It has made this upcoming season something to really look forward to. My wife and I are extremely thankful to have our family of six together to celebrate the holidays!

WHAT’S ONE OF YOUR FAVORITE THANKSGIVING DAY TRADITIONS? My favorite part of Thanksgiving is getting to spend time with all of our family. My kids look forward to extra time with aunts and uncles, and this year will be exciting to show off our newest addition. My wife and I are breaking our typical routine this year and hosting one dinner at our house! I’m very excited to get to be in charge of the turkey and hopefully begin some new traditions that we can carry on as our kids grow.

JOEL WILSON IS THERE SOMETHING YOU’RE ESPECIALLY THANKFUL FOR THIS YEAR? I am especially thankful for the relationships I’ve built over the past year, both personally and professionally. Each year brings new experiences and people into our lives, and I’m grateful for the imprint they’ve made, and the positive effects they’ve provided through continued support.

WHAT ACT OF KINDNESS HAS MADE THE GREATEST DIFFERENCE IN YOUR LIFE? When I was in the United States Marine Corps, I was a guard at two U.S. Embassies. During that time overseas, there were several Americans assigned there that invited us to their family activities, provided dinner on occasion and included us in other events to show their gratitude. I carry on those actions today by being involved in our community and supporting the men and women assigned to Whiteman Air Force Base.

KEVIN CARPENTER WHAT ACT OF KINDNESS HAS MADE THE GREATEST DIFFERENCE IN YOUR LIFE? After graduating from college, a vice president of operations of a retail company of 13 stores took a liking to me and offered me a job for $250 per week. “With hard work you could become a vice president,” he said. Four years later I became one of four vice presidents of a 113-retail store chain. His act of kindness turned into a 15-year experience in business that prepared me for my now 17-year career with Edward Jones.

WHAT’S YOUR MOST CREATIVE LEFTOVER-TURKEY IDEA? We love creamed turkey over white toast at our house. Having been raised in a military household, we refer to this seasonal delicacy as “SOS” or “Stuff On a Shingle.” Call me, and I will gladly share my mother’s recipe.

something, we will find it, but if we look for the good, we will most likely find that, too, even in the darkest of circumstances. I just had the privilege of hearing a local 18-year old girl, Anna Sarol, speak on overcoming adversity and the importance of choosing the right mindset regardless of our circumstances. At the age of 14, Anna, an accomplished gymnast, was paralyzed in a gymnastics accident in a routine warm-up exercise in her first week of her freshman year of high school. She was told that she would never walk again. Now, 4 years after the accident, she is using her circumstance to inspire others to push forward through whatever hardships they are facing, to find ways to serve others and to look for the good in the midst of the storm. When asked what the key was to her attitude and glowing smile and personality, she responded with one simple word—gratitude. Her nightly routine consists of telling God everything that she is grateful for, and she is careful to not leave even the littlest thing out. This choice to have an attitude of gratitude allows her to focus on all that she can do instead of what she cannot.

HERE ARE A FEW OF LAUREN’S TIPS FOR HOSTING AN EFFORTLESS GATHERING: + Cook seasonally, it ensures the ingredients you use are in their prime. + Choose recipes that can be made in advance. In my recipe development, I share just how much can be made in advance. + Not everything needs to be made from scratch. Don’t overwhelm yourself with too many dishes. + If you don’t bake like me, buy your desserts and put them on a pretty platter. Sometimes I sprinkle with confectioner sugar to make them look extra special. + Have a glass of wine or a signature cocktail that you offer to everyone who enters your home. + Create a mood by turning on music, turning down the lights, and lighting candles. LAUREN’S TIPS FOR CREATING AN EASY AND BEAUTIFUL TABLESCAPE + It’s always a great idea to bring the outdoor in to your table, and it often can be found in your own yard. Use greenery from your yard, branches from your trees, flowers or pine cones. + Use fruit as table decor since it can be so beautiful, and can also be used after the to make pies or smoothies. + Votive candles create a nice ambiance especially when cozied up in the greenery. + Cloth napkins always make the table special. (if you don’t want to iron them just tie a little twine around them ands no-one will notice.) 26

CARAMELIZED ONION TART INGREDIENTS + 2 tablespoons extra-virgin olive oil-Cervasi recommended + 2 tablespoons butter + 3 medium onions-sliced very thin + Kosher salt and freshly cracked black pepper + 4 thyme sprigs, plus more for garnish + 1 sheet frozen puff pastry-thawed in the refrigerator

