s local cuisine. We may not have the spiciness of Mexico City, or the refined presentation of a Parisian cafe, but South Jordan has its own unique (and tasty) flavors. For example, did you know that the Jordan River area is home to one of the world’s most famous BBQ pitmasters? We’re also home to some very successful brands of drinking chocolate and toffee. What about local dining? How about Laotian food, a sriracha peanut butter burger, or some witch’s brew? You’ll find it all within the pages of this month’s issue. Finally, I’d like to share a touching experience I had recently: A few weeks ago I was at a community dinner and an elderly lady that I didn’t know grabbed my hand and said, “I want to thank you! I’ve been a shut-in for the last several months and your magazine has kept me connected to the community. It has meant the world to me.” I couldn’t have asked for a better birthday present than that! I end with a HUGE thank you to all the local businesses who have supported us and all the local readers who have encouraged us. “It has meant the world to ME.” Sincerely,

Roth conversions have become one of the most talked-about retirement tax strategies, but they aren't the right answer for everyone. While converting money from a traditional IRA to a Roth IRA can create tax-free growth and tax-free qualified withdrawals, the decision should be based on a careful analysis of your overall retirement plan. A Roth conversion may make sense if you expect to be in a higher tax bracket later, believe tax rates will increase, want to reduce future required minimum distributions (RMDs), or hope to leave tax-free assets to your heirs. One of the most favorable opportunities often occurs during the early years of retirement. Employment income has typically ended, taxable income may be temporarily lower, and married couples can still take advantage of the wider Married Filing Jointly tax brackets before the surviving spouse eventually files as Single. However, converting isn't always the winning strategy. Many retirees can withdraw substantial amounts from traditional retirement accounts while remaining within their standard deduction. Current tax law provides a standard deduction, and additional deductions may be available for taxpayers aged 65 and older. Recent legislation has expanded those benefits even further. Tax laws are subject to change, and the impact should be evaluated based on individual circumstances. If retirement account balances are modest and other taxable income—such as pensions or rental income—is limited, paying taxes on a Roth conversion today may provide little or no long-term advantage. It's also important to consider the ripple effects. A Roth conversion can increase Medicare IRMAA surcharges, raise the taxation of Social Security benefits, and push income into higher tax brackets. The best answer isn't always "convert" or "don't convert." It's developing a tax strategy that minimizes lifetime taxes while supporting your retirement and estate planning goals. If you'd like to have a no-obligation discussion regarding your own situation, feel free to give me a call at 801-988-5827.

HOW LES BBQ BROUGHT AUTHENTIC TEX AS BARBECUE A N D S O U T H E R N H O S P I TA L I T Y T O D R A P E R .
When Les Rhodes Jr., first fired up a smoker for friends and family, he wasn’t thinking about opening a restaurant. Barbecue was simply part of who he was. Born in Victoria, Texas, and raised in Houston, Rhodes learned the art of barbecue at a young age. Growing up surrounded by smokers, family gatherings, and generations of Texas barbecue tradition, he developed a passion that would eventually shape his future. That future took an unexpected turn in 2019. “He was coaching at our sons’ flag football game when he decided to try and sell barbecue,” his wife, Chanel, recalls. “The feedback was so good he decided to move forward with turning it into a business.” What began with barbecue sandwiches served from the sidelines quickly grew into something much bigger. Rhodes dreamed of opening a restaurant where Utahns could experience authentic Texas-style barbecue prepared with patience, premium ingredients, and plenty of smoke. That dream became LES BBQ in Draper.
After Hurricane Harvey devastated much of southeast Texas, Les and his family relocated to Utah in 2017. They already had family here and had previously attended a wedding in Park City, where they fell in love with the state’s beauty and welcoming people. “We chose Draper because it was a great location, and Draper is thriving,” Chanel explains. Today, while the family of seven calls Tooele home, Draper has become the place where barbecue lovers gather for slow-smoked brisket, ribs, pulled pork, sausage, and the restaurant’s growing lineup of Texas favorites. And of course smoked oxtails. What separates LES BBQ from other barbecue restaurants isn’t just the food. “Our Texas hospitality and flavor are what sets LES BBQ apart from everyone else,” she continues. “We’re committed to making everyone feel like they’re part of this barbecue family.” That welcoming spirit and pursuit of smoked meats has earned Rhodes another title as well: Oxtail King. “OUR TEXAS HOSPITALITY AND FLAVOR ARE WHAT SETS LES BBQ APART FROM EVERYONE ELSE,” SHE CONTINUES. “WE’RE COMMITTED TO MAKING EVERYONE FEEL LIKE THEY’RE PART OF THIS BARBECUE FAMILY.”
Long before smoked oxtails became a trend, Rhodes was introducing customers and fellow pitmasters to the rich, flavorful cut. His pioneering approach has inspired countless chefs to experiment with smoked oxtails themselves—and even encouraged others to launch barbecue businesses of their own. For Rhodes, however, the greatest reward isn’t the recognition.

