AS A LOCALLY OWNED AND OPERATED BUSINESS, THE FIELDHOUSE BELIEVES IN SUPPORTING OTHER MONTANA-BASED ENTERPRISES, PARTICULARLY LOCALLY SOURCED MEAT AND PRODUCE. “It is our duty as chefs and people to educate ourselves about the food that’s regularly accessible to us,” states Jonathan Reyes, chef at The Fieldhouse. He emphasizes the impact shopping locally sourced food can have on the community as well as the environment. Utilizing seasonal foods, rather than expecting things year-round, on demand, is a more eco-friendly option. “There are great things being done locally in your own backyard,” he adds. INGREDIENTS + 2-3 king oyster mushrooms, from Garden City Mushroom + 1 Delicata squash and 1-2 blood oranges, from Spokane Produce + toasted black pepper honey + 4 Tbsp black peppercorn + 2 cups honey + 1/2 cup apple cider vinegar + 2 Tbsp salt + blood orange zest + smoked paprika squash seeds + 1 Tbsp smoked paprika + 4 Tbsp olive oil + 2 Tbsp salt + 1/4 cup unsalted butter, from Angel Lind Dairy, MT DIRECTIONS Preheat oven to 350 degrees. Split the Delicata squash in half. Take out the seeds using a spoon, place them in a bowl with some water. Using your hands rub the seeds together until the stringy flesh comes off. Rinse the seeds, pat dry. Place them in a clean bowl and add the extra virgin olive oil, salt and smoked paprika. Place on a sheet tray or roasting pan and roast in a 350 degree oven for 15-20 minutes. Take the halved squash and cut 1”, C-shaped pieces. Place the squash in a large bowl and toss with salt and olive oil. Place the squash on a sheet tray and roast at 350-400 degrees for 40 minutes, until softened. As squash cools, zest blood orange. Next remove the top and bottom of the orange. Carefully filet the skin off the orange (the goal is to get medallions out of the oranges). Split the king oyster mushrooms in half. Add butter to a skillet or cast iron pan over medium heat. Once the butter is melted, add the mushrooms flat side facing down. Once they are golden, remove from the pan and let rest. Sprinkle with salt. For the honey drizzle: In a small sauce pot combine honey, apple cider vinegar, blood orange zest, and salt and reduce until a syrupy consistency is reached. In a small pan toast the black peppercorn seeds over medium heat. Let cool and with the bottom of the pan crack them. Add the honey syrup. Assemble the dish. Bon appetit! COLLECT BROWN AND GREEN MATERIALS To make your own hot-compost heap, wait until you have enough materials to make a pile at least 3 feet deep. You are going to want to combine your wet, green items with your dry, brown items. “Brown” materials include dry plant materials which add carbon. “Green” materials include kitchen scraps and coffee grounds, animal manures (not from dogs or cats), and fresh plant and grass trimmings, which add nitrogen. For best results, start building your compost pile by mixing three parts brown with one part green.

WATER PILE Sprinkle water over the pile regularly so it has the consistency of a damp sponge. STIR PILE During the growing season, you should provide the pile with oxygen by turning it once a week with a rake or garden fork. FEED THE GARDEN When the compost no longer gives off heat and becomes dry, brown, and crumbly, it’s fully cooked. Whether or not you are trying to lose, gain or maintain weight, reading labels and understanding nutrition facts will help you make better choices for your body and ultimately feel better in your day-to-day.

PROTEINS Protein makes you feel full longer. If you eat a meal with little protein, you’ll feel hungry again pretty quickly, and it can be discouraging. But you don’t have to eat a huge steak to get enough protein. You can find it in cheese, nuts, seeds, spinach, eggs, avocados, broccoli, hummus, lentils—the list goes on and on! Mindful eating means taking note of how hungry you feel and eating enough protein to satisfy that hunger in a way that will last.

C A R B O H Y D R AT E S Carbohydrates are not your enemy. But, it is important to pay attention to how you feel when you eat them. If you eat a lot of carbs in one sitting, it can cause your blood sugar to spike, and when it drops back down, you can feel lethargic and maybe even irritable. By spreading your carbohydrate intake throughout your day and always pairing it with a protein, you can help your body regulate your blood sugar more effectively and feel more alert all day long.

F AT S Fats also help slow carbohydrates down so they don’t instantly turn into sugar in your bloodstream. Fats are important for energy, and it’s especially important to eat the right kinds of fats for your brain. For better concentration and memory, try to incorporate foods like salmon, avocados, nuts, seeds and olive oil. CONTINUED >

You are the best expert of you, and you get to make all of the final decisions for your body. Do your research, get all of the info that you can and then decide how you want to divide up your nutrition each day. One of the most effective things you can do is keep a log of your moods, how your skin looks, how your hair feels, your water intake and your energy levels. While your fitness goals are important, how you feel each day is so much more important. It’s easy to lose weight by dramatically cutting calories, but that can leave you feeling irritable with low energy, and it’s ultimately not worth it. Take care of yourself and think about how the choices you make will affect your health in the long run. And never forget that you are enough, just the way you are.

J ACLY N FISHER Born and raised in Scobey, a small, close-knit community in the northeastern corner of Montana, just 14 miles south of the Canadian border and 125 miles west of Williston, Jaclyn Fisher ventured to Billings in 2003. She has since built a life here, expanding her skillset and education while marrying and raising a family. Jaclyn is a devoted mother and wife. She and her husband, Austin, have two children: a four-year-old son, Treysen, and a two-year-old daughter, Reese. They also own two dogs, Bo and Coco. “When I’m not working, I enjoy outdoor activities and spending time with my family,” she says. In 2004, Jaclyn cultivated her interest in aesthetics by attending cosmetology school. She gained experience working as a medical assistant at Billings Clinic Orthopedics, and also obtained her EMT certification. Eventually, her background in the medical field and as a cosmetologist led her to join the team at Billings Plastic Surgery. She has earned certification in Derma-planing and Salt Facials, as well as Laser Certification. “I love our work place environment and all of the people I get to work with,” declares Jaclyn. “Coming to work is fun when you love what you do and all of your clients.”
