BUILDING AND S TA R T I N G A COMPOST PILE

FROM THE HILL COUNTRY GARDENER

COMPOSTING SUCCESSFULLY IS MORE THAN JUST TOSSING FOOD SCRAPS AND LEAVES INTO A RECEPTACLE. The proper mixture is about 80% brown (leaves, twigs, manure, dead weeds, old plants, etc.) to about 20% green (dried grass clippings, leaves, produce). Be sure to shred the materials so that the smaller pieces decompose faster. You can buy fencing at the hardware store or get four wooden pallets and sixteen screen-door locks. Hook the pallets together to make the pen. With the screen-door hooks, you can take one side off when it’s time to turn the pile. You could build fancy ones out of treated lumber or concrete blocks. There are ready-made composters and compost tumblers available as well. It is important to leave lots of room for air to get into the pile. Put about a six inch layer of brown mixture in the bottom and then about a half inch layer of green mixture on top. Wet the whole layer until it is about as wet as a wrung-out sponge.

6 TIPS FOR COMPOSTING 1.

Once the microbes start consuming the vegetative matter it turns into compost. The heat of the pile should reach between 140 and 160 degrees Fahrenheit within a couple of days. After it cools down you need to turn the pile to keep it working.

There are usually reasons why a pile doesn’t heat up. The pile is too wet; the pile is too dry; the mixture isn’t right; there aren’t enough microbes to do the job. To dry the pile out “fluff it up” or lay it out on the lawn in thin layers before putting it back in the pen. If too dry, be sure to water the pile well when you turn it into the pen. Remove some of the green materials if the mixture isn’t right. It’s hard to tell if there aren’t enough microbes but you can add compost starter or inoculant – more is not better. Compost Bin

Animal Manure and Soil

Now sprinkle about half a shovelful of manure on top. If you don’t want to use manure, use soil out of your garden. This last item is what makes the pile “cook”. Keep adding layers like this until the pen or composter is full. By the next day or so the pile will heat up to about 140-160 degrees. When the pile starts to cool down (about ten days to two weeks) take the composter apart and turn the pile to aerate it. Be sure to wet it about every six inches or so. After you turn it three times (about 30 to 40 days) you’ll have finished compost. You can use compost anywhere you have plants in soil … inside or outside the house. It doesn’t have much smell - it should be like a freshly plowed field – an earthy smell. Put a couple of tablespoons in small pots and maybe a half-cup in the larger pots. Outside, put compost in all your gardens and beds. A couple of inches would be great if you have that much. Turning it into the soil will make it work better than leaving it on the top. Putting compost on your yard will do wonders for the grass. About a half-inch is plenty … any more could smother the grass. Spread it all over and water so that it goes through the grass to the soil. This feeds the roots and helps keep down thatch. Thatch is that thick built-up layer of dead grass that doesn’t allow air and water to get to the roots. 14

259 brantley’s bistro features farm to table cuisine PROUD TO BE A GO TEXAN RESTAURANT

THIS COMING AUGUST BONNIE AND JOSEPH BRANTLEY WILL CELEBRATE SIX YEARS IN THEIR BOERNE RESTAURANT, BRANTLEY’S BISTRO. Located in the historic Olde Towne Boerne complex on Main Street, they are extremely proud to be a Go Texan Restaurant. They are known as “farm-to-table” sourcing local products and supporting local farmers and ranchers. “That and serving small wild game like Axis deer causes a smaller carbon footprint and therefore considered sustainable,” explains Joseph. As the Master Chef of Brantley’s Bistro, Joseph uses local oak wood to smoke the meats. The canola oil he uses is 100% recycled and repurposed for home fuel for houses in the North. The Bistro serves only 100% Texas wines and beer. They use paper straws and the take-away containers are made of corn fiber. “None of the organic materials make it to the trash can; we compost the scraps at home and share with others.”

