Gentleman, Gentle Man. I’VE NEVER WONDERED WHY SOME MEN ARE CALLED “GENTLEMEN”. I grew up with one. My dad. I was born into an Irish/Italian family near Chicago, IL, and was surrounded by some very formidable women with strong opinions and feelings, none of which were held back very

one minute that we didn't matter to him. His work ethic was paramount and undeniable and I am very blessed that he cared enough to make certain I took my work seriously. I was 20 years old and had just taken a job as a dental hygienist that required me to get to work at 7 am most days. For a 20-year-old, that is sheer torture. I still lived at home and Dad was my final alarm clock after hitting snooze several times. One morning I said to him, “This is just too early for anyone to go to work. I think I need to find another job. ” I seriously thought he would support this very self-caring decision I had come to. Instead, I was met with the righteous anger my dad seldom displayed and I will never forget his response.

His delivery was stern but gentle. . . gentle-"manly". I could not argue with him as he commanded my respect. Not de-manded, com-manded. There is a difference. As a result, in the 13 years I worked as a dental hygienist, I missed 2 days. 2 days in 13 years. Work ethic is important. Dedication is important. Commitment is important. My dad was the embodiment of all three of those values. I am so very grateful for his commitment to me, his job and our family. GIVING BACK

THE GINN GROUP GREW FROM A GIANT L E A P O F FA I T H

LEAVING A SECURE JOB TO START A BUSINESS TAKES MORE THAN A SINGLE STEP. For The Ginn Group’s founder and chairman, James P. “Jim” Ginn, it was giant leap of faith. Started in 2000, the Peachtree City company provides base operations and maintenance for government buildings and structures, utility systems, roads and grounds, as well as supply and storage, pest control and environmental support. The company can also provide logistics, supply chain and information technology services. Commercial maintenance services include plumbing, electrical, painting and minor construction services. “All work is performed to the standards of our ISO 9001:2015 Certified Quality Management System to ensure we meet our customer's requirements, care for our employees and deliver a consistent level of quality and satisfaction,” Jim said. Jim’s identical twin brother Jerry is company vice chairman. But the pair’s tradition of service began long before the Ginns became a group. Born in the south Georgia town of Sasser to parents who survived the Great Depression, Jim and Jerry are not strangers to hard work. “I never knew my father to work less than two jobs and my mother taught 1st grade for 30 years,” Jim said. Jim and Jerry are both Vietnam veterans. Jerry flew fixed wing aircraft as a forward observer for the 101st Airborne in Vietnam and continued a 30-year Army career in infantry, airborne, and commands at the company, battalion and brigade level as well as a chief of staff level position. Jim graduated from North Georgia College in Dahlonega and began a 26-year military career during which he served as a medical service corps officer in the Army Medical Department. He was a medical evacuation helicopter pilot in Vietnam, commanded a medical battalion and served as a hospital administrator. During his last assignment as chief, medical operations, U.S. Forces Command at Fort McPherson, Georgia, he settled in Fayette County with his family. After retiring from the military, Jim learned about his future business during 10 years of working for defense contractors. His Vietnam 8

VETERAN-OWNED COMPANY HELPS GOVERNMENT AND BUSINESSES RUN SMOOTHLY WHILE PROVIDING JOB OPPORTUNITIES FOR VETS

“K now failure is possible and have a safety n e t ,” h e s a i d . “ B e l i e v e i n yourself and go for it!” experiences made a positive impact on the business decision process—primarily taking care of people and teamwork. “We can have all the contracts or work we want but if we are not taking care of our people – the team—we will not be successful in taking care of our business.” Jim admits he likes hiring veterans. “If an applicant meets the specifications of a position and also is a veteran that certainly is a plus,” he said. He advises other veteran entrepreneurs to learn about their potential business. “Know failure is possible and have a safety net,” he said. “Believe in yourself and go for it!” He thinks this is a wonderful time to produce medical or other outsourced products. “What a chance to support America and have a great product line at the same time,” he said. The Ginn Group is about family as well as business. Jim’s daughter, Jo Ann, his first employee, has been controller for almost 20 years. His son James started in 2002 and was recently promoted to chief executive officer. Most of his corporate staff has been with the company 17 years or more. “I love my business and being around my employees,” Jim said. “We are a team and a family.” Jim’s giant leap of faith landed him in a successful business he wants to pass down. At 78, he’s not thinking about retiring yet, but he does want to travel. “There is a lot of this country that I would still like to see,” he said. Maybe this time he can begin with a single step.

