The 15th Annual HEAT Kids Triathlon The Hendersonville Endurance Athletic Team (HEAT) held its 15th annual Kids Triathlon at the Sumner County Family YMCA on Saturday morning, Aug. 3. The swim, bike and run event drew more than 150 competitors, ranging from ages 6 to 15. Children competed in two separate divisions—junior, for ages 6 through 10, and senior, for ages 11 through 15.

VOL STATE ANNOUNCES NEW PRESIDENT'S AMBASSADORS Volunteer State Community College recently announced its president’s ambassadors for 20192020. The ambassadors represent the college at events, conduct campus tours and help with public relations. Students selected for the president’s ambassadors scholarship program go through a rigorous vetting and interview process. Successful candidates are selected from more than 2,000 eligible students. To be eligible for the program, students must have a cumulative 3.0 grade point average and have completed at least 12 college-level credit hours at Vol State. Students selected serve a one-year term.

Salt block scallops with grilled peppers
SALT BLOCK SCALLOPS WITH GRILLED PEPPERS INGREDIENTS + 1 medium-size (10-12inch perimeter) square Himalayan salt block + 1 pound jumbo scallops (typically 10-12 scallops per pound) + 2 large bell peppers + 2 tablespoons of olive oil + Salt (to taste) + Black Pepper (to taste)
DIRECTIONS
1. Slowly heat the salt block on a burner or grill until the temperature approaches 500 degrees on the top surface of the block (verify with a non-contact food thermometer). 2. Dry off the scallops and set them on a plate until they achieve room temperature. 3. Chop the bell peppers into bite-size pieces and set aside. 4. Coat each of the scallops lightly with olive oil and place each one on the salt block, being careful not to place them to close too each other. Note: Be sure to use high-temperature oven mitts and kitchen tongs. 5. Add in the bell pepper pieces. Note: Depending upon the size of the scallops, food preparation may require cooking the meal in batches. 6. Cook the scallops for approximately 2 minutes until they start to turn brown on the outside. Flip the scallops over on the salt block and cook for an additional 1 to 1 1/2 minutes until they have a light crust. 7. Add salt and black pepper as desired. 8. Remove the scallops and peppers and place on serving dishes. Note: For additional visual appeal, serve the salt block on a table and serve the meal directly from the block.

HENDERSONVILLE HAS LONG BEEN KNOWN FOR MANY THINGS, INCLUDING ITS PARKS AND ITS PROXIMITY TO OLD HICKORY LAKE. It is also famous for being the home of many famous country music legends, including the late Johnny and June Carter Cash. However, despite all its fame, the Hendersonville has never had a drink named for it. That is, until now. Inspired by the famous Cash albums Ring of Fire and Orange Blossom Special, we created a new drink to help usher in fall. With the assistance of tal-
