WHEN MARY ELLEN SENI OPENS THE BEDROOM DOOR OF HER ELDEST SON, PETER, EACH MORNING, SHE NEVER KNOWS WHAT SHE’S GOING TO DISCOVER. That’s because Peter, a night owl, has a passion for rearranging his bedroom furniture. “Sometimes he even puts things in the bathroom,” she says with a laugh. These days Peter is rearranging more than just his bedroom furniture. Indeed, he’s making life changes. Since this past August, Peter has become a fixture at Empowered Community Services, a disability services provider located at 42 S. Richards Road in Springboro. Expressing her gratitude for the new facility, Mary Ellen notes that Peter’s become more talkative, active, and, in a nutshell, “He just seems happier in life.” We sat down with Mary Ellen and Peter at the sparkling new Springboro facility. Peter, 45, has Down syndrome, and Mary Ellen is quick to point out that in the past there hasn’t been a lot of options for parents of children with special needs to receive expert and compassionate care. Like many of the center’s clients, Mary Ellen discovered Empowered through a county social worker. “I’m just grateful that this place opened,” she says. “Everyone in the staff is so nice and considerate. They’re so caring with everyone. There are activities all the time, which is really nice.” Empowered Community Services is the brainchild of Joe Kowalski, who grew up in Ohio and has an undergraduate degree in psychology from the University of Cincinnati and an MBA from the University of Findlay. “We set out to be different,” Joe says. “We have a first-class physical space and offer outstanding customer service. Our goal is to develop long-term relationships with families. I’m where I’m supposed to be.” What Joe strives for is empowering people with disabilities to live the fullest life that they choose.

The state-of-the-art Springboro facility has several rooms that offer spaces to hold classes such as arts and crafts, cooking and self-advocacy training. A multi-purpose sensory room outfitted with special lights, flooring and walls can stimulate a variety of physical and mental needs, such as allowing wheelchair-bound clients to sprawl out on the floor, which gives them moments of much-needed freedom. The building has a huge, spotlessly clean, completely accessible restroom where everyone can receive excellent care. Further, the entire building is designed with the highest level of accessibility. The center also offers an extensive transportation program, which handles the commute for many of the clients, as well as being the ride for numerous field trips or taking a person to their job. When the van arrives to pick up Peter at his Kettering home, Mary Ellen says he’s raring to go. “He’s easier to get up in the morning,” she says. “The driver is so friendly. The driver comes out and takes his hand.” Once expressing himself mostly in random words, since attending Empowered, Peter has become much more talkative. He’s become much better at forming sentences, allowing for more meaningful interactions and the ability to express his needs. As the staff and clients begin to get ready for lunch, two signs on one of the café walls provide constant inspiration and a sense of empowerment that can apply to all of us. IT'S NO SURPRISE THAT AFTER THANKSGIVING, WE OHIOANS WILL BEGIN TO BRACE OURSELVES FOR THE IMPENDING COLDER TEMPS AND THE DREADED "S" WORD: SNOW. Why not embrace the winter weather with an age-old activity that’s healthy and fun for the whole family? Just picture it: the early morning sunlight shining off a recent snowfall. The trees look majestic in their all-white attire. It’s a beautiful morning, and you want to take advantage of it to get some exercise and relieve a little stress. Instead of your usual routine at the local gym using the same old standard machines, today you will try something new: snowshoeing! Snowshoeing, one of the earliest forms of winter travel, provides a great physical exercise experience in an outdoor wonderland, particularly in 4 inches of snow or more. Megan Green Wells, an outdoor expert and blogger for REI Co-op, shares how to get started. Why try snowshoeing? If you’re looking for a way to stay in shape even when the snow falls, snowshoeing is an excellent low-impact aerobic exercise. It lets you extend your hiking and running season and lets you enjoy solitude in areas that might be crowded in summer. It’s a great social activity; all ages and ability levels can enjoy the sport together. It’s also inexpensive. If gear and lift-ticket prices for skiing and snowboarding give you pause, you’ll be happy to know that snowshoeing is affordably priced. Your required gear includes snowshoes and appropriate attire; poles are also recommended, but not required. It requires only a few basic techniques. Few outdoor activities are as beginner-friendly. Getting started snowshoeing is easy: if you can walk, you can snowshoe. Taking a class or going on a guided tour is a great way to learn these concepts. Here are the basics for your first time snowshoeing. Get snowshoes that are right for your weight, the terrain and the snow conditions. Wear warm, waterproof boots. Dress in layers with clothing that can handle cold, wet conditions. Bring adjustable poles with snow baskets (optional, but recommended). As it also goes for hiking, you ought to pack your phone, a map, some snacks and bottled water. If you use a water bottle, keep it from freezing by using an insulating cover. A vacuum bottle with hot drinks or soup can help you stay both hydrated and warm. When buying your first snowshoes, flat terrain snowshoes are a great first choice. These are entry-level models that also offer good value. They’re designed for easy walking on flat to rolling terrain and are ideal for beginners or families. How to dress for snowshoeing: Since snowshoeing is an outside, winter activity, it’s essential that you wear suitable boots and socks and dress in multiple (non-cotton) layers to best manage body heat retention and moisture removal. A hat, gloves and sunglasses will round out the basics. CONTINUED >

