1-5: Dual Star Dance Academy held a dance recital benefitting The WillStrong Foundation on March 4 at the West Bowles Community Church. The dancers and broader community raised $18,000. She joined other high-achieving students in the philanthropic leadership development program, which grows professional skills such as entrepreneurship, marketing and project management, and then uses those skills to raise money for blood cancer treatment research. 5: Middle, Bob and Carrie Miner of Highlands Ranch were among friends celebrating Ayanna’s award and Bob’s recovery from Chronic Myelogenous Leukemia in 2005. 6-7: Park Meadows Retail Resort held an appreciation event for employees, vendors, retail and restaurant employees, first responders, housekeeping, valet, maintenance staff and other support staff to thank them for all they do.

Valentine's Day Knock Down Hunger

Striking Kitchen by Bell's Design Guide

Backpack Society held its second annual Knock Down Hunger Challenge on Feb. 14, partnering with six schools during their Valentine's Day parties. Schools collected cereal boxes to support Backpack Society's mission to provide hunger-free weekends for school children in need. Staff and students made a long domino chain of the cereal boxes and had fun knocking them down to "knock down hunger." 1,181 boxes of cereal were collected, with Timber Trail Elementary School collecting the most with 302 boxes.

Youth Sports Loses a Hero On Feb. 17, Warriors Youth Sports and the Arapahoe Youth League lost a family member, Mike Lupton. Mike was an integral part of the Warriors organization and the Arapahoe Youth League since 1993, when he began coaching football. He served as Vice President of Warriors Youth Sports and Director of Football. Synonymous with the Warriors and the AYL, Mike was known around Denver as the go-to person for everything youth sports. Mike’s institutional memory for everything Warriors is irreplaceable.

Performing Arts Academy Build-the-Stage Events PAA’s annual Build the Stage-Build the Community spring fundraiser is back with fun and exciting ways for the entire community to participate. The Beauty of Bonaire ISLAND PARADISE WELCOMES TRAVELERS TO EXPERIENCE UNIQUE ADVENTURES

Bonaire doesn’t have the name recognition of Jamaica, or Cozumel, or the Bahamas. In fact, the usual response to mentioning a trip here is, “Never heard of it.” But there are travelers who not only know the name, they mention it with a reverence reserved for truly exceptional destinations. This tiny island, 111 square miles, is located in the Caribbean Netherlands, just 50 miles off the coast of Venezuela and is considered to be the shore diving capital of the world. With over 60 mainland dive sites that are walking distance from their parking lots, Bonaire is an underwater how-does-this-even-exist experience for scuba diving and snorkeling. Colorado resident Kristi Herd planned a trip to Bonaire for a milestone birthday.

Inviting 17 friends to join her for a week of scuba, sun and celebration, Herd says, “I thought Bonaire would be perfect for a group trip because it is relatively easy to get to from the U.S., fairly inexpensive considering it’s an island trip, and also the diving is considered good for all levels of divers.” Jennifer Bukacek of Highlands Ranch had five dives under her weighted belt and was recovering from ACL surgery when she was invited on the trip. She didn’t want to baby her knee, but she had some reservations about how much stress she’d be putting on it using fins underwater. Luckily, Bonaire doesn’t have strong currents since the dive sites are so close to shore. Bukacek says, “We had plenty of time to check out the amazing sea life and coral reefs as we slowly drifted along. I’ve never seen so many shades of purple. As a beginner, with a bum knee, it couldn’t have been a better dive vacation spot.”

For those travelers who would rather not come face to face with teeming schools of fish, Bonaire has vacation-worthy sites and adventures that are above sea level. The capital city of Kralendijk’s quaint main street features colorful, charming shops that are a draw for photographers as well as shoppers. And the town of Rincon, founded in 1527 in an inland valley so it would be hidden from passing pirates, has a relaxed, welcoming atmosphere where hours pass easily. Distinctive only on Bonaire adventures include a Donkey Sanctuary that cares for the island’s wild donkey population where feeding, photos and petting the sweet four-legged residents is encouraged. Spring Quiche

ingredients: • 1 pie dough • 1 tablespoon olive oil • 2 cups mixed veggies, such as raw spinach leaves and cooked broccoli and asparagus • 7 large eggs, lightly beaten • 1 1/4 cups light cream • 1 tablespoon chopped fresh herbs like parsley or thyme • 1/4 teaspoon ground nutmeg • 1/4 teaspoon kosher salt • 1/4 teaspoon fresh cracked pepper • 3/4 cup grated gruyere or white cheddar cheese • 1/4 cup grated Parmigiano Reggiano

instructions: 1. Preheat the oven to 350 degrees F. 2. Transfer the dough to a 9-inch pie plate and press it into shape. Crimp the edges if desired. 3. Place a sheet of parchment paper or foil into the pie shell and fill with pie weights, uncooked rice or dried beans. Bake until the edges are very lightly golden, about 25 minutes. Remove the pie crust but keep the oven on. If edges start getting too brown, cover with a pie cover or foil. 4. In a large bowl, combine the eggs, cream, herbs, nutmeg, salt and pepper in a large bowl and lightly whisk. 5. Sprinkle half of the gruyere or cheddar and Parmigiano Reggiano on the crust, followed by the veggies, and then the remaining cheese. Pour the egg mixture over the top and bake until set, about 35 minutes.

Strawberry Bruschetta ingredients: • 1 pound strawberries, washed and sliced • 1 tablespoon sugar • 1 tablespoon olive oil • Kosher salt • 1 loaf Italian or French bread, cut into 12 slices • 1 cup goat or mascarpone cheese, room temperature • 2 teaspoons fresh thyme, basil or mint leaves • Good balsamic or balsamic glaze • Salt and ground pepper to taste

instructions: 1. Combine strawberries and sugar in a small bowl and set aside. 2. Brush bread with olive oil and a sprinkle of kosher salt. 3. Position oven rack a few inches below broil and preheat broiler. Align bread slices on a baking sheet. Broil first side until golden brown, about 1 minute, then flip bread slices to the opposite side and broil opposite sides until golden brown. 4. Spread cheese on toasted bread. Add a pinch of black pepper, salt, and the herbs to the strawberry mixture. Spoon the strawberry mixture over the cheese-topped bruschetta. Garnish with additional herbs. Drizzle lightly with balsamic vinegar. Tip: Substitute peaches for strawberries in the summer.

1/4 cup freshly squeezed lemon juice 1/2 cup olive oil 2 teaspoons of honey Kosher salt and freshly ground black pepper 4 ounces spring greens, baby arugula, or butter lettuce 1/3 cup pine nuts, toasted 1 cup fresh fava beans, shelled, blanched and peeled, or frozen lima beans, thawed 4-6 radishes very thinly sliced 6-8 stalks of roasted asparagus cut into 2-inch pieces 4 ounces soft goat cheese or feta

instructions:

Dressing: In a small bowl, whisk together the lemon juice, olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper, and honey. Salad: Place the lettuce in a separate bowl and toss it with enough vinaigrette to just moisten. Put the lettuce on a serving platter or bowl and arrange the rest of the ingredients on top. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper. Tip: Add spring peas, artichokes, sliced avocado, or cucumbers as an option.

Artichoke Centerpiece supplies 10 small artichokes, 2 varieties of greens, 1 variety of flower, floral foam, 10 wooden skewers and a vase.

instructions: Fill the vase with floral foam and soak with water. Insert one wooden skewer into the stem of each artichoke. To arrange, first insert skewered artichokes into the floral foam. Then, fill gaps with greens and flowers.