“He enjoys connecting with new people and bringing people together the most,” she states. That philosophy extends far beyond Utah’s borders. Through LESBBQ.com, customers across the country can order the restaurant’s premium smoked meats delivered directly to their door. Shipping barbecue nationwide comes with challenges, particularly ensuring every order arrives on time and at the proper temperature, but the opportunity to share authentic Texas barbecue with customers from coast to coast makes the effort worthwhile. The family has ambitious plans for the future. They hope to grow their e-commerce business, expand through franchising, and build LES BBQ into a household name for generations to come. But no matter how much they grow, Utah will always hold a special place in their story. “We will always love and adore Utah,” Chanel concludes. “The opportunities here are endless, and the people have been more than great.” For Rhodes and his family, barbecue has always been about more than perfectly smoked brisket or fall-off-the-bone ribs. It’s about gathering around the table, sharing great food, and treating every guest like family—one plate at a time.

interest in dairy goats eventually transformed the farm into a commercial goat dairy, licensed in 2000. Its farmstead designation means its cheeses are made on the farm using milk exclusively from the farm’s own goats. DrakeFamilyFarms.com
UTAH NATURAL MEAT
For the Bowler family, raising food in West Jordan is a tradition stretching back generations. At Utah Natural Meat, Shayn and Kristen Bowler operate a small family farm where customers can connect directly with the people—and place—producing their food. The farm offers grass-fed and grass-finished beef and lamb along with pastured pork, poultry and eggs, and raw milk from its dairy. Meat is dry aged, hand cut and wrapped in the farm’s own butcher shop. The Bowlers began selling meat to local customers in 2009, initially operating a store from their garage before expanding the farm’s retail and production facilities. UtahNaturalMeat.com

DEEP DARK DRINKING CHOCOLATE
A childhood spent partly in Switzerland introduced Emily Low Nichols to exceptional chocolate—and eventually inspired a Utah business of her own. South Jordan-based Deep Dark Drinking Chocolate specializes in European-style drinking chocolate, a thick, velvety alternative to traditional hot cocoa made with premium, ethically sourced dark chocolate. Nichols developed her own recipe after discovering that the drinking chocolate she enjoyed in European cafés was difficult to find back home. The company also incorporates a social mission into its business: Each bag purchased helps provide a day of food and education for an at-risk child in Ghana. DeepDarkDrinkingChocolate.com

BETS AND KATE TOFFEE
What began as a homemade Christmas tradition for two Herriman sisters grew into Bets and Kate Toffee, a small-batch confectionery built around old-fashioned English toffee. Co-owners Betsy Tanner and Katie Jensen began making toffee as gifts, but as family and friends started asking to buy it—and Christmas became too long to wait—the sisters decided to turn their tradition into a business. Their original roasted almond milk chocolate toffee has been joined by inventive flavors such as churro, Mexican hot chocolate, peppermint, and strawberries and cream. The company also makes chocolate-dipped pretzels, toffee bits, and toffee suckers. BetsandKateToffee.com

Flavors of Thailand Tuk Tuk’s continues to win over Utah diners with authentic Thai and Lao f lavors. The first things that greet guests at the Riverton location of Tuk Tuk’s are warm smiles, a welcoming interior followed by friendly service. That spirit of hospitality has helped transform Tuk Tuk’s from a west-side neighborhood favorite into one of Utah’s most celebrated Thai restaurants. Now, with its newest location serving the rapidly growing southwest valley, residents of Herriman, Riverton, Bluffdale, and South Jordan have easy access to the bold, vibrant flavors of Thailand and neighboring Laos. The restaurant’s name comes from Thailand’s iconic three-wheeled motorized taxis that zip through the streets of Bangkok and other cities. Like its namesake, Tuk Tuk’s offers an energetic journey through Southeast Asia’s most delicious culinary flavors. While many diners arrive expecting familiar favorites like pad Thai or Panang curry (which are some of the best renditions in Utah), the menu rewards adventurous eaters willing to explore beyond the classics. One standout is khao soi, a northern Thai curry noodle soup layered with rich coconut curry broth, tender noodles, and crispy fried noodles for texture.

