We spent the last few months scouring the streets in search of delicious stories, and we found more than enough material to fill these pages.

While we don’t like to play favorites, The Foodie Issue is near and dear to our hearts. After all, food is not only nourishing (and delicious) but it also brings people together—whether it’s a special anniversary dinner, a much-needed lunch break with coworkers, a friend’s birthday party or even a casual weeknight meal with family. Food is often considered one of life’s great pleasures.

We spoke with former NFL player and Chandler resident L.T. Smith, who is now head pastry chef at Tempe Public Market Café, as well as Ryan Swanson, the head chef at Kai, who both shared their career stories with us. Plus, sommelier Andrew

Lakes Fire Corps is recruiting new volunteers. CAP includes a two-member team that is dispatched to medical calls, fires, motor vehicle accidents and other emergencies. While firefighters and medical personnel tend to the ill or injured, the CAP teams work with other family members, friends or neighbors who need assistance. At the time, the Serranos’ once-thriving clothing department store business was losing the battle to a new crop of malls popping up throughout the Valley. The popular family with deep Chandler roots and a strong history of community involvement looked for a new venture it could put its well-respected name on.

“It was somewhat survival. The clothing business’s days were numbered. The writing was on the wall and it wasn’t going to be long,” Ric recalls of the decision to transition into the restaurant industry.

That move would sprout a family business that thrived over decades amidst competition, changing consumer preferences and countless other factors beyond the Serranos’ control. This year, the mom-and-pop restaurant started by Ric’s parents Ernie and Eva, and which is now run by their children, celebrates its 40th anniversary.

But this uncommon feat is not the only one the family celebrates.

More than a century ago, Albert and Luis migrated from Sonora, Mexico, to Tucson. The brothers

made their way north and settled in a little farming community called Chandler and opened their Popular Store. They started with $10,000 worth of inventory and sold dry goods, clothing, and Boy Scouts and P.E. uniforms to a community of about 1,000, mostly comprised of farming families.

At its peak, Serrano’s Department Stores had five locations throughout the Valley. The second

generation was now fully at the helm and ready to pass it on to the third.

When it was time to foray into a new industry, they relied on Eva’s culinary skills and family recipes from

A LOCAL EXPERT SHARES SOME OF HIS FAVORITE SPARKLING WINES

#2 ANDREW MCCREERY, CS CSW, KNOWS A GOOD GLASS OF WINE. “There’s so much in a glass of wine,” he shares. “There’s the history, who bottled it, who made it, where it’s from… so many things can be expressed in a single glass.”

While champagne and sparkling wine are used almost interchangeably, Champagne technically only comes from the Champagne region of France. Sparkling wine is more of an umbrella term covering a variety of bubbly wines.

“Sparkling wine is a type of wine that basically has bubbles,” Andrew explains. “How those bubbles are made, what they are made from, and where that takes place determines whether you have a $4 bottle of Cold Duck or $200 bottle of Premier Cru Champagne.”

Andrew explains that the original and natural method of sparkling wine production involves two fermentations, with the second taking place in the same bottle that you would purchase.

“Fermentation creates the alcohol in the wine and CO2 is a by-product,” he notes. “With the second fermentation taking place in the closed bottle, the CO2 has nowhere to go but into the wine itself.”

A sommelier (certified wine expert) for more than 20 years, experiences with wine encompass some of Andrew’s earliest memories—from dinners as a child to time in the Army when he was stationed in Germany’s most popular wine growing region.

In college, he worked at some of Tucson’s finest resorts while attending the University of Arizona, and—among other industry positions—enjoyed a 23-plus year career as the vice president of fine wines for a distributor. He now works on the sales side as Director of On Premise Key Accounts with Hensley Beverage Company. His wife, Denise, is the owner of d’Vine Gourmet and he helps with the wine selections there.

Andrew shares some of his favorite sparkling wines, all of which are available locally at d’Vine Gourmet (DVineGourmet.com) and other retailers.

Ryan would know as his career at Kai, which is the only five-star restaurant in Arizona, has seen fast growth— including being promoted from the sous chef position and studying under former head chef Joshua Johnson.

Among his many responsibilities is creating new dishes.

“I always ask myself a few questions when I create new dishes for the restaurant,” he shares. “Does it make sense? Does it look great? Does it taste great? I am creating a menu that has to tell a story of the Pima and Maricopa people through the food, so I have to make sure everything that goes on the menu does that in some way.”

While all of the dishes are special to him, his current favorite dish is the Lamb Shoulder with Cheimeth.

