Welcome fall! With the changing seasons comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town. We had the pleasure of sitting down with the owners of Scratch Catering and Drastic Measures and learned about what their fall menu will be boasting, so get your taste buds ready, you are in for a treat. We also included a few new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table. My mom got her love of cooking from her mother. Both my mother and grandmother could truly make a masterpiece out of a few simple ingredients. It was a rarity to see anything measured or a recipe followed without putting their own twist on it. Adding a little bit of this and that for extra flavor was the norm, so cooking was/is a true art for them. I learned to truly appreciate the various flavors in food from my mother. She enjoys a good meal that someone prepared for her more than anyone I have met, and anyone sitting next to her while she eats can attest to that enjoyment because of her propensity to utter,”mmmmmm…….mmmmm” multiple times throughout the duration of her meal as she audibly appreciates what she has been served. There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. As always, thanks for reading, and we’ll see you around town!

Gourmet Express & Catering Tyler and Monica Morrison just celebrated the one year anniversary of their business Wildcat Hospitality LLC, which includes their very first restaurant and premium catering company Scratch Gourmet Express & Catering located in Prairie Village. A creative and fresh idea born amidst the uncertainty of the pandemic, a time when many area businesses were closing their doors. “We wanted to create an elevated, premium, dining experience that would allow us to provide the most delicious, seasonal foods prepared on-site

and at their freshest,” Tyler shares. The couple, both K-State Alums, met at a K-State Watch Party in Texas where they were both living and working in the restaurant industry at the time. “It’s such a small world, we both went to K-State but never actually met until we were both living in Texas” Monica shares with a laugh. The past three years have been a bit of a whirlwind for the duo as they got married, welcomed two children, remodeled a house and relocated to the Kansas City area. The pandemic brought a time of reflection for the Morrisons, “we wanted to build our own business, created with flexibility and creativity. Find a balance that would allow us to do what we are passionate about, but also to reflect our core value- which is family” Tyler shares. After living and working in places like Dallas and Atlanta, the self-proclaimed foodies felt that the KC metro area was missing a key concept on the culinary front, so they set to work bringing their idea to life. “Quite simply, we were looking to create an elevated, everyday style of food service” Tyler says. This included building a mobile kitchen on wheels, complete with double ovens, warming drawers, fryers and grill. The catering van allows them to freshly prepare all food on-site. Tyler shares “we actually tricked out our van and turned it into a pop up mobile kitchen complete with power and a generator, food is not sitting around in hot boxes,” it doesn’t get any fresher than that. The mobile kitchen is used to cater large events like weddings, as well as smaller events like intimate dinner parties and lively cocktail parties. “It allows us to provide a private in-home chef experience” CONTINUED >

Monica shares. From a catering aspect, they service most of the KC metro area with their mobile, catering kitchen. Tyler shares “we have done many events, from weddings in Weston to events in the Bucyrus/Spring Hill area.” They have a physical location in Prairie Village, where they serve lunch and dinner with a menu that changes every quarter based on what is seasonally freshest in the area.They also provide a private dining room or wine cellar where more intimate events can be held. Executive Chef Joshua Walters, thoughtfully and tastefully provides “food with an elevated comfort,” meaning traditional favorites with a refined, flavorful twist. They offer a full cafe and dine in experience and if you stop in for lunch, don’t miss the Chicken Salad Croissant, it’s a definite crowd pleaser. Scratch also presents an exclusive, five-course, monthly wine and dinner pairing, which is a private, ticketed event featuring winemakers from places like France, Italy and California. In fact, due to its popularity they are looking to begin offering two wine dinners a month, beginning next year. Additionally, they host a Happy Hour M-F from 3-6pm that features cocktails and shareable plates and there has been much anticipation and buzz around their new Fall Menu debuting in October. When Your Plan Doesn’t Go as Planned By Marc C. Shaffer, CFP®, AIF®, EA

Life does not go as planned. It’s a wonder I survive as a financial planner who lives by a calendar and a process, because this statement rings true for everyone, even me. I have seen it in both my personal life and in the lives of the people we help every day. It’s probably the biggest reason I get asked, “So, what happens if…?” You could have a plan for retirement that includes contributing to your employersponsored 401(k) account, only to decide to start your own business. You and your spouse may plan to have one child, only to find out twins are on the way, or you may plan to have several children, only to find out the costly process of IVF is your only option for natural childbearing. You could plan to use a vehicle you purchased for several years before passing it down to your teen only for it to be totaled the very next day. You could create a financial plan that sounds good on paper but does not fit with your lifestyle or financial behaviors. Your plans might be short-term or long-term and the bumps that derail them could be big or small, but the impact could be significant. Let’s talk a look what DOES happen when things don’t go according to plan. First, we know that having NO plan can be the start of a messy journey. Even if we go off course, having a plan in place to look back and see where we said we want to be or should be, can be a relief when things get crazy. Taking time to consider your goals, hopes, milestones and strategy could help center you in times that might feel overwhelming. When developing a plan, two pieces that should be incorporated are monitoring the

