Summer is the perfect time to come up with a bucket list of activities to enjoy and ways to unwind and relax. Some of the best summers spent are often not filled with constant activities and trips, but are those that reflect a slower pace and simple moments of enjoying those around us. Although the “lazy days of summer” isn’t always something we can attain with our packed schedules, it is so refreshing to take some time to slow down and enjoy some of the simple pleasures that remind us of our own childhoods. Some of the most enjoyable times spent can be a backyard barbeque with friends, making s’mores by a fire pit, spending a day on the water, eating ice-cream on a hot summer day, or simply taking in the night sky with someone you love. In this issue, we wanted to introduce you to the person behind KC Bucket List, Mindy Hargesheimer. She loves all things KC, and is the guru on where to go for entertainment, food and leisure around our city. She is sharing a summer bucket list of ideas with you if you are looking for something new to explore this summer. We also share about the upcoming induction of Buck O’Neil into the Baseball hall of Fame. Buck was an extraordinary ball player and an even better human being who worked tirelessly to bring unity to the world through love and grace. In addition, it is our privilege to shine a light on a local veteran’s organization called War Horse for Veterans. This equestrian facility is dedicated to helping veterans and first responders cope with PTSD among other things. There is no greater sacrifice than to risk your life in order to protect others. We have an immense respect for the men and women who make the selfless decision to serve and protect our nation, and the team at Lifestyle wants to thank all veterans, those still serving and all of their loved ones for your service. I hope you are able to enjoy some of the many things our city offers during these hot days of summer and that you make memories with those around you that you love.

• 1 ball of mozzarella, sliced thin • 10 oz Assorted Italian deli meats, (I used Soppressata Salami, and Mortadella) • Olive Oil • Italian seasoning • Salt and Pepper, to taste • 1 tablespoon capers (optional)

These make-ahead sandwiches combine hearty ciabatta bread and are loaded with delicious Italian deli meats and cheese. This sandwich is impressive, tasty, and perfect for pool parties, picnics, and tailgates.

INSTRUCTIONS 1. To roast the red peppers: Set your pepper on your cooktop flame or grill. Cook until they are mostly black, turning as needed. Place the peppers in a plastic ziploc bag or papper bag and let sit for 15 minutes. Remove peppers from bag and peel off the blackened skin. Discard the skin and slice the peppers in to wide strips. Place in a bowl and drizzle with a bit of olive oil and sprinkle with salt and pepper. Add a tablespoon of capers if using. Set aside. (you can also roast peppers under your broiler) 2. To prepare the sandwiches: Butter each piece of ciabatta and sprinkle with salt and pepper. Butter will help prevent moisture from getting into the bread. 3. Place a generous layer of overlapping cold meats. Top with cooled roasted red pepper strips. 4. Tap dry your mozzarella slices with a paper towel. Top the red peppers with a layer of the mozzarella slices. Sprinkle generously with salt, pepper and Italian seasoning. Top with a generous layer of arugula. Top with top slice of ciabatta. 5. Wrap each sandwich tightly with plastic wrap and place on a platter or baking sheet. When all the sandwiches are prepared, place the platter in the refrigerator. Top with a heavy skillet or brick. (alternatively top with another baking sheet and place some large cans on top for the weight). 6. Refrigerate at least 6 hours or ideally, overnight. 7. When ready to serve, remove from plastic wrap. Slice into pieces using a serrated knife holding the sandwich in place while using a sawing motion.

INGREDIENTS • 1 Ciabatta Baguette or loaf, cut in half horizontally • 3 Tbsp butter • 3 medium red peppers • 3 cups arugula, spinach or mixed greens, rinsed and patted dry

HONEY CITRUS MELON SALAD INGREDIENTS • 2 small cantaloupes • 1 small honeydew • 1 tablespoon lime zest • juice of a lime • 3 tablespoons honey • 1 tablespoon fresh mint INSTRUCTIONS 1. Use a melon baller* to scoop round spheres out of each melon and place them into a large bowl. 2. In a small bowl, combine honey, lime juice and zest. Whisk to combine and pour over the melon. Gently toss together before serving with torn fresh mint leaves. NOTES • Sub watermelon for any or all of the melons. • Sub basil for mint. • If making in advance; chill melon then toss with honey lime syrup and garnish with fresh mint right before serving

SEMI-HOMEMADE ICE-CREAM SANDWICHES Upgrade store-bought cookies by decking them out with delicious ice cream pairings and toppings. INGREDIENTS • 12 store-bought cookies • 1 pint vanilla ice cream or flavor of your choice • Miniature chocolate chips, sprinkles, or chopped nuts INSTRUCTIONS 1. Top cookie with a scoop of ice cream. Top with another cookie; press down with the palm of your hand gently to ensure the cookie doesn’t break. 2. Roll sides of ice cream sandwich in chocolate chips, sprinkles or nuts. 3. Wrap in plastic. Freeze until serving.

