MEDINA CARES ANNUAL REVERSE RAFFLE Medina Cares, INC. is a volunteer-run nonprofit organization that provides temporary financial assistance and community resources to Medina County residents ages 19-59 that are experiencing a medical crisis. Each year, they hold their Reverse Raffle that raises funds and awareness for the organization and its mission. This year's Reverse Raffle will be held on April 25 at Buffalo Creek Retreat from 6-10 p.m. It will feature many opportunities to win exciting prizes and each admission ticket will include one chance at winning the $1,000 grand prize, dinner, desserts and drinks. “We are currently transitioning into our new building and campus,” says Joe. “Phase one will take place this fall, where we will move all of our middle and high school-aged students into the upper school at the new campus. Phase two and three will take place shortly after, and will include developing athletic facilities and moving our elementary-aged students. It’s all a process based on our capital campaign. The expansion is an exciting undertaking, and Medina Christian Academy continues to seek God’s wisdom and guidance throughout. There are still opportunities for community members to join in the mission with gifts of donations, services or volunteering.”

culinary creations with square 22 restaurant & bar jumbo sea scallops INGREDIENTS + 2 cups Arborio rice + 2 ounces butter + 1/2 cup diced Spanish onion + 6 1/2 cups crab stock + 6 ounces blue crab + 1/2 cup parmesan + 16 U-8 scallops + 1/2 pound asparagus + 3 cups sliced wild mushrooms + 1/2 cup capers DIRECTIONS 1. Fry capers until crispy and set aside.

2. Heat crab stock in a pan. While it heats, place onions and butter in a saucepot and sauté until onions are translucent.

3. Slowly add heated stock to saucepot of onions, constantly stirring.

4. Cook rice, adding stock in one cup increments until rice is finished. Finish with blue crab and parmesan.

5. Heat pan on high heat and cook scallops until center is opaque and each side is golden brown.

6. Sauté mushrooms and asparagus.

7. Assemble plate with rice, scallops, mushrooms and asparagus. Top with crispy capers.