plan and ® making strategic updates. This helps us realize from the beginning that plans are not constant entities and relieves the pressure of having to know everything up front. If a financial plan is derailed, look at what is in place to help manage the unexpected. Have you created an emergency fund to cover unexpected costs? Have you pre-saved for expenses that are inevitable even if the timing isn’t known? Do you have an estate plan in place to carry out the wishes after the loss of a spouse? Do you have insurance coverage for fires, floods and more? If you have already planned for the unexpected, the strategies could help you navigate the process more smoothly. If you do not yet have tactics prepared, you would want to take a look at your big picture to see what steps/pieces of your plan could be moved or shifted to cover the current situation without derailing other goals. For example, using funds from your retirement account to help an adult child that lost their job might impact your future, but using funds from a vacation savings account might be a decision that feels right for you. After you have overcome or incorporated the issue into your new plan, you’ll want to review what went right and what went wrong. This can give you an idea of things you can start doing NOW to help avoid or lessen the impact of other unexpected issues down the road. Using fresh or dried herbs in cooking and as a seasoning not only boasts a flavorful punch, but can have added health benefits. It only takes a few minutes to create

these simple herb infused concoctions, and if you make it in bulk, they can easily be stored used again and again to give your food a little something extra.

Garlic Herb Butter This butter is versatile and goes with just about anything. You can use this on top of bread, popcorn, veggies, as a sandwich spread and more.

INGREDIENTS: • 1/2 cup unsalted butter, softened to room temperature • 4 tablespoons fresh parsley, chopped • 1 tablespoon herb of your choice (dill, basil or oregano are my go-to herbs.) • 1 clove garlic, chopped • 1 tablespoon fresh lemon juice • 1/2 teaspoon salt • cracked pepper to taste

PROCESS Add all ingredients in a food processor (or mix by hand in a bowl). Transfer butter mixture on parchment paper or plastic wrap. Cover butter tightly and roll into a log. Place in refrigerator until firm. Enjoy!

Herbed Popcorn Add a little kick to your traditional popcorn by incorporating herbs in with the butter. You won’t be disappointed with this buttery and savory combination.

INGREDIENTS • 3 tablespoons coconut oil (or olive oil if you prefer) • 3/4 cup popcorn kernels • 5 tablespoons butter, melted • 2 teaspoons garlic salt • 2 teaspoons parsley (dried) • 1 teaspoon thyme

PROCESS Add oil to the bottom of a pot and melt over medium heat. Add popcorn kernels and place lid on top of the pot and heat over medium heat until kernels are popped, shaking pan occasionally. Melt butter in a separate dish and add seasonings. Pour on top, and enjoy!

Herb Salt Herb salts are becoming so popular and can add flavor to a variety of dishes. There are endless flavor combinations, and these salts are so handy to have as a staple in the kitchen. Plus, these make great gifts for family and friends. All you need is a blender or food processor and minimal ingredients.

INGREDIENTS: • 1 cup salt of your choice (I prefer Himalayan pink salt, but any salt will do • 1/4- 1/2 cup parsley (add more if using fresh herbs) • 2 Tablespoons dried basil (or 1/4 cup if using fresh) • 1 tablespoon oregano • 1 tablespoon lemon zest • 1 garlic clove minced • Optional: Any additional herbs you prefer

PROCESS: Add fresh parsley, garlic, lemon zest and a little bit of salt to the blender or food processor. Mix for 10 seconds. Add additional ingredients and blend again. Line the baking sheet with parchment paper and pour salt mixture on sheet and evening spread. Set in a cool oven overnight to dry. Pour salt into a container of choice and enjoy!

Chimichurri Chimichurri is a condiment that can be used on endless things, and can be enjoyed as a sauce or dip. Serve over fish, chicken, vegetables or with crackers.

INGREDIENTS: • 1/2 cup olive oil (or flax oil for added omega 3 nutrition) • 2 tablespoons red wine vinegar (or lemon juice as an alternative) • 1/2 cup-1 cup fresh parsley, chopped finely • 1/4 cup fresh basil or fresh cilantro • 3-4 cloves garlic, minced • 1 small red chilies or 1 tablespoon red pepper flakes • 1/2 teaspoon dried oregano or italian seasonings • 1 teaspoon salt • pepper to taste

PROCESS Chop fresh herbs finely and add to a bowl. Add remaining ingredients and mix. Chill for 1-2 hours. Enjoy!

She is known and recognized for her uncommon, clever and artistic styling when it comes to shooting various kinds of food.

