This historic site hosted plentiful social gatherings after 19th century lawyer and farmer Williams Lockwood commissioned architect Addison Hutton to build a majestic home there. After decades of different inhabitants, the 6,552-squarefoot stone building sat vacant for a number of years--until Steve and Dana Poirier purchased the property in 2016 and restored it to grandeur. The Poiriers are partnering with John Serock to both manage the events and meals held there. The mansion opens officially this month, with work being done to add a new hall to seat up to 300 guests. Conscientious, detailed chef John divulges he gets immense joy from creating tasty, notable menus for events held in this “historical yet timeless setting.” However, he also says his team is following their standard approach of finding the right flavor balances for any meal executions they handle. “No matter what we’re making, we want the meal to be memorable. Even if it’s a classic wedding entrée, such as a grilled filet mignon, we want guests to say: ‘I don’t know what they did to CONTINUED >

that steak, but it’s the best one I’ve ever had,’” he explains. “It’s about balancing sweet, salty, tartness, and incorporating all senses, such as smell and how the food looks. Sometimes, it’s about using restraint to not overpower a certain dish with one main element.” John says they will transfer their reputation of providing excellent food and amazing service to the mansion as well. “We make food approachable, no matter where.” The catering company handles corporate events, too, with John promising to accommodate special requests, such as making food from first dates or family/ childhood recipes. “We’re happy to recreate special moments,” he adds. “GREG NEVER WANTS TO BE IN THE SPOTLIGHT, HOWEVER, HIS COMPASSION FOR THOSE WITH ALS BROUGHT HIM UPFRONT.” WHEN A BOYHOOD DREAM TO PLAY BASEBALL ACTUALLY DOES PROPEL A LIFELONG MAJOR LEAGUE CAREER AT 21 YEARS OF AGE, NOTEWORTHY DEVELOPMENTS HAPPEN. Former professional baseball outfielder and Pennsylvania native Gregory Gross holds the Philadelphia Phillies’ record in career pinch hits, with 117. He ranks fifth on MLB’s all-time list in career pinch hits, as well, with 143. He’s also been a West Chester resident for the past 20 years. This now-coach still loves EVERYthing about his dream game. “I’ll stay around baseball for absolutely as long as I can,” he assures. Greg, 67, remembers how comfortable he felt in West Chester when he was playing with the Phillies. He grew up 60 to 70 miles nearby in York, and West Chester had that “rural/small-town feeling but with everything you’d ever want to do” offering. His wife, Konnie Crawford, joined him there in 2003 and set up her company The Crawford Shaeffer Group. Locally, Greg’s still best remembered for his clutch pinch hitting abilities during the Phillies’ 1980 World Championship run against the Kansas City Royals as they were the first World Series played entirely on artificial turf and the first two teams squaring off in a World Series whose franchises hadn’t previously won one. Although Greg and Konnie could’ve lived in other cities when he retired from playing baseball, they made West Chester their home—even

I N N OVAT I V E D E N T I S T RY IT SOUNDS ALMOST TOO STRANGE TO BE TRUE: A PERSON’S INABILITY TO GET A GOOD NIGHT’S SLEEP MIGHT BE PART OF A HUMAN GENETIC STORY THAT GOES BACK HUNDREDS AND LIKELY THOUSANDS OF YEARS. Research by anthropologist Robert Corruccini, conducted over the past 30 years, demonstrates that the skulls of humans living more than 400 years ago show very little evidence of malocclusion (crowded teeth and jaws). This is likely related to eating behavior, because back then, children were breastfed for two or three years and then ate a diet composed of hard, tough foods, such as dried meat and hard root vegetables. They had very little incidence of crooked teeth. By contrast, contemporary Americans have notably crooked teeth and small jaws. And underdeveloped jaws, it turns out, have a more sinister outcome than just crowded and crooked teeth. Local dentist Dr. K.C. Sykora says he believes these small, modern jaws are at the root of the current epidemic of sleep apnea. “When rigid jaws are underdeveloped, the tongue is forced backward and spills into the area where air needs to pass from the mouth and nose to the lungs. This is the source of most

obstructive sleep apnea,” he says. “Dental schools have traditionally taught us to be tooth doctors who focus on cavities, gum disease, root canals, broken teeth and the like. Recent extensive continuing education has given me new eyes and caused me to think like a ‘mouth doctor.’ For a mouth

of OSA, Dr. Sykora says he believes that with the emergence of a new family of oral appliances, the possibility of treating the root cause of OSA may be within reach. He says this new therapy depends on activation of stem cells located where facial bones join together and in the fibers that hold the teeth into the jaws. Intermittent mechanical signaling of these stem cells through the use of an innovative, specific oral appliance epigenetically triggers growth of the jaws and airway. This new device, called the Vivos appliance, is non-invasive, non-pharmaceutical, painless, and was cleared for use by the FDA, states Dr. Sykora. “Multiple clinical trials are underway, which seem likely to confirm results of thousands of individuals who’ve seen dramatic improvement in their OSA symptoms, with many of them no longer needing a CPAP machine. This also good news for those diagnosed with OSA who, for various reasons, are unable to tolerate a CPAP,” he adds. Before undergoing this therapy, patients go through a rigorous diagnostic process that identifies what is “off” in terms of proper jaw and skull relationships.
