Letter from the Publisher

Welcome to our Gentlemen’s Issue! This month, we’re highlighting several influential men and local businesses that are making an impact in their communities, serving their families, and honoring generational legacies. We take pride in sharing stories of impact, encouragement, and influence, all of which make Johnson County such an amazing place to live.

In these pages, you’ll hear how Michael Jerwick, owner of Slabotsky’s Menswear, is honoring his father’s legacy by focusing on the details of client relationships and quality clothing. Jerwick shares that his top priority is carrying on the legacy of his father through dedication and hard work.

We also sat down with Dr. Chris Surek and learned what it takes to prioritize work-life balance and spend time with family, all while running a prestigious plastic surgery practice focused on precision, restraint, and a deep understanding of what patients truly want.

You’ll hear the story of three brothers who built a thriving construction business on a foundation of trust, creativity, and an indescribable bond. That bond overflowed into a creative endeavor—their band, Wonderscope—and the chance to participate in a survival reality TV show.

These three stories aren’t all that is included in our Gentlemen’s Issue. Enjoy more stories as you explore these pages. As always, thank you for reading, being a part of our community, and engaging with our partners. Enjoy the issue!

BUILT ON TRUST

HOW HOMETOWN POOL IS REDEFINING BACKYARD LIVING

For David and Holly Brucker, building Hometown Pool was never just about pools. It was about creating something lasting, both for their family and the community they call home. “We’ve worked together for over 10 years, so building Hometown Pool was a natural progression for us,” David says. “We each bring different strengths. I’m very process-driven, while Holly is focused on the experience. That balance shapes how we operate every day.”

That partnership extends beyond business. David and his wife Holly have been married 27 years, and that foundation shows up in how they approach every project. “Because we’re fully invested both personally and professionally, decisions get made with a long-term mindset,” he explains. “It has strengthened both our relationship and the business.”

Being local plays a major role in how they work. Their clients are often people they already know or will run into again. “These aren’t just customers. They’re neighbors, friends, and referrals that often trace back years,” David says. “We’re not building and disappearing. Our reputation stays tied to every project.” Hometown Pool didn’t start with pools. The company’s roots are in landscaping, shaping outdoor spaces long before pools became the centerpiece. The shift came after David saw firsthand where things were going wrong in the industry.

“As a licensed professional engineer, I was brought in as a consultant on several pool builds that had gone off track,” he says. “Issues with grading, drainage, layout, and planning that should have been solved before construction ever started.” That experience changed his perspective. “Most of the problems weren’t happening during the build. They were happening before it.” That realization became the foundation of their approach today. Planning comes first, and it’s thorough. “Once we saw the opportunity to approach pools differently, with proper engineering and full-site planning from the start, it made sense to expand,” David says.

It’s also how they’re changing the perception that pool installation is stressful. “That perception is real,” he admits. “Most of the stress comes from poor planning and lack of communication. We address both.” Clients are guided through every step, with clear timelines and constant updates. “When the project is properly planned and communication stays open, the process becomes predictable instead of reactive,” he says. “That’s what removes the stress.”

Behind the scenes, details like permits, grading, and HOA approvals can slow projects down. Hometown Pool takes those on directly. “That’s where most projects break down,” David explains.

“We handle the permitting side completely, and we guide homeowners through HOA approvals with everything they need so it’s done right the first time.” They’ve also made pool ownership more accessible through financing. “It removes the biggest barrier for most people, which is timing,” he says. “We offer true zero out-of-pocket, 100 percent financing for qualified buyers. It allows them to move forward without having to write a large upfront check.”

CONTINUED

Efficiency is another key part of their model. Fiberglass pools and strong pre-construction planning allow them to move faster than traditional builders. “Once we break ground, most fiberglass pool installations are completed in a matter of weeks, not months,” David says. “The key is that most of the work happens before the first shovel hits the ground.”

Even with that speed, quality never takes a back seat. “We’re not cutting corners,” he says. “Speed comes from preparation, not rushing the work.” When it comes to design, the goal is always the same. Create a space people actually use. “It’s about more than the pool,” David says. “Layout, elevation, lighting, seating areas, and flow all matter. When everything connects, it becomes a space people live in, not just something they look at.”