NO-BAKE DESSERT BITES INGREDIENTS • 1- Store-bought pound cake • 1- Can of store-bought icing (I used buttercream) • Berries • Powered Sugar (optional) INSTRUCTIONS 1. Cut cake into squares or circles. I used a square cookie cutter. 2. Place icing in a ziplock. (see note) 3. Snip the tip off the corner of he bag to allow the frosting to be piped out. Be careful with how large you create the hole based on how you’d like to pipe out your frosting. Start small, you can always make it bigger. 4. Squeeze dollop of icing onto each cake bite. 5. Top with berries. 6. Dust with powdered sugar if desired. NOTES If you want to elevate the taste of storebought icing, mix in a package of softened cream cheese or a stick of butter.

CREATIVE TIPS FOR KEEPING COOL BY LEANNE PARKER • Race to Melt: Freeze small plastic toys inside water balloons or in muffin tins. Make a game of who can free the toy first (or last!). • Water{Sponge} Fight: Fill a large bucket with water and new colorful sponges to throw at friends or targets (less prep and less mess than water balloons!). • Cooling Herb: Add muddled garden mint to water for a refreshing drink. In addition, rub fresh mint on the neck, forehead and wrists for a cooling effect. • Rose Water Spritz: Use backyard roses to make refreshing rose water. Then, use rose water as Facial Spritz to mist on the face to keep cool (recipe on the blog at www.silvertoothhome.com/ celebrating-roses). • Rose Lemonade: Use backyard roses to make refreshing rose water. Then, use rose water to make Rose Lemonade (recipe on the blog at www.silvertoothhome.com/celebrating-roses).

DIY ROSE WATER • 2 cups garden rose petals (chemical free) • 4 cups water & 2 cups of ice cubes Place water and rose petals in a saucepan. Carefully place an empty bowl in the saucepan. Set a lid upside-down to cover. Place ice cubes on the upside-down lid and simmer on low. Condensation will form on the inside of the lid and drip into the empty bowl creating rose water. Once rose petals have lost their color, turn off the heat and let cool. Place rose water into a glass bottle and keep refrigerated for up to a year. Nestled away in Southern Johnson County lies a picturesque equestrian facility that serves as a haven of sorts for military veterans and first responders alike. In 2015, when Patrick Benson and Andy and Patricia Brown first began War Horses for Veterans (WHFV) they began with just a simple shed and round pen. “This was always the vision,” Patrick says as he motions toward the beautiful facility that WHFV has now become. “The premise is providing opportunities for our combat veterans and now for our first responders as well.”

Patrick joined the army infantry himself in 1998, and his time in service has granted him a unique understanding of the bond between service members and the specific challenges they face. “I knew I wanted to teach,” Patrick says. “I like helping, and I like challenges.” His background with horses, his acute awareness of the resources our service men and women lack upon being discharged, and the experience of personally suffering from PTSD, combined to form his vision of helping veterans through horses. He stresses the importance of giving them an opportunity for healing and professional growth. WHFV offers programs designed around mental wellness and

physical health that includes clinical psychologists and follow-up care, as well as the therapy of working with horses. WHFV flies qualified candidates in from all over the country at no expense to them to take part in these programs specifically created for veterans. When asked, why horses? Patrick shares, “A horse forces you to be present and to be vulnerable. Many of us are very closed off from our past experiences and traumas or we may have immense survivor’s guilt. You can’t lie to a horse.” He explains that a horse is a non-biased teacher, the quickest of ice breakers, that can essentially serve to open a veteran up to being receptive. CONTINUED >

“Coming from our backgrounds, many times compassion, vulnerability and affection are some of the hardest things for us to show because it means letting go, and we are often times so guarded, or maybe we think of those qualities as a weakness,” Patrick says. He adds that the business of working with horses can be extremely therapeutic. “When you work with horses, you will always be a student, you will always be learning and growing.” He states that many veterans will return to the program as mentors or sponsors, and some will even work as part of the WHFV team. “Who better to work here than our own? We empower them and provide a platform for them to take care of their families and to give back to their community, and through doing that, they are actually healing themselves as well. It may be someone who comes to stay here long term, or maybe we’re just a stepping stone to help them along their journey. We teach them the trade, and within the trade is the therapy,” he says.