“It’s simple, delicious and elegant,” he says. “It makes me proud to see the dish go out into the dining room. A great representing dish for Kai.” For those who have never been to Kai Restaurant, Ryan is proud to share how the restaurant is a local must-try.

“Getting to experience the sunset over the Komatke Mountains is one of the most breathtaking views. ASK L.T. SMITH WHETHER HIS CURRENT JOB AS THE HEAD PASTRY CHEF AT TEMPE PUBLIC MARKET CAFÉ SHARES SIMILARITIES WITH HIS FORMER LIFE AS A FOOTBALL PLAYER AND HE ENTHUSIASTICALLY SPOUTS OFF A LIST. When he walks into the kitchen, it’s like walking onto the field. It’s the venue where magic happens by a team of trained professionals. The cultural aspect is what they both share.

“When you’re running service, you’re basically running plays. When they’re calling out (orders), it’s the same as a quarterback calling a play… You’re in an arena, you’ve practiced, and now you’re doing it,” the former wide receiver says.

“But every service is game time so there’s really no practice time.”

For the last five months, L.T. has had his game face on at the revamped Tempe Public Market Café.

L.T., who was the chef at the Café’s sister restaurant Ghost Ranch, was asked to helm the pasty division at Market Café when it reopened after renovations

earlier this year. The restaurant features a larger pastry case to showcase L.T. and his team’s wares.

L.T. was trained at the Arizona Culinary Institute and started his career doing savory dishes but was always interested in the sweet side of the craft. Now, he is embracing the opportunity to flex his creative culinary muscles through various cakes and cookies with design and flavor. The lineup includes maracons, cakes, muffins and breads, along with vegan and gluten-free options.

L.T.’s playful side is exhibited in recipes for treats like cookies with a kick, thanks to a pinch of chile in the mix.

“My style is rustic elegance and occasionally whimsical,” he says.

A native of Painesville, a city about 30 miles northeast of Cleveland, Ohio, L.T. was a standout high school football player and started cooking meals that emphasized sports nutrition and enabled his body for the competition he faced. He was awarded a football scholarship to the University of Akron. He continued to cook for himself and during the holidays, his home was the gathering spot for friends.

“That’s when I started to enjoy hosting and the aspect of feeding others and connecting that way through food,” he recalls.

L.T. played briefly for the Indianapolis Colts. He departed the team and moved to Arizona, moving near Chandler Fashion Center, a locale with easy access to work

and Arizona State University, where his sister who lives with him goes to school.

“I enjoy it quite a bit. There’s plenty of stuff to do and [it’s] close to all of the places you want to be,” he says. “It’s a really good community.”

If the thought of an athlete accustomed to the physicality of a tough sport trading in his helmet and pads for a piping bag and buttercream makes you pause, you’re not alone.

“People are sometimes like, ‘Oh yeah, you’re a football guy and now you’re doing some dainty pastry stuff?’” he says while laughing. “But I enjoy the art and creative outlet I have through pastry. Cooking gave me a new passion when I was done with football.”

But L.T., who aims to one day have his own restaurant or bakery, can’t help but explore the commonalities between his two seemingly polar opposite careers.

“I enjoy coming to work and being with my team every day. That sense of community and loving what you’re doing is a huge thing,” he says. “It’s also like I’m competing with other chefs. I see what they’re doing and try to up my game a little bit… (but) I guess I’m really competing with myself.”

On Sat., Nov. 2, Chandler Center for the Arts will be transformed into a Mardi Gras-themed masquerade ball for the Foundation’s signature event supporting nationally recognized health care programs at Chandler Regional and Mercy Gilbert Medical Centers.

Five years ago, Dancing with Dignity was created to enhance rehabilitation following a stroke by offering stroke camps to survivors and caregivers at a reduced cost. The event’s popularity has grown over the years, and more than $1 million has been raised to date. This money enables the Dignity Health Foundation-East Valley to expand its funding to help patients with other neurological issues such as Parkinson’s, brain tumors, head injuries and more.

This includes the creation of a Brain Tumor Group and Camp and the renovation of an outpatient rehabilitation center.

Guests will enjoy cocktails and Louisiana-inspired Creole cuisine followed by a “Dancing with the Stars”-style show featuring professional ballroom dancers from the Arizona Ballroom Champions who will pair up with volunteers. The volunteers who dance in this event perform on stage before a lively audience and panel of celebrity judges as an opportunity to showcase their personal stories on why they are fundraising to support the hospitals.

To add to the fun, first responders from Chandler and Gilbert Police and Fire departments will be bringing their own teams to compete for the “traveling trophy” in a battle of the cities/departments dance-off.