That mindset ties back to something simple but powerful. Community. “When you expect to see someone at the grocery store or sitting a few tables over at dinner, you build differently,” he says. “There’s a level of pride and accountability that comes with knowing the people you’re building for.” For David, that’s what makes the work meaningful. “These are spaces where families spend time and make memories,” he says. “Being trusted with that in our own community is something we take seriously.”

In the end, David and Holly believe the difference comes down to the experience. “Anyone can sell a pool,” David says. “We’re focused on delivering an experience. One that carries through the build and continues long after the project is complete.”

THREE BROTHERS, ONE VISION

How the Olson Brothers Balance Business and Imagination

PHOTOGRAPHY BY SAMUEL OLSEN

For the Olson brothers, building something together has never been a question. It is simply how they have always lived. Long before there was a construction business or a band, they were three brothers learning how to create, compete, and figure things out side by side. “We know each other inside and out,”

“It takes consistent work, discipline, and communication. But once you fall in love with the process, it doesn’t feel hard anymore. It just becomes part of who you are.”

says Daniel Olson. “As kids, we were pushed by our parents to use our imagination, always building, competing, and figuring things out together. Most importantly, we knew how to have fun doing it. That hasn’t changed. Now we just bring that same energy into business.”

That shared history shows up in the way they work today. Each brother has a role that fits naturally. “David is the details, Luke is the support and ideas, and I bring the drive,” Daniel explains. “On top of that, there’s years of built-in trust. That’s what makes those strengths actually work together, not against each other.” Like any family business, it is not always seamless. “Not going to lie, it can be messy,” he says.

“But you’ve got to be willing to go through the mess, have the hard conversations, and figure things out. We’ve been doing that since we were kids. It’s never perfect, but it’s always worth it.”

That mindset has helped them grow a construction business that continues to gain momentum. For the brothers, success is not just about scale. “At this stage, success looks like steady growth,” Daniel says. “Sharpening our skills, coming up with new ideas, and continuing to build something that lasts. At the same time, it’s about enjoying the process and not losing sight of our lives and relationships along the way.”

Even in a hands-on industry like construction, creativity plays a role. It is something they never left behind, even as adults. That creative side eventually found a new outlet in an unexpected place. Wonderscope, their band, started as a way to reconnect with that part of themselves. “We realized we didn’t just want to work to live,” Daniel says. “We wanted to build something creative that brought our imagination back and let us have fun the way we did as kids again.”

The sound they have created reflects the music they grew up on. “It’s a blend with a strong pull from the 80s and 90s, with a lot of synth driving it,” he says. “More than anything, we want people to be able to see and imagine the music in their heads, not just hear it. Like it takes you somewhere.” What began as a creative outlet has turned into something more meaningful. “Wonderscope has become a space where we and our friends get to create together,” Daniel says. “Every Tuesday night, it’s a group of grown men getting back to using our imaginations and building something fun. There are also a lot of fathers in the group teaching their kids they never have to stop using their imagination. It’s honestly been life-changing.”

Balancing both worlds takes effort. “At first, it was hard to figure out,” he admits. “It takes consistent work, discipline, and communication. But once you fall in love with the process, it doesn’t feel hard anymore. It just becomes part of who you are.” That outlook comes from how they were raised. “Our mom taught us to use our imagination and play, and our dad taught us that anything is possible,” Daniel says. “Taking risks has never felt like a do-or-die decision. It’s more like an adventure. You just have to go and figure it out along the way.”

It is a perspective they now share with others trying to balance work and creativity. “A creative endeavor will only succeed if you figure out a process, fall in love with it, and make it part of your life,” he says. “Start slow, build over time, and stay consistent. Eventually, you find yourself looking forward to it.”

