Letter from the Editor AS SUMMER IS WINDING DOWN AND THE KIDS ARE GETTING READY TO HEAD BACK TO SCHOOL, WE ARE SQUEEZING IN ALL THE LAST MINUTE SUMMER ACTIVITIES TO FINISH WITH A BANG. Our summer was filled with baseball, baseball and more baseball, and as much as I enjoyed every minute of it, I feel a sigh of relief to have my weekends back before fall sports begin. My oldest heads off to college in a few short weeks, and let me tell you, saying goodbye to your firstborn is not for the faint of heart. While I am so excited for the adventure he is about

Creating a Life Plan for Your Child with Special Needs

Estate Planning looks different for parents who have a child with special needs. The Life Plan For many, Estate Planning involves directing assets to be disbursed in a way that benefits those we leave behind. You might have a simple Will or you might create a Trust to have more flexibility. If you have a child with special needs, your estate plan may be designed to provide for their needs without disqualifying them from government benefits. Taking care of the formalities are essential, but as a parent, how can you be assured that your child will lead as full and complete a life as possible after you die? Typical estate planning documents fall short of creating a plan for a child who has been dependent on you to look out for their best interest and to know them as humans. Enter, the Life Plan. A comprehensive life plan leaves nothing to chance. A life plan is a labor of love that outlines all that is, all that has been, and all that you hope for in the future. It doesn’t have to be professionally written, but it can be. You don’t have to follow a specific template, but you may.

Developing a life plan is an ongoing process, because your child’s needs and desires will change over time. This is especially important if you have a child (minor or adult) with special needs who may not be able to articulate their needs and wishes or advocate for themselves. What goes into a Life Plan? Like any other well-designed plan, you begin with the end in mind. What does your child’s best life look like if you’re no longer in the picture? Articulate the major goals in each area of their lives: • • • • • • • • • •

Residential placement Education Employment Social/recreational Religion/faith Medical care Behavior management Caregiver/advocate/ guardian Finances Final arrangements

Then, outline how those goals will be achieved: • • •

What skills will your child need to develop? Who will be involved in the process? What resources will they need? What are the roadblocks that may hinder them?

What will your child’s support system look like?

The Letter of Intent After you contemplate the life plan for your son or daughter and you have a fair idea of what you would want their life to look like after your death, communicate those ideas and knowledge to future caregivers in a letter of intent. While it’s not a legally binding letter, in some cases, it may be reviewed by a court in their consideration of legal proceedings. Perhaps more importantly, a letter of intent will allow you to communicate your desires to future caregivers, information that will prove invaluable to them. It’s the documentation that expressly offers up your wealth of knowledge about your child. All the things that would take someone else weeks, months, maybe years to figure out. It also outlines your hopes and desires for their future and creates a written legacy for them after you’re gone.

Jason Sexton is the regional manager at Snooze. “I have worked in the restaurant industry for 23 years in different capacities,” says Jason. “I started my career at the Black Eyed Pea as a server when I was 17 years old and have been in the restaurant industry since. Before Snooze, I was a general manager at both Chili’s and Niko Niko’s. I heard about Snooze, a chef-driven restaurant, in Montrose and that I should go check it out after repeated requests. It blew me away from the food, the service, ambiance, hospitality, and the way they reached out to the community. I was lucky enough to be interviewed by some great people and started as the regional manager for Houston and have expanded to Kansas and Missouri.” Snooze believes every ingredient they use has its own impact on the planet and our communities.

We have classic breakfast dishes that are elevated by responsibly sourced cage-free eggs and clean ingredients, but we also have innovative yet approachable twists like the Habanero Pork Belly Benedict or our Blueberry Danish Pancakes and OMG! French Toast. Their Habanero Pork Belly Benedict is made with seared, cider-braised habanero pork belly on top of a griddled English muffin with bacon espresso jam, and the poached eggs are topped with cream cheese hollandaise and cranberry relish. Their Blueberry Danish Pancakes are topped with blueberry coulis, sweet cream and almond streusel surrounding a center of lemony cream cheese filling. Fresh brioche stuffed with mascarpone and topped with vanilla crème, caramel, fresh strawberries and toasted coconut are used to create the OMG! French Toast.

“Some of our most popular dishes are the Pineapple Upside Down Pancakes, OMG! French Toast and Juan’s Breakfast Tacos. My favorite is the Corned Beef Hash and—I know it sounds crazy—but our plain pancakes.” Snooze has big plans for increasing sustainability and adding new locations across the country in the coming years. “Snooze is growing, and we believe that with growth comes a larger ability to impact change in the world. In 2021, we will reach 50 restaurants, and next year we will bring 10 to 12 more restaurants to new communities,” Jason says. “We are pumped to be in Overland Park—it’s an incredible welcoming community. We are offsetting 100% of our carbon emissions from all to-go and deliveries from every restaurant by partnering with a grasslands project, National Young Farmers Coalition and Native Energy. The company is even expanding to new cities including Omaha, Seattle, Chicago, and Dallas. Lindsay says it is a flexible business model and perfect for someone looking to stretch their creativity and run their own business. Lindsay says they will remain a small, family-owned business here in Kansas City. She says they are frequently told from campers that the experience was their best party ever. Overall, they hope to bring joy, giggles, lasting memories and fun. The company books months out, so it’s important to book early.

