WINTER IS HERE, AND WITH IT COMES A PLETHORA OF SPORTS, ACTIVITIES AND FUN THINGS TO DO. And  while Vegas doesn’t have anything too extreme, like curling or ice fishing, our winter sports are nothing to be scoffed at. A popular favorite for the majority of residents is skiing, and a favorite place is Brian Head ski resort. A little bit of a farther drive than our Mount Charleston, this snowy peak is orientated at family-fueled fun for all ages. Located at around 9,700-foot elevation, this resorts spreads over two mountains and is quite the beast. Don’t let that intimidate you, though; with 71 different runs  and eight different ski lifts, this resort has something for every skill level, whether you’ve been shredding powder for years or if you’ve never even touched a set of skis. Speaking of never touching skis, Brian Head also offers beginners classes to show you the ropes necessary out on the mountain. And, to make sure you don’t have to worry about anything other than skiing, Brian Head’s housing is top-notch. Whether you want a hotel, lodge, condo or yurt, Brian Head has you covered. Skiing certainly isn’t the only thing you can do at Brian Head, though. Snowboarding is another obvious one, but snowmobiling, mountain biking  and scenic chairlifts are all available options. Starting off this country-wide  tour, we head down to the iconic city of Sydney. And what tour of Sydney would be complete without the Sydney  Opera House that has graced many a movie? The Sydney Opera house is quite a sight to behold.  An iconic piece of 20th-century architecture, this house is a must-visit when in Sydney. It hosts more than 40 performances a week, and you can go above the typical experience and get a two-hour backstage pass involving a tour and a meal in the green room. However, the trip for this region of Australia doesn’t end with just one city. The New South Wales region, where Sydney is located, is no slouch on its own. NSW also is the proud home of  the Southern Hemisphere’s first and only Dark Sky Park. Clear, dark skies have gained this park  international recognition for an amazing nocturnal ambiance. It is located in the Warrumbungle region in Central New South Wales. Stargazers are encouraged to take a guided tour, peek through Australia’s largest optical telescope, or pitch a tent under the starry night. Don’t get too comfortable in New South Wales, though! We are

just about ready to head out to the Northern Territory. Tropical and lush in some places and red and rocky in others, the Northern Territory is like nowhere else in Australia. From Uluru to Arnhem Land, the Northern Territory’s attractions are as diverse as its landscapes. Here you will find ancient Aboriginal rock art galleries, abundant and unique wildlife, rare South Sea pearls, and world-famous natural attractions. Choosing headliners from this region has got to be the hardest for any area in Australia. Sunset at Uluru is a must-see. Standing 1,150 feet high, ringed by ghost gum trees and waterholes, Uluru is a giant sandstone rock and a spiritual meeting place for the local Aboriginal Anangu people. Uluru is at its most captivating at sunset when the rock’s surface shifts through a gamut of colors. Spend an afternoon walking the 6.6-mile base trail before relaxing at one of the two designated sunset viewing areas. About 70 miles from Darwin, Litchfield National Park’s Buley Rockhole is also a necessity for anyone in the area. It is a series of descending, connected swimming pools with clear waters. Secure a small site all to yourself and lounge about as the water cascades from one pool to the next. From here, continue to the park’s signature swimming hubs, Wangi and Florence Falls. Next, there’s Queensland, a  sunkissed coast  and lush tropical forest. It is a far cry from the rest of the Australian desert and the perfect way to wrap up a long vacation to Australia. The most iconic setting in Queensland is inarguably the Great Barrier Reef. Often called the living masterpiece, the Great Barrier Reef stretches for more than 1,200 miles along the Queensland coastline. There are hundreds of tours and experiences available along the Great Barrier Reef coastline, most notably from the towns of Cairns, Port Douglas, Townsville, Airlie Beach, Hamilton Island, Seventeen Seventy, Bundaberg, Gladstone  and Mackay. But whether you snorkel, scuba dive, fly, motor or sail over it, you simply must experience the colors and textures of this natural wonder. 14