That same sense of adventure recently led them somewhere entirely different. “We all signed up for survival shows not knowing what would happen,” Daniel says. “It ended up bringing us together on one experience. We’ve always loved the outdoors and competition, so it felt like the perfect challenge.” The experience confirmed what they

“As kids, we were pushed by our parents to use our imagination, always building, competing, and figuring things out together. Most importantly, we knew how to have fun doing it. That hasn’t changed. Now we just bring that same energy into business.”

already suspected. “We always thought we were tough and knew each other well,” he says.

“Being put to the test proved just how strong we are, not just individually but as a team.”

Looking ahead, the brothers are not slowing down. “Both the construction business and

Wonderscope are going strong,” Daniel says. “We’ve got more music on the way and plans to start doing local shows.” At the center of it all is something simple. Three brothers who never stopped building, never stopped creating, and never stopped finding ways to enjoy the process together.

Cosmetic MORE THAN

BY

In a field often defined by transformation, Dr. Surek approaches plastic surgery with a mindset rooted in precision, restraint, and a deep understanding of what his patients truly want. For him, the goal is not to change how someone looks, but to help them reconnect with themselves. “I love my job,” he says. “Being able to help patients restore their confidence through customized surgical plans

brings me great joy.” His patients come to him at different stages of life, each with their own motivations. “Whether it is a mother post-pregnancy, someone after weight loss, or a patient who simply wants to look as good as they feel, my objective is to use everything in my skill set to get them the results they are seeking.”

That philosophy requires a careful balance between enhancement and authenticity. “It’s always a delicate balance ensuring meaningful results while maintaining a natural look,” he explains. “During the consultation, I try to engage with the patient on a personal level and really understand their motivation and aesthetic goals.” Plastic surgery, he says, is one of the few specialties where science and artistry meet so directly. “We have the scientific training and techniques to perform the operation, but it is also paramount to deploy a customized artistic approach,” he says. “Aesthetic judgment is what separates an average result from a great result.”

Dr. Surek’s path reflects that commitment to refinement. After years of intensive training, he pursued advanced fellowship work to further develop his expertise in facial procedures. “That was a fantastic year that allowed me to advance my skill set to another level and come back to Kansas City with confidence and enthusiasm,” he says. His dedication to anatomy has also shaped his reputation as an educator. “Everything we do is simply treating anatomy,” he explains. “Every crease, shadow, or contour in the human figure traces back to some anatomical structure.” Teaching, researching, and lecturing have become an extension of his work. “I truly believe it makes me a better surgeon and the best version of myself in the operating room.”

Public perception of plastic surgery has evolved over the years, and Dr. Surek has seen that shift firsthand. “There was a time when media coverage of

celebrity procedures skewed how people viewed plastic surgery,” he says. “Now we’re seeing more transparency, and many results are great but not overdone. I hope that continues so we can dispel some of those outdated perceptions.”

Building a successful practice, he notes, goes far beyond technical skill. “Work ethic, discipline, and constant self-assessment are the principles I try to follow,” he says. “I’m passionate about what I do, and that makes it easy to keep pushing forward.” That mindset carries into the patient experience. “I tell my staff to treat every patient like a family member,” he says. “Our focus is on quality, not quantity. We want each person to feel heard, supported, and part of the family.”

Looking ahead, he is particularly energized by advancements in regenerative medicine. “Plastic surgery was born through innovation, and it’s constantly evolving,” he says. “That’s what makes it exciting.”

Outside the operating room, life slows down in a different way. “An ideal day would be spent with my wife, our two kids, and our two pugs,” he says. “A lot of our time revolves around golf, boating, and supporting our kids in their sports.” Like many in medicine, balance is something he continues to work toward. “It can be hard to turn it off,” he admits. “But I’ve learned to prioritize time with my family and keep my priorities in the right place.” Living in Kansas City has also shaped his perspective. “It’s an incredible city with a great community and so much to offer,” he says.

For those considering plastic surgery, his advice is simple and grounded. “Don’t get caught up in misleading marketing,” he says. “Focus on finding a surgeon who understands your goals, connects with you, and has the skill set to help you achieve them.” For more information visit

PICKLE-BRINED CHICKEN WINGS SOAR TO THE NEXT LEVEL WITH ALABAMA WHITE SAUCE.

