My brother Tim was born in Detroit April 20 and more than once he celebrated a birthday with a toboggan party at the golf course. Now, he lives in Northern Michigan, above the 45th parallel and chops cords of wood each fall to fuel his wood-burning furnace all winter long. He was born to embrace winter, I guess. Happy Birthday, big brother!

Falker joins the camp staff of professional musicians and educators who believe practicing and performing jazz can build a student’s confidence, encourage creativity, and inspire excellence. Artistic Director Lee Watts also recognizes the valuable partnership with City Springs. When he and Joe toured the space, they immediately realized the camp’s potential for growth and the possibility of providing other workshop and camp opportunities throughout the year. They are continuing to seek partners to help make this happen. “We are always looking for new restaurant sponsors to help with lunches, and we applaud Chick fil-A, Roasters, and Café 290 for their continuing support,” says Joe. “We are excited to get to know our new Sandy Springs neighboring businesses in the vibrant downtown area.” Sandy Springs and Dunwoody area jazz fans know Joe Gransden and his 16-piece Big Band from Cafe 290, where they play the first and third Mondays of each month, and it’s been his tradition to invite local high school jazz bands to open for his show. “We have middle and high school bands play from 8:00 - 8:30 then invite them to stick around and listen to our set,” says Joe. “It’s a great opportunity for the young musicians to experience a professional band in a smaller venue and we’re always impressed by the level of talent these students bring.” Joe’s Jazz Camp is supported, in part, by generous contributions from benefactors who sponsor scholarships, donate equipment and volunteer time to help make the students’ experience smooth and meaningful. termed the well-deserved endearment, “City of Festivals,” and in 2019, we had the pleasure to explore the city during the summer themed around milestones: Cirque De Soleil’s 35th year of existence, the International de Jazz de Montréal de Montréal turning 40, and the 10th anniversary of the Montréal Cirque Fest. While Cirque De Soleil is internationally renowned with more than three decades of tenure, and the International de Jazz being the world’s largest of its kind, the Montréal Cirque Fest (Montréal Complètement Cirque) provided a more indigenous feel and connection directly to the city. We indulged in the latter. With seemingly countless outdoor shows

along the bustling streets, in parks, plazas, and venues throughout the metropolis, Cirque embraced the awe of primarily circus themes over an 11-day span. Meatless Monday! ROASTED CAULIFLOWER STEAK WITH TOASTED FARRO, RAINBOW CHARD, AND WALNUT PESTO
INGREDIENTS + 1 head cauliflower + Extra-virgin olive oil + 3 sprigs fresh thyme + 2 sprigs fresh rosemary + 1 cup dry farro + Water + ½ cup diced onion + 12 cloves garlic + 1 ½ cups Spanish olive oil + 3 cups walnut pieces + 1 tablespoon kosher salt + 1 teaspoon ground black pepper + 1 bunch rainbow chard + Kosher salt. ground black pepper to taste DIRECTIONS Slice cauliflower into three “steaks,” 1 to 1 ½ inches thick. (Do not use any pieces that fall apart.) Combine olive oil, thyme, and rosemary, pour over steaks and rub to coat. Marinate for a minimum of 2 hours or overnight. Heat a cast-iron skillet over medium heat. Season the cauliflower steaks with salt and pepper and brown, 5 to 7 minutes on each side. Transfer to a preheated oven and roast until tender, 25 to 30 minutes. Toast the farro in a dry skillet over medium heat for 5 minutes, shaking the skillet or stirring constantly. Transfer to a medium saucepan and cover with an inch of water. Add the diced onion and cook until all the water is absorbed and the farro is al dente. Season with salt and set aside. For the pesto, combine the garlic cloves and olive oil in a small saucepan and simmer until the garlic is browned and fragrant. Remove from heat. Toast the walnut pieces for 2 to 3 minutes in the oven or a dry skillet. Transfer to the bowl of a food processor and pulse until roughly ground. Add the cloves and process to a dry paste. Slowly drizzle the olive oil in while processing to form a thick pesto. Season with salt and pepper and set aside. Heat the olive oil in a saute pan, add the chard, and cook until wilted. Season with salt and pepper.

Plate the sautéed chard, top with ½ cup of the cooked farro and one cauliflower steak. Top with a generous portion of the walnut pesto and allow the heat of the cauliflower steak to soften the pesto, which will serve as the “sauce” for the farro.