Patrick shares that first responders severely lack adequate resources to care for their physical and mental health and that they are under a great deal of stress. “We have to give back, we have to take care of them,” he says. “The goal is to be doing something bigger than yourself, to become a mentor. To provide these opportunities that we

otherwise didn’t have as veterans and hopefully improve someone’s outlook and quality of life. Hope is a powerful thing.” Patrick encourages anyone who is interested in learning more about WHFV to come out for a visit. You can also learn more at warhorsesforveterans.org.

Mindy Hargesheimer is the lifestyle and travel digital content creator behind Kansas City Bucket List, a blog documenting her travels locally and beyond the Midwest. “Every day is on my bucket list” is her motto as she takes every opportunity to experience her surroundings to the fullest, seeking out hidden gems to share with her readers to inspire others to keep life fun. “When my husband, Dan, our daughter, Liv, and I moved from Chicago to South Overland Park in 2015, we quickly assimilated our love for exploring the city we called home,” Mindy says.“We immediately began finding all the restaurants, breweries and concert venues to experience. Many people kept asking, ‘How do you keep finding these places? I’ve been here all my life, and I have never heard of these destinations.’ I thought everyone found new places to eat and explore and burst out of the two mile home radius bubble. “I previously lived in Kansas City from 2001-2003 after graduating from KU before moving to Chicago. There was no Crossroads Arts District, River Market, West Bottoms, or Power & Light District, amongst many more. The Plaza, Brookside and Overland Park were where it was at. Flash forward to 2016, I was surprised at every turn how many amazing places had opened—restaurants, breweries, distilleries, international cuisines, theaters, cocktail bars, festivals, you name it. I already had a personal love for Instagram and documenting my family and our travels. When I was on maternity leave with our second daughter, Elin, I had a burning desire to tap into my creative side. I was burnt out from 13 years in corporate sales, and the idea came to me to start sharing our local exploration of KC through a separate Instagram account. It organically took off as people began finding my account as a local resource to find new things to do.” Local and cultural experiences inspire the creation of her work. “Give me all the experiential opportunities, and I will work to tell others why they should experience them, too. I created a motto for the life I wanted: “Every day is on my bucket list.” This means experience firsthand, learn about, try something, taste it all, go somewhere new…every single day. In KC, we can live an extremely fulfilling life with all the amazing things available to us. I am inspired by others and spend a lot of time keeping up with local makers constantly creating new experiences and accessories. I take pride in taking beautiful photos, telling a story and curating it in my feed.” She has published more than 20 local guides recommending hidden gems around the city and although it’s nearly impossible to pick a favorite, she has an extensive list of must-dos. SUMMER SALT ICE CREAM COMPANY Stepping into Summer Salt Ice Cream Company is like walking into a sunny day, the magical chime of the bell on the door, the sweet scent of waffle cones baking rushes to greet you, the thoughtful color palette intentionally designed to evoke the vision of a bright, sunny day, even the restroom has a whimsical theme catering to children. All of your senses are engaged within moments of entering the quaint, ice cream shop. Curtis and Amy Thurston opened Summer Salt in June of 2020 at the beginning of the pandemic, taking over the space that was formerly home to Mely’s Ice Cream in Corinth Square. The couple share a background working in the hospitality industry and understand that customer service is key. “True Customer Service seems to be dying, and we wanted to bring that back again,” Curtis says. When asked what their inspiration was Amy shares, “Curtis loves ice cream, I mean, he loves ice cream. So with our background in hospitality coupled with his love of ice cream, it just made sense. When we heard that Mely’s would be closing, a well-known community spot, it was a bit serendipitous.” Despite opening at the start of the pandemic they have managed to become successful owing in part to creative ideas like ample outdoor

seating as well as their walk-up window. Customers can stay outdoors and order if they prefer, which can be comforting to some during a pandemic and helpful to others who have young children in strollers or pets in tow. Speaking of pets, listed on the menu are pupsicles and woof cream, so your dog can enjoy a treat too. “The walk-up window definitely got us through Covid, along with the to-go pints,” Curtis says. He is referring to the freezer you see upon entering that is stocked with pints of various flavors of his house made ice cream ready to go. Perhaps most unique about Summer Salt is that they feature gluten free and vegan alternatives. “We offer gluten free waffle cones that we have been told by the GF community are wonderful,” Amy says. “We offer over 10 flavors of vegan ice cream, and Curtis has made it his mission to perfect the recipes, using different bases.” They are also known for their Boylan Soda floats in flavors such as black cherry, root beer and cream soda, and they have mastered the perfect ice cream sandwich. Everything is made in house, and they feature the usual favorites as well as specialty flavors such as Lavender and Honey made with local honey. CONTINUED >