Pickle In A

I’ve spent years searching for the perfect wing flavor, never quite satisfied, until I heard a podcast suggestion: brining chicken wings in pickle juice. It sounded strange at first, but it yields incredibly tender and flavorful wings! Since then, I save pickle juice from every jar I buy just to recreate these beloved wings. If I run out of pickle juice, olive juice works too. I air fry mine, but if you don’t have an air fryer, cook them as you normally would. Don’t forget to toss them in a buttery dill sauce and try the Alabama white BBQ sauce for an extra layer of goodness!

Pickle Juice Brined Wings

INGREDIENTS

• 2 pounds chicken wings (flats and drumettes)

• Pickle juice - enough to cover wings

• 1 – 2 teaspoons garlic salt

• ¼ teaspoon pepper

• 6 tablespoons butter

• A few dashes of hot sauce

• 2 tablespoons fresh dill, chopped

INSTRUCTIONS

1. Place chicken wings in a non-reactive container and pour pickle juice over chicken wings until completely covered.

2. Place it in the fridge and let it marinate, covered, for at least 8 hours.

3. Drain wings, discard pickle juice, and completely pat wings dry.

4. Put dried wings in a bowl and sprinkle with garlic salt and pepper. Mix well.

5. Place wings in an air fryer basket, being careful not to crowd. Cook at 400 degrees for 28 minutes, turning every 8 minutes until crispy. If you don’t have an air fryer, bake them in the oven for 35 - 40 minutes at 400 degrees, flipping halfway through.

6. Melt the butter and add a few splashes of hot sauce of your choice and mix in a bowl. Add wings and completely cover with butter mixture. Sprinkle with fresh dill and toss a few times, and serve with my white barbeque sauce.

Alabama White BBQ Sauce

INGREDIENTS

• 1 ½ cups mayonnaise (I prefer Duke’s)

• ¼ cup water

• ¼ cup white wine vinegar

• 1 tablespoon pepper, coarsely ground

• 1 tablespoon Creole mustard

• 1 teaspoon salt

• 1 teaspoon sugar

• 2 garlic cloves, minced

• 2 teaspoons prepared horseradish

INSTRUCTIONS

Whisk all ingredients together until blended. Dip your pickle juice-brined wings in this sauce and taste the joy!  Store in the refrigerator for 1 - 2 weeks.

Honoring Tradition at Slabotsky’s

For nearly a century, Slabotsky’s has been part of the fabric of Kansas City style. What began in 1935 has grown into something more than a menswear store. Today, under the leadership of Michael Jerwick, it carries forward a legacy built on service, consistency, and a deep respect for the customer. “We’ve always been very anti-department store,” Jerwick says. “Customer experience has always motivated us. We focus on a very detail-oriented, intimate experience, from selecting attire to tailoring to every interaction with our staff.”

In a retail world that has shifted toward speed and convenience, Slabotsky’s has stayed grounded in something more personal. “As online shopping and convenience-based retail have grown, we’ve really zigged when everyone else has zagged,” he says. “We’ve stayed true to who we are. A small, intimate feel with great selection and even better tailoring.” That mindset was shaped early by his father, whose presence still defines the store today. “Lesson number one is that everybody who comes into the store needs to know you’re going to break your back for them,” Jerwick says. “My dad always made sure customers could feel the energy and effort we were putting in.” Since his father’s passing, that lesson has taken on even more meaning. “Not 10 minutes goes by without me thinking about him,” he says. “What I’ve realized is that clothing can be a reprieve for people. It can bring energy into their life.”

He recalls moments that put the work into perspective. “We had a family come in to buy a suit for their son’s funeral,” he says. “As awful as that situation was, being in the store gave them something else to focus on. That stuck with me. We’re here to make people look good and feel good, whether it’s the best day of their life or the worst.” Carrying that responsibility forward is central to how Jerwick approaches the business. “My biggest priority is continuing what my dad built. The way he made people feel, his work ethic, his energy,” he says. “At the core of it, it’s about making every person who walks in feel special, heard, and taken care of.” That feeling is intentional, from the first greeting to the final fitting. “It starts with a genuine smile,” he says. “We offer a drink, a place to sit, understand what they need, and then work as hard as possible to deliver that efficiently.”