METHOD 1. Preheat oven to 375F. Line a baking sheet with parchment paper. 2. Heat olive oil and butter in a large skillet over medium-low heat until melted and sizzling. Add the onions and sprinkle generously with Kosher salt and pepper. Stir to coat onions with the butter and oil. Turn the heat to low and cook onions for up to 40 minutes, stirring frequently. The onions will be soft, browned in places and taste almost sweet when finished caramelizing 3. On a piece parchment paper, roll the puff pastry into a roughly 10 by 16-inch rectangle. Place puff pastry on the baking sheet. Top pastry evenly with onions, leaving ½ inch border. Sprinkle with thyme. If using bacon or cheese, sprinkle them on now. 4. Bake on middle rack until crust is golden about 25-30 minutes. Oven temperatures vary, so when the edges are browned it is done. 5. Let the tart cool for 10 minutes. Cut into rectangles. Serve warm or at room temperature. CONTINUED >

Roasted Butternut + 4 cups peeled butternut squash, cut into 1” cubes (about 1 medium squash) + 2 tablespoons extra olive oil + 1/2 teaspoon Kosher salt

Bechamel Sauce + 1 stick unsalted butter (4 ounces) + 1/2 cup all-purpose flour + 4 cups whole milk, at room temperature if possible + 2 cloves of chopped garlic + 1 bay leaf + Pinch fresh nutmeg + 6 fresh sage leaves chopped, or more to taste + 1/2 teaspoon Kosher salt and pepper to taste + 1 cup grated fontina + 1/2 cup parmesan cheese, grated + 1 pound dry rigatoni (Cervasi recommended) 28

2. In a 2 quart saucepan, melt the butter over medium heat. Add the flour and garlic whisk until smooth, about 2 minutes. Always stirring, gradually add the milk a little at a time, and continue to whisk until the sauce is smooth and creamy. Simmer until you just start to see tiny bubbles around the edges. (Watch it may boil over if it comes to a rapid boil) The sauce should be thick enough to coat the back of a spoon. Turn off the heat and stir in fontina, nutmeg and sage. 3. In a large pot, bring to a boil 6 quarts of salted water. Add the rigatoni and cook for about 5-7 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still a bit hard inside. Drain in a colander. Return pasta to the pot and pour in the bechamel sauce and the butternut. Using a wooden spoon, mix well until all the pasta is coated with the sauce. Top with the grated parmesan. 4. Pour into a greased 13-by-9-inch baking dish. At this point you can cover and refrigerate it for a few hours. 5. When ready to serve, preheat oven to 375 degrees F. Take out the baking dish with pasta, and let it come to room temperature. 6. Bake uncovered for 45 minutes or until the top has bubbled up and browned a bit. Let stand 10 minutes before serving. Top with pine nuts and fried sage. Bake uncovered for 30-45 minutes or until the top has melted and browned a bit. All ovens are different so look for the melty goodness on top. Check to be sure it’s warmed through. 7. Remove from the oven and serve.

viding inspiration LOCAL PHYSICIAN FACES HIS OWN INJURY WITH FAITH AND DETERMINATION

WHEN JAY RAPLEY WENT FOR AN EARLY MORNING WALK WITH HIS NEIGHBOR AND THEIR DOGS NEARLY THREE YEARS AGO, HE DIDN’T KNOW HIS LIFE WAS ABOUT TO CHANGE FOREVER. His life might look different now, but thanks to the strength he has found from his faith, family and friends, he’s not allowing difficulties to define him. Rapley—a husband, father of four and local orthopedic surgeon—started out the morning of January 23, 2017 in an ordinary way as he headed out for the walk. He suddenly heard a car coming, and what happened next was surreal. The driver hit him, resulting in multiple fractures and a spinal cord injury. He was rushed to the emergency room where he also faced significant bleeding. As a physician, he immediately knew the extent of his injuries and that they meant he would not regain use of his legs. He was paralyzed. “I knew what was wrong with me, and I knew what was coming,” Rapley says. After two weeks in intensive care and a stay at a rehabilitation hospital, he began to adjust to the new normal for his life, which involves a wheelchair.