LOCAL LIMELIGHT (CONTINUED) IN JUNE 2018, LINE CREEK BREWERY OPENED, THE RESULT OF A DREAM OF A GROUP OF LOCAL CRAFT BEER LOVERS. A welcoming place for folks to gather, love of community, camaraderie and quality craft beer became the stepping stone to building a successful business right here in Peachtree City. Their brewing process is both traditional and cutting edge, and has created a strong following, not only here at home, but in the Atlanta and Columbus markets as well. With close to 20 beers on tap and 12 different beers in cans, these brewers are in constant motion. Lead Brewer, Spencer Moore, works daily to bring unique and tasty brews to customers. His days are long and filled with a multitude of jobs. Moore gladly welcomed us into his world so that we can experience a typical day in his shoes.

MORNING

Look at the schedule and organize daily tasks for the production crew.

Mashing In - the process of mixing grains with hot water. AKA our Mash. This process releases enzymes within the grains to convert any starches into sugar. This is what the yeast “eats” to produce alcohol. Then begins the Lauter. This is the process of filtering the liquid off of the grain. The Lauter Tun is the vessel used and can be thought of like a giant colander. The liquid, called wort, is transferred off the grain and into the Boil Kettle.

14

Fayette County Lifestyle | June 2020

Lead Brewer, Spencer Moore

Begin Sparge. This is the process in which we rinse the grains with hot water, to rinse off any residual sugars. This liquid is also lautered and transferred to the Boil Kettle. Free Time - But, not really. We use this time to clean equipment like the Fermentation Vessel. Everything that the beer touches needs to be cleaned and sanitized. Not only does this create clean non-infected beer, but it also makes consistent beer. We also do visual inspections and taste test all other beers that are currently in tanks. This ensures every beer is on track.

AFTERNOON

Begin boil. This serves two main purposes.

The first is to sterilize that wort to make sure there are no bacteria or wild yeasts. The second is for flavor. Boiling itself produces and removes certain flavors, this is also where we would add the hops. Hops added at the beginning of the boil add a bittering component. Hops added at the end of the boil will give more of the flavor and aroma. Whirlpool. This is forcing the wort in the Boil Kettle to spin in a whirlpool. This compacts any hop matter and proteins together at the bottom of the Boil Kettle so that the wort can cleanly drain off. Cast into FV. Casting refers to transferring the wort from the Boil Kettle into the FV. During this process, it flows through a heat exchanger where cold water runs through. During casting, we will pitch the yeast. This is where we add yeast to the wort to produce beer.

EVENING

Yeast Cell Counts. As soon as casting

is finished, we take a small sample of the wort and analyze it underneath a microscope. We count the yeast cells present to make sure enough yeast was pitched. The amount of yeast is important as too much or too little can produce undesirable flavors in the final product. Clean up. Rinsing out the Boil Kettle, putting away hoses, scrubbing the floors and turning off anything that will not be used overnight. Clock out and repeat tomorrow.

Hello Fayette County!

I’m Dr. Zwade Marshall, an interventional pain management physician. I’m excited to be able to share my health and wellness expertise with you all, and I look forward to opening my state-of-the-art practice in August: Regenerative Spine and Pain Specialists. I’ll be providing insight on ways to stay as healthy as possible especially in the midst of the COVID-19 crisis, and provide the opportunity to answer any questions you might have.

The Farm to Table Movement As a physician that manages pain in patients, the biggest benefit of this trend is the culture of consumers paying attention to the nutrition content of their meals. Obesity, diabetes, high cholesterol and diets high in saturated fats contribute to the inflammatory states that affect pain syndromes. Part of the obesity epidemic stems from the relatively low cost of processed foods, fast foods and saturated fats. Hopefully, we are choosing to reduce the consumption of white bread, sugary drinks, fried foods, chips and pastries. Instead, we should be consuming more carrots, beets, cherries, grapes, onions and teas rich in anti-oxidants. I want to encourage you all to make good food choices and eat healthier for your overall body health!