Megan says the lifestyle they provide at Aspen Ridge is what makes them unique. She says it is fulfilling to see people who have been primarily homebound for years become more active and regain a sense of community when they come. Eunice Clark has lived in Aspen Ridge for about three years, and describes it as a peaceful, friendly community that welcomes everyone as they come in. “We all tend to help each other if there is a need,” Eunice says. “We are good neighbors here.” Eunice says the office staff is truly kind and helpful and an integral part of the community. Overall, she says her favorite part of living at Aspen Ridge is her apartment, which she enjoys immensely. Megan says it is important for adult children to know that at Aspen Ridge, their parents can become engaged ambassadors in their community once again. While they do not have medical professionals on staff, they are offering a senior health care expo on August 11 that will feature vendors, activities, food and games as a way of helping the Aspen Ridge community get connected with providers and the greater community. TEAMWORK TIP #1: CRATE TRAINING Corey tells her clients to have a pattern each day where all members of the home leave for a specific amount of time, inevitably increasing the increments little by little. Our dogs need to know that we aren’t abandoning them when we leave. I tell people to provide a cozy spot, whether it be a kennel or room of the home. Put in a few of their favorite things: blankets, toys, and turn on music: a popular choice is to ask your Alexa or Google to ‘Play soothing music for pets.’ The key to this is baby steps so that the dogs learn how to self soothe when we leave the house. Start with leaving them in the crate for 20 seconds, then one minute, then two, then four. Gradually increase the time until your pet is comfortable for a couple of hours. In no time, you’ll be able to go out for dinner as a family and know your pup is safely resting at home. “We crate our dogs every time we leave the home,” Corey says. “It’s important for us to know they aren’t getting into trouble, and it provides a comfortable, secure, and safe feeling for the dogs.” TEAMWORK TIP #2: EXERCISE As always, it’s important to exercise your dog daily so that they can expel some of their anxious energy. If there are kids in the home, the responsibility to walk the dogs can be theirs, and it’s a great way for them to help. During the summer months, remember to be cautious of hot pavement. THE DAYS ARE LONG, BUT THE YEARS GO FAST. So they say with raising children. I have to agree with that sentiment. Each year as summer ends I find myself looking at my kids and reminding myself to “Watch them grow!” Both as a reminder to not miss the growth (with all the distractions and responsibilities that adult life brings) but also as reflection on how far they’ve come since the last time we turned the calendar page to August. Whether there are children in your life or not, I’m sure we can all agree that childhood is fleeting. Instead of stopping to smell the roses, I need to remind myself to “stop and watch them grow”—you can’t see it if you stare, but you’ll surely miss it if you blink! It helps me to set aside intentional time to be present with these fast little growers.

As August rolls in and the calendar tells us that it’s time for back-to-school shopping, the weather does not usually agree that the times are changing. I find that it’s such a weird dance between what looks like the change of seasons when I open my calendar but not when I walk out my back door (heat wave!). On one hand, we’re still in full throttle of blazing temperatures in the Midwest and with no end in sight. At the same time, being thrown into back-to-school shopping, Meet-the-Teacher nights, resuming the regiment of packing school lunches, and if you’re a homeschool parent, all the to-do lists and lesson plans in order to launch into another school year. As we find ourselves with one foot in summer and the other in a classroom, how do we embrace and (dare I say) celebrate this month? Instead of feeling ungrounded in the juxtaposition of August, I am inviting myself, and anyone who would join me, to embrace the opportunity to celebrate the in-between seasons that this month brings. My hope is that these ideas help spark your imagination on how to keep you cool in the heat, launch your kiddos into a new school year, and to set aside time to watch them grow.

Kids develop quickly in the first few years of life, so incorporating a variety of nutritious foods is essential to their growth and development. BALANCED NUTRITION LEADS TO HEALTHY KIDS Feeding your child a variety of foods is the key to getting them many different types of nutrients. Each food and group of food helps your child’s body in a different way. For example, foods high in fat such as avocados, olive oil, nuts and seeds, fatty fish, and more support your child’s brain development. Eating lots of fruits and vegetables can help your child fight off illnesses. If your child is struggling to eat veggies, don’t worry about feeding them more fruit while they are learning to eat more veggies. For those kids who won’t eat fruits and veggies, keep having them available at meals so that they can learn to like them.

3 T I P S F O R G E T T I N G YO U R K I D S TO E AT H E A LT H Y F O O D S MAKE SNACKS AND MEALTIME FUN We all know that kids like to play and have fun, so why not make food fun? Whether you’re turning broccoli into a microphone at dinner, or playing tic-tac-toe with edible carrot sticks, kids get into it. They also love trying new utensils, helping prepare food, and using new kitchen tools. The more fun they have, the more they are willing to try new things and eat more foods. Kids, especially kids who may be picky or selective, often like a little bit of novelty. There are lots of ways to add a little bit of novelty without spending a lot of time. My top recommendation is toothpicks. I call it “toothpick magic.” Whenever your child is ready to use toothpicks, try it with any food that they are hesitant to eat and see what happens. It’s hard for kids and adults to resist eating food off a toothpick. We also love silicone muffin cups, mini cookie cutters, food picks and fun silverware. I also love our stainless steel lunch boxes. If you’re trying to decide which one is best for you, I wrote a surprisingly honest review of the 16 most popular stainless steel lunch boxes on the Kids Eat in Color blog. DON’T GIVE UP Parents often assume that if a child doesn’t eat a food the first or second time it’s served, the child doesn’t like the food. Teaching kids to eat a variety of foods is a long game. Many children may need to see or taste a food 10 or 20 times before they are willing to eat it. Especially selective kids may need hundreds of exposures before they learn to like a new food. FORCING HEALTHY FOODS ON KIDS OFTEN BACKFIRES Another assumption is that we have to make kids eat healthy foods. Often, making a child eat food or eat a certain amount of food backfires. It may backfire in the short run by making a child more selective and less likely to eat the foods you want them to eat. It can also backfire in the long run and make it hard for a child to tell when they are hungry or full.
