The Valley of the Sun chapter and its events are run by an executive committee of big-hearted volunteers along with the support of very generous sponsors. FROM COWBOYS TO YOUR KITCHEN
SAVORY CORNBREAD THAT WILL BECOME A FAVORITE IN YOUR HOME AND KICK UP YOUR HOLIDAY DRESSING
MAKING CORNBREAD IS A STAPLE OF A PERFECT SOUTHERN THANKSGIVING. There has been a heated debate for years across the country: Should cornbread be sweet? The answer in our household is a resounding no! Cornbread should never ever be made with sugar, and here is the reason why. Born and raised in Texas, my great-grandfather for years raised and herded cattle. One of the last cowboys in America before the industrialization of farming, he would ride his horse for miles moving cattle with only what could fit in his side-saddle. He only brought the bare necessities with him when he made camp under the stars. Cooking for himself, he could not indulge in wasting what little sugar he had to make bread. His coffee was black, and the cornbread savory. This tradition passed on to my grandmother, who then taught my mother the way it used to be done on the range. She passed it along to me. When we gather around for the holidays, there are two guarantees: one, that Mom will be making cornbread, and two, that it will completely disappear by the end of the meal. Another great way you can make your Thanksgiving more Southern is by taking the cornbread and turning it into a delicious cornbread dressing that pairs perfectly with any classic turkey dinner.

BACON SKILLET CORNBREAD INGREDIENTS + 1/2 pound bacon + 1 cup yellow cornmeal + 1/2 cup all purpose flour + 1 tablespoon baking powder + 1 teaspoon salt + 1 cup buttermilk + 1/2 cup milk + 1 whole egg + 1/2 teaspoon baking soda
METHOD 1. Preheat oven to 450 F. 2. In a cast-iron skillet, line the bottom with bacon. Make sure the entire bottom of the skillet is completely covered. Cook for 15 minutes to partially cook the bacon. Meanwhile, make the cornbread batter. 3. In a large bowl, combine cornmeal, flour, baking powder and salt. 4. Add buttermilk, milk and egg to the dry ingredients. Whisk together. 5. Add baking soda. This is key to creating a fluffy texture to the cornbread. Be careful not to over-stir the baking soda; it will make the final product too condensed. 6. Pour batter into the cast-iron skillet on top of the bacon. The batter should sizzle a little because the pan will be hot. 7. Place the pan on the top rack of the oven and cook for 20–25 minutes. TIP: The cornbread is done when you see the top crack. To make sure, test with a toothpick near the middle. If the toothpick is dry, then the cornbread is done.

CORNBREAD STUFFING INGREDIENTS + 1 full recipe Bacon Skillet Cornbread + 1 pound sage sausage + 3 pieces sliced sandwich bread, 3 buttermilk biscuits or 2 cups storebought cubed bakery bread + 1 teaspoon salt + 1 teaspoon black pepper + 1 teaspoon ground sage (optional) + 3 large eggs + 1 medium onion, diced + 4-6 fresh sage leaves, diced or torn into small pieces + 2 stalks celery, diced + 1/4 cup butter, sliced + 2 cups heavy cream + 6 cups chicken stock
METHOD 1. Preheat oven to 350 F. 2. In a large bowl, crumble the cornbread and biscuits (or other white bread slices). Add salt, pepper, ground sage, eggs, onion, cream and chicken stock. Stir until well-combined. 3. Heat butter in a pan. Add onions, celery and sage leaves. Cook until tender and onions are soft, 1-3 minutes. Add to the bread mixture. 4. Brown sage sausage and drain grease from the pan. Add browned sausage to the bread ingredients. Stir until combined. 5. Pour dressing into 2 9-by-13 baking dishes and bake until lightly browned, about 30–45 minutes. Shake the dish lightly to test. If the center of the dressing moves, then the dressing is not cooked through. Continue to bake until dressing is set throughout.

Dr. Vu and Dr. Asgari are excited to welcome a new member to their team! Dr. Trent Cox is an Arizona native who attended Arizona State University. After graduating, he spent two years in the Dominican Republic where he learned to speak Spanish while serving a church service mission. After returning to ASU, he completed dental school, earning his Doctor of Medical Dentistry Degree (DMD). It was there that he also received his certificate in Public Health, Certificate in Orthodontics and his Doctor of Health Science degree (DHSc) and completed the process to become board certified by the American Board of Orthodontics. Dr. Cox is active in his church and enjoys all outdoor activities. An accomplished long distance runner, he has competed in both marathons and ultramarathons. He also competes in mountain biking and road cycling races. He recently hiked Mt. Whitney but his favorite hike was the Grand Canyon. Most importantly, Dr. Cox is a family man. He and his wife Carrie are the parents of four children, 3 girls and a boy. He loves being an orthodontist and considers it his dream job being able to create beautiful smiles.