“Pretty much any aspect of life that you think of that can be affected has been,” he says. He can no longer run after his four daughters, and it can be difficult finding wheelchair-accessible places to meet up with friends. He and his family moved into an accessible home, and he had to make modifications to his work schedule and responsibilities. Despite it all, he was able to return to work six months after the accident. He says he couldn’t handle the idea of being at home and doing nothing, and today he continues to see patients and perform surgeries. “I worked too hard to give up,” he says. He might work fewer hours now at Rockhill Orthopedics, but he says the group has been very willing to accommodate him, and he is also back to assisting with high school athletics. He has a new perspective as a doctor on what his patients might be going through as they deal with injuries, surgeries and pain. As he was recovering, friends helped manage various aspects of dayto-day-life for him and helped move his family into their new home. Rapley’s skills with his hands are evident not only in his ability to perform surgery, but also in making handcrafted guitars—a hobby he still continues to enjoy. Lee’s Summit Mayor Bill Baird named Jay Rapley the 2019 Lee’s Summit Citizen of the Year in recognition of his strength and perseverance. He was also named a 2018 Top Doctor in Lee’s Summit. His life has taken a huge shift from what it was before 2017, but through it all his faith has been instrumental in helping him face the challenges. “The key to overcome adversity is my faith in God,” Rapley says. “If I didn’t have that, I don’t know where I would be. When everything is taken away, what’s enough for you?” Ultimately, he’s learned that while some days might be harder than others, his faith in God is what is enough to sustain him. “There isn’t one of us who can escape pain, grief, injustice, fear…the question is how we respond throughout the course of it,” Rapley’s wife Ashely says. “Jay’s daily response has been a heart of submission (to God) and humility. Jay chooses daily to continue serving me, his daughters and his patients with such intentionality because Christ continues to fill his lungs with breath.” 42

World-class runner Mark Curp GRATEFUL FOR LIFE LESSONS FROM BATTLE WITH CANCER

DISTANCE RUNNING TOOK MARK CURP FROM A FARM NEAR POLO, MO, TO ALL-AMERICAN HONORS AT THE UNIVERSITY OF CENTRAL MISSOURI AND THEN TO A CONTRACT TO RUN PROFESSIONALLY. The sport’s leading magazine, Runner’s World, named him the top road racer in the world in both 1987 and 1988. Curp ran what he calls the race of his life in Philadelphia in 1985, setting a world record in the half-marathon with a time of 1:00:55 (for perspective, try running a mile in less than five minutes—for 13 consecutive miles). He continued to run after his dreams as he raised a family in Lee’s Summit, pursued his career and remained active in the local running community. Then came news that no one wants to hear. “I was diagnosed with stage 4 non-Hodgkin’s lymphoma in April 2015 after I had a small lump develop on my neck and went to have it checked out,” Curp says. “I went through six months of chemotherapy, finishing in December of 2015.” He applied the same work ethic and determination to beating cancer that he did to his running career. “Due to my faith, family and friends, I can honestly say that I didn’t really worry about or lose any sleep over being diagnosed with cancer,” Curp says. “My biggest concern was for my family if I were to die prematurely.” He refused to let cancer slow him down and was able to walk, ride an exercise bike and even do some running. “After the first month, I learned how much I could do after each treatment and when,” Curp says. “My faith, prayer, time with family and exercise were key in how I responded to the diagnosis and treatment.” CONTINUED >

The cancer remains in remission, although he has blood work done twice a year and has annual CT scans. Although he always made faith and family his first priorities, the experience has given him a renewed sense of purpose. Curp volunteers at his church and

the board of the Hospital Hill Run (which he has won numerous times) and helps others achieve their running and fitness goals. He recently started Mark Curp Running & Fitness (www.markcurp.com). He has coached runners from preteens through their 60s. One client has an ambitious goal to run an international marathon, while others simply want to get back in shape. “I believe serving is my key gift,” he says, “and I’ve found these avenues great ways to exercise it and add to my sense of purpose.” As

encourages others to count their blessings and take nothing for granted. “The key lessons I’ve learned is that life is short, and we have only a limited amount of time to make a positive impact in this world,” he says. “It’s important to try to make the most of the time I have by investing in others as well as maintaining a positive attitude and an attitude of thankfulness and gratitude. “Surround yourself with encouraging family and friends, start or continue exercising, serve others and, most importantly for me, continually seek to grow in my faith in Jesus Christ, which is where my hope comes from.”

Should I show up to court? Court dates in divorce and family law matters can be stressful. The thought of coming to court can cause stress and anxiety.
