Fall in Love with Pastichio! MEZEDES CHEF VANGELI GELIS SERVES UP THIS CLASSIC GREEK COMFORT FOOD ARTICLE AND PHOTOGRAPHY ELIZABETH A. LOWRY
ALTHOUGH MEZEDES CHEF/OWNER VANGELI GELIS REMINDED ME THAT THERE’S NOT REALLY A CHANGE OF SEASONS IN GREECE WHEN I ASKED HIM FOR A FALL GREEK RECIPE, THE PASTICHIO DISH HE COOKED UP WAS WARM, COMFORTING AND COULD EASILY SLIP INTO MY ROTATION OF GO-TO FALL FAVORITES. Van says that Pastichio is basically a Greek lasagna—it’s a very popular comfort food he’d had often while growing up in Greece. Either way, it’s irresistible.
Pastichio (SERVES 6-8) + 2 lb ground chuck + 16 oz penne pasta + 2 Tbsp oregano + 1 tsp salt + 1 tsp black pepper + 1 tsp granulated garlic + 1 tsp ground cinnamon + 3–4 oz chopped red onion + 4 oz feta crumbles (optional) + 6 oz butter + 1 qt milk + 1 c all-purpose flour 1. Cook the ground chuck with the seasoning and onions till browned. Remove from heat and drain any excess fat. 2. Cook the pasta, drain and pour into a 2-inch-deep prepared casserole dish. 3. Put the cooked beef mixture on top of the pasta, pressing firmly down so it becomes compact. 4. Melt the butter in a skillet, then slowly whisk in the flour till a thick paste forms. 5. Turn heat to medium and add milk, whisking the flour mixture till it thickens. 6. Take the béchamel off heat and slowly pour it over the meat and pasta, crumble the feta over the top and bake at 350 for 20–25

FIRST FLOOR FEATURES KITCHEN The kitchen area was taken from what Janet referred to as “the ugliest kitchen in the Cincinnati area” to a “beautiful, open, bright, up-to-date, wonderfully designed and functional space.” Perennial took the old kitchen to the studs and built it back up by redoing and rerouting the electric and plumbing where necessary, installing Decora cabinetry for a larger work area with tons of storage and a large island, adding new windows and appliances, and designing and installing a simple but elegant custom hood. COFFEE NOOK Wanting a clean and orderly look to the kitchen meant hiding the coffee maker from view. They achieved this by creating a custom stacked cabinet with a lift-up appliance door and outlets in the cabinets that are completely hidden when not in use. WET BAR Tim and his crew removed the old dry bar, a closet and a laundry chute, then plumbed a drain for a new wet bar and installed a new undercounter fridge with ample storage and amenities— dark cherry cabinets with under-cabinet lighting, a leather-treated granite countertop and Carrera subway tile for the backsplash. LIVING/ENTERTAINMENT AREAS For the adjoining family/living rooms, Perennial removed the old, dark ceiling beams, added a stone facade and a new mantel to the original painted brick fireplace, then opened up the walls from the kitchen to the dining room and the dining room to the family room—so all three areas could flow together seamlessly. They also added recessed lighting and redesigned the entertainment cabinets to accommodate a new, large flat-screen TV.

LA SOUPE IS RESCUING FOOD— AND CHANGING LIVES, SAVING COMMUNITIES
LA SOUPE FOUNDER SUZY DEYOUNG ALREADY UNDERSTOOD THE IMPACT A SKILLED CHEF COULD HAVE ON HER COMMUNITY—AFTER ALL, THE 40-YEAR VETERAN CHEF WAS ALWAYS TAKING PART IN EVENTS THAT HELPED TO FEED THOSE IN NEED. But, in creating her own nonprofit organization, that desire to make the world a better place went from back burner to main course. “As chefs, we can pretty much put anything to good use,” Suzy says. She and her dedicated La Soupe staff use that chef know-how to “keep food in the system—not in the landfill.” Simply put, Cincinnati’s La Soupe bridges the gap between food waste and hunger—rescuing perishable food that would otherwise be discarded by grocers, distributors, restaurants and caterers, then repurposing it as healthy and fresh meals for online retail customers, nonprofits and food-insecure families. And it’s making quite an impact. Since its founding in 2014, La Soupe has “donated over 997,500 servings to those in need,” Suzy reports from her ongoing role as executive director. More notably, that meal count continues to rise—through June of 2020, La Soupe has rescued 500,000+ pounds of food to provide more than 292,000 meals. An additional 340,000 pounds of perishables were directly donated to those in need. Partners within our own community allow Suzy to deliver on her mission.
