There is almost nothing they won’t fry in Alabama – so, fittingly some of their most beloved foods are fried tomatoes, fried okra, fried pickles, fried chicken and fried catfish. The Gulf is a huge seafood producer and the state is also known for shrimp (served with grits of course), crawfish and oysters. Sauteed, broiled, baked, fried, in salads, tacos and swimming in grits…riches from the Gulf play a large role on the typical Alabama menu. And let’s not forget dessert. ‘Bama’s banana pudding is a point of pride (don’t ever consider using a mix) in its most authentic form. Add some pecan pie or chocolate covered biscuits and you will be right at home. Even though many Alabama restaurants are considered casual, there are also unique experiences we wanted to share. Just west of Huntsville is the Rattlesnake Saloon, operating seasonally at the opening of an actual cave. In Florence, the 360 Grille is located atop a tower with gorgeous views of the Tennessee River. In Madison, the Main Street Café is a converted jail where diners can eat from an actual cell with iron bars. Finally, Lamberts Café in Foley is famous for its “throwed” rolls tradition. Servers apparently toss rolls to patrons who hold their hands up in the air. That alone might be worth the road trip! Cedar Plank Grilled Fish ARTICLE AND PHOTOGRAPHY MELISSA LATIN

HAPPY FALL! No matter where you live in the country, October is the perfect month for grilling! Let’s venture away from the burgers and hot dogs, and grill up a beautiful filet of salmon or grouper on a cedar plank instead. Cedar planks lend a light, smoky woodiness to the flavor profile. What can be better than to add a bit of earth to the sea? I recommend stocking up on these babies; try using them on the grill with other types of fish, shrimp or even scallops. It is crucial that you soak the plank in water for at least an hour or so before grilling. If you skip this step, the plank will catch on fire. For soaking, find a vessel large and deep enough so that the plank can be fully submerged in water. Place a heavy object on the top of the plank to allow for full submersion.

Salmon Scottish salmon (Faroe Island) is a great choice when it comes to grilling. The fat lines are much thicker and will result in a tender and juicy finished dish! INGREDIENTS + 1 to 1 1/4 lb. Scottish salmon filet + 2 tablespoons olive oil + kosher salt and black pepper + fresh chopped parsley + lemon wedges DIRECTIONS Heat grill to medium-high. Place salmon, skin-side down, on plank. Coat with the olive oil, kosher salt and pepper. Place plank on grill. Allow to grill on direct heat with lid closed for about 12 to 14 minutes. No need to flip. When finished, squeeze on a bit of fresh lemon juice Salmon 32

Grouper Unlike salmon, I like to impart a bit more flavor to grouper. Any brand of cajun seasoning will do. Grab a pound, to a pound and a half of skinless grouper. Rub with the juice of a lemon. Sprinkle on the seasoning. Place grouper on cedar plank and grill for about 12 to 15 minutes, depending on the thickness of the fish. Again, there is no need to flip. Serve up with a garnish of fresh mango salsa. Grouper with Mango Salsa

Mango Salsa INGREDIENTS + 2 mangos, diced + 1 jalapeno, diced + 1/4 red onion, diced + 1/2 red pepper, diced + 1 Roma tomato, diced + 2 to 3 tablespoons fresh chopped cilantro + juice of one lime + juice of one lemon + juice of one orange + juice of 1/2 grapefruit + 1 tablespoon light olive oil + kosher salt/pepper DIRECTIONS In a bowl, combine the mango, jalapeno, red onion, red pepper, Roma tomato and cilantro. Season with kosher salt and coarse black pepper. Add the citrus juices and olive oil. Gently mix. Taste for additional salt. Place in fridge to chill for at least 15 minutes.