Where to go snowshoeing in Dayton: Surprisingly, there are numerous places to snowshoe in the Dayton area. Some of the best are in the more than 15 parks managed by Five Rivers Metroparks. An interactive map of them can be viewed at MetroParks. org. These parks offer numerous hiking trails, and the interconnected bike trail network is known the world over. Of course, if you have some land or know a friend who does, just get out there! Safety tips: Stay within the limits of your knowledge, conditioning, the environment and your gear. Use established trails at first. Avoid snowshoeing alone whenever possible. Regardless of your group’s size, always leave your trip plan behind with a responsible person, and let them know when you’ll be back. and I were her minions all Thanksgiving Day, and we learned how to make many of our Thanksgiving favorites with her guidance. The unspoken rule was that the men would spend the day lounging in the family room watching football (and sneaking an occasional bite of Thanksgiving deliciousness from the kitchen) while the women would spend the day in the kitchen. Our joking, teasing and gossiping while cooking together are some of my most treasured memories. Our Thanksgiving menu trended toward the very traditional with roast turkey as the star of the show. My mother loved trying new recipes, though, and would often include new side dishes. These were mostly delicious and quickly adopted as new Thanksgiving menu options. There was the occasional bomb, though–and these disasters were typically something my sister or I had volunteered to contribute to the meal. I recall the whole-wheat cloverleaf rolls that I optimistically baked one year. Unfortunately, they failed to rise, and once baked, remained as three little balls that actually clunked when dropped onto a plate. The brown, whole-wheat color of the “roll” and little clunk noise prompted my stepson to ask if “real rocks” had been

4th GENERATION ROASTED BRUSSELS SPROUTS INGREDIENTS + 2 pounds Brussels sprouts + 1 tablespoon olive oil + 6 slices bacon + 1/3 cup dried cranberries or craisins + Salt and pepper to taste + Balsamic vinegar glaze (purchased or balsamic vinegar reduction)
METHOD Trim Brussels sprout stems and cut them in half. Preheat oven to 425 F. Toss Brussels sprouts, olive oil, salt and pepper and distribute evenly on sheet pan and bake for 15 minutes. Stir and return to oven for another 10–15 minutes until edges are brown and crispy. While Brussels sprouts are roasting, dice bacon into bite-sized pieces and fry till crispy. Combine cooked Brussels sprouts with bacon and craisins, drizzle glaze over all and serve immediately.

METHOD Heat milk, salt, sugar and butter until butter is melted. Cool to 110 F. Mix milk mixture with 1 1/2 cups flour and yeast. Mix for 3 minutes then add eggs and mix well. Add remainder of flour and mix on medium speed until dough pulls away from sides of bowl. Knead dough on a lightly floured surface for about 2 minutes. Place dough in a lightly greased bowl and cover with a clean kitchen towel. Let rise till double, 1–2 hours. Punch down and divide dough into 14–16 equal pieces. Shape each piece into a smooth ball (or into any desired roll shape). Arrange on greased baking pan and allow to rise about another hour. Bake rolls at 350 F for 20–25 minutes.