Another incredible experience is the Daintree Rainforest. The Daintree, a twohour drive north of Cairns, is truly unique. The world’s oldest tropical rainforest might look a little familiar because it was the main inspiration as well as a shooting location for the movie Avatar. Stand in awe under the branches of the 600-million-year-old Zamia Fern, which has an underground trunk system evolved in defense against dinosaurs. Cruise the Daintree River, where you might spot a croc waiting in the mangroves or glimpse a turtle in the clear, sparkling streams below. Stay at one of the luxury eco-lodges nestled in the rainforest such as Silky Oaks Lodge or the lovely beach village of Port Douglas nearby. The Whitsunday Islands comprise  74 tropical islands just off the Queensland coast next to the Great Barrier Reef. THANKSGIVING DESSERT IDEAS

INGREDIENTS EASY SINGLE-SERVING DESSERTS

For the Crust: + 1 cup plus 2 tablespoons all-purpose flour, plus more for dusting + 4 tablespoons confectioners' sugar + 1/2 teaspoon salt + 6 tablespoons cold unsalted butter, cut into small pieces + 2–3 tablespoons cold water

For the Filling: + 1/4 cup granulated sugar + 1 tablespoon cornstarch + 1 tablespoon fresh lime juice + 1 teaspoon freshly grated lime zest

METHOD 1. In a food processor, pulse flour, confectioners' sugar and a pinch of salt to combine. Add butter  and process until the mixture resembles coarse meal, about 10 seconds. With processor running, add cold water  1 tablespoon at a time until a dough forms (do not process more than 20 seconds). 2. Cut dough in half; shape each half into a log. Wrap in plastic wrap and refrigerate at least 30 minutes or up to 1 day. Cut 1 log into 12 even pieces. On a lightly floured work surface, flatten each piece into a 2-inch round. Preheat oven to 400 F. In a medium bowl, stir together granulated sugar, cornstarch, lime juice and zest, and a pinch of salt. Add berries; toss to coat. Fill shells with berry mixture. Bake until crusts are brown and filling is bubbling, about 25 minutes. Let cool slightly in tins. Run a knife around tarts; remove from tins. Let cool completely on rack. 24

Blueberry Tart


SEMI-HOMEMADE FRUIT AND NUT BROWNIES INGREDIENTS + 1 10-ounce jar maraschino cherries with stems, drained and 1/2 cup juice reserved + 1/2 cup sliced almonds + 1 box Betty Crocker dark chocolate premium brownie mix + 1/3 cup vegetable oil + 1 teaspoon almond extract, if desired + 2 eggs + Additional sliced almonds, if desired

METHOD 1. Heat oven to 350 F (325 F for dark or nonstick pan). Grease bottom only of 9-inch square pan with cooking spray or shortening. Set 12 cherries aside for garnish. Remove stems and coarsely chop remaining cherries; set aside. 2. Stir  almonds and chopped cherries together; set aside. 3. In a large bowl, stir brownie mix, chocolate syrup pouch, oil, reserved 1/2 cup cherry juice, almond extract and eggs with spoon until blended. Spread half the batter in pan. Spoon nut and cherry mixture evenly over batter. Spoon remaining half of batter over nut mixture to cover. 4. Bake brownies 45–49 minutes or until Semi-Homemade Fruit and Nut Brownie

GUILTLESS STRAWBERRY LAYERED DESSERT

For the Strawberry Compote: INGREDIENTS If fresh strawberries are available, use those. In winter sometimes it's hard to find good berries. So I make a compote out of frozen berries and use that instead for the topper.

+ 2 cups frozen strawberries + 3 tablespoons water + 1/4 cup sugar + 2 teaspoons lemon juice

METHOD In a small saucepan, combine 1 cup of strawberries, water, sugar and lemon juice. Cook over a medium heat for about 10 minutes. Add the rest of the strawberries and cook for 8 minutes more, stirring frequently. This is also my recipe for refrigerator berry jam (you can use any combination of berries). I just cook off the liquid more. Keep an eagle eye your jam as you stir. It goes from perfect to burnt fast. You must take it off the stove and transfer it to a heatproof dish.

For the Chia Pudding: INGREDIENTS + 1 13 1/2-ounce can full-fat coconut milk + 2 tablespoons raw honey + 1 teaspoon vanilla bean paste + 1/4 cup chia seeds

METHOD In a small bowl, add coconut milk, cow's milk or almond milk. Flavor with vanilla bean paste or vanilla extract and honey. Mix together. Add chia seeds and whisk to incorporate. Cover with plastic wrap and place in the refrigerator for 4 hours.

For the Crust: I personally like a good granola. I have also used a mix of pecans and almonds chopped for the base as well. Once your compote is cooled, you can start building your layers. 26
