WADSWORTH UTILIZES CLEAN ENERGY WITH SECOND SOLAR FIELD In June, the city of Wadsworth began using its second solar field to produce commercial power. According to The Medina Gazette, this comes after the city's first solar field, located at 1040 Seville Road, began producing power in March, "using roughly 23,000 panels across 39 acres." This first field "produced 1.030 gigawatt hours of power during the month of April," an amount that is equivalent to "42,100 trees being planted." The new, 10-acre field located at 10000 Rittman Road will help the city avoid having to seek energy from outside sources, according to The Medina Gazette.

NEW FAITH-BASED SENIOR LIVING FACILITY TO COME TO BRUNSWICK Earlier

Health Network LLC announced it would be bringing a new senior living facility to Brunswick. According to The Medina Gazette, the facility "will be funded with tax-exempt revenue bonds through the Medina County Port Authority. Although there is little information available about when the facility will open, it's known that the facility will be located at 866880 Pearl Road in Brunswick, and will be Sanctuary Health Network's third senior living facility in Northeast Ohio. CULINARY CREATIONS (CONTINUED) New owners, Sy and Tanya Mougrabi, along with friends, Ray and Jen Must, have poured their hearts and souls into their new venture, which they purchased last summer. After a brief period of intense remodeling, the group reopened the doors for customers to experience the new space that they had created for aspiring young chefs. Since then, the feedback and reviews have been nothing short of spectacular! On the day of my visit to Young Chefs Academy, I happened to be there when a field-trip class was in session for a group of Girl Scouts. This, as it turns out, was the perfect time for my tour of the facility. The smell of freshly cooked food filled the entire academy and children were abuzz with excitement and enthusiasm. Kids were working at their own work stations, putting together and mixing ingredients for a pizza dish with dough made from scratch. The busy sounds of happiness and joy rang out and I heard one little girl yell, “I love this place!” “Their enthusiasm is contagious, isn’t it?” Head Chef Tiffany Nickem asks. She points out that the skills they are learning in the kitchen translate into other skills they will use in their everyday life. “It really boosts their confidence,” she says. “Every time a kid goes out into the world and accomplishes something on their own, or with their family, it just boosts their self-esteem. And that just helps them to keep going forward and they start taking on more risks themselves and investing in themselves just a little bit at a time.” She continues: “Our recipes are amazing and the kids love them. They try so many foods that they normally wouldn’t try because they made it themselves. They touched it and they know what went into it, so something they haven’t tried before isn’t as scary to them anymore. It takes the fear out of it for them. Plus, they’re around other kids who are eating it and it makes them feel a little more confident about eating something they might not normally eat…like broccoli!” Young Chefs Academy offers classes and memberships for all ages of children, starting with their Kinder Cooks class with ages ranging from 4-6 or 7. After that, Young Chefs Academy offers their JuniorChefs (7+) and Senior Chefs (12+) programs. All members are given a new white chef’s coat to begin and they earn a different patch for each mastery level completed. When enough patches are earned and displayed on their coat, the young chefs then move up to the next level of the program. Your kids will love the Young Chefs Academy because it is fun, challenging and most of all, rewarding!

+ 8 cups chicken broth + 1 tablespoon unsalted butter + 1 large shallot, finely chopped + kosher salt + 2 cups arborio rice + 1/2 cup dry white wine + 1 cup finely grated parmesan cheese + 4 cups sauteéd spinach LOBSTER CREAM SAUCE

+ 4 U-10 Scallops + 6 tiger shrimp, shelled and deveined + 4 ounces lobster meat + 4 cups heavy cream + 1 teaspoon paprika + 1/2 cup finely grated parmesan cheese + 2 tablespoons garlic, minced + salt and pepper to taste HORSERADISH CHIVE OIL

DIRECTIONS SPINACH RISOTTO 1. Warm the broth in a medium saucepan over low heat. 2. Melt the butter in a sauté pan over medium heat. Add the shallot and a pinch of salt; cook for four minutes. 3. Add rice to pan with butter and stir until rice is coated with butter. Continue stirring the rice about two minutes; you should be able to smell the toasted rice. 4. Add wine to rice, stirring constantly, until wine is completely reduced; about three minutes. 5. Add broth to rice in slow increments, stirring in between. 6. Add sautéed spinach. 7. Continue to cook for 20-30 minutes. The risotto is ready when the rice is al dente and dish has the consistency of a thick porridge. LOBSTER CREAM SAUCE 1. Pan-sear scallops and shrimp until par-cooked (still translucent). 2. Add lobster, heavy cream, paprika, garlic, salt and pepper. Bring to a boil. 3. Reduce by a quarter and then add parmesan to thicken. 4. Serve over spinach risotto. HORSERADISH CHIVE OIL 1. Combine olive oil, scallions and horseradish in a blender. 2. Blend for one minute or until emulsified. Garnish sides of plate with mixture after plating your risotto.

After a few years in academic psychiatry at Case Western, Dr. Ranjan opened his first clinic in the basement of St. Francis Xavier Church here in Medina, and the rest is history. When Dr. Ranjan became aware that the August issue of Medina County Lifestyle Magazine was going to be our “Kids + Pets” issue, he was eager and more than willing to talk about the importance of mental health in children and adolescents and to discuss how important the subject is to him. “It’s a totally different ballgame treating children vs. treating adults,” he says. “These are formative years we are talking about and there are so many things going on inside of a child’s head. Peer acceptance, identity, friends, body image, academic pressure…all kinds of things. Treating a child is very complex and there is such a dearth of child psychiatry services available. It’s an area of psychiatry that has such a great need and I love treating children. I always have.” “Children can have optimal, or close to optimal development, if you intervene early,” Dr. Ranjan continues. “When a child goes untreated for a brain disorder, there will be gaps in their development and they aren’t going to have productive childhood experiences. Therefore, when they become an adult, they may have significant psychological maladjustments, and it can become very difficult to realign their coping skills once they become an adult. That’s why I love working with children so much. It gives you a great sense of satisfaction, even more than treating adults because if you treat them before they are in their late teens, you will have an impact on their lives forever.”
