Town of Flower Mounds Hosts Twin Coves Park Open House On Feb. 29, the Town of Flower Mound held an Open House at Twin Coves Park where residents toured fully-furnished cabins, and participated in activities such as making individual trail mix and bird feeders. MANY ARE INTIMIDATED TO BEGIN COMPOSTING AT HOME, BUT STATE OF TEXAS MASTER COMPOSTER ERIN HOFFER SAYS COMPOSTING IS SIMPLY ANOTHER FORM OF RECYCLING. “When we compost at home, we replicate nature’s cycle by taking what many people consider a waste product and turning it into a nutrient-rich soil amendment,” she says. “Compost-rich soil retains water and helps us to turn our landscapes into passive rainwater capture systems.” Erin says compost also helps foster healthy plants. “Healthy plants start with healthy soil, and healthy soil contains lots of compost that we can create ourselves.” Erin suggests individuals begin with composting yard waste before moving to food waste, which requires much more knowledge and education.

Feed your soil and feed your plants a healthy dose of compost every year. Apply 1 to 2 inches of finished compost to all of your landscape every spring — trees, shrubs, turf, perennials and even container plants.

Support “global worming” by starting an outdoor, in-ground vermicomposting bin. “Worm poop is a powerful soil builder,” Erin says.

First brew, then strew your used coffee grounds around landscape plants. They are a free nitrogen source for the plants, add organic matter to the soil, and the garden worms will appreciate the grit.

Remember to mow-and-go. Use your mower to chop grass clippings and dried leaves into tiny pieces that will break down right on top of your lawn and feed your soil.

START WITH GRASS AND LEAF CYCLING Erin says the most energy-efficient forms of composting are grass and leaf cycling, which means simply running the lawnmower over grass and leaves and allowing the clippings to decompose naturally. “Fresh clippings contain water and nitrogen, which, when released through decomposition, nourish the lawn,” she says. CREATE A HABITAT FOR MICROBES “When I talk with kids, we talk about creating a habitat for microbes who are our gardening partners and who will do all of the work breaking down the materials – but only if we build them a home that meets their needs.” To put it simply, Erin says she teaches children, “brown, green, blue, white – that’s the way to build it right.” Mix brown carbon sources, like dried leaves, and green nitrogen sources, like fresh grass clippings, into blue water and white air. Turn the pile weekly for four weeks and then twice monthly after that. “By the time eight to 12 weeks have elapsed, there should be a fair amount of dark, rich, crumbly material ready for harvest.” Once individuals have perfected their yard composting skills, they may wish to move to food composting. The State of Texas Master Composter program offers training courses for individuals seeking to learn more about composting. Be on the lookout for upcoming courses in and around the area. 16

The Trash Off & Spring Festival & Recycling event will be held Saturday, April 4, at Flower Mound High School. The event includes a community cleanup, followed by a free spring festival with interactive environmental education stations, children’s activities and recycling stations. KFMB holds Monthly Cleanups from 9:30-11:30 a.m. each third Saturday of the month. The monthly cleanups include trash clearing and beautification projects, such as planting, mulching or participating in

the Lend A Hand project. The Lend A Hand project provides help to community members in need. Through Lend A Hand, volunteers have done yard work, replaced siding, repaired and replaced fencing, painted and performed minor home repairs. In addition, KFMB offers its Adopt-A-Spot program for individuals, families, groups, businesses or organizations. The Adopt-A-Spot program encourages residents to agree to keep a designated spot in the community cleared of litter and/or provide beautification. “We currently have 51 spots in town adopted but have more that are available,” Marilyn says. KFMB always is looking for volunteers for environmental projects, as well as administrative work, such as board members, grant writers and website and social media helpers. The organization also thrives on the generosity of its sponsors. “We really need sponsors for our two big events, for our Lend-AHand and to be an overall sponsor for all that we do,” Marilyn says. Cara Price, creator of The Nourished Body and Soul blog, shares some savory vegetable dishes to help make Meatless Monday a favorite meal of the week.

carrot ginger soup INGREDIENTS + 3 Tablespoons olive oil + 2 Tablespoons ghee + 1 yellow onion, roughly chopped + 2 pounds carrots, peeled & roughly chopped + 3 cloves garlic, roughly chopped + 1-inch piece of ginger, peeled & roughly chopped + 4 cups organic vegetable broth + 1 cup full-fat coconut milk + 2 teaspoons salt + 1 teaspoon pepper + 1/4 teaspoon allspice + 1/4 teaspoon turmeric DIRECTIONS In an 8-quart stock pan, place all ingredients except coconut milk. Give it all a quick stir to mix it up. Heat over medium high until it comes to a boil. As soon as it boils, put a lid on it and turn the soup down to low. Cover and simmer for one hour. Remove lid, add in coconut milk. Use an immersion blender to puree the soup.* Serve hot. *You can also use a blender, but remember that blending hot liquids can be dangerous if not done properly. If using a blender, remove liquid from heat for 10 minutes, transfer to blender and fill no more than half way. Leave the corner of the lid open to allow steam to escape and cover with a kitchen towel. Pulse a few times and then process on high until smooth. Work in batches until completely done. 26

roasted brussels sprouts & apples INGREDIENTS + 16 ounces Brussels sprouts, trimmed & cut into thirds + 1 large red apple, peeled & diced into 1/2 inch pieces + 1/2 cup green onions, chopped + 1/4 cup olive oil + 1Â teaspoon salt + 1/2 teaspoon pepper + 1/4 teaspoon nutmeg DIRECTIONS Preheat the oven to 425 degrees. Place Brussels sprouts, apple pieces and green onion into a 9x12 glass baking dish. Pour olive oil into pan and stir to coat. Sprinkle salt, pepper and nutmeg over the mixture and stir again. Place in the oven for 10 minutes, then stir veggies. Then roast for another 10-15 minutes until sprouts have an even browning. Serve immediately.

Pulse until chopped into small pieces that are the size of rice. In a large wok pan or flat bottomed skillet, heat coconut oil and sesame oil over medium-high heat. Sauté cauliflower for about three minutes and then sprinkle salt and garam masala over it. Continue cooking five to seven more minutes, stirring often.
