I DEVELOPED THIS RECIPE FOR AN OUTDOOR PARTY HOSTED IN HONOR OF MICHELLE DELACROIX, THE OFFICIAL ARTIST FOR THE 1996 OLYMPICS. It was part of a Paris to Provence menu. I wanted to be able to serve shrimp, but it is typically not very attractive when it starts to get warm and ‘fishy.’ The acid killed all the surface bacteria which kept it very fresh and appealing! It really did not even need any sauce. It could be served ice cold and be perfectly refreshing and delicious……effortlessly. I like this shrimp with just a sprinkle of sea salt icy cold.

Summer Citrus Shrimp INGREDIENTS + 1 pound deveined peeled cooked shrimp + 2 cups pasteurized orange juice

DIRECTIONS Marinate the shrimp in the orange juice in a bowl in the refrigerator for up to 8 hours; do not marinate for more than 8 hours or the shrimp will be tough. The acids in the juice helps to sterilize the surface and the sweetness is wonderful. Drain and discard the juice. Serves 4.

VALLEY RESORT AND SPA IS NESTLED IN THE NORTH GEORGIA MOUNTAINS IS QUITE THE HIDDEN GEM. With a total of 134 rooms, one can choose to stay in the main lodge, which is where we stayed, or in one of the private cottages tucked back in the woods. This spacious property is home to an 18-hole championship golf course and the Equani Spa, a 7500 square foot zen den specializing in body treatments, facials, massages and healing rituals. Also on the property are The Stables, offering one and two hour guided trail rides for every skill level. I will get back to this in a bit, as The Stables offered one of our favorite experiences. Twinkling holiday lights and tasteful decor welcomed us upon arrival in December, and we were greeted by a cheerful doorman who kindly opened the giant wooden doors to the main lobby and lodge, escorting us inside. From the outside the main property is unimposing, however, walking into the lodge is an entirely different experience. The main lobby is expansive with a cathedral ceiling lined with beautiful wooden beams. The room is anchored by a massive stone fireplace that draws you in immediately. This large area is filled with comfortable sofas and chairs, game tables offering panoramic views from the large windows that are opposite possibly one of the largest working fireplaces I’ve ever seen. Before heading to our room, we couldn’t help but notice the delightful holiday decor throughout the main lobby, a trademark of

the resort during the December holiday season. Touring the property, we found a large display of gingerbread houses decorated by guests who had stayed there during the holidays. We explored the workout facility, the mesmerizing indoor/ outdoor pool and the long hallway sparkling with holiday trees that leads to ballrooms and conference rooms. What a fabulous place this would be to hold a wedding, family reunion, a team building event or business conference. Arriving at our spacious suite, we were surprised with a welcome platter of cheese, crackers, fruit and sparking water, which was just what we needed after our adventurous drive through the mountains! After a snack and a quick change we were off to a wonderful meal in The Dining Room. The property also has a bar and grill for those wanting a more casual meal or just to have a drink and watch sports. The Dining Room is spacious and offers stunning mountain views, especially nice if you can time your reservations just before sunset. Our meals were presented beautifully and we enjoyed a delicious meal of ahi tuna, encrusted mountain trout and a fantastic salad bar. We woke to perfect mountain weather, sunny and crisp, but not too cold for a horseback ride! The Brasstown Stables were a quick two-minute drive from the main property where we met Stable manager, Jerry, who has been at the resort for 15 years. The Stable runs 365 days a year and each trail ride has guided rides up to six riders. The 3.5-mile trail we followed was along the backside of Swanson Mountain and took an hour. We bounced along over little creeks, wooden bridges, up wooded hills, stopping to let the horses drink water from a trough. When it was time for the horses to start walking again, you’d hear Jerry call out a loud, “yeeeehaaa!” The horses were very well behaved and didn’t require a skilled rider, as they were used to following the guide and the horse in front of them while on the trail. The hour flew by, and I could have easily ridden another hour. We were told they have a saying at the Stables that this is a great place for ”first timers, never havers and always wanted to-ers”! Our last morning before leaving we ventured out for a truly enjoyable hike passing babbling brooks and keeping our eyes open for wildlife. For more enthusiastic hikers, the resort has a 2.5-mile loop and a 6.5-mile marked trail. The warm welcome, rustic ambiance throughout the resort and the wide array of mountain-chic amenities, Brasstown Valley Resort and Spa has it all. STUDENT LEADERSHIP JOHNS CREEK WON THE SECRETARY OF STATE AMBASSADORS STATE DISTRICT 6 TITLE FOR THE THIRD CONSECUTIVE YEAR AND CAME IN SECOND OVERALL IN THE STATEWIDE COMPETITION. The competition comprised nearly 200 teams from throughout Georgia beginning in September, 2019. This was the third straight District 6 win by the Secretary of State Ambassadors representing Student Leadership Johns Creek. The program has won the statewide competition two of the past three years. The Secretary of State Ambassadors Program is a leadership training program for high school students in the 10th through 12th grades that encourages civic participation and voter registration. Students who serve as Ambassadors earn points for 28

promoting civic engagement, voter registration and volunteerism. Student Leadership Johns Creek remarkably earned the second most points this year falling short of Brookwood High School.These nine students conducted many civic activities including hosting several city council candidate debates, voter registration drives, working at polling places during the election as well at the first Fulton County Superior Court Judges forum that was widely hailed as an amazing event. “On behalf of the Fulton County Superior Court Judges”, said Superior Court Judge Rachelle Carnesale, “I would like to congratulate Student Leadership Johns Creek on their outstanding achievements this year. Given the COVID-19 crisis, the Judges Forum organized and executed by these students turned out to be one of our few opportunities to speak with Fulton County citizens in person. The Forum was very well organized and was a rewarding experience for all the participating judges!” “Being on the path to a career in public policy, the Secretary of State Ambassadors program opened doors for my teammates and myself that no other initiative could.” said Ann Philip, one of the nine student Ambassadors from Northview High School. “From moderating city council debates and a judges forum to holding voter registration drives and town hall meet and greets, the reward in being part of this program is most definitely unmatched as it teaches you a great deal about local politics but even more so about the increased need for all constituents to fulfill their civic duty and obligation.” The nine Ambassadors are students at Northview, Chattahoochee, Centennial and Johns Creek high schools (pictured above): Ann Philip, Yasmin Shalim, Tina Dong, Kian Kermani, Omeed Kalan, Lydia Grace Logan, Olivia Shaffer, Caelyn D’Souza, and Jayla Melvin. WHAT ARE YOUR FAVORITE HOLES ON THE 9-HOLE COURSE AND WHY WILL THEY APPEAL TO BEGINNERS? Number 3 is my favorite hole on the par 3 course. It is around 100 yards in length with a well-protected green on all sides. There is a pond and bunker on the right and woods behind the green which offer a very nice view. The par 3 course is a great place for beginners and families to enjoy the game without the pressures that comes with a full championship course. It’s not unusual to see fathers and mothers with their children and grandparents with their grandchildren. It's truly a family oriented place to enjoy golf with the entire family. WHICH HOLE HAS THE MOST BEAUTIFUL VIEW? Depending on the time of day or year this one can change for me. However, the first one that comes to mind is the tee box on #4. From that spot you can clearly see many holes on the front 9 and when the sunlight reflects off the pond it’s a very pretty spot. The other spot is the tee shot landing area on hole #1 as it overlooks several holes and looks out toward the Chattahoochee River. CAN GOLFERS BOOK TEE TIMES ONLINE? Yes.