The store’s move from Grand Boulevard to the River Market marks a new chapter, but one that still honors its roots. “This space represents a more elevated aesthetic and experience,” Jerwick says. “We’re in a great neighborhood with incredible energy, and it’s given us the opportunity to build something truly unique.” Inside, the showroom reflects that vision. “We wanted an old-school menswear feel,” he says. “Rich browns, greens, textures. The main showroom feels like a living room. You can sit, have a drink, and spend time.” With music playing, vintage details, and a thoughtfully designed layout, the space feels both refined and approachable. “It’s elevated, but inviting,” he adds.

“My dad always made sure customers could feel the energy and effort we were putting in. Not 10 minutes goes by without me thinking about him.”
“My biggest priority is continuing what my dad built. The way he made people feel, his work ethic, his energy,” he says. “At the core of it, it’s about making every person who walks in feel special, heard, and taken care of.”

Even as the environment evolves, the philosophy remains the same. “Exceptional service is the DNA of Slabotsky’s,” Jerwick says. “The inventory evolves, but how we work never will. It’s about courtesy, energy, and elbow grease.” That extends to the clothing itself. Rather than chasing trends, the focus is on pieces that last. “We don’t trend hop,” he says. “We focus on timeless, versatile pieces that can be styled multiple ways. If someone spends money with us, we want them to get real value.” For Jerwick, style is about building a wardrobe with purpose. “Every man should have a navy, brown, and tan suit,” he says. “Add in knit polos, textured dress shirts, clean sneakers, and good loafers. It’s about versatility and quality.”

Looking ahead, his goals are clear. “I want to be the best menswear store in Kansas City,” he says. Plans include expanding custom suiting, growing their in-house brand, and hosting events that bring the community together. Through it all, the heart of the business remains deeply personal. “This store lets me feel close to my dad,” Jerwick says. “It feels like I’m living the life he lived. I just hope he’s proud.”

And if the next decade looks anything like the last, Slabotsky’s will continue to stand for something rare in modern retail. Not just great clothing, but a place where people feel seen, valued, and taken care of the moment they walk through the door. For more information visit www.slabotskyskc.com/.

Mean Mule

For Meg Evans, building Mean Mule was never just about making spirits. It was about creating something with meaning, rooted in family history, hard work, and a deep connection to Kansas City. “This was a major factor in our decision to branch out and do our own thing,” Evans says of her family’s distilling background. “I was inspired by the culture I grew up in, people working with their hands, making things, and doing whatever it takes to build good lives for their families. We wanted to do something interesting with our lives too.”

That story lives on in the name. “My great grandfather was distilling during Prohibition and hid his equipment under a false floor in the barn,” she explains. “When revenuers came looking for it, they were scared off by a mule that started causing a ruckus. We say that mule saved our family from ruin.”

When Evans and her team launched Mean Mule, they were not trying to follow a trend. They were chasing something they genuinely enjoyed. “We wanted to make something we loved and do it our own way,” she says.

“Around 2015, agave spirits were just being introduced as craft in the U.S., and we were excited by the idea of trying something different.” That led them to work with 100 percent Blue Weber agave, a choice rooted in both quality and sustainability. “We care deeply about quality, and cutting spirits with grain alcohol was never even a consideration,” Evans says.

Their willingness to experiment has defined the brand ever since. One of their most distinctive offerings, an agave-based gin, came from simple curiosity. “One of our distillers is a huge gin fan and wanted to see how an agave base would work,” she says. “It ended up being warmer and a little sweeter than traditional gin. It is great for people who don’t like something that tastes like trees.” That spirit of experimentation has been there from the beginning. “We built

From Prohibition Roots to Kansas City Craft Spirits

our equipment ourselves, including our stills, and pulled the whole business together on a hope and a prayer,” Evans says. “The question was never tradition versus innovation. It was whether it could be done at all.”