DURING THE THANKSGIVING HOLIDAY, WE ALL GET HUNGRY—BUT NOT JUST FOR TURKEY AND PIES. We get hungry to give back to our community. Gilbert is a town known for kindness; so much so, that in April we even renamed the town “Kindness, USA" for one week. Around the town, there are many wonderful organizations looking to do good for those less fortunate, from helping feed the homeless to finding homes for cute and cuddly creatures. These organizations are doing what it takes to make a difference in our town. The thought of getting involved can be daunting. Often times, we forget about those with less in their lives, or sometimes we just do not know what we can do to make a difference. Here are a few of our favorite charities and nonprofits from around Gilbert. We hope you will spend some time this holiday season learning a little bit more about them. Whether you decide to volunteer with Kindness Konnectors, go see a show by the Actor's Youth Theatre, or maybe have your own way to help others in need, there are so many ways to give back and spread the joy this holiday season.

BEING AN INSPIRATION IS HARD WORK. Much of the time, those who truly inspire us the most have no idea they are even doing it. That’s what makes them so inspiring. In a world where every moment has to be put on Facebook or Instagram for a public pat on the back, it is hard to find people who are truly altruistic. These inspiring people are putting in the hard work day after day, and they never seem to complain or ask for recognition because for them, seeing the positive change they are making in others’ lives is enough. We thought of the people in our lives who inspire us to be better—better friends, better neighbors, better family— just all-around better people to those around us, not for the praise but for our souls. We’ve chosen a few special members of the Gilbert community who inspire us, who do for others even when no one is looking, and we hope they will inspire you too.

Mayor, Town of Gilbert Jenn also serves on many regional boards including the Maricopa Association of Governments Regional Council, the Regional Transportation Policy Committee and the League of Cities and Towns. Jenn is wife to Eric and mom to four kids spanning high school to elementary school who keep their parents busy with football, dance, music, scouting and friends. She knows all the words to ‘80s rap songs and loves to hike, dance, read and bake. WHAT INSPIRES YOU? “My kindergarten teacher, Ms. Goldflam, asked me to please stop whining. (Difficult to envision, I know.) My response has been retold to me several times —part of our family legends. ‘I’m not whining, Ms. Goldflam, this is my normal voice.’ I’m sure it took restraint (and aspirin) to endure that year. I’ve added a few decades to my life, and I realize the importance of having a voice and in being a voice for others. I’m inspired by the people who advocate, support, encourage and love even when it’s difficult—especially when it’s difficult. The inspiration comes as I see a victim advocate give a voice to one who has been harmed or when the youth of Gilbert come together to support a friend with a traumatic brain injury or when the Gilbert Girlfriends rally around a woman who has just been diagnosed with cancer. As we use our voices—even the whiny ones—to hear, see, value and understand each other, an amazing transformation takes place. I’ve witnessed it over and over again, and I’m inspired by the people in our community who lift their voices for others.” CONTINUED >

WHEN YOU WALK THROUGH THE DOORS OF MISSION COMMUNITY CHURCH ON SUNDAY MORNING, YOU MIGHT FIND YOURSELF WONDERING: IS THIS A ROCK CONCERT OR SUNDAY SERVICE? Guitar music fills the theater and drifts out into the courtyard. Children laugh and play on the grass as their parents find time to catch up with friends before the service starts. There’s always a smiling face to greet you and to welcome you inside. This has always been lead pastor Joel Thomas’ vision: a church that is for everyone. “Our passion is that we want the community to be better for us being here,” Joel says. Joel, his wife, Jenn, and their four children relocated to Gilbert five years ago with a unique vision for growing the church in this community. “I think, in order for the church not to be left behind, we have to figure out a way to become more accessible and more integrated into the community throughout the week, not just on the weekends. I think that this happens through the community seeing the church as somebody that serves the community,” Joel says. Before Thomas relocated to Gilbert, he worked with Andy Stanley helping to create what would become North-Point Ministries (NPM) based in Atlanta, transforming an 800-person congregation into 40,000 people served across seven churches. Today, NPM consists of the seven churches in the Atlanta area and a network of more than 90 churches around the globe, including Mission Community Church in Gilbert. Andy is one of American’s most influential communicators, reaching more than 7 million households around the world each month through live-steam, television and podcast. He stopped by Gilbert to visit with his close friend Joel and to discuss their emerging vision of the modern church. “I think this campus needs to feel more like a community center,” Joel says. Joel's vision is that the church will become an active, vibrant part of the town, with amphitheaters, cafes, splash pads, after-school programs and coworking spaces—a destination that people are familiar with and where people of faith who love their community provide meaningful services for everyone. After services, you can usually find Joel outside meeting and reconnecting with the Mission Community. He strives to be an approachable and available pastor. CONTINUED >

