Food, Family, and Friends WHAT ARE SOME FOODS THAT BRING YOU LIFE? I’ll go first: My grandmother’s homemade tortillas and my grandfather’s fried fish.

Growing up, every occasion was ripe for Mexican food: Birthdays, Thanksgiving, Christmas, Tuesday nights, breakfast, Easter, when I was sick, when I was happy, when I was sad, and every other meal in between.

This was likely the result of two main factors: my father’s family and their Mexican ancestry, and growing up in San Antonio.

My Grandfather’s fried fish, on the other hand, was not something I ate very often.

In fact, if we didn’t visit him down near Corpus Christi during the summers, it wasn’t on the menu. It was a treat to go out to the pier and try to catch a few fish with him, even if the only thing biting were an unsatisfying catch known as Perch.

The program is designed for youth from ages 12-18 and works to teach them life experience and job skills such as leadership, time management, community service, and teamwork through seminars, hands-on cooking classes, and (quite literally) fieldwork.

In a conversation with Megan Reynoso, a Growing Gardens Program Coordinator, we talked about the specific impact that the programming has on the youth of Boulder and Longmont. The program focuses on teaching students that community and leadership can be fostered, tended to and cultivated with love and care, while also serving the community through service projects and food donations to local nonprofits such as WIC, There With Care, and EFFA.

I get so much work done in my brain when I am out there by myself, I would be lost without that opportunity.”

While Easton finds herself inspired by myriad things, she is, first and foremost, motivated by her kids - who drive her to keep doing what she’s doing and to set a great example of what dedication, hard work, and hard-won success look like.

Easton's ambition, determination, and overall badass-ness are woven throughout all aspects of her life. She pours herself into her roles as mother and entrepreneur, putting her nose to the proverbial grindstone from dawn till (way past) dusk, and providing an example to her kids of a woman who can hustle and be a great mother at the same time.

As a single parent running a 100% selffunded business, Easton puts tremendous time and effort into her work-and into keeping herself healthy along the way.

“I practice putting myself and the things that keep me sane first. I always say, ‘you have to put your oxygen mask on first.’ My life is a little nuts at times, but if I don’t make time for the things that keep me sane, I am not going to be sane, and therefore, my kids will not have a good mama and my employees will not have a good leader.

The community has rallied behind the innovative idea of the Green Block Project, providing Pinto and his team at Satellite with overwhelming support.

“Figuratively speaking, everyone that has put on the Satellite uniform has bled it until the end, and that creativity has led them to careers in our industry and beyond,” says Pinto. “They’ve used the creative experience at Satellite and installation to become something even more amazing down the road.”

Pinto hopes for continued support for not just Satellite, but all small businesses throughout the Boulder community.

“I have hope and creativity so I believe that locals and newcomers will continue to support Satellite and see what shopping locally has done for our culture and how much more potential there is for it to grow.”

But as things change, Pinto's life philosophy remains constant.

“Remember to lead, not follow,” says Pinto. “And always push with your good foot.”

Family Tradition HONORING REGIONAL MEXICAN CUISINE WITH LAFAYETTE'S TEOCALLI COCINA

BEST OF THE ABUELAS. That might be the way to describe what Teocalli Cocina, a new Lafayette Mexican restaurant, is trying to do. Not Tex-Mex, not dishes confined to a specific region, but the greatest hits that grandmothers are cooking up in kitchens all over Mexico.

It’s a great idea, but it’s not the one that owner Grant Hopfenspirger started with when he first envisioned Teocalli. He originally wanted the restaurant to specialize in Oaxacan cuisine, but then he met accomplished local chef Johnny Curial, and the concept had to evolve.

Mexican-born Curial had taken time off from working in restaurants like Centro Mexican Kitchen, Lola, and the TAG Restaurant Group to do a sort of "abuela tour" of Mexico. Hitting every state in the country, he learned from the best, most seasoned chefs Mexico (or any country) has to offer: the grandmothers.

The result is Teocalli Cocina, billed as a modern shrine to regional Mexican cuisine. Curial built the menu based on his culinary experiences in Nayarit, Jalisco, Oaxaca and more. The food is a fresh take on traditional classics, which means you can get tacos and carne asada, there just might be tamarind and chipotle-glazed pork belly in the shell, or Mexican peppers blended into a chimichurri for steak dipping.

While Curial designed the abuela-driven menu, head chef (and Oaxaca native) Julio Gaspar executes it on a daily basis. His experience is similarly family-based, as he grew up cooking with his mother in their family restaurant in Puerto Escondido.

Most of the large plates involve proteins slow-roasted for anywhere from 12 to 20 hours. The pork shank pibil is slathered in an achiote paste and wrapped in banana leaves for its cooking, giving it a tender, earthy flavor. The birria de res is a rich Jaliscan blend of charred beef short rib, grilled bone marrow, and guajillo chile sauce. Even the familiar carnitas are cooked in the traditional way — in lard, with oranges, and for a very long time.

You could almost hear a half-smile, an inquisitive gaze.

Of course, this account is built from imagination. I cannot describe to you how exactly Peggy Markel was responding to our conversation because in fact, she was calling me at 7:00 am on a Tuesday morning from her apartment–in Florence, Italy.

Markel, a long-time Boulder community member and a gracious beneficiary of all the support that comes with it, has cultivated a travel program that guides people through culinary experiences in places like India, Italy, Spain, and Morocco. The trips are designed to foster a deeper understanding of the land by living and cooking in rhythm with the land, the seasons, and the harvesting.

Her invitations are honest and open, and her years of knowledge meant to be shared. All one needs is to listen to Markel to sense the true wisdom garnered from years of connecting people to the earth through slow food.
