GREENWICH BASED BLUE SKY STUDIO'S RELEASES SPIES IN DISGUISE Blue Sky Studios, an animation studio based in Greenwich, released the highly-anticipated animated feature film, Spies in Disguise. The film was the directorial debut for Troy Quane and Nick Bruno. The story is centered around an unlikely partnership, and friendship, between super spy Lance Sterling (Will Smith) and scientist Walter Beckett (Tom Holland). short ribs beignet truffles I n g r e d i e n ts + 2 tbsp. oil + 3 three-inch short ribs + 1 carrot, chopped + 1 rib of celery, chopped + ¼ cup tomato puree + 1 cup red wine + 1 bay leaf + 2 sprigs parsley + 4 sprigs thyme + 4 sprigs rosemary + 1 pint beef stock + 1 tbsp butter + 1 T each salt and freshly ground black  + ½ cup Pickled Red Onion (keep aside till after short ribs are cooked) CONTINUED >

B at t e r R e c i p e + 2 cups Bisquick + 2 eggs + 1 cup milk

Method 01 In a very hot pan, heat oil and brown short ribs on all sides. Remove ribs and set aside. Reserve. Add vegetables and brown over medium heat until well darkened.  Add tomato puree and cook, stirring occasionally, for 5 minutes.  Add red wine and deglaze pan.  Add the herbs, the beef stock and the reserved short ribs and return to a boil.  Reduce the heat to a simmer and cook until meat is tender (three to four hours, adding additional stock if necessary). 02 Strain sauce but do not press on vegetables.  Cool.  Once cooled pulse in KitchenAid to leave beef a little chunky. Fold in pickled red onions.  03 Scoop 1 Tablespoon of short rib mixture and roll into truffle sized balls. Place on parchment or wax paper lined sheet pans. Repeat until all the mixture is used. Freeze the short rib balls till hard(approximately 1 hour). Mix the batter recipe, making sure to whisk it well so that there are no lumps in the mixture. Dip the short rib balls into the batter and fry till golden brown. Enjoy! 14

LORCA COFFEE BAR THE INSPIRATION BEHIND OUR FAVORITE LOCAL COFFEE SHOP

WHEN THINKING ABOUT OUR FAVORITE LOCAL COFFEE SHOPS, LORCA IS THE FIRST PLACE THAT COMES TO MIND. Located inside Fleisher’s in Cos Cob, they serve up amazing coffee, an assortment of breakfast and lunch options, and the best baked goods. We spoke to Lorca’s owner, Leyla Jenkins, and discovered the inspiration behind Lorca! Lorca has locations in Cos Cob and Stamford. Go for the coffee and stay for the delicious food! Each location has unique offerings in addition to their core drinks and baked goods menu. I was inspired to open Lorca when I found myself overworked and unhappy with my job as an architect during the recession in 2008. I caught myself dreaming about what I was going to cook for dinner or bake that weekend. After quitting my job, I signed up for free business classes through the city of NY, worked part-time at a cafe, and nannied part-time. I pieced together some experience at several cafes, developed recipes, and put together a business plan to pitch to investors. Lorca was opened in 2011 in Stamford just 10 minutes away from where I went to middle and high school after moving here from Spain.  Growing up in a Spanish household, we would all congregate around the kitchen island and help my mom chop, stir, and sauté every night. Almost every significant moment as a family was spent in the kitchen.  16

In Spain, an after school snack typically consists of something sweet. When we were living in Granada, I’d get home from school and my mom would come up with baking projects that were simple enough for a 6 year old to help her with. One of those recipes is the original version of one of Lorca’s staples: the orange olive oil cake.

olive oil cake Below is the recipe for Lorca’s orange olive oil cake, inspired by afternoons baking with my mom in Spain. INGREDIENTS

+ 2 large eggs + 1 1/4 cups granulated sugar + zest from 1 small orange + juice from the orange (be sure to strain the seeds)

+ 1 cup plain (unsweetened) yogurt + 1 cup olive oil (the milder the better) + 2 cups all-purpose flour + 1 Tbsp baking powder + 1/2 tsp salt

Greenwich Hospital is a member of Yale New Haven Health. The facility consists of 206 beds and serves lower Fairfield County and Westchester County. The hospital is a teaching institution and proudly represents all medical specialties and offers a wide range of medical, surgical, diagnostic, and wellness programs. In October 2019, the hospital held a special ribbon cutting ceremony celebrating a generous donation from the Lindemann family in honor of physician James A. Brunetti, DO toward the refurbishment of the ICU Waiting Room. “This gift,” said Frayda Lindemann, PhD at the unveiling of the new space “is but a small

In December 2019, the foundation received another notable donation, $3 million in support of Pediatric Services. The gift will help establish a new Pediatric Ambulatory Care Center and will name the Pediatric Emergency Waiting Room. The new ambulatory care center will make patient transfers between the emergency room and the Center for Pediatric Care much easier. Greenwich Hospital is embarking on a multiyear clinical growth plan, securing its position as the region’s leading medical center and healthcare provider. Areas of growth include pediatrics, oncology, heart and vascular, neuroscience and private rooms. By 2020, all patient rooms will be transformed to private rooms and plans are underway for a brand new 70,000 square foot Smilow Cancer Center Greenwich.
