“A lot of it is about going deeper into the material, and having a deeper understanding of math; not just being able to regurgitate facts, or just being about to follow five steps without knowing what it means,” said Younis.

“We’re trying to provide an environment that’s engaging for them, a place where they will want to come back to.”

Many of their instructors are college students from Georgia Tech and other schools as well as college graduates who live in the area.

“I think we are more affordable than individual tutors,” said Younis.

Since he knew many parents in the Morningside area were interested in having their children enroll, but didn’t want to have to make the trip into Decatur, Younis decided to open a center right in their own neighborhood. He also knew with all the development happening a lot more children who may need their services would be moving in.

Parents can enroll their children for a month, six months, or even a year. Each class is one hour, and for the best progress and value, Younis recommends children take classes two to three times per week.

“It’s meant to develop the students over time; it’s not a short-term solution,” he said.

QUINOA HAS BECOME ONE OF OUR MOST POPULAR HEALTH FOODS. Though technically a seed, Quinoa is classified as a whole grain and is a good source of plant protein and fiber.

Quinoa is gluten-free and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

We thought we would look at a couple simple and fun recipes to add this superfood to a 2020 Healthy Lifestyle.

QUINOA AND VEGGIE SALAD: INGREDIENTS + 1 cup quinoa thoroughly rinsed + 2 cups water + 3-4 ounces spinach, stems removed and coarsely chopped + 1 can (15 ounces) corn, drained and rinsed + 1 can (15 ounces) black beans, drained and rinsed + 1 cup cherry tomatoes, halved + 5-6 green onions, chopped + 1/4 cup cilantro, finely chopped + 2 large limes, juiced + 4 tablespoons olive oil + 2 teaspoons ground cumin + 1/2 teaspoon red pepper flakes DIRECTIONS 1. Follow package instructions to cook the quinoa. Transfer to a large bowl and set aside to cool.

2. Add to the bowl with the cooled quinoa, the chopped spinach, corn, black beans, cherry tomatoes, chopped green onions, and finely chopped cilantro. Toss till blended.

3. In a small bowl whisk together the lime juice, olive oil, about 1 teaspoon salt, 1/4 teaspoon pepper, ground cumin, and red pepper flakes. Pour over the salad and toss.

Tip! Turn it up by adding some grilled chicken for a great dinner.

QUINOA CITRUS SALAD INGREDIENTS + 1/2 cup uncooked quinoa + 1 cup chicken broth or veggie broth + 3-4 cups fresh spring mix + 1 can (15 ounces) mandarin oranges + 1/3 cup Sea Salt Pistachios, shelled and coarsely chopped + 1/3 cup crumbled goat + 1 large ripe avocado, pit removed and chopped + 1 large lemon + 1/4 cup Walnuts or Figs DRESSING + 1/2 teaspoon minced garlic + 1 tablespoon Dijon mustard + 1/4 cup Apple Cider Vinegar + 2 tablespoons freshly squeezed lemon juice + 2 tablespoons orange juice + 1/3 cup extra virgin olive oil + 2-3 tablespoons honey + Sea salt/freshly cracked pepper DIRECTIONS 1. Cook the quinoa according to package directions. Cooking with chicken broth or veggie broth adds flavor. Fluff and set aside to cool.

2. Add all of the dressing ingredients to a bowl or mason jar. Add salt and pepper to taste.

Seal and shake until ingredients are combined.

Refrigerate until ready to serve.

3. Drain the mandarin oranges, shell & coarsely chop the pistachios, remove the skin and pit of the avocado and thinly slice or chop. Squeeze a wedge of fresh lemon over the avocado.

4. In a large bowl, add in the spring salad mix and the cooked, cooled quinoa. Add in the mandarin oranges, pistachios, goat cheese, and avocado. Add the dressing, shaking it well, then pouring over the salad. Top with walnuts or figs.

5. Add Ons: Lightly grilled shrimp is a perfect addition to the dish.

DR. JESSICA RUBIN – FERTILITY SPECIALIST Growing up, Dr. Jessica Rubin watched her father and grandfather, who were both physicians, interact with patients and saw how much fulfillment they derived from their daily profession. This inspired her to follow in their footsteps.

She tried to have an open mind when it was time to decide on a specialty, but in her heart, she knew she wanted to become a fertility doctor.

“I loved obstetrics and gynecology because I really liked the opportunity to form close relationships with my patients. And it’s such an intimate field of medicine that I felt like I was really making a difference. Plus, I really enjoyed that it was a combination of medical management as well as surgery,” she said.

In 2018, Dr. Rubin joined Reproductive Biology Associates (RBA) in Atlanta as a fertility specialist. Established in 1983, RBA was Georgia’s first in vitro fertilization (IVF) center and is the longest continuously operated fertility clinic in the country. RBA became the first practice in the state to produce an IVF birth, the first on the East Coast to achieve a pregnancy from a frozen embryo, and the first in the Western Hemisphere to report a birth from frozen donor eggs.

Dr. Rubin received her B.S. degrees in Science, Technology and Society as well as Hispanic Studies at Vassar College in New York, and earned her medical degree from the Medical College of Georgia and is board certified in Obstetrics and Gynecology. Inspired by her fascination with women’s health, she went on to complete a four-year residency at Emory University in Atlanta, and a fellowship at Baylor University of Houston, Texas.

She stressed that the field of fertility has become so much more successful than it was a few decades ago because of advances in the technology of freezing eggs, fertilizing eggs and growing them in the lab. This has really had a profound impact on the success rate, specifically the pregnancy rate, so a lot more people talk about IVF now.

“There’s nothing I love more than when people come back and bring in their babies.

It’s just so much fun to see. That’s what makes me so excited for what I do,” she said.

Dr. Rubin’s focus is on fertility preservation, especially for women who have been diagnosed with cancer, in vitro fertilization, third party reproduction, and diminished ovarian reserve.

She mentioned that there used to be a stigma about fertility treatment but believes that has changed quite a bit. She encourages women who are interested in future pregnancies to come in and talk to a fertility specialist.

“Women should not be intimidated to come in; once they begin the process, it really helps move things along,” she said.

Her advice to new doctors is if you’re someone who likes to form strong connections with your patients, and who wants to have a good balance between clinical and surgical opportunities, then the field of reproductive endocrinology and infertility would be a really good match.

DR. SUMAYAH TALIAFERRO Dr. Sumayah Taliaferro is a native of Atlanta, Georgia where she attended Benjamin E. Mays High School. After graduating with honors from Brown University and Alpert Medical School of Brown University, her career began with residency training in the Yale Primary Care Internal Medicine Program, followed by residency in dermatology at Howard University.

She knew early on that she had an aptitude for science. She was accepted into a special program for math and science at Phillips Academy, one of the oldest private boarding schools in the country. “Studying in Andover, Massachusetts during three summers in high school further nurtured my interest in science. After becoming a semi-finalist for the national Westinghouse Science Competition, I knew that I had what it takes to become a physician or research scientist.”
