COOKING WITH CHEF GA R T H A N D A M Y FOR YEARS CHEF GARTH BLACKBURN AND AMY KUSHNIR HOSTED THE POPULAR TASTE TEXAS TELEVISION SHOW ENTERTAINING VIEWERS WITH THEIR WIT, CHARM AND CULINARY SKILLS. The two channeled that art for entertaining into their unique in-person Uptown Farmhouse dinner experience. But when COVID-19 hit, dinners were put on hold, and Amy and Garth turned to virtual entertaining once again.

The two now are serving up food and fun through their free online cooking classes on their Uptown Farmhouse Facebook page. The next weekly classes will be held Oct. 27, Nov. 3 and Nov. 10 to help viewers plan their Thanksgiving feast.

Though they love entertaining in person, the couple are embracing this new opportunity to connect with others and grow their community.

“Everything came to a halt in March. (Uptown Farmhouse) Dinners and in-person cooking classes. At first, I think we thought, ‘Oh, this will pass.

We just need to get through May.’ Then June, July, August, September … and here we are still waiting. Like the rest of the world,” Amy says. “You know, life does not go as planned. And some of the most beautiful things come out of people who accepted, embraced and ran with plan B. So, for me, I’m finally accepting, embracing and running with plan B. We still don’t know when we will host our large dinners again,” she says.

“It’s been disappointing to miss out on all the gatherings and serving people as they connect with each other. But this has pushed us faster

into the online opportunity to connect with even more people,” Garth says. “We’ll still do dinners in the future but want to wait until we can truly gather people at the table in close proximity for a powerful experience.”

“Amy has always been super savvy when it comes to online and social media presence,” Garth says. “The response has been great! We’ve had so many people loving, sharing and reaching out to us. It’s the next best thing to a big gathering at a farm dinner but even more educational and entertaining. For our first show, our reach was short of 1,000 I believe, which is huge for a preliminary run,” Garth says.

Pappardelle with Blistered Tomatoes, Kale & Smoked Cashews INGREDIENTS + 1 pound fresh pappardelle pasta, if available (in refrigerated section) + 1 cup grape tomatoes + 1 bunch kale, stems removed cut into ½-inch wide strips + 1 Tbsp butter Pappardelle with Blistered Tomatoes, Kale & Smoked Cashews

+ ½ cup panko bread crumbs + 3 Tbsp butter + 2 cloves garlic, pressed or minced + 2 Tbsp lemon juice from fresh lemon + ½ cup smoked cashews, rough chopped (or substitute smoked almonds) Optional: + 1 bunch basil, chiffonade + 1 sprig rosemary, chopped INSTRUCTIONS: Turn oven to broil.

Bring a large pot of water to a boil.

Spread tomatoes on foil-lined sheet tray and drizzle with olive oil and broil until blistery on tops, 3-5 minutes.

In a small pot or pan, heat 1 Tbsp butter with panko breadcrumbs on medium heat, stirring occasionally, approximately 5 – 7 minutes until toasty and starting to brown.

Remove breadcrumbs from pan and wipe out pan.

Heat 3 Tbsp butter on medium heat with garlic and lemon juice.

Once butter is bubbling, turn off heat and add the blistered tomatoes along with salt and pepper to taste.

Meanwhile boil pasta until al dente (2-3 minutes for fresh, 5-8 minutes for dried) and add kale to water and pasta just before draining.

Drain pasta (don’t rinse), return to pot and pour in buttery tomato mixture and stir.

The 1845 menu has been carefully curated and local partners chosen who share a passion and vision similar to Marty and Alan’s own. Texas distilleries and 44 Farms out of Cameron, among others, have proven to be successful partners. Marty explains, “We serve food with integrity. Our goal is to put the best possible meal on the plate.” You may notice that salt and pepper are not on the tables and rarely does a patron request them. According to Alan, this is a reflection that, “The food is perfectly seasoned and prepared.” The key is buying the best ingredients available and preparing them in a savory and thoughtful way sure to delight the taste buds. The meats are organic – hormone and antibiotic free, humanely raised and only fed an all-natural diet.

Marty reflects, “Every restaurant must have a story. 1845 Taste Texas is authentic Texas. We want people to feel welcome and comfortable and that coming into the restaurant is an experience.” Often guests are celebrating a milestone or want to enjoy a special evening. 1845 delivers on every level – the food, the music, the décor. The restaurant also has two private rooms with WIFI and large screen TVs that seat up to 40 each or a combined 90, a terrific option for holiday outings, corporate dinners, engagement parties and the like.