COLLECTING FINE BOURBON IS AN ART FORM AND WAYNE DAMRON BELIEVES HE HAS AMASSED ONE OF GEORGIA’S FINEST COLLECTIONS OVER THE PAST 15 YEARS. “Bourbon is uniquely American and has surpassed vodka as the preferred distilled spirit,” he said. Wayne went on to educate me, “Bourbon can only be produced in America and must be

made from 51% corn. It must also be stored in charred oak barrels, only. This is bourbon law.” To Wayne, the smooth, oaky flavor and earthy tones make bourbon easy on the palette and warm as it goes down. He started with Makers Mark and Buffalo Trace, but when he discovered Pappy Van Winkle, all bets were off as he set about his quest to collect the US’s finest bourbons. Today his collection of over 60 bourbons includes elusive bottles such as Old Fashioned Copper (O.F.C.) of which there are only 100 bottles (he owns #92) and the 10, 13, 20 and 23 year aged Pappy Van Winkle. Wayne’s favorite drinking bourbons are Basil Hayden’s, Old Taylor and Angel’s Envy which is made in charred port wine oak barrels. He is a self-proclaimed “bourbon-snob” and made sure to tell me that if you drink any one of these fine distilled spirits with anything else, he will not pour you any. “This bourbon is meant to be enjoyed straight only. No rocks. No mixer. Just the glass, you -- and a fine cigar.”

c h r i s k n o b l o c h GOLF PRO AT CLUBS OF PTC AGE: 53 PEACHTREE CITY WHAT IS THE BEST PART OF COACHING KIDS? I get to create playful and game-based learning. For example, instead of asking a junior golfer to simply put a ball into the hole, we have a game called Croctology. The junior transforms into a Crocodile dentist and needs to knockout the croc’s teeth with their putter and ball! This is fun for most kids, even the ones who aren’t considered golfers yet. WHAT IS THE HARDEST PART OF COACHING KIDS? Expectations from parents and kids. Most don’t have the patience to go through thousands of bad shots to get better. This is where games teaching skills along with choice, randomness, and interaction are so important. CAN YOU SHARE A SUCCESS STORY? I had a student aspiring to play college golf. He was a pretty good player but hadn’t performed well enough to get a college coach to look at him. We worked together and with his hard work, he won some small tournaments along with a major event. In return, the University of West Georgia offered him a scholarship. Along with his parents, I was by his side when he signed his letter of intent. He played for four years and is now helping me coach when he can. It has been a great relationship and it continues to grow. WHAT’S THE BEST ADVICE YOU CAN GIVE? Enjoy the process of learning, and play often. It’s a game of a lifetime!

Tu r t l e Po n d Ya c h t C l u b SAILING WITH A TWIST IN PEACHTREE CITY

IF YOU WERE TO TAKE A TOUR AROUND TURTLE POND ONE SUNNY MORNING, YOU’LL PROBABLY SPOT SOME SAILS IN THE WATER AND A FEW FOLKS ON LAND, WITH REMOTES IN THEIR HANDS. Most likely they are the Turtle Pond Yacht Club (TPYC) members who gather frequently to race their sailboats on the rather large pond that lies adjacent to the Braelinn Golf course on the south side of Peachtree City. Radio controlled (RC) sailing is an individual competition that is dependent wholly on the skill of the sailor in the face of the wind. The favored sailboat is the Dragon Flite 95 (DF-95) that stretches to three feet after

assembly from its kit. Each boat is controlled by a handheld radio transmitter. One level on the radio controls the rudder that navigates the boat while the second lever is used to adjust the sails in favor of the wind. Boat racing on Turtle Pond is a fun, competitive activity. On race day, a water route is set up, favorable to the current winds. Sailors strategically navigate their uniquely decorated boats through a couple of turns toward and away from the wind, before breaking at the finish line. Because the boats are propelled solely by wind, no wind or too much wind may render an uneventful race on the pond. Other adverse conditions for sailing are rainy, or extremely cold or hot days. Chuck Ellis, a retired Army and commercial aviator, is one of the club’s first and most enthusiastic members. He was on his power walk one sunny morning when Bill Bibeault proudly shows his brand new boat

he bumped into some boat racers, and has since been “hooked” on the sport. The 11 year old TPYC is a casual group without rules or officers. The club also carries no fees and minimal costs. “To become a member you just show up and introduce

