The organization’s name grew out of a biblical proverb, Matthew 10:29, which states that God’s eye is on things we deem insignificant. The sparrow symbolizes vigilance, joy and creativity. Sparrows are small but extremely protective. Sparrows are constantly busy building nests, foraging for food and protecting their young. Sparrows serve as a reminder that every person has worth and that busy hands and minds promote happy, fulfilling lives. Look on Facebook for more information on this worthy nonprofit. MOORE FAITH MEDICAL CLINIC Moore Faith Medical Clinic was founded in 2015 by a group of friends who had worked two years to help the community recover from the tragic May 2013 tornado. They launched this free clinic after recognizing a need to help the uninsured and underserved in Moore. Over the past five years, the clinic, 224 S. Chestnut Ave., has seen more than 5,000 patients, provided $4 million in free prescription medications, and delivered over $6 million worth of care for those in the community. Moore Faith Medical Clinic’s mission is to share the love of Christ in a holistic and tangible way through faith-based free medical care. The organization focuses on loving and serving the community while recognizing the God-given dignity of each human life. “Since everyone at MFMC is a volunteer, 100% of donations go to provide free life-saving medicine and patient care,” states Dave Evans, executive director and founder. “In addition, MFMC is the only totally free medical clinic and pharmacy in Cleveland County.” For more information, call 759.0853. 16

What better way to start a patriotic celebration, than with a festive front porch? Your home’s entrance is the initial step of what’s to come on the inside. Decorating your front or side porch can be super simple and budgetary conscious with the addition of just a door wreath, banner or potted plant. If room allows, adding a bench, chair or stylish swing can create the perfect place to hang out with family, friends and neighbors to watch a beautiful Oklahoma sunset or kiddos playing in the neighborhood. VACATION CLOSE TO HOME THIS YEAR! For history lovers, the United States is abundant with tales and trials of the American pioneers who founded the great country in which we live. You can travel to some of the most amazing destinations across the United States on one of America’s great rivers. There are river cruise lines that offer scenic cruises filled with history and adventure on the Mississippi River, the Ohio River, the Cumberland River and, going west, the Columbia and Snake rivers. The first recorded use of the Mississippi River for cargo transportation was in 1705, when a load of 15,000 bear and deer hides were shipped to the Nouvelle Orleans long before the Louisiana Purchase. This started the Mississippi River trading and wetland expansion. Barges would take logs and building supplies from the Upper Mississippi down to New Orleans, returning with cotton, imported dishes and silver. Along with expensive material, spices and perfumes from Europe were transported via these waterways.

Do you remember all the novels and books about notorious riverboat gamblers? Today, the Mississippi River is the most popular river for year-round passenger river cruises, and the river is still a working commercial goods transportation system. IT WOULDN’T BE THE FOURTH OF JULY (OR INDEED ANY SUMMER OUTDOOR GET-TOGETHER) WITHOUT THE HEAVENLY SMELL AND TASTE OF MEAT STRAIGHT FROM THE OUTDOOR GRILL. Like any specialized cooking skills, there are definite do’s and don’ts that will make all the difference in your outdoor cooking experience. We’re fortunate to have the expert advice of Anthony Compagni, executive chef and owner of multiple Norman restaurants, including Benvenuti’s Ristorante, Volare and Press & Plow. GETTING FIRED UP Whether you’re using a gas grill or a traditional charcoal grill, most of the steps remain the same, starting with proper cleaning and heating of the grill before cooking, Compagni said. The grill must be heated enough to burn off any prior carbon, especially when using a charcoal grill. Grills should be heated to a temperature of about 500° F., which in a charcoal grill means the briquettes need to be completely white. Another pro tip, Compagni added, is to ensure that the grill is properly oiled before putting meat on to cook. “You should also use a thin layer of oil directly on fish or chicken, so the protein won’t stick.” Grapeseed oils and vegetable oils are the best choice. Another common mistake is to frequently move the meat around. Instead, cook it in place until being flipped, so that the surface has time to caramelize before you move it. REST IS ESSENTIAL What most people don’t realize is that items removed from the grill will continue cooking for several minutes afterward. This “carryover” frequently can cause steaks, burgers and other items to become overdone. “Always with protein you need to cook it slightly less than your desired doneness, because it will continue to cook after removal,” Compagni said.

INGREDIENTS + ¼ cup corn oil
+ 7 dried Chipotle chilies + 2 Ancho chilies + 12 garlic cloves + 2 Tbsp kosher salt
Chipotle Rub
+ 2 Tbsp Mexican oregano
DIRECTIONS Heat the oil and remove the stem and seeds from the chilies. Fry the dried chilies until puffy and brown but don’t burn or the rub will be bitter. Remove the chilies from the oil; cool completely. Add chilies to a spice grinder and grind to a fine powder. Combine ground chilies, garlic, oregano and salt in a food processor and process until it’s like a coarse salt. If too wet, dry in an oven at 150 degrees F. for 45 minutes. Use a generous amount on lamb, beef, chicken or pork and let marinate 6 hours or overnight grill until charred and medium rare for lamb.
