GRILLED VEGETABLES WITH BALSAMIC-HONEY REDUCTION & FRESH BASIL Servings: 8-10 Ingredients + 4 small zucchini + 4 small yellow squash + 2 small fennel bulbs + 4 new spring onions + 3 tablespoons olive oil + 2 teaspoons sea salt + Fresh ground black pepper + 1 small bunch fresh basil Ingredients for the Balsamic-Honey Reduction + 1/2 cup balsamic vinegar + 1/4 cup local honey + 1/4 teaspoon sea salt + Fresh ground black pepper Directions 1. Cut the zucchini and squash lengthwise into quarters and cut out any large seed clusters. Cut the fennel in half. Split the onions lengthwise. 2. Place all of the vegetables in a shallow baking pan and season with the olive oil, salt and pepper. Set aside to marinate at room temperature for 30 minutes. 3. Pick 10-12 basil leaves and make a small stack on your cutting board. 4. When the grill is hot, grill the vegetables over high heat for 4-5 minutes, turning a few times, until the skins are blistered and just cooked through. 5. Remove to a serving platter and drizzle a few spoonfuls of the balsamic-honey reduction over the vegetables. 6. Cut the basil leaves into thin slices and evenly distribute over the vegetables. Now you can serve local grilled vegetables at room temperature alongside your favorite dishes.

Chef Tyler Brown references Thomas Jefferson’s Monticello as inspiration. “The way it was done in the past, it’s Southall’s interpretation of ‘real hospitality,’’’ a dinner in your backyard. A benefit to The Rambling’s set up is that the menu and evening are not “confined to a lane” and no rules need to be followed. Southall’s overall goal is to create a classroom that will spark curiosity and demonstrate in action a “a full symbiotic circle.”

A very short walk from the site of The Rambling stand two beautiful greenhouses. Such mammoth structures they seem to beckon you in. Once inside you are welcomed into an atrium of succulents and pots of flowers wintering inside. Beyond the atrium are rows of seedlings patiently waiting to be planted to fulfill their destiny of seed to table dining. Stepping into the back room you find yourself standing among one of Southall’s many fascinating projects, a citrus grove with 16 different types of plants and leaf cutters, a type of bee, fluttering about. Other ventures at Southall include an apple orchard with old and new varieties of trees, seed banking and a fish greenhouse system raising hundreds of bass. The community interaction is something Chef Tyler and Southall hold in high regard. The tables are sourced from local Tennessee wood, the dinnerware is handmade by potter John Donovan. Local musician Reed Turchi plays The Rambling to provide the right mood. Southall is mindful in all they set forth to do, including the soon-to-be Inn and Spa.

There are approximately 21,000 acres and 500 miles of
shoreline to enjoy, and Smith Lake is ranked one of the clean-
est lakes in the United States. This makes it a great place to cool off during the summer months and to take in spectacular views in the winter months. Smith Lake also offers boat rentals and multiple lakeside restaurants with public docking. This vibrant lake is ideal for many recreational activities such as fishing (over 70 species of fish!), wake surfing, kayaking, paddle boarding or just soaking up some sun. If you want to travel the area around the lake, the Natural
Bridge of Alabama is a compelling place to explore. This 148-foot sandstone bridge stands 60 feet above various footpaths. Created by thousands of years of wind, this bridge is the longest natural bridge in the southeast. The Smith Lake Dam is another pit stop. It's one of the largest rock-filled dams in the eastern United States. The dam is a popular fishing spot among locals, and there are white sandy beaches for sunbathing or just relaxing.

If you eat a lot of carbs in one sitting, it can cause your blood sugar to spike, and when it drops back down, you can feel lethargic and maybe even irritable. By spreading your carbohydrate intake throughout your day and always pairing it with a protein, you can help your body regulate your blood sugar more effectively and feel more alert all day long.

These no bake little balls of protein are so good they can replace your dessert. They’re even filling enough to pop in your mouth for a healthy breakfast bite. And best of all, they are quick and easy to prepare.
no baked organic peanut butter energy balls INGREDIENTS + 6 cups Bulk Organic Rolled Oats + 4 cups Bulk Organic Coconut + 3-1/2 cups Organic Peanut Butter + 2 cups Raw Honey + 3-1/2 cups Organic Mini Chocolate Chips + 1 Tbs.