yourself,” said Ellis, who is the main contact for the club. It’s a fun sport for those who are desiring fellowship and some friendly and fierce competition. New members are trained by other experienced members, one-on-one, and then encouraged to practice their newly acquired skills on Turtle Pond. Most members live in or around Peachtree City. Seasoned sailors like Chuck may desire to race his boat in higher level competitions. These regattas, held regionally and nationally, usually require the EC-12, a considerably larger and more sophisticated sailboat that takes many months to construct and assemble. Sailors travel to the different parts of the southeast for the regional races, and anywhere in the U.S. for the national competitions. Overall, sailing on Turtle Pond as a TPYC member provides the perfect combination of a sport that’s easy on the wallet, while offering a healthy way to soak up some Vitamin D, and make fast friends. There couldn’t be a cooler way to pass the summer months. For new members’ inquiries about The Turtle Pond Yacht Club

OUT WITH THE O L D... ROCH DEGOLIAN HELPS FOLKS FIND THEIR WAY HOME

“TO BE TRUSTED WITH SOMEONE’S KITCHE N IS A TRUE CO M P L I M E N T. I T ’ S T H E H E A RT O F T H E H O M E .” THERE’S NOTHING LIKE FATHERHOOD TO TURN A FATHER’S HEART TOWARD HOME. Indirectly, it also led one local entrepreneur into a business that helps others find their homes as well. Buckhead native Roch deGolian traveled every week selling electronic locks for hotels. Since his wife, DeSales, was already commuting to Peachtree City, the couple moved here in 2000 shortly before the birth of their daughter, Blaise. When Blaise turned two, Roch decided 18 years on the corporate road was enough. “It was time to be home more,” he said. At the time, DeSales worked for a home construction company, and Roch joined her there. In 2016, the couple started their own company—DeGolian Residential, a home building and renovation firm. Ironically, their first custom project began with demolishing an old home in Peachtree City, which they replaced with a magnificent custom home. “It was a great start and led to many projects,” Roch said. Since building homes goes hand in hand with selling them, the deGolians’ business naturally evolved to include real estate sales. Roch’s corporate sales experience and experience building and selling homes has been helpful. Both he and DeSales 28

OPEN HOUSE (CONTINUED) are licensed residential builders and licensed Realtors. “Many times, a buyer we represent will want to update or renovate their home,” Roch said. “I can take on projects like that, or I can refer them to a trusted contractor.” DeGolian Real Estate clients receive energetic, enthusiastic and specialized attention. “There aren't many firms that can provide the resources we can, not just to our clients, but to our agents,” Roch said. Roch, company president, enjoys working with DeSales, broker and vice president. “We get along well because we respect each other's roles,” he said. They also focus on supporting their 18 agents with “whatever it takes.” “We are available at all times to answer questions, meet with clients, organize contractors, review inspection and appraisal reports, and help agents and

clients work through sticky situations,” he said. Although the Covid-19 ordeal may cause a slow down, Roch said the real estate market has remained strong, especially on the south side of Metro Atlanta. “With commute time to the airport and housing costs less, the south side is the place to be!” he said. “Coweta County is exploding with growth and Fayette County is growing as well. Many of the folks who have been in Fayette County for generations are selling their properties and moving to Meriwether, Heard and Pike counties.” Despite the DeGolians involvement in real estate, they haven’t forsaken building homes and renovations— mostly kitchens and bathrooms although they have done smaller projects such as a laundry rooms and pantries. “We are very selective about the projects we take on,” Roch admits. “I am very particular about detail and finishes. I won't use substandard contractors or substandard products. If we have a prospective client who is willing to commit the time and resources it takes to build or renovate only to the highest standards, then we will consider taking on the project.” Separating work and family time can be a struggle, but Roch said they have family meals most nights and find time to visit neighbors and DeSales’ mother, Connie, and to walk their Old English sheepdog, Fergie. And that young daughter, Blaise, that made Roch give up his career on the road? She’s 19 and finishing her first year at Georgia College while preparing to transfer to the University of Georgia in August. In his leisure time, Roch enjoys yard work, gardening, pool, golf, fishing, grilling and cooking. And his favorite room in the home is also the one he most likes to renovate for others—the kitchen. “To be trusted with someone's kitchen is a true compliment,” he said. “It's where everyone gathers, eats, lives. This is the heart of the home.” 30