“I think in order to connect with an emerging culture, the church will have to look dramatically different,” Joel says. For Joel, the most important part the modern church is being for everyone. He believes that for too long the church has been characterized about who they are against instead of who they are for. Joel's vision includes focusing on who the church is for. “We want our neighbors—whether they believe the same as us or not—to know that we want the most for them. We want the best for them,” Joel says. “We think our legacy is how we are going to impact those people who are around us and those who come behind us, and that is why, unapologetically, we are going to be a church that is for our next-door neighbors.”

THE 62ND ANNUAL CHRISTMAS IDEA HOUSE TO BENEFIT VALLEY STUDENTS
WE CAN’T BELIEVE IT, CHRISTMAS IS ALMOST HERE. In Gilbert, Christmas means cooler weather, delicious treats and the Holiday Christmas Idea House. The Christmas Idea House is a three-day charity event fundraiser for the Desert Club. Founded in 1964, the Desert Club is an allwomen volunteer group that helps provide scholarships to students in the East Valley. Every year, the women work for months to gather supplies and put together their vision of what the perfect holiday home should look like. They choose a luxury home in the East Valley and completely transform it into the ideal Christmas wonderland. This year, the 62nd Annual Christmas Idea House will benefit Valley students and families. The theme for this year’s house is “A Lasting Impression,” a reflection on the annual tradition this holiday event has become for thousands in the East Valley and the tremendous difference it has been for the lives of many deserving students and families. Candy Zeper, co-chair for the 2019 Christmas Idea House, has been a Desert Club member for 37 years. Her mother was a member of the women’s club for more than 50 years. Candy says it is truly inspiring to watch the Christmas Idea House come together every year. “I grew up watching the ladies of Desert Club turn a home into a magical Christmas House and have seen daughters, mothers and grandmothers make this a yearly tradition by attending brunch together.” The house chosen for this years’ showcase is a spectacular Mediterranean estate built by Billy Johnson, master-builder of Amberwood Homes and a private entrepreneur. “Desert Club members have always had a special place in my heart, and I was

honored to accept their invitation to hold
the Christmas Idea House at my home this year,” Billy says. “Anytime the Desert Club has asked for my support over the years, I have always been delighted to give it and encourage others to as well.” Built in 1998, the 10,000-square-foot home, situated in the historic Citrus Corridor, captures Billy’s passion for home building and is reflected throughout every corner of this sprawling estate. One year, I lived on Boulevard opposite side of the New York City Skyline. The view was magnificent. I was in my early 20’s and decided I wanted my whole family over for Thanksgiving! The table took up the whole living room, but it was striking! Everyone was having a great time, eating, drinking and conversing. I went into the kitchen to get the 20lb turkey that was cooling off, only to find the cat enjoying a feast! I never told a soul until this moment but the cat was right! It was delicious!

"What's for Christmas dinner?" my husband asked. We just moved our family of five into an apartment while we waited for our home to be built. The potted pine tree I decorated had wilted while we slept and looked exactly like Charlie Brown's. The ornaments had all slid off. And the kids were sick. "I thought you were cooking steaks," I whispered. Dale shook his head. "Wait! I have a lasagna in the freezer!" Glory. An hour later, we found out the oven didn't work when it came out half frozen half burned. But the tree lived... and now its 50 feet tall.

Thanksgiving in our household revolves around one thing. My father's gravy. It takes two days to make and tastes like liquid gold. One of the final steps in his recipe is to leave the gravy in the refrigerator for a few hours so that the fat rises to the top to be taken out before reheating. Well I didn’t know that step. 30 minutes before Thanksgiving dinner I decided the gravy needed to be heated up, I placed the whole dish into the microwave and pressed go. By the time my father realized what I'd done it was too late. To this day I swear there's still gravy on the ceiling from it being thrown down the sink in despair and we keep a can of rescue gravy - just in case. ARTICLE AND PHOTOGRAPHY PROVIDED 34
