BENNE ON EAGLE NAMED AS ONE OF AMERICA'S BEST RESTAURANTS Asheville restaurant, Benne on Eagle, was featured in Esquire's 2019 article, "22 Best New Restaurants in America, 2019." Benne on Eagle clocked in at No. 5 on Esquire's list, helmed for their African-influenced Appalachian cuisine. The mention highlights everything from Benne's "absurdly tender" chicken wings to their trout and grits. It also paid tribute to Benne's 5-time James Beard-nominated chef John Fleer (also of Rhubarb and The Rhu) and "rising star" Chef de Cuisine Ashleigh Shanti.

RELISHING REPASTS AND ROMANCE IN THE CITY ALONG THE SEINE

For that reason, I had no problem spending my evening enjoying a little regal R&R over a simple room service of veggie soup and wine. After all, what better way to spend my first night in Paris than watching the evening lights of the Eiffel Tower in my PJs? SATURDAY A pastry assortment fit for a princess. I’d been seated at my table in the breakfast area located in the property’s Restaurant Le Meurice Alain Ducasse and was immediately greeted with a pastry tower dappled with croissants, bread and other treats. While sipping my tea with steamed milk from a beautiful teacup, I enjoyed other bites and drinks including green juice and the hotel’s take on avocado toast. And thanks to the warm and attentive waitstaff, I started my Saturday with a full belly and a smile on my face. I didn’t have anything on the agenda until my dinner reservation, so I took advantage of the opportunity to THE LOUVRE WAS TO THE LEFT. To the right, I spied

Sahar would place in front of me. And each taste was complemented with wine that Sahar knew would perfectly pair with the flavors of the food like a scoop of pistachio gelato perfectly pairs with a steamy summer day. But, after hours of indulgence, it was finally time to say “bonsoir” to Balagan. SUNDAY After indulging a decadent order of French toast at this morning’s breakfast, it was time to treat my feet to a pedicure at Spa Valmont pour Le Meurice. When I arrived, I was whisked into the peaceful relaxation area and offered a small pot of ginger tea and a delicious little seeded cookie. Right on time, I was met by the therapist and escorted to the treatment room, which, due to construction, was a hotel room separate from the spa area. I was intrigued by the idea of experiencing a pedicure lying down on a massage table — and the experience lived up to the intrigue. I left feeling relaxed and with my toes a sassy shade of burgundy. That afternoon, my wandering continued to Palais Garnier, better known as the Paris opera house. I’ve toured Palais Garnier before and was enchanted by the glamour and romance that exuded from the space. So, I was thrilled to find a matinee ticket to the Paris Opera’s version of King Lear. This opera was more modern than I’d prefer. But, the surroundings made the experience worth it. The theater is stunning, and you can imagine what a scene it must have been to sit among the Parisian elite in their tuxedos and gowns in decades past. The finale to my last evening in Paris was dinner at Restaurant Le Dalí in Le Meurice. With the sounds of live music in the background, I enjoyed tastes like beef carpaccio and brill with gnocchi and artichokes, all accompanied by beautiful wines selected by the expert waitstaff. It was the perfect end to this chapter in my love affair with the city along the Seine. NOTHING SHORT OF PERFECTION INDULGE YOUR TASTEBUDS AND SAVOR THE MOMENT AT LIBERTY HOUSE COFFEE AND CAFÉ
IN TODAY’S ULTRA-CAFFEINATED SOCIETY, DRINKING COFFEE IS AS NORMAL AS TAKING A SHOWER AND GETTING DRESSED IN THE MORNING. It’s a tradition that’s wiggled its way into so many individuals’ routines across the globe, that it’s become a $20 billion industry (and rising). And while drinking coffee has become second nature for most – something we gulp down on our morning commute or guzzle at 6 a.m. before the kids wake up for school – Dylan Glasgow, owner of Liberty House Coffee and Café, has founded a coffeehouse that provides us the space to slow down and savor the flavors of good old cup of joe while in the warm and inviting company of others. “I have always been intrigued by coffee shops and how they can bring people together and create a sense of community. I’ve also always loved coffee and food, and especially meeting and talking with people, so opening a café meant I could enjoy these things every day, “ says Dylan. “I grew up two blocks down the street, so opening Liberty House has been special for me because I have always wanted to create a unique spot for people in our community to come together over coffee and good food.” And special it is. Because Liberty House isn’t just