Equally memorable is khao pad sapparot, pineapple curry fried rice served dramatically inside a hollowed-out pineapple. Sweet fruit, fragrant curry, savory rice, and your choice of protein create an ideal balance of flavors—a hallmark of Thai cuisine. Those seeking authentic Lao specialties will find dishes that remain surprisingly rare in Utah. Try nam khao, a crispy rice salad studded with fresh herbs, peanuts, lime, and fermented sausage. Family-owned and rooted in authentic recipes, Tuk Tuk’s has quietly built a loyal following across the Wasatch Front by staying true to fresh ingredients, balanced flavors, and genuine hospitality. Pad Thai arrives with perfectly balanced tamarind sweetness, bright lime, crunchy bean sprouts, and crushed peanuts. Drunken noodles showcase wide rice noodles stir-fried with Thai basil and vegetables, while rich curries—from Massaman and yellow curry to green and Panang—offer deeply layered flavors that can be customized to each diner’s preferred spice level. Panang curry with salmon

Recognized for its generous portions and authentic flavors, Tuk Tuk’s has earned multiple local accolades, including Best of Utah honors thanks to stir-fries that boast fresh herbs, garlic, basil, and chilies. Fresh spring rolls wrapped in delicate rice paper with herbs, vegetables, shrimp, and rice noodles arrive with an irresistible peanut dipping sauce. Chicken satay, Thai wings, and crispy egg rolls make excellent starters for sharing. For dessert, mango sticky rice remains a perennial favorite, while Thai iced tea provides the perfect sweet start to a flavorful meal. Nam Khao
Tuk Tuk’s newest location in Riverton has quickly become a welcome addition to the Jordan Valley’s expanding dining scene. Inside, the dining room is modern, colorful, and inviting—a comfortable place for casual family dinners, date nights, and celebrations. The restaurant also offers takeout and delivery. As communities like Herriman and Riverton continue to grow, so has demand for locally owned restaurants that offer something beyond the ordinary. Tuk Tuk’s is both adventurous and approachable, bringing authentic Thai and Lao cuisine closer to Jordan Valley residents for a flavorful journey in the comfort of your own city.

HALLOWEEN MAGIC
ARTICLE BY KELLENE RICKS ADAMS
PHOTOGRAPHY BY GARDNER VILLAGE
Gardner Village’s WitchFest highlights whimsical displays, festive traditions, and Halloween fun.
For more than a quarter century, Gardner Village witches have delighted Jordan Valley families. They perch on rooftops, gather around cauldrons, and turn up in unexpected corners of the historic West Jordan shopping village for the annual WitchFest. The Halloween tradition runs through October 31 with plenty of activities visitors can enjoy simply by strolling through the village or through ticketed experiences.
WHEN THE WITCHES TAKE OVER
When Gardner Village introduced Witches Night Out in 2000, visitors wore witch hats and gathered along luminary-lined pathways for music, entertainment, food, and fortune telling. The idea took flight. Witches Night Out grew as the village expanded its Halloween celebration around it. Gardner Village co-owner Angie Gerdes says the goal is creating a wholesome experience centered on fun and whimsy rather than anything scary or gory.
A CACKLE OF WITCHES
Some of WitchFest’s most recognizable attractions are the green-faced witches themselves. Visitors can look for larger-than-life witch displays arranged in humorous vignettes along the pathways while participating in the Bewitching Scavenger Hunt, which has visitors access the hunt on their phones using QR codes. Those who complete the 2026 scavenger hunt can purchase a cookie for $1 at Happy Camper Deli & Bakery.

a Witches Parade open to all adults 18 and older. The night concludes with a performance of “Thriller” featuring the Gardner Village witches.
SOMETHING TO EAT, SOMETHING TO TAKE HOME
Food is woven into the WitchFest experience as well. Visitors can sit down for a meal at Archibald’s Restaurant in the historic mill, grab something quicker at Happy Camper Deli & Bakery or stop at Chocolate Covered Wagon for caramel apples and sweets. During October, additional options include Archie’s WitchyWay Café on Mill Plaza and food trucks during peak days. After more than 25 years, WitchFest has become an annual tradition where visitors discover whatever new mischief the witches have dreamed up for the year. And that’s the real Halloween magic behind WitchFest.

