SALMON B E L LY C E V I C H E I am always a sucker for the leftover trim or belly of a fresh fish and the possibilities of turning it into something sublime yet affordable. Often, you can find these cast off pieces at your local fish market for way less than premium cuts. Ceviche is a perfect dish for utilizing these leftover pieces and perfect for the summer. I top mine with avocado, and cornbread biscotti that I make by toasting day old cornbread.

The Perfect Cheese Plate
THERE ARE LITERALLY THOUSANDS OF COMBINATIONS OF CHEESE THAT CAN BE FOUND ON A CHEESE PLATE. Affairs to Remember, one of Atlanta's premier catering companies, is known for their amazing cheese plates and clever combinations. Ahmad Nourzad, Executive Chef of Affairs to Remember, and I recently had a chance to chat cheese; here are some of his fun insights on what to include to create the perfect cheese plate! AN: I love triple cream camembert, how would also always include Valdeon, it is a super mild and extremely favorable blue cheese that is not so strong and pairs with everything. I also love a good creamy feta, I prefer goat's milk feta because of the super creamy texture it has compared to regular feta.

SOK: BESIDES CHEESE, WHAT ARE THREE THINGS THAT EVERY CHEESE PLATE SHOULD HAVE? AN: In my mind every cheese plate needs to have either fresh or dried fruit as well as perfectly seasoned nuts, and fresh crusty bread. The perfect cheese plate has a room temperature cheese selection, some quince paste and an assortment of artisan breads and crackers. SOE: WHAT WINES ARE PERFECT TO SERVE WITH CHEESE? AN: Big, sharp, nutty cheeses paired with big, bold wines or mild, fresh cheeses paired with delicate, light bodied wines are both examples of complementary choices. Think mild with mild and wild with wild.

While Clay Stapleford might suggest that he began to express himself creatively at the age of three while playing with a pile of dirt; just looking at “Stampede” tells a completely different story. “I remember being a young teenager having the epiphany- I’m not going to fit into what’s expected,” said Clay. “I also had a strong desire to create and contribute.” In Clay’s own words, “To be a great artist or creator you have to be a rebel.” Clay draws inspiration in the love, beauty, and the power of creation. While Clay’s paintings are certainly an expression of his inspiration he is also changed through the artistic process. “It is the experience I also get to share as a human and that inspires me to paint.” Clay was photographed with his painting “Stampede,” a product of a first-of-its-kind group art show in New York City entitled, “The Curious Mind,” that merged art with

The beautiful patterns of his randomness are rooted in the love that comes from within an artist only when they have stopped taking themselves so seriously. “Learning to be present and alive feels more than adequate,” said Stapleford, “like simply opportunity to grow.”
