Promoting Farm-to-Fork in Loudoun What started as a health-conscious blog has transformed into two of the largest destination farmers markets in Virginia with a mission to connect NOVA residents to the same farm-tofork food used by some of the best chefs in the area. “We wanted to create a farmers market for the 21st century that includes everything fresh, sustainable and local. We have chefs making great meals on site and to-go healthy meals for busy households,” says Dan Hine, who founded EatLoco markets in 2017. “We’re planning on having over 100 vendors at the One Loudoun market this year and the Brambleton market will most likely double in size. Our markets bring in executive chefs from Lansdowne Resort, The National Conference Center, AhSo Restaurant, Lost Fox Restaurant and many others including caterers and private chefs. All bringing awareness to the importance of supporting our local food producers to keep our bodies and communities strong.”

Ayrshire Farm

Ayrshire Farm in Upperville has raised humane, organic, sustainable heritage breeds for more than two decades. The cows, chickens, pigs, rabbits, and turkeys are a passion for founder Sandy Lerner, who is at the forefront of sustainable farming: “Why are we not aware of what we put in our body? Ours is just better food.” This belief has led to a vertically integrated ecosystem where all animals are pastured and free range, and because they aren’t hybridized can subsist on grass and fertilize their own fields and produce fields. Wave Williams takes his produce to market 24–48 hours after picking. He operates a 300-acre farm in Westminster, MD that has been in his family for generations and prides himself on his greens: mesclun, spinach, arugula, sorrel, mustard and beet greens … depending on the season, they bring all sorts of varieties. They keep seven greenhouses running in the winter and produce flavorful and fresh produce for farmers markets and restaurants. Shane Hughes, who returned to his fifth generation family farm 10 years ago, counts Jose Andres and 40 other farm-to-table chefs as loyal customers. Why? “We produce meat with a clean, robust taste and a brightness and firmness that comes with freshness and raising pastured animals, antibiotic and hormone free. We take pride that these animals had a healthy life,” Shane says. They even raise animal feed on 400 acres without chemical fertilizers, use a custom butcher and distribute product to customers themselves: “We get cuts back Tuesday morning and they’re out the same day.” Shane and his crew also bring pork, chickens and eggs to the market. www.libertydelightfarms.com

Ed Smith began growing vegetables and making sausage in South Hill, VA in 2012. He now sells 4,000–5,000 pounds of sausage each week with recipes he and his son Martin developed. Their sausages are hormone/antibiotic, gluten, MSG, nitrate/ nitrite free and run the gamut of flavors from mild brats to their spicy El Diablo. They also grow and pickle jalapeno and cayenne peppers and make mouth-watering cheese dip and pimiento cheese, but the star is the sausage: “Taste it and you’ll know the difference,” Ed says. “Growing up, I always liked my sausage fresh and now I’m bringing that to our customers.” smithsofmecklenburg.com

Max Tyson was raised on an orchard and in 2002 went back to his roots and started his own. He has been producing delicious tree-ripened fruit and other produce ever since. Based on the season, you can find peaches, plums, apples, pears, cherries, nectarines, tomatoes, and asparagus. He also freezes berries and makes jams and jellies when available. What’s the difference when you take home his produce? “Most store-bought fruits are picked prematurely before enough sugar has developed, then it is hydrocooled which further kills the flavor. Out this month from Dr. Martha Callihan of Five Stones Wellness is a book that asserts that it's not only possible but advisable to plan for a "good death." In A Death Lived, she relates the experience of having to say "good-bye" to her spouse. She learned, "that we can be intentional [and] mindful about the process" of dying if we don't die suddenly. In her view, "We need to be able to have the difficult conversations, face the hard truth and not be afraid to voice what is real."