Live Gardner Village witches appear in Center Court every Thursday, Friday, and Saturday between 12:30 and 8 p.m. Saturdays also feature a 12:30 p.m. Wee Witches Parade for children who want to dress in their witchy best and join the fun.
BREAKFAST, DINNER AND PLENTY OF HOCUS-POCUS
Two of the best-known WitchFest experiences are the ticketed Breakfast with a Witch and Witchapalooza Dinner Theater. Other reservation-based experiences include the Bewitching Escape Room, the Manifestations Magic Show dinner, the Witch Run, Witchy Spa Services, and witch-themed art workshops. THE ART OF CURIOSITY
ARTICLE BY HEATHER L. KING | PHOTOGRAPHY BY BRIAR WEST
If you had met Briar West a few years ago, you probably would’ve found her immersed in medical research, surrounded by data. Art wasn’t part of her plan. “My whole background is medical research,” West says. “I am all math and science my entire life.” But sometimes the most meaningful journeys begin unexpectedly. Following her divorce, West found herself searching for a creative outlet during quiet evenings at home. While shopping for supplies for one of her children, she

picked up a few bottles of alcohol ink—not because she wanted to become an artist, but simply because she was curious. “One night, I just started working with them and seeing that they dilute,” she recalls. Her kitchen quickly became an experimental studio. Rubbing alcohol, nail polish remover, brake fluid—nothing was off limits as she explored how different liquids reacted with the vibrant inks. “I wasn’t trying to make art,” she explains. “I just realized when I was done, I felt better.” That simple act of creative exploration would change her life. After sharing her work online, West quickly attracted a devoted Instagram following. Custom commissions began pouring in, and during the pandemic, when rubbing alcohol disappeared from store shelves, necessity sparked another discovery. “I ran to the local liquor store and grabbed some vodka,” she laughs. “When rubbing alcohol reappeared on shelves, I realized, I like what the vodka does with the rubbing alcohol.” Today, that unique combination has become part of her signature technique, producing fluid, layered compositions filled with movement and luminous color. Three years ago, West left medical research to become a full-time artist.
“I specialize in large-scale paintings,” she says. “I’ve got pieces in Park City, in Salt Lake, and I ship all over the U.S. I’m so grateful to do what I love.” She is equally passionate about helping others rediscover their own creativity. Partnering with Alpine Distilling Social Aid & Pleasure Club in Park City, West hosts immersive art workshops that invite participants to experiment with alcohol inks in a relaxed, welcoming environment. The classes have become especially popular for girls’ nights, family gatherings, corporate events, and celebrations. “I started doing these art nights as a way to give back,” she explains. “Especially as women, we don’t take time for ourselves. It’s very rare that we take time to be curious and play.” Unlike traditional art classes, there are no rigid rules or intimidating critiques. She gently guides guests through the creative process, encouraging experimentation over perfection. “My goal is for you all just to be curious and have fun and enjoy each other’s company.” For West, creativity isn’t simply about the finished piece—it’s about embracing the process, remaining open to discovery, and finding joy in the unexpected. Through every swirl of color and every workshop West leads, she’s proving that anyone can create something beautiful when they’re willing to let go of perfection and simply begin.