When the Brantleys took over that portion of the building, they did a lot of work insulating and caulking the building to be more energy-efficient. They have the two rooms for the bistro and expanded the kitchen with a back dish room and a walk-in cooler. Behind the building is the smokehouse and the old stone building was the location of the first bakery in Boerne. A couple owned the two buildings where the Mrs. ran the bakery and the

Mr. ran the saloon where the Bistro’s bar is located now. Joseph is a second generation chef who grew up in the food industry. His mother was classically trained and is now a private chef in Boerne. In California he learned brick oven cooking and studied with a California chef. Joseph was a sous chef at Welfare Café when he first got started. Then he and Chris Havens opened a restaurant at Riven Rock Ranch, a Resort B&B in Comfort. They gained some notoriety from that. Joseph and Bonnie decided they wanted their own place and Brantley’s Bistro is it. The food is excellent and the service is great. They serve fresh salads, made-fromscratch soups, creative sandwiches, and items off the grill for lunch. The dinner menu includes Texas wild game, fresh fish and seafood specials. And don't forget

They live in Comfort. The Bistro is open on Tuesdays through Saturdays for lunch from 11:00 a.m. until 3:00 p.m. They serve dinner from 5:00 until 9:00 p.m. on Fridays and Saturdays. calcium and magnesium (hardness) ions are removed through an ionic exchange process, so only soft water passes through to your home. Once the resin bed fills up with hardness ions, it must be regenerated (cleaned). Salt or potassium are used in the regeneration process to restore the resin to a “clean” state so the ion exchange process can begin again. Water quality has become a great concern in today’s environment, especially in the wake of the water crisis experienced in Flint, MI that received national attention. Although our municipal water is sanitized with chlorine to provide safe drinking water, the levels of chlorine can vary greatly with some areas having very high levels of chlorine which not only tastes bad but can be harmful to your health. Water quality is further degraded by the presence of pharmaceuticals in our water supplies, industrial and biological contamination and an aging water distribution infrastructure. Once thought pristine, well water is also a source of concern since much of the groundwater has been polluted by a variety of contaminants. Bottled water has become a popular alternative, but it’s expensive and creates a huge amount of waste that’s hard on our environment. Knippa’s solution to poor quality, drinking water, “The Kinetico K5 Reverse Osmosis

Our reverse osmosis can be customized with additional filters to tackle the concerns in your specific area.” Water is becoming a scarce resource in the Hill Country. THIS BOERNE LIFESTYLE WRITER HAD THE GREATEST PLEASURE LISTENING TO A LOCAL FATHER/DAUGHTER DUO SING THEIR OWN RENDITION OF A CLASSIC ROCK SONG. Vocalist Laura Srp was accompanied by her father Phil Green on guitar. Music is a huge part of their lives. The duo began singing at the First Baptist Church in Boerne about fifteen years ago. Phil is the interim music worship leader and they are part of contemporary worship band which includes Laura’s brother

worth of music together,” exclaimed Laura. They used the inspiration of The Civil Wars, a Grammy-winning American musical duo composed of Joy Williams and John Paul White. The duo also performed at a Valentine’s Day Benefit at the Dog and Pony Grill this year. It benefited the Leukemia & Lymphoma Society Students of the Year. Laura explains that, “Singing like this was on my bucket list. It was special for us to play together. With my father next to me, I felt more secure about singing as a duo in public.” Phil is the CEO of Frost Bank and grew up in Victoria, Texas. Laura remembers listening to him and two of his brothers singing at Christmas and believes that’s where her love of music came from. Phil and his wife Sandy lived in San Antonio for 22 years and moved to Boerne in 1997. The family includes Laura and five other children. Phil recorded an album of Contemporary Christian music in Nashville called “Let Me Be Faithful”. Laura sang back-up vocals on a couple of the tunes. It was released in 2011 and described as “ranges from driving rock to sensitive ballads. The thoughtful song writing is well-crafted and will lead you in praise, worship, and a call to faithfulness.” Laura got involved in music when the family moved to Boerne and sang in school with some accompaniment by her father. She attended the University of Texas/Austin and would come home to sing with the church group. Laura’s children are musically inclined as well as being athletes. Eli is 12 and plays the guitar; Cullen is 10 and is expected to become serious about music in order to compete with his older brother; Beckett is 7; Ivy is 4 and Olive is 21 months. Laura and Phil are expected to return to Dog and Pony Grill to perform in the Spring and the Summer. Sandy is playing the role of publicist and is researching other venues and events.
