As I think about what the Grand Junction area means to me, a few things come to mind: I came here in 1994 and very quickly, my heart took root deep in the traditions, the “wild west” heritage, the grandeur of the scenery and the limitless opportunities for outdoor adventure found right here. For 26 years this place has been home for me. I met my incredible wife here. We have raised four terrific children here and now we have the privilege of bringing quality local interest stories and business offerings to the people that make this marvelous place home. This place really is larger-than-life in so many ways. The name Grand Junction is unique to me. Far beyond the name of this largest city, between Denver and Salt Lake City, and more meaningful than the unique history

THE GRAND JUNCTION CONVENTION CENTER HAS BEEN A GEM IN DOWNTOWN GRAND JUNCTION SINCE THE 1970S. Before that, the Two Rivers Plaza was a place people came to dance and make memories. This site has always been a special one, and we are proud to continue that legacy. The Grand Junction Convention Center’s recently completed renovation refreshed the ballroom, restrooms, main concourse, and atrium areas. Formerly, the multi-purpose event center was one that our community enjoyed when attending some of the largest events in the valley. This is now something we can all be proud of – a place where you can host your professional association or in which the city could host dignitaries, such as the Governor. The GJCC team will be proud to bring any dream event to life.

SUMMER IS HERE AND SO ARE THE SMELLS, SIGHTS, AND FLAVORS OF A HOME-GROWN HARVEST. As a kid, I loved going to see my grandROMA TOMATOES

parents. Usually that meant winter visits to Arizona and summer visits to Idaho. Both of my grandpas always had a well-trimmed vegetable garden full of delicious regional produce. I’ve always enjoyed sharing kitchen creations that come from a blend

of memories and new inspirations. This salad idea grew from those memories, the creative ways those harvests were always prepared, and from my own plentiful harvest a few summers ago. This recipe came from an evening at home with pork chops on the grill and fresh pomegranate

MARGHERITA SALAD: INGREDIENTS + 1 pound fresh Roma tomatoes, diced in ½ inch chunks + 1 pound fresh inch-thick English cucumbers, sliced 1/8 inch thick

+ about 15 leaves fresh basil, coarse chopped + ½ a red onion, chopped in medium chunks + 3 tablespoons extra virgin olive oil + 2 tablespoons apple cider vinegar + about ½ teaspoon coarse salt, Himalayan salt preferred + about ½ teaspoon fresh ground black, white and pink peppercorns

1. Cut cucumbers, tomatoes and onions to preferred size. 2. Season with oil, vinegar, salt and pepper. 3. Chill for one hour. 4. Stir thoroughly just before serving.

ACME CHOP SHOP INSPIRES A NEW GENERATION OF CUSTOM CAR BUILDERS

HOMETOWN HOT-RODDER JACK WEAVER BUILT HIS FIRST UNIQUE RESTORATION VEHICLE IN 1990. It was a white 1950 F-1 Series Ford two-wheel drive pickup. He never guessed at the time that his first set of unique wheels would later lead to remarkable builds that have seen the auction block at the world’s premier custom car showcasing event, the Barrett-Jackson auctions. Jack’s debut car on the Barrett-Jackson stage was a 1953 Chevy Coupe adorned in glossy black with a sleek, minimal chrome profile that could make any classic car lover drool. This car brought Jack’s love for detail and quality to a new level of recognition. Countless cool cars and trucks have come through Jack’s shop, but now he’s sharing the skills he has developed with a new generation of custom car craftsmen. In 2019 Jack decided to pass on his extensive car knowledge to the next generation of builders. He founded Kustom Built Cars, a non-profit program aimed at preserving the skills and specialized knowledge of this rare industry. Many professionals in the automotive field noticed the training needed for the unique work of custom car craft was not being taught in vocational schools. As new cars get more technically advanced, and in some cases less durable, many of the fundamental skills used in getting the most out of classic vehicles are being lost. The four students in the inaugural class of the Kustom Built Cars program came from Grand Junction, Seattle, San Francisco and Tulsa. They learned the basics of bodywork and paint, V8 engine rebuilding, automotive electrical systems, high performance suspension and welding. Trained with these skills, they will have

SWEET P OTATO SCRAMBLE (FOR ONE)

M I X INGREDIENTS

+ 2 eggs + A dash of flax milk + Cumin + Salt + pepper + ½ sweet potato, cubed + ¼ green onion, chopped + ¼ cup spinach + Handful of broccoli florets + Ghee butter or avocado oil for cooking

TOPPING IDEAS

+ Cooked salmon + Hot sauce + Chia seeds or flax seeds + Fresh parsley

DIRECTIONS 01 Whisk together your eggs, milk, and spices. 02 Prepare a skillet over medium heat with your ghee butter or avocado oil. Cook the sweet potato, green onion, and broccoli for 5-8 minutes. Add the spinach and cook for 1 more minute. 03 Pour your egg mixture into the skillet and scramble together until the eggs are your desired texture, roughly 3 minutes. 04 Immediately add your cooked salmon, seeds, parsley, or hot sauce and enjoy while it’s still hot!