In fact, supporting local is important to them as they feature Andre’s Chocolates and SAVA Vanilla for sale in the shop and use the products in their ice cream. Environmental consciousness is also on their radar as they use metal spoons, compostable cups and opt to be as green as possible. With a second location opening this coming summer in the Ranch Mart area, the couple says that being in the ice cream business has been “overwhelmingly good.” Amy says, “we are a community spot, and every kid should be able to walk to an ice cream shop.” Summer Salt Ice Cream is located at 4051 Somerset Dr, Prairie Village, KS 66208.

Kansas City’s beloved Buck O’Neil finally gets his day in Cooperstown 36

When you enter the Baseball Hall of Fame and Museum, pay for your ticket and pass through the turnstile, a docent is standing by to answer questions. He or she will tell you to start your tour on the second f loor, then third and work your way down to the first f loor to the actual Hall of Fame gallery. Don’t do that just yet. Tell the person you’re from Kansas City and you came to see Buck. Then turn immediately to your right and there in a brightly lit corner is the larger-than-life bronze Buck O’Neil. This is the Buck O’Neil Lifetime Achievement Award, established in 2008, to honor an individual whose extraordinary efforts enhanced baseball’s positive impact on society, among other qualities. It was a bitter pill to swallow for Kansas Citians in 2006 when Buck, then 94, was not inducted into the Hall of Fame. He died in October that year. Despite an exceptional career as a player in the Negro Leagues and a championship career as a manager, Buck did not meet the HOF criteria in place in 2006. So, the Baseball Writers Association of America reviewed its criteria. Buck was such an exceptional human being, dedicating nearly eight decades to the game, that such a review and re-write was necessary. Buck O’Neil is in the class of 2022 to be inducted July 24. It’s probably too late to get tickets for the event. Maybe it’s too late to get a hotel room. But that shouldn’t stop you from planning a trip to Cooperstown soon to see Buck, George Brett and this charming community. Why Cooperstown? Cooperstown, New York is a village of fewer than 2,000 people on the shores of beautiful Lake Otsego. To be quite honest, it’s out in the middle of nowhere. From Kansas City, I flew to Baltimore, then to Albany, then rented a car. The first 45 minutes was

on I-88, then I turned onto a state road, then a county road and wiggled around past farms and cows. I was determined that Siri was lost, but suddenly, there was Cooperstown. Named for the family of author James Fenimore Cooper, the entire village is on the National Register and is as perfect Americana as any Norman Rockwell painting. An impressive folk art museum bears the Fenimore name. Susan B. Anthony spoke at the Presbyterian Church. There’s an opera festival each summer. So why the Baseball Hall of Fame way out here? It’s a largely debunked myth that baseball was invented in Cooperstown. The story goes that in 1839, Abner Doubleday gathered some kids in a horse pasture and made up the game of baseball. The fact is humans have been hitting balls with sticks since the beginning of time. But a visit to Doubleday Field is a

joyous experience. Jeff Katz, president of Friends of Doubleday Field, leads the morning tours and remembers Buck O’Neil. “He would sit right there with a smile on his face and talk with everyone who came by,” Jeff says, pointing to a spot near the dugouts. “He was a warm, humble human being and a gift to this game.” They remember Buck at the Otsego Inn as well. That’s the historic property that sits right on the lake where all Hall of Famers, their guests and other VIPs stay during induction week. “Oh, I remember his storytelling,” says my waiter at the Hawkeye Bar & Grill at the Otsego. “He always had a crowd around him. Everyone loved Buck’s stories.” Main Street Cooperstown is part smalltown shopping and part touristy souvenir shops. Shoeless Joe Jackson, Babe Ruth and Carl Yastrzemski have shops. If you

buy a Cooperstown bat, remember to place it in your checked luggage. TSA will confiscate it otherwise. The Hall of Fame and Museum sits on the west end of Main Street, slightly back from the street so that some people miss it when they first drive by. But it’s like candyland for baseball fans, with history, facts and trivia galore. Before you reach Buck O’Neil’s statue, you’ll first encounter the trio of Lou Gehrig, Jackie Robinson and Roberto Clemente called “Character & Courage,” reminding us that becoming a Hall of Famer is about more than skill on the field. And that’s why Buck O’Neil is in the Hall of Fame, because he brought more to the game (and Kansas City) than any statistic could ever measure.
