DIPG Fundraiser hosted by Juicy Burger & Dogs Paul and Brooklynn Talbot, owners of Juicy Burger in Centennial, were honored to host a fundraiser for a little girl named Piper, who is battling Diffuse Intrinsic Pontine Glioma (DIPG), a rare and incurable form of cancer. The Cure Starts Now helps raise awareness and funding necessary for research with the hope of finding an effective treatment for this disease. $1000 was raised to directly benefit the cause.

Papaya Margarita

This exotic tropical papaya margarita is cool, refreshing, and loaded with citrus juices. The jalapeño slices give a slight zing. The rim is sweet with honey and tangy and spicy with a salty, chile powder-rim. Makes 3 to 4 margaritas

INGREDIENTS ++ 1 small Brazilian papaya,

halved and seeded

++ 1 large orange, juiced • 2 large

limes, juiced

++ 1 tablespoon honey, plus

++ ½ cup tequila añejo (recom

mend El Mayor Añejo tequila)

++ Tajin ++ Jalapeño slices, optional ++ Star fruit, optional

DIRECTIONS 1. Rub honey around the rim of glasses. Pour some Tajin out onto a plate, and rub the rim of the glasses in the powder to coat. 2. Scrape papaya flesh into a blender and add fresh orange and lime juice. Add honey and tequila and purée until smooth. 3. In a shaker add crushed ice, papaya puree, and shake to mix. 4. Strain drink into rimmed glasses filled with crushed ice. 5. Garnish with jalapeño slices and star fruit (if using).

ROCK CLIMBING By age: “If parents are avid climbers and can set up a safe anchor system in a beginner area, some parents will start kids climbing at 3 to 5 years old,” says Dr. Provance. Obviously, that’s not for everybody. Because climbing requires a significant amount of technical knowledge and skill, parents’ preparation is probably more important than the age of the kids. Staying safe: Most important is to have an actual climbing helmet, not a bike helmet or any other kind. A climbing helmet is specifically designed to absorb the impact of falling rock. Prepare: Rock climbing is equipment-intensive, so parents who don’t own it already might want to test the waters before they invest. Indoor climbing gyms offer a great place for climbers to build skill in a safe, equipped environment, without the threat of a rock fall or changing weather. Many offer classes.

FISHING By age: Fishing is safe and fun for kids of almost any age—as soon as they can handle a pole (and mind the hook). Staying safe: “The main risk would be getting into a stream that’s too swift or too deep,” says Provance. “Especially if they’re wearing waders, which can fill with water, increasing the risk of drowning.” For younger kids, it’s probably best to stick to mountain lakes and calm streams. Word to the wise: Fishing is a great opportunity to teach kids about the ethics of catch-and release—and of the mountains themselves.

HIKING By age: “Hiking is something you can do with really young kids,” says Provance. “Just know your limitations.” Gauge the distance you’ll be walking by a realistic sense of how far your kids can walk without burning out—keeping in mind that for most hikes, you’ll need to double the distance for the way out. Staying safe: At lower altitudes, prepare for the risks of dehydration and heat exhaustion. At higher altitudes, be prepared for all weather. “You could have a snow storm in August in Rocky Mountain National Park...suddenly you’re dealing with the possibility of hypothermia.” Prepare: Bring jackets, hats and gloves, even if it’s warm when you leave the house. “And if you don’t have snacks and water,” says Provance, “you’re doomed.” Bring more than you think you’ll need. Word to the wise: Pacing is everything. Kids might get excited and want to run it out at first. Slow them down, and be willing to slow down for them: let them dawdle, rest and stop to look at interesting stuff.

He and his co-owner wife, Brooklynn, relish in offering what is typically only available in secret corners of major U.S. cities like New York and Chicago, the latter being the inspiration for their exceptional hotdogs: authentic Chicago-style dogs made with classic Vienna beef, made-to-order as if from the Windy City itself. Juicy Burgers & Dogs approaches their burgers with the same standard of high-quality. “We use fresh ground sirloin,” says Paul. With several brilliantly crafted burger concoctions to choose from, no one leaves hungry! This is especially true if homemade fries are added to the meal. “We cut them the morning of the day they’re served,” explains Brooklynn. You can choose either regular or sweet potato fries to suit your pleasure. If it’s size you seek, Ditka’s Jumbo Hot Polish Sausage is 1/3 lb. of char-grilled beef. “The greendyed relish is totally authentic,” explains Paul. And the “burger” in Juicy Burgers & Dogs isn’t limited to beef: behold, their succulent chicken breast served on a soft white bun, which deserves the “juicy” billing as well!
