Your body is introduced to it in very small amounts and learns to defend against it.” Carey advocates for the often misunderstood honeybee and their vital role in the environment. Almonds, apples, and cucumbers are just a few of the foods that depend on pollination to grow. Pollution and development threaten the health of our honeybee population by making it more difficult for them to find food. There are simple actions anyone can take to protect honeybees, such as avoiding weed killers and other chemicals. Carey wants people to understand that honeybees need not be feared. When someone is stung, it is usually by a wasp type insect. In spite of their stripes, yellow jackets are actually wasps, not bees. In many ways, both our health and the planet's health are suffering, and a plant-centric diet is one way to begin to address both issues. Small steps to eat more plants and reduce overall animal product intake can have a large positive impact on you and your health. There’s also evidence that the current food system is not optimally sustainable for a variety of reasons. A report by the United Nations on climate change (Aug 2019) suggests that reducing reliance on animal products, reducing food waste, and restoring our soil and water systems will make the largest positive impact on the future of our planet. The decisions you make regarding your food intake do have an impact. By taking small steps to increase your intake of plant-based foods in your diet, you are not only helping yourself, but also your family and the planet. Here is a simple and nutritious recipe to try, even if you are just starting to think about adding more plants to your diet. It doesn’t have to be an all or nothing approach. Even one plant-based meal a day can make a difference.
INGREDIENTS + 2-15 oz cans of chick-peas, well-rinsed and drained + 1-2 tbsp of olive oil + 1 tbsp apple cider vinegar + 2 tbsp regular or vegetarian mayo + 1 cup diced celery + 1 cup diced red onion + 1 cup finely chopped fresh pineapple + 1 tsp garlic powder + 1 tsp onion salt + 1/2 tsp salt and pepper + 1 tsp dill seasoning + 6 Large tortillas + Spinach, for layering within the wrap + 3 avocados + Sliced tomato 28

Place the chickpeas in either a blender or food processor and pulse until the chickpeas are mostly broken down, or mash them in a bowl with a fork or potato masher. They should be chunky but starting to hold together. + Combine the chickpea mixture in a mixing bowl with everything except the spinach and avocado. Mix well. The mixture should resemble egg salad. Adjust the amount of mayo and lemon to taste or desired consistency. + To assemble the wraps, place a scoop of the chickpea mixture on each wrap then top with spinach, tomato, and avocado. Season with salt and pepper, if desired. AN AVID GARDENER, WORKOUT ENTHUSIAST AND MOM OF TWO, RESHMA SAKSENA MAINTAINS AN ORGANIC GARDEN IN HER BRIDGEWATER BACKYARD. When she’s not in her kitchen garden, she can be found volunteering at the community garden at Duke Farms and working with the non-profit charity Feeding Hands. Reshma was selected by Burpee Home Gardens as one of their 2020 Gardeners of the Year. As a recipient of this award, she will be sent some of their 2021 plant varieties to grow and experience first. Ironically, gardening didn’t always come so naturally to Reshma. She explains, “My friends would grow nice, juicy tomatoes but my plants would be ridden with pests and I’d barely produce anything.” Instead of giving up, Reshma grew determined. She watched YouTube videos and voraciously devoured gardening books and magazines. “I always tell everyone that the first year doing anything new is difficult. Persistence and sticking with it pays off,” says Reshma. The same goes for gardening. START SMALL Don’t overwhelm yourself by trying to grow too much too soon. The easiest crops to grow are lettuce, arugula, basil, and mint. Cherry tomatoes are great too! AMEND YOUR SOIL Make sure you add a few inches of compost on top of your soil every fall to make it porous and rich in nutrients. AVOID WATERING IN THE AFTERNOON Morning watering is best. Watering in the afternoon is futile as much of the water is lost in evaporation and roots are unable to grow long and deep. PROACTIVE PEST MANAGEMENT Regularly check your plants for pests and diseases, especially the underside of leaves. Keep neem oil and pure castile soap handy to manage pests organically. FLOWER POWER Plant flowers such as milkweed, marigolds, and lavender to bring in the pollinators. Bees, butterflies, and ladybugs are great for the ecosystem and help increase harvests by pollinating flowering fruits!
