TIM ZITTLE, OWNER OF TREEHIVE CHIROPRACTIC IN PARKER, SAYS HE STRIVES EVERY DAY TO HELP PEOPLE LIVE PAIN-FREE LIVES AND TAKE CHARGE OF THEIR HEALTH, SOMETHING HE WORKS ON PERSONALLY EVERY DAY. “My mission is to see people at their best. I’m the happiest and most fulfilled when I see the people around me achieving their potential in their life,” Dr. Tim says. You can find him on Instagram serenading his followers on his guitar, or adventuring on a mountain trail, or journaling at a coffee shop. And most often you’ll catch glimpses of his constant companion, his service dog Reese, the only clue that Dr. Tim has suffered from anxiety. “She goes with me everywhere,” Dr. Tim says. “I would say she’s helped me in ways I wouldn’t have thought. Instead of putting all of my energy into my business, she forces me to exercise, which is really good for anxiety and depression. She forces me to socialize.” In college, Dr. Tim had his first health scare when he started experiencing debilitating headaches and vertigo. Initially, doctors thought he may have a brain tumor, but he was diagnosed with a severe misalignment in his spine and recovered after months of chiropractic care. Through it all, Dr. Tim says, he realized that he was overloaded with his doctoral program and working two jobs. “If there’s such a thing as negative self-care, I was doing it,” Dr. Tim says. “As a 20 year old, I had no symptoms, I looked great and felt great and then overnight I realized if I don’t have my health I have nothing. That’s why it’s important to maintain health, instead of waiting until something’s broken.” Later, when starting a clinic in Ohio, Dr. Tim realized his workaholic tendencies again were taking their toll. “If I wasn’t at work, I was afraid to come out of my home, afraid to go to the grocery store. I didn’t want to leave for any reason,” Dr. Tim says. “I wasn’t building relationships or community. My hair started falling out, I was losing weight and not sleeping.” Dr. Tim says his anxiety was causing him to run at 150 percent at all times, which was wearing him down.

“It made me a machine. When everyone else looks at it, they think, ‘Wow, look at this guy, he’s amazing.’ ” Dr. Tim says. “My business had become my life. Sometimes the best parts of us can become the worst parts of us.” For a time, Dr. Tim hid his mental health struggles, even though he had friends and patients who confided that they were struggling with similar issues. Now, he uses his role as a trusted health care professional to be open about his own mental health struggles and show his patients that this is a health challenge that can be managed through transparency, healthy living and doing the hard work daily. 12

Ranchlands Stays is the hospitality program that includes special weeklong workshops and clinics at both properties. You’ll find painting workshops with acclaimed artist Jill Soukup, and horsemanship clinics from famed cowboy Cam Schryver. There’s photography, hiking, birding and leather making. And if you want your family to get their hands dirty on an old-school cowboy adventure, there’s a stay for that as well. “A stay on either ranch is an incredible insight into these big landscapes. You get to feel, ride, hike, smell, touch, experience these very, very special places,” Kate says. “I think that’s the thing people walk away with is the privilege of being able to have done that.” Most stays include tent camps complete with hot showers, beds, a cook and chef-prepared meals. At the Zapata, where you can book a customized stay to include horseback rides in the Great Sand Dunes or among the huge wild bison herd, you’ll find the dark night skies that have been designated as an International Dark Sky Park, and catch a glimpse of the abundant wildlife including elk, coyotes, birds of prey, porcupines and antelope. “There’s also a really amazing ranch-to-table food program,” Kate says. The Chico Basin Ranch offers a more rustic experience, where you’ll find yourself part of the work crew rounding up horses and working cattle, making your own breakfasts and sack lunches to eat on the trail, and joining the crew in their homes for dinner. “It’s the more working ranch experience,” Kate says. A stay at one of the Ranchlands properties is an educational outdoor experience unlike any other.