Nearly a decade in, that mindset still shapes how they create. New ideas come from the entire team. “We follow about a six week process with pitches, testing, and feedback,” she says. “Anyone can contribute, which makes us stronger together.” At the center of it all is the experience they create for guests. “People can choose to drink anything anywhere,” Evans says. “Our job is to make them feel a sense of belonging when they are here.”

That sense of community has been tested and proven over time. “We saw it during COVID when we were delivering cocktails to doorsteps,” she says. “And we saw it this past year when our community showed up for us after my husband passed.”

Kansas City itself has played a major role in their growth. “I always say this is the best place to start something,” Evans says. “People here love local. They want to support what is being built in their city, and that has been integral to our success.” That local connection extends into collaborations. “No part of our business would be here without artists and other small businesses,” she says. “From our logo to our furniture, the craftspeople of this city are part of everything we do.”

Running a distillery has not come without challenges. “It is constant adjustment,” Evans says. “You have to stay flexible and build systems that can bend without breaking.” The personal side of the journey has been just as demanding. “We started this when I was 24, and I’ve grown up through every phase of life while running it,” she says. “Being an entrepreneur is like self development on speed. It is much more work than play.”

Still, there are moments to enjoy. “After a long day, I love a spicy margarita,” she says with a smile. “It is just good, no questions.”

Looking ahead, Evans is focused on steady evolution. “Our canned cocktail line has become a big focus as that market grows,” she says. “At the same time, we are continuing to make great drinks in the bar.” Through it all, her vision for Mean Mule remains grounded. “I want us to be remembered as people who really loved Kansas City and contributed to a sense of place and community,” she says. “We’ve seen people meet here, get married, and bring their babies back. Showing up authentically through all of that feels like the most important thing.”

AN EXCERPT FROM EPISODE 6 OF SHARE THE LIFESTYLE, A CITY LIFESTYLE PODCAST

MIKE JOHNSON HAS BUILT HIS LIFE AROUND ONE QUIETLY RADICAL IDEA: THE STANDARD YOU SET PRIVATELY IS THE ONLY ONE THAT MATTERS.

After eight years in the Air Force, a celebrated run on national television, and a health crisis abroad that sent him deep into supply chains and ingredient certifications most founders never touch, the result is Oshun — a luxury ritual brand built on provenance you can trace and integrity you can verify. In an exclusive conversation for the Share the Lifestyle podcast, Mike shares what it actually takes to build something worth putting your name on. Read the highlights below, then scan the QR code for the full episode.

Q: YOU BECAME A FAN FAVORITE ON THE BACHELORETTE AND THEN LEFT THE SPOTLIGHT. YOU MOVED TO MEXICO, LEARNED SPANISH, THEN COSTA RICA, AND BUILT A COMPANY. WHAT DID THAT EXPERIENCE TEACH YOU ABOUT HUMAN BEHAVIOR?

A: “If you’re a good person going in, that shows. If you’re not, that shows too. I also learned that people form this parasocial relationship with you — they assume things about you. When in all actuality, different circumstances bring out different parts of who you are. I was on TV trying to find love. The kindness people were showing after felt a bit fake, because they wanted to be a part of something that isn’t who I am individually, but a part of what they saw on TV. And so I had to get away from everybody and everything and the noise.”

THE QUIET STANDARD:

MIKE JOHNSON

“Too many people have prayed for me. So I’ve got to get up and do the walking.”
— Mike Johnson

Q: YOU JOINED THE AIR FORCE RIGHT OUT OF COMMUNITY COLLEGE. WHAT WERE YOU ACTUALLY RUNNING TOWARD?

A: “There was something in me that was saying: I’m not living up to my full potential. I was being a follower. My uncle said, ‘What’s going to make you become an adult the fastest?’ I said, obviously, the military. The Air Force broadened my thought process more than anything. We’re so caught up in our own perception — when you learn to understand different people’s perspectives, it adds to you in so many ways.”

Q: WITH OSHUN, YOU OWN YOUR MANUFACTURING, YOU EMPLOY A CHEMIST, EVERY PRODUCT HAS A BATCH NUMBER TRACEABLE TO ITS ORIGIN DATE. WHY DID YOU DECIDE TO GO THAT DEEP WITH THE BRAND?

