THE DAY STARTS EARLY FOR CHEF SAMANTHA ROBERTS, EXECUTIVE CHEF FOR THE RIOT HOSPITALITY GROUP. Like many in Gilbert, Samantha must wake at dawn to take care of the animals first: some chickens, horses and an adopted turkey. Once chores are out the way, she is often called to travel between the many locations managed by RHG: four Dierks Bentley’s Whiskey Row locations in Nashville, Scottsdale, Tempe and now Gilbert; three El Hefe locations in Chicago, Scottsdale and Tempe; the Farm & Craft; the Riot House; CAJUN SEASONING
and Hand Cut Burgers & Chophouse, both in Scottsdale. Somewhere in the midst of all this, Samantha manages to find time to create wonderful recipes like this Spicy Cajun Jambalaya that can be served with crusted salmon, shrimp or as a vegetarian option. RiotHG.com

BROWN RICE
INGREDIENTS JALAPEÑO
SALMON:

+ 4 6-ounce salmon, preferably
+ 1 cup brown rice

+ 2 tablespoons olive oil
+ 1 cup celery, diced
+ 2 tablespoons Cajun seasoning
+ 1 jalapeño, small diced + 1/2 quart vegetable stock,

+ 1/4 cup tomatoes, peeled and chopped
+ 4 cloves garlic, chopped

+ 3 tablespoons lemon juice
TO FINISH
+ 2 tablespoons Cajun seasoning
+ 2 cups spinach
(store-bought low-sodium is fine)
+ 2 cloves chopped garlic + 1 cup roasted cauliflower
METHOD ROASTED RED PEPPERS
To make the rice base: Sauté the onion, celery, jalapeño and garlic with the olive oil on low heat until soft. Add rice and stir for 2 minutes. Add the vegetable stock and bring to a boil. Cover and put on low. Cook for 55 minutes. When rice is done, let cool on a pan in the fridge so

it doesn’t overcook. (Make sure you are not using minute rice). If you are using right away, you can skip the cooling step. Coat the salmon with the Cajun seasoning and roast in a pan with olive oil until desired SPINACH
doneness. In a medium-size sauté pan, heat the olive oil, toss garlic and cauliflower. Add spinach and 1 cup of cooked rice mixture. Add the jambalaya sauce and bring up to heat. Place the jambalaya in a bowl and top with the Cajun salmon. Enjoy!

FALL IS HERE, AND IT’S TIME TO HEAD OUTSIDE AGAIN. But after a summer of staying cool in the air conditioning, it may be a hassle to get your lawn back into shape. The sun can cause major problems to even the most maintained backyard. ForeverLawn set out to change the landscape industry by developing a high-quality, technologically advanced synthetic grass. “ForeverLawn is a synthetic grass company offering problem-solving solutions with innovation and quality,” says Seneca Dauenhauer, spokesperson for ForeverLawn East Valley. Synthetic grass requires no sunlight and minimal maintenance. Because there is nothing to water, synthetic grass may help homeowners cut their monthly water consumption, lowering their water bills. In addition, evergreen lawns mean homeowners need not worry about purchasing pesticides or fertilizer to maintain landscaping. “A lot of yards in the East Valley are smaller, making it tedious to mow, water and maintain,” Seneca says. “In this case, synthetic grass is a much better choice because it helps save on water and maintenance costs and is extremely easy to maintain.” The Valley may see less rain, but according to Seneca, synthetic grass can also help in eliminating mud when it does rain—meaning no muddy yard for kids or pets to wind up tracking through the house. She shares that because the grass is synthetic and requires little maintenance, it will continue to look great all year. Synthetic lawns have an advantage over pavement or rock in the fall, too. Synthetic grass won’t remain as cool as real grass, but it won’t absorb and radiate heat the same way pavement, rock and brick do—a perk under the Arizona sun, according to ForeverLawn. Seneca says people worry that artificial turf will look fake or stand out compared to their neighbors' lawns. CONTINUED >