are often squeezed into industrial-style buildings and reek of sterilization, Liberty House has ample territory along the charming street and a welcoming atmosphere, making it the perfect place to relax with a steamy cup of joe. Their specialty espresso drinks range from lattes and mochas to cubanitos, americanos and cortados. The flavor options change seasonally, but two of their year-round best-sellers are the honey lavender latte and the cubanito–an espresso whipped with raw sugar, steamed milk and topped with a sprinkle of pink Himalayan sea salt. If fancy espresso drinks aren’t your preferred way to caffeinate, Liberty House offers other coffee shop staples such as drip coffee, warm tea, cold brew and more. And whether you like your coffee con leche or not, they have a variety of milk choices available, from whole to the newly beloved and exceptionally creamy oat milk. “All of our items on the menu are intended to be as simple and intentional as possible, from our espresso drinks and pastries to our breakfast and lunch dishes, “ Dylan explains. “We glean only the highest quality ingredients from our garden and local farmers.” Liberty House grows as much as it can in their onsite garden. Kale, root veggies, peppers and microgreens are just a handful of vegetables that it grows. They even have their own bees, which provide fresh honey. What they can’t grow in their garden they get from local providers and farmers such as Mountain Food Products, Ten Acre Farm, Carolina Bison, Joyce Farms and more. They purchase ethically sourced, locally roasted beans from Independent Bean Roasters, a craft coffee roaster located in Hendersonville, NC, created by Underground Baking Company, which is also Liberty House’s bread supplier. Whether you enjoy an espresso at Liberty House while conducting a meeting with your colleagues or visit them with your friends and family for Sunday brunch, your taste buds are sure to be delighted. Their commitment to sourcing only the freshest, highest quality ingredients and mission to create each item on their menu with intention means every experience at Liberty is nothing short of perfection. Things Worth Knowing About Liberty House 01
Liberty House is named after the street on which it resides. Liberty Street, a partially residential, partially commercial street, is just north of downtown and is tucked in between Merrimon Avenue and Charlotte Street. The tree-lined drive, often scattered with locals walking their dogs or people toting yoga mats on their way to take a class at Liberty House's neighbor, Asheville Yoga Center, is quite picturesque–something you'd find on the cover of Good Housekeeping or in a Hallmark movie.
02
Although this is Dylan's first business, he has always had the mind of an entrepreneur. "When I was a kid I saved up money and bought 36 chickens so that I could sell eggs to my neighbors," says Dylan. "I even read a book on how to build a chicken coop and built that by hand. Even before that, I was always trying to save money by cutting my neighbors' grass or doing yard work for them."
22
Asheville Lifestyle | April 2020
03
One of Liberty House's baristas, Jade, has no formal barista training but has won multiple latte art competitions. Dylan even jokingly refers to him as "The Chosen One" when discussing his latte art. Jade's lattes are often topped with a frothy fern, heart, swan or tulip.
04
Liberty House's two most popular menu items are their Avo Toast and Sourdough Pancake. The Avo Toast is made with smashed avocado, chili flakes and thick piece of Underground Baking's sourdough bread. The Sourdough Pancake is a Liberty House special that is only served on weekends. Oh, and although the recipe is confidential, it’s no secret that it comes topped with the sugary-deliciousness of maple syrup.
Liberty House is located at 221 S. Liberty Street, Asheville, NC, 28801. They are open Monday-Friday from 7 a.m.-4 p.m. and on Saturday and Sunday from 9 a.m.-2 p.m. For more information about their seasonal offerings, visit LibertyHouseCafé.com.

Chocolate Chip Sea Salt Cookies ARTICLE AND PHOTOGRAPHY CAROLINE DOCKERY

Asheville Lifestyle | April 2020
Ing redients + 6 ounces room temperature unsalted butter + ¾ cup brown sugar + ¼ cup granulated sugar + 1 egg (room temperature if possible) + 1 egg yolk + 2 teaspoon vanilla extract + 2 ¼ cup all purpose flour + 1 teaspoon of baking soda + 1 teaspoon salt + 1 ¼ cup mini chocolate morsels + 2 teaspoon Maldon brand sea salt or large grain sea salt
Direc tions 1. In a stand mixer or hand mixer, cream butter and sugar together on medium speed until well combined. It should look slightly pale and fluffy. 2. Add egg, egg yolk and vanilla. Mix until well combined. 3. Add all dry ingredients and mix until crumbly. 4. Sprinkle chocolate chips evenly over dough and mix on high just until combined. 5. Scrape the bowl and scoop cookies into even sized balls on parchment or silicone mat lined baking sheet. 6. Sprinkle cookies with sea salt. 7. Freeze overnight or for at least three hours before baking. 8. Preheat oven to 350 degrees or 325 degrees if using convection baking mode. 9. Bake for 18-20 minutes and let cool on pan for five minutes before moving to cooling rack. Add additional sea salt by preference. 10. Let cool for an additional 15 minutes
Tips + Pre-measuring all ingredients or ‘mis en place’ will help expedite the baking process. + If rolling dough by hand, try tearing the ball in half, placing one torn side up on top of the other. This will help create a textured top + Substitute mini chocolate morsels for chocolate of choice. I use mini chips to help ensure the chocolate is in every bite. April 2020 | Asheville Lifestyle