A: “The EU bans 1,100 ingredients in personal care products. The U.S. bans nine. That’s my starting point. Oftentimes, it might be the same ingredient, but it comes from a place where it doesn’t have the highest purity. And 60% of what we put on our skin is absorbed. Every product Oshun makes carries a batch number that goes back to the exact day it was created — I can show you every single supplier, the date, the origin. I own more than one part of the supply chain because that’s the only way I can stand behind what’s in the bottle.”

This conversation is just the beginning. Mike goes deeper into why he’s buying land up north, the family in the Philippines who prayed over his factory floor, and what he’d tell every person ready to stop performing and start building. SUMMER GRILL RECIPES

THESE DELICIOUS RECIPES ARE LIGHT, BRIGHT AND FEEL LIKE SUMMER

The sun has returned, and grilling season is upon us. With the nice weather comes vegetable gardens and fresh produce, along with the overwhelming desire to be outside as much as possible. We’ve compiled some fresh and light dishes that you can shop for at your local farmers market and whether you’re looking for a quick mid-week meal or something to grill for a crowd on the weekend these dishes won’t disappoint. These pair well together or can stand on their own!

INGREDIENTS:

• 2lbs. Outside skirt steak*

• 2 Tablespoons lime*

• 2 Tablespoons finely, chopped cilantro

• ¼ Cup olive oil or avocado oil

• ¼ White onion, finely chopped

• 1 Tablespoon cumin

• Salt and pepper to taste

DIRECTIONS:

1. Place skirt steak into gallon freezer bag

2. Combine all other ingredients in bowl and mix. Pour over steak and marinate for 3-4 hours or overnight in the fridge.

3. Bring skirt steak to room temperature by letting it sit out for one hour.

4. Get your grill hot on one side and medium on the other.

SIMPLE SKIRT STEAK

5. Once the grill is ready, wipe excess marinade off steak. Starting on the hot side, place skirt steak on grill for 2 minutes per side, attaining a nice sear.

6. Transfer steak to the cooler side of grill and cook until the internal temp is 130°. Let rest for 10 minutes (temp will rise while resting).

7. Carve and serve. This dish pairs well with beans and rice or served as tacos. Following is a chimichurri sauce that compliments it nicely.

*Outside skirt steak is a more tender cut than inside skirt steak, for this recipe outside skirt is recommended. Do not use too much lime as the citrus can cook the meat before putting it on the grill, resulting in a tougher texture.

SUM MER

CHIMICHURRI

INGREDIENTS:

• ½ Cup parsley, finely chopped

• ½ Cup cilantro, finely chopped

• 2 Tablespoons red wine vinegar

• 3 Cloves garlic, minced

• 1 Red chili (whole or deseeded depending on desired level of heat)

• ½ Teaspoon dried oregano

• 1 Teaspoon salt

• 1 Tablespoon lime juice (optional)

DIRECTIONS:

Combine all ingredients in a bowl. You can make this in the late morning and let it sit for around 4-6 hours, or you can make it the day before and let the flavors meld overnight in the fridge. Just be sure to take it out and get it to room temp before you serve it, as olive oil hardens in the fridge. Serve over skirt steak or tacos.

ROASTED CORN SALSA

INGREDIENTS:

• 2 Ears sweet corn

• 10oz. Cherry tomatoes

• ¼ Cup lime juice

• 1 Finely chopped jalapeno or serrano (whole or deseeded depending on desired level of heat)

• ¼ Cup cilantro, finely chopped

• ½ Cup white onion, chopped

• 2 Cloves garlic, minced

• Salt to taste

DIRECTIONS:

1. Grill corn, you do not need to soak the corn beforehand.

2. Place corn on the grill (inside their husks) over medium heat turning every few minutes.

3. After 10 to 12 minutes shuck the corn and put the cobs back on the grill for 2-4 minutes rotating frequently to achieve that charred look and flavor.

4. Cut the corn from the cob, place in bowl and add all other ingredients. Let the mixture meld for about an hour and serve with tortilla chips or as a taco garnish.
