IN THE EARLY MORNING OF DEC. 31, 2017, I WAS STARTLED AWAKE BY THE SOUND OF DISTANT GUNFIRE. It unsettled me, and I couldn’t go back to sleep. I tried telling myself it was some kid lighting off pre-New Year’s fireworks. I wasn’t convinced. Later that morning, during Sunday morning church service, a pastor announced that a member of our church, Douglas County Sheriff Deputy Zackari Parrish of Highlands Ranch, was killed in the line of duty just a couple miles away. Since that awful morning, I have seen the unfolding story of Zack’s widow, Gracie, from afar. I didn’t know Gracie personally, but we attend the same church, live in the same south Denver area. I’ve been married to a cop for more than 20 years. Gracie’s story felt personal. I was heartbroken for this young mother faced with the prospect of raising two babies without her husband. Even from afar, it felt like a dark place. But then, I caught glimpses of light shine from Gracie’s evolving story. I heard about Gracie’s The Shelter Foundation. Despite being a newly single mother, dealing with grief and the unknown, Gracie got straight to work creating a faith-based community and educational resource for first responders and their families. Here, Gracie talks to Highlands Ranch Lifestyle about The Shelter Foundation and how she is working to inspire others. INSTEAD OF RETREATING AFTER THE TRAGIC LOSS OF ZACK, YOU CHOSE TO GET TO WORK, PUBLICLY. WHAT INSPIRED YOU TO CREATE THE SHELTER? I knew almost immediately that even in the midst of the shock and overwhelming grief, God was with me and carrying me. I’d just lost my husband, my best friend and the love of my life, but I sensed that God had a calling and a purpose for me in this, an opportunity to serve those Zack served with, and the families that stood with and behind them. Even though we had only been a first responder family for three years, I’d experienced firsthand how hard life can be in this career—the loneliness, the missing holidays and birthdays and other family time, the jaded cynicism, the feelings of isolation and being disconnected from not only those outside the first responder community, but also those within. WHAT DO YOU HOPE COMES OUT OF THE SHELTER? I hope to see as many first responders as possible connected in godly, healthy, authentic communities, filled with peace and a renewed passion to serve, thriving together on both good days and bad. We’ve already seen the start of this in so many ways through our first year of men’s and women’s Bible studies—the spark of hope return to a wife’s eyes; tough men who are secretly struggling that have found peace with others who are similarly struggling; marriages healed; safe, healthy communities formed; families united and bound together. Zack took his oath to serve our community very seriously. It wasn’t just some cliche or box to check to him. He felt and lived it with every fiber of his being. I firmly believe that I’m called to pick up the torch Zack carried and continue my husband’s legacy by serving those who were like him—like us. I want to build something I wish I’d had in my days as a first responder wife. WHAT HAS SURPRISED YOU? How fast we’ve grown in such a short time. I knew this was needed, but it’s blown us away to see just how much it’s needed, and how many out there in the first responder community who are just like I was—craving for safe, healthy, godly communities where we can see and feel that we’re not as alone as we think. 22

The response we’ve received has been enormous and oftentimes, overwhelming, both here in the Front Range and nationwide. We’re trying to keep up with Him, and it’s an honor to be a small part of how He’s moving in the first responder community. WHO INSPIRES YOU? The young widows who I’ve met across the country these past 21 months are who inspire me the most—women raising their kids alone, grieving yet still taking incredible steps toward hope and healing. They remind me that our stories are not done yet; there are still chapters yet to be written, yet to be lived in the years ahead of us, full of joy and hope and peace and redemption. HOW HAS THE SHELTER CHANGED YOUR LIFE? I never in my wildest dreams would have imagined being here, a widow who is recognized whenever I’m running errands around town, shopping at the store or in line at the DMV. It’s been surreal. I see Zack’s name and our picture everywhere, even still today, almost two years later. And while I never asked for this, I’m constantly asking God what He wants me to do with this platform He’s given me and this name that’s become known. It’s helped me move forward in hope because there’s more than just loss that marks me. There’s a purpose and a promise of hope for both me and those I serve. WHAT WORDS DO YOU LIVE BY? “Redemption” is the word that’s resonated with me the most these past many months. I choose to rest in His promise of redemption for my life and my story; the idea that while I’ve been in the dark of a long, hard night, my sunrise is coming. I can already see the slightest, gradual color on my horizon, God’s promise of a bright dawn and that in that morning, I will see and experience what David was talking about in Psalm 27:13—the goodness of the Lord in the land of the living. I just have to keep choosing verse 14, “Wait for the Lord; be strong and let your heart take courage; wait for the Lord!” I’m choosing to wait in hopeful expectation. TheShelterFoundation.org

WHEN CARLA THOMAS’ SON LEFT FOR PREP SCHOOL IN AUGUST, SHE HAD AN OPPORTUNITY TO REFRESH HIS BEDROOM, OPENING IT UP FOR THE OCCASIONAL HOUSEGUEST. “Completely redoing the space was just not feasible, and I didn’t want my son to feel disconnected to his own room when he is home on holiday,” says Carla, an interior designer and owner of SPACES by Studio C. So she kept most of her son’s furnishings and art and worked on boosting the sophistication factor. “New bedding, paint and drapes in warm tones of taupe and gray did the trick,” Carla says. “I added new lamps of veined white marble and jewel-tone pillows to add contrast to the room.” A well-appointed guest room is a way of instantly welcoming guests and should be a reflection of your lifestyle and hospitality, she says. Comfort is key, so choose your best bedding, using high thread count paired with luxurious comforter and pillows, along with an extra, lighter blanket for naps and reading. “As a frequent houseguest myself, I really appreciate when my host has the room made up with fresh linens, flowers and a few added comforts of home,” Carla says. “It makes me feel as if they are as happy to have me as I am to be there. I hope my own guests feel special when they open the guest room door and see that it was prepared with their comfort in mind.”