“It really ticks all the boxes,” Kate says. “It’s about trying new things with your friends or family, and all of you learning at the same time. S w e e t P o tat o & Z u c c h i n i H as h C a k e s Servings 4 cakes INGREDIENTS + 1 heaping cup shredded sweet potato + 1 heaping cup shredded zucchini + 1 egg, whisked + 1 tablespoon coconut flour + 1 teaspoon garlic powder + 1/2 teaspoon cumin + 1/2 teaspoon paprika + 1 teaspoon dried rosemary leaves or 1/2 teaspoon rosemary powder + 1/2 teaspoon fine sea salt + 1/4 teaspoon pepper + 4 tablespoons Coconut oil, divided (could also use ghee or avocado oil) + 2 pinches coarse sea salt to sprinkle on top for serving INSTRUCTIONS 1. In a medium sized bowl mix together the heaping cups of sweet potato, zucchini and whisked egg. 2. Add coconut flour, garlic powder, cumin, paprika, rosemary, salt and pepper and mix well. Divide into 4 equal parts. 3. Heat a cast iron or nonstick skillet on medium high heat. Once hot, add 2 tablespoons coconut oil and allow cooking fat to melt before adding sweet potato & zucchini mixture. 4. One by one shape a cake between your palms with the mixture and add to pan. 5. Cook each hash cake for 3-4 minutes until edges are golden brown and it doesn't fall apart when you go to flip it. Flip and cook until golden brown on bottom. 6. Serve with a pinch of sea salt sprinkled on top of each hash cake. These pair perfectly with sausage, bacon, eggs, avocado, or whatever else you like.

Servings 4 people INGREDIENTS + 1 Medium Spaghetti squash + 1 Pound Grass-Fed Ground Beef + 1 Medium Yellow onion, diced + 4 Cloves garlic minced + 2 Tablespoons Coconut oil or other cooking fat + 1 14.5 oz can Diced tomatoes + 1 15 oz can Tomato sauce + 2 Tablespoons Fresh basil, finely chopped and divided + 2 Tablespoons Fresh parsley, finely chopped + 1 Teaspoon Dried Oregano + 1-2 Teaspoons fine sea salt divided + 1 Teaspoon Black Pepper INSTRUCTIONS Spaghetti Squash 1. Preheat the oven to 425 degrees. Cut the spaghetti squash in half, scoop out the seeds with a spoon and place inside down on a baking tray.  2. Cook for 20-30 minutes or until you can push down easily in the middle of the squash. 3. After removing from the oven flip the squash over to let it cool before scooping it. Using a fork, scrape out the squash "noodles". Meat Sauce 1. Heat a saucepan on medium high heat. Once hot, add the coconut oil. 2. When the oil is melted add the onions and a pinch of sea sal and cook for 2 minutes. 3. Add the garlic and stir to incorporate. Cook until garlic becomes fragrant. 4. Add the ground beef, 1 teaspoon of salt, 1 teaspoon of pepper and stir, breaking up the meat into smaller pieces as it cooks. Cook until there is no pink left in the meat, about 10 minutes. 5. Add diced tomatoes, tomato sauce, oregano and salt to taste. Bring the sauce to a boil then reduce the heat and allow to simmer for at least 10 minutes. 6. Right before serving turn off the heat and add 1 1/2 tablespoons basil and parsley. 7. Serve over spaghetti squash. 22

BEFORE, THIS MASTER BATHROOM FELT CRAMPED, WITH A LARGE BOX TUB HIDDEN IN THE CORNER. But designer and general contractor Eryn Caskey of A Rustic Butterfly says a complete layout change made a standalone soaker tub centerstage while making the room appear more spacious. “My favorite thing about this bathroom is the layout,” she says. “We took an otherwise awkward design, relocated the tub making it the focal point in the room and utilized as much space as we could to build a large shower enclosure.” The clean white shaker cabinets with quartz and shiplap make the space comfortable and inviting but keeps it simple and elegant. Every detail was looked after all the way down to the clean and somewhat modern black fixtures, the tiled wood-look floor, large white subway tiles in the shower and the hexagon marble on the shower floor.
