After spending twenty one highly successful years in the industry, I'd have to say that my tenure at Mercedes Benz working as a top Finance Manager for Billionaire Warren Buffett's Automotive Group was the best learning experience ever. I am married to my beautiful wife Inger, a Cardiology Nurse Practitioner and we have 4 wonderful children and a black lab named Bella. Mexican Cheese Hot Dog INGREDIENTS Cheese Sauce + 2 cups grated sharp cheddar cheese + 1/3 cup milk, more or less, depending on desired consistency
Dogs and Toppings + 8 hot dogs + 8 hot dog buns + 4 serrano peppers, thinly sliced + 1/4 medium red onion, minced + diced fresh tomatoes + chopped cilantro + 1/2 cup crumbled queso fresco cheese + crumbled bacon
DIRECTIONS 1. Place grated cheese in a medium saucepan over medium-low heat. Stir in milk. Continue stirring, adding more milk as necessary, until cheese sauce is melted completely and you've reached desired consistency. Sauce will thicken and harden as it cools.
2. Grill hot dogs and buns until dogs are nicely charred on the outside and buns are golden brown. Place on buns and top as desired.

+ 1 Tsp Oil Slice Mango, Tomato, Onion and Avocado
DIRECTIONS
1. Thinly slice and cube Mango, Tomato, Onion and Avocado.
2. Add yogurt, 1 tbsp Jalapeño Peppers, 1 tbsp Golden Greek Peperoncini, and pineapple in a food processor and pulse to form a smooth dip.
3. Grill or cook Hot Dogs in non stick pan till brown or desired.
4. Take a hot-dog bun and evenly spread the yogurt mixture on 1 side.
5. Add Hot Dog and top with mango, tomato, onion, avocado, peppers.

DIRECTIONS
1. In a large bowl whisk together vinegar, honey, salt and pepper.
2. Add in the carrots, cucumber, radish and cilantro.
3. Toss all ingredients and top over grilled Hot Dogs.
4. Add jalapeno as desired.

ROAD TRIP (CONTINUED)
We woke to perfect mountain weather, sunny and crisp, but not too cold for a horseback ride! The Brasstown Stables were a quick two-minute drive from the main property where we met Stable manager, Jerry, who has been at the resort for 15 years. The Stable runs 365 days a year and each trail ride has guided rides up to six riders. The 3.5-mile trail we followed was along the backside of Swanson Mountain and took an hour. We bounced along over little creeks, wooden bridges, up wooded hills, stopping to let the horses drink water from a trough. When it was time for the horses to start walking again, you’d hear Jerry call out a loud, “yeeeehaaa!” The horses were very well behaved and didn’t require a skilled rider, as they were used to following the guide and the horse in front of them while on the trail. The hour flew by, and I could have easily ridden another hour. We were told they have a saying at the Stables that this is a great place for ”first timers, never havers and always wanted to-ers”! Our last morning before leaving we ventured out for a truly enjoyable hike passing babbling brooks and keeping our eyes open for wildlife. For more enthusiastic hikers, the resort has a 2.5-mile loop and a 6.5-mile marked trail. + Cardboard + White crepe paper + Construction paper + Glue + Scissors + Beads, yarn, pom poms, etc.
DIRECTIONS 1. Take your cardboard and cut two pieces into the shape of a llama (we found a stencil online). Then, cut strips of cardboard the depth you want your llama to be. You’ll connect these to either side of the llama cutouts to enclose your piñata. 2. Glue your strip of cardboard all along the edge of one side of your llama, then glue to the other side. (Be sure to leave a hole you can close up later so you can fill it with your favorite candy!) 3. Starting at the neck, cover the front, back and sides of your llama with white crepe paper, cutting a slit every half inch or so to create the traditional piñata look. 4. Cover all remaining sides the neck and head with white construction paper, cut to fit your design. 5. Using construction paper, beads, pom poms, tassels, buttons, etc., add some flair to the rest of your llama! Bonus points for incorporating different shapes and textures into your final product.

Using a stencil, cut out the pieces you’ll need for your flamingo from construction paper: Pink: 4-6 circles for the body (depending on how “fluffy” you want it), neck and legs White: Outline of the beak Black: Beak 2. Fold the circles in half and glue them all together back-to-back to create a sphere that looks like an accordion. 3. Glue the beak and white stripe to the neck, then glue the neck to a flat side of your inner-most circle. 4. Add the legs, a black dot for an eye and pink feathers for the ultimate flamin-goal.

Glue the your rectangular pieces to one side of your rocket ship, then glue the back on. You should have an open spot at the top where your pencils will go. 3.