IT ALL STARTED WITH A PONY RIDE, A TRIP AROUND A ROUND PEN ON AN EARLY JUNE AFTERNOON AT THE BACKCOUNTRY WILDERNESS AREA BASE CAMP. Threeyear-old Ashley Wellen watched from outside the horse panels as her twin sister, Whitney, confidently sat atop the saddle and Cabo the pony walked. When Ashley’s turn came, the kid who feared everything from ladybugs to Pomeranian pups saw grave danger in this seemingly “fun” activity. The one-minute trip around the pen required a constant bear hug from her dad, Jeff. The encounter with Cabo led to regular pony classes and Eco Explorers preschool nature programs for both girls. And by the end of the summer, the once timid Ashley rode—reins in hand—around the pen all by herself—no bear hug necessary. “My daughter, who wouldn’t ride a pony a year ago, now has a photo of herself touching a snake from this summer,” Marjorie Wellen, the twins’ mother, says. “Instead of being afraid of animals, there’s now an appreciation.” That’s part of the HRCA Backcountry Wilderness Area’s nonprofit mission: To improve wildlife habitat, inspire the next generation of nature stewards and ignite a lifelong love of the outdoors for all. And if the Backcountry’s programs connect youth and adults to the property, these budding naturalists should see its value to the community and grow into the conservationists of the future. They will be the ones who make the decisions to continue habitat protections that were first placed on the Backcountry Wilderness Area more than 30 years ago. The Highlands Ranch Community Association acquired the Backcountry Wilderness Area in 2009, and the now 13 square miles of protected wildlife habitat are an island of conservation in the middle of on-going development. Jeff Wellen, who grew up in Littleton before moving to Highlands Ranch in 2010, says when the first homes started popping up in Highlands Ranch nearly 40 years ago, he was angry that a neighborhood was taking up wild space and pushing wildlife away. “Growing up, if I’d known that this special property was set aside and protected, I wouldn’t have been so frustrated,” Jeff says. Most people don’t comprehend the expanse of the Backcountry Wilderness Area—which is larger than Chatfield and Cherry Creek state parks combined. “People pushed for protections of this property in the past, and now it’s a model of conservation on the Front Range,” says Mark Giebel, the director of the Backcountry Wilderness Area. “As the battle over wild places happens, and the balance between recreation and conservation is learned, it’s the responsibility of each of us to focus on improving this wildlife habitat property and love that it exists so close to our everyday lives.” The Backcountry Wilderness Area spans from the southern edge of Highlands Ranch almost to Sedalia in the south, Monarch Boulevard to the east and Santa Fe to the west. As people experience the Backcountry Wilderness Area, they also realize the immense work and cost it takes to care for it. Giebel, who has managed the property since 2006 when the first part of the property, Wildcat Mountain, opened, says, “A property surrounded by development and people require intense habitat management to ensure a thriving ecosystem.” And, it’s a worthy cause for all involved.

The Philippines native says she always offers Filipino favorites on the Thanksgiving menu, such as lumpia, which are Filipino egg rolls, and chicken adobo, the Filipino national dish. But, she loves traditional Thanksgiving fare. Here, she shares a traditional starter—bacon butternut squash soup.
BACON BUTTERNUT SQUASH SOUP Courtesy Chef Leah Eveleigh 8-10 Servings
INGREDIENTS + 2 medium butternut squash + 1 medium onion, coarsely chopped + 2 tablespoons bacon fat + 4 cups water or chicken stock + 1 cup coconut cream + 1 teaspoon grated fresh ginger + 1/2 teaspoon red chili flakes + 1 teaspoon ground turmeric + 1/2 teaspoon ground cinnamon + 1/2 teaspoon ground cumin + Salt and black pepper to taste + 1/2 cup chevre goat cheese, garnish + 1 cup toasted pumpkin seeds, garnish + 1/2 pound cooked bacon chopped, garnish
INSTRUCTIONS 1. Preheat oven to 400 F. Cut the squash in half lengthwise and seed. Place on a baking sheet skin side up, season with salt and pepper, drizzle with olive oil and bake for 60 minutes or until squash is tender and soft. Set aside and let cool. Peel the skin and cut into chunks and set aside. 2. Heat a large heavy pot, sweat the onion with the bacon fat in moderately low heat, stirring occasionally, about 5 minutes. 3. Add the squash chunks to the pot, cover with the lid and cook for 10 minutes. 4. Add the chicken stock, coconut cream, fresh ginger, chili flakes, turmeric, cinnamon and cumin and bring to a boil. Reduce the heat and simmer until the squash is tender, 25 minutes. Season to taste. Let cool. 5. Using a blender, puree the squash in batches. 6. Garnish with chevre goat cheese, bacon and toasted pumpkin seeds. 34