What began as portrait photography quickly morphed into so much more as the start of the pandemic in 2020 allowed Janie Jones, a local serial entrepreneur, the time and opportunity to get creative and try different facets to her photography. With ideas rolling around in her head, she began doing, creating and trying new things. Since she, along with the entire world, was confined to her home, her living spaces became her canvas and as ideas flowed, so did her desire to take action. She did everything from DIY’s in building to styling her home with different angles, items and decor. Through combining the desire to create and the love of styling, she found a love of using her photography skills paired with food. This evolved to food styling and photography. She did it for herself at the beginning, and then when the world began to open up again many businesses realized how needed her talent was and reached out to her for food photography and branding needs. With her instagram profile, @uncommon.jane, gaining traction, she was soon booked with restaurants and other businesses to pivot her business to primarily styling and food photography. While food photography will always be her favorite, she longs to capture the stories of people through senior and family sessions as well. She is known and recognized for her uncommon, clever and artistic styling when it comes to shooting various kinds of food. A self proclaimed lover of creating in any capacity, she loves working with other creatives and seeing

what kind of magic and beauty can be created when different people with specific talents and skills come together to create something new. Janie found her passion and what she loves to do and longs that everyone do what brings them as much joy as she has found through shooting different subjects. When asked what her favorite thing to photograph was, her answer was, “a great flatlay with beautiful linens, dinnerware, herbs, spices and whatever else is in the dish. TIPS TO TAKE YOUR OWN BEAUTIFUL PHOTOS OF YOUR CULINARY CREATIONS 1. Start with the dish and make sure to note the colors of the dish. 2. Move on to the raw ingredients. 3. Once you have those colors, find the linens, cutlery or other props to accentuate the food. 4. Less is more: Don’t “over busy” the scene. 5. Natural light is best. Pull your table up in front of the window if you need to get good lighting. 6. Make sure the background or backdrop is neutral in color so you can really see the details of the food. Happy Creating! TIME SPENT AT THE COMB COMPANY: A LANCE DAVIS CONCEPT IS AN ENERGIZING, UPLIFTING JOURNEY. ARTICLE BY JUDY GOPPERT | PHOTOGRAPHY BY JANIE JONES

From his youth, Lance Davis has felt the calling to be among stylists. It is where he felt he belonged and doing hair felt good. During high school, he made the decision to spread his wings and go to cosmetology school, and now ten years later, as they say, the rest is history! And lucky for us, he has opened his own salon in the Crossroads. “I apprenticed under my mentor in Louisiana, and then moved to Kansas City when I decided to leave home,” he expresses. “I worked for two really large salons in the city and have worked in New York and Los Angeles selling products and teaching stylists to cut and style, and I am a color educator and curly specialist. When COVID happened, I felt I had grown my personal business clientele and decided to set out on my own.” Thus, The Comb Company: A Lance Davis Concept was born. His salon occupies the historic 20th Century Fox building and has been restored to house his five chairs, which gives clients privacy and an intimate experience. The 18-foot vaulted ceiling adds to the ambience, and he maintains a personal rapport with his clients. This space has been a salon for 30 years, and he is the third owner. “We have clients fly into town to see us from all over,” he notes. “I bring a focus around what each client needs, customizing their procedure. I sit down and talk to them for 30 minutes before I pick up my scissors, so they have a unique look that fits who they are, what they do, and their personality. This way they don’t feel they are wearing the same look as everyone else.” Lance sees trends for fall including monochromatic hair color, and short, simple hair. He explains there are innovative extension techniques now and they embrace this technology and can give people boho dimensional locks. Rich, beautiful mahogany tones with three-dimensional highlights and tones are also trending. “I have a huge passion for teaching, and my stylists receive intensive training. We are seeing more stylists move to our market from New York and Los Angeles, and we want to make sure they receive the skills and attention they need to stay current and inspired and embrace Kansas City,” he reflects. When the light is green outside Drastic Measures in Shawnee, venture inside for a unique first come, first served cocktail experience. Owner Jay Sanders intentionally left beer and wine off the menu to give cocktails all the attention. “I have been working in craft cocktails bars for a long time, most notably as the General Manager of SoT and Manifesto while it was open,” says Sanders. “Everywhere I worked was with the eventual goal of opening my own bar. We wanted to bring the experience of this kind of bar out to a small but growing downtown Shawnee, and let people have elevated experiences in their own neighborhood. “The meaning of the name is how we conduct ourselves and our business—by doing progressive and unique things while always carefully considering our impact on our guests, our neighborhood and our craft. First time guests can expect to be greeted with a red light, green light system for entry—green light knock, red light wait. This doesn’t make us a “speakeasy” but does help with controlling volume and guest experience while keeping our overhead low. Once you get in you’ll find a modern little cocktail lounge with dramatic limestone walls from when the building was built in 1850

contrasted with 90’s hip hop and trip hop blasting on the playlist. The recipes and craft behind the drinks are juxtaposed with casual and friendly service.” Their drinks are said to have a limited lifetime on their menu, as it changes roughly every eight weeks. Some of their current favorites include the Measured Approach, which is their house old fashion made with bourbon, aged rum, grilled apple tincture, decanter bitters and demerara sugar, as well as the Kill Bill, a fruit forward wakeup call full of refreshing spices, including tequila, pineapple, ginger, Thai chile, lemon and salt. “My personal favorite, at least on this menu, is probably the Warmer Weather, which is a Mezcal and aquavit cocktail with acidified watermelon, dark chiles and lime juice.” Future plans for a new kind of bar are in the works next to their current location. “We are very happy with where we are but there are definitely plans in place to open another bar soon. If all goes as planned, that will be a wine bar with low to no ABV cocktails adjacent to Drastic Measures.” Drastic Measures is located at 5817 Nieman Road in Shawnee. It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