Alan and Marty attribute the success they have enjoyed to date to the team they have built. Marty maintains, “Our people have a culture advantage. Some have worked with us over the years.

We hire the right people and help them create and add value.” In addition, as owners, the duo have worked tirelessly to support and protect their team and customers particularly during COVID concerns. They’ve invested in special cleaning processes and supplies, but most importantly they meet folks where they are and do it in a way that does not disrupt their ability to serve their guests well.

2. Add the chicken pieces to the marinade & toss it around to cover all the chicken.

3. Refrigerate the chicken for at least an hour, as long as six to eight hours.

4. When ready to cook, preheat an outdoor grill to 450-500 degrees.

5. Using metal skewers, alternate the chicken, onions, zucchini, mushrooms & tomatoes in a pattern leaving a little bit of room at each end of the skewer.

6. Once completed, brush all of the remaining marinade over the skewers.

7. Place the kabobs & the lemon halves on the grill & cook the kabobs 4 minutes per side or until done. Leave the lemons cut side down during the entire grilling.

8. Once you take the kabobs off the grill, immediately squeeze the lemon juice all over the kabobs & sprinkle with the remaining ¼ teaspoon salt.

DIRECTIONS 1. Place the cubed chicken in a medium size bowl.

2. Combine the Italian seasoning, 1 ½ teaspoons of the salt & the pepper.

3. Sprinkle the seasoning mix over the chicken & toss to coat.

4. Heat 3 tablespoons of the olive oil in a large skillet over medium high heat.

5. Brown the chicken on all sides, stirring as necessary.

6. Once the chicken is mostly browned, but not completely cooked, transfer it to a bowl & keep warm. Reserve oil & drippings in skillet.

7. Pour the remaining tablespoon of olive oil into the skillet.

8. Add the onion to the skillet & brown, stirring about three minutes.

9. Add in the mushrooms, garlic & tomatoes. Continue cooking until veggies begin to soften.

10. Sprinkle with the remaining ¼ teaspoon of salt.

11. Combine the chicken broth, lemon juice & mustard in a small bowl.

12. Pour into the skillet with the veggies.

13. Return the chicken to the skillet & stir.

14. Reduce heat to low & cover. Continue cooking for 10 minutes.

15. Garnish with basil.

“It’s very important, because each family functions so differently,” Lucie says. “Most of the time, families with kids want an easy-maintenance kind of countertop … Some, on the other hand, may be empty nesters that finally have the chance to remodel or build their dream home. They may want something a little more glamourous and are often willing to

Depending on the homeowner’s lifestyle, Lucie recommends quartzite, quartz, granite and marble countertops.

Quartzite, she says, is one of the strongest materials available. “It’s definitely harder than granite and it withstands heat very well.” In addition, she says, it’s aesthetically pleasing. “Its natural beauty is absolutely stunning.

Quartz, on the other hand, is extremely low maintenance, Lucie says. “It’s perfect for kitchens with kids and lots going on.” Because it is man-made, it most often has a modern appearance with intentional clean lines and not as much movement as natural stone.

Granite is another favorite of Lucie’s – because of its durability and uniqueness. “It still amazes me that we mine stone out of quarries and carefully mill and polish it to look so amazing. The veining shows all sorts of history, how the stone was formed over hundreds of years,” she says.

Granite can be honed or brushed to bring out its texture. “These techniques also allow for the sealer to soak deeper into the stone and make it a little easier on the maintenance.”

Marble countertops are an option for those who favor beauty over practicality. “That beauty, however, also comes at a cost,” Lucie says. “They can be very expensive and very finicky. They can scratch, etch and chip quite easily. I do not like to install marble in kitchens, especially if I know there will be lots of activity.”

Lucie says homeowners don’t have to commit to just one countertop. “It is not uncommon to mix, for example, a more solid color of quartz and possibly a more ‘veiny’ granite or quartzite,” she says.

Before making any decisions, Lucie says, homeowners should seek help from an experienced designer.

“I would highly recommend interviewing a few professionals and finding one that you connect with and one that understands your lifestyle and the vision you are trying to achieve,” she says. “Try not to get discouraged and keep your focus on the end result. It will be beautiful!”
