C h u n ky L e n t i l B o l o g n e s e w i t h S p i r a l i z e d S w e e t P o tat o e s + 2 Tbs extra virgin olive oil + 7 oz mirepoix (chopped celery, onion, and carrots) + 1 garlic clove, minced + 1/4 tsp red pepper flakes + Chopped parsley + 2 tsp no-salt-added tomato paste + 14.5 oz no-salt-added diced tomatoes + 3/4 tsp no-salt-added Italian seasoning + 2 cups low-sodium vegetable broth + 1/4 cup dry green lentils, rinsed + 16 oz fresh sweet potato noodles

Directions + In saucepot, heat 1 tablespoon oil over medium-high heat. Add mirepoix; cook and stir 5 minutes or until soft. Add garlic and red pepper flakes; cook and stir 30 seconds. Stir in tomato paste; cook 30 seconds. Add tomatoes and Italian seasoning; cook and stir 2 minutes. Add broth and lentils; heat to a boil. Reduce heat to medium-low; cover and cook 35 minutes or until lentils are tender, stirring occasionally. Stir in salt and pepper to taste. Makes about 4 cups. + In large skillet, heat remaining tablespoon of oil over medium-high heat. Add noodles; cook and stir 7 minutes or until slightly softened. Stir in salt and pepper to taste. + Top noodles with Bolognese and parsley.

MIKE MCLACHLAN IS “STICKING” WITH HOCKEY THESE DAYS. The Franklin Lakes native grew up playing the game at Indian Hills High School, followed by club hockey in the Penn State Men’s League. Taking a timeout for marriage, career and family, he coached at Don Bosco before transferring to his current position as Head Coach of Ramapo High School’s ice hockey team. In 2016, a group of parents approached him about starting a team for players in Wyckoff, and the Wyckoff Generals were founded as an independent spring co-ed hockey team for players aged 17 and under. The group grew to 100 players and five teams in three short years, with players coming from as far away as Livingston, Ringwood, and New City, New York. “Traditionally, hockey teams begin practicing in August or September and don’t finish their season until March,” says Mike. “Spring hockey is a great opportunity for kids CONTINUED >

Our teams offer structure and instruction but in a more fun, laid back atmosphere.” The Generals play 16 games in a season spanning four months and practice two to four times together at the Ice Vault in Wayne. The program is made up of five teams, so scrimmages are incorporated into play time as well. Mike adds, “we balance skill development and

creativity in the game, which helps players avoid being too rigid.” The team welcomes young women to its roster and currently has nine female players; two of whom play on the Ramapo High School team. Mike enjoys seeing the growth in popularity and development of a sport he loves, and he feels the most important aspect of any sport is to develop positive life skills in kids and young adults. “I get satisfaction in seeing our players improve their skills and finding effective ways to motivate them. You have to find the balance of giving compliments along with constructive criticism. I love coaching because sports affect kids in a positive way.”

HOW DO YOU “DEFINE” WELLNESS? Ask Ellen Park, owner of DEFINE Body & Mind in Allendale. “We have a different way of doing things. Our classes offer sustainability in exercise that you cannot get from other programs that incorporate a lot of stress to the body. We support strong bodies while being kind to your joints.” When Ellen moved to Bergen County, she checked out fitness clubs, but could not find anything that she loved. “Everything felt very singular,” she says. “So, I decided to start my own. I researched many fitness franchises and DEFINE really spoke to me.” Ellen liked the various disciplines of exercise as well as the philosophy of health and well-being for the body and mind. CLASSES INCLUDE: Hammock - Similar to aerial yoga, but focus on lengthening and stretching the body. The workout helps decompress the spinal cord; great for lower back pain and sciatica sufferers. Mindball - Utilizing a Yamuna Mindball which is perfect for runners to roll out calves, hamstrings, and hips. Body - Ballet barre class which combines small and large movements with isometrics. Bounce - High-intensity interval training on a trampoline combining cardio and weight training. Cycling - Builds strength and endurance while being joint-friendly. RUCHI KAUL DECIDED TO NAME HER PRACTICE MAITRI WELLNESS, SHE KNEW THAT THE WORD “MAITRI” TRANSLATES FROM SANSKRIT TO MEAN “UNCONDITIONAL LOVING-KINDNESS.” She soon realized that the name accurately reflected her foundational mantra as a physician who focuses on direct-care, integrative medicine. She has a love of life relationships, experiences and learning that enhance the services she provides throughout her practice. HOW DID YOU GET STARTED IN MEDICINE? I grew up in Westchester, New York. My dad was a pediatric infectious disease physician, and my mom had a radiation oncology practice. I attended Dartmouth for my undergraduate degree in Spanish and later went back for my Masters in Epidemiology and Biochemistry. I attended Case Western Medical School in South Bend, Indiana and did my residency in South Bend and later at Beth Israel Hospital in New York City. My mom and dad were born in India. When I was 10, my dad thought he may want to move the family back there, so I accompanied him for six months while my mom stayed in the U.S. During that time, I learned to read and write Hindi. My dad ultimately made the decision to return to the United States, but I gained valuable cultural insights while I was in India. As I developed an interest in entering the medical field as a young adult, I began working in my parents’ practices and learned a