Trust Your Gut WHY GUT HEALTH IS THE FOUNDATION OF WHOLE-BODY WELLNESS.
Brandy Price Certified Nutrition and Gut Health Coach Brandy Price believes better health begins in the gut. As the founder of Beyond the Plate, she helps women move beyond fad diets to uncover the root causes of fatigue, inflammation, hormone imbalances, and digestive issues. Price shares practical, science-backed strategies for nourishing the microbiome and explains how small, sustainable changes can transform overall wellness from the inside out.
HOW DOES A HEALTHY GUT INFLUENCE YOUR BODY’S HEALTH?
Think of your gut lining as a security checkpoint. Its job is to let the good stuff like nutrients through and keep everything else in the tube where it belongs. When that checkpoint is doing its job, digestion is quiet, your immune system is not on constant alert, and the bacteria in your gut are producing compounds that lower inflammation and support neurotransmitter production. When it’s not, things leak through that were never meant to. Your immune system responds with inflammation. Chronic low-grade inflammation is a known contributor to fatigue, joint pain, skin flares, low mood, and foggy thinking. It’s one system. We just experience it as a dozen unrelated complaints.

HOW OFTEN ARE CLIENTS SURPRISED TO LEARN THEIR SYMPTOMS MAY BE CONNECTED TO THEIR GUT?
Almost every time. And the reaction is usually relief because she has been carrying around this collection of symptoms that felt random, and random is frightening. The moment she understands that her bloating, exhaustion, and foggy thinking might all be speaking the same language, something shifts. It stops feeling like her body is falling apart in six directions and starts feeling like there is one thread to pull. That conversation is often the single most valuable thing that happens in our first meeting.
WHAT LIFESTYLE HABITS HAVE THE BIGGEST IMPACT ON GUT HEALTH?
Sleep and stress. Chronic stress puts your body in fight or flight, and digestion is the first system your body powers down when it thinks you’re in danger. Your body cannot tell the difference between an actual emergency and a Tuesday, so if you are living at a low simmer of stress, your digestion is running at half power all day. Poor sleep shifts your cortisol curve, disrupts your microbiome, and increases inflammation. You cannot out-eat a nervous system that never gets to stand down. The practical version: walk after meals, breathe before you eat instead of inhaling lunch over your keyboard, and protect your sleep like it’s a health intervention. Because it is one.
IF READERS ONLY MADE THREE CHANGES TO IMPROVE THEIR GUT HEALTH, WHAT WOULD YOU RECOMMEND?
1. Add protein and fiber to breakfast. It sets your blood sugar and your energy for the entire day, and it’s the single change that gives people the fastest noticeable result. 2. Eat more kinds of plants. Do not count servings, count varieties. Different vegetables, fruits, beans, nuts, seeds, and herbs across the week. Aim for 30 different plants in a week and treat it like a scavenger hunt instead of a rule. 3. Take ten minutes to walk after your largest meal. It supports motility, blunts the blood sugar spike, and gives your nervous system a chance to shift into a state where digestion actually works.

Walking into Redemption Bar & Grill in Herriman, you’ll quickly realize it isn’t your average watering hole. Opening during the global pandemic in June 2020, owners Bryan and Jaime Ellison knew they had to create something extraordinary. They chose a name that stood for hope and second chances. Bryan built the bar on a foundation of giving back. From paying school fees for families in need to matching donations for the local Compassion Community Center food bank, the Ellisons prove that a great business puts community first. They even have a “challenge coin” program where patrons buy a $10 coin to cover the tab for military members and first responders. Looking to host a killer party? Redemption has you covered with three distinctly themed levels you can rent as the perfect backdrop for your next gathering. Whether you want to book the rooftop Tiki bar for a breezy birthday bash, secure the basement club for a private corporate event, or reserve space on the main sports floor, their team makes hosting an unforgettable night an absolute breeze. The Redemption kitchen team offers up in-house smoked brisket on the American Dip and a massive Triple Decker Redemption Club. Feeling adventurous? Try the inventive Peanut Butter Sriracha Burger, piled high with sriracha bacon and peanut butter. Whatever you do, don’t skip Sunday brunch. Locals rave about the signature Redemption hash and crispy French toast sticks dipped in spicy raspberry chipotle jam. You can even grab a breakfast burrito packed with flavorful chili verde or dive into a chorizo burger. Once you are fueled up, it is time for entertainment. Redemption is the undisputed king of nightlife in the south valley. You can cure your Monday blues with mac & cheese specials, test your brainpower at Wednesday trivia, or sing your heart out at Thursday night karaoke. Weekends are a blast with live music, comedy shows, and DJ sets. If you are a sports fan, this is your paradise. With high-definition TVs everywhere, it’s the ultimate spot to watch professional football, college football, and MMA fights.
